T
his is probably one of the busiest quarters of the year with lots of celebrations - Christmas, New Year, Burns’ Night and Valentine’s Day to name but a few. Busy too for my County Concierge Team as people start to think about where to go and what to do. So I hope our Winter Magazine will provide you all with lots of ideas for the coming weeks. We also have some excellent Readers Offers for you to check out. I must confess that after nearly 5 years of running County Concierge I still get excited about the places I visit and the people I meet on CC’s behalf. Since October I have been dashing around Surrey and Berkshire attending a record number of events, openings, exhibitions and interviews. I have met with some truly inspirational people including Clare Balding and Heston Blumenthal and I have shared some of these conversations with you in this Issue. Winter always makes me think of roaring fires, mulled wine and comfort foods. Can there be anything more relaxing than curling up beside the fire with a good book and a glass of something delicious? The Christmas break provides most of us with the perfect opportunity to recharge the batteries and make plans for the coming New Year. Of course it is also time for celebration: decorating our homes and welcoming friends and loved ones to join us. It is also the perfect time of year to wrap up warm for a ramble in the countryside then thaw out in one of the many cosy pubs that are waiting to welcome the weary and hungry walker. So I hope you will enjoy this Issue as much as we have done in putting it together for you, whatever your interests: fast cars, beautiful homes, delicious wines, fascinating books, remarkable people, perfect restaurants, creative cooking, mindful meditating, riding with horses or walking with dogs...we think we will have something to offer for all our readers. STRESS FREE FAMILY GATHERINGS BY PERSONAL COACH FIONA MILLER
T
here is so much hype about Christmas that if we are not entirely looking forward to it we can feel like a kill joy. You may think it’s all a lot of hard work. If you end up feeling like United Nations trying to field intergenerational family disputes, fuelled by spending an unusually large amount of time together and a lot of alcohol, then you won’t be alone. It doesn’t have to be like this and with some planning and a few changes you might find you can enjoy it. Perhaps you have felt you have to do everything yourself and then ended up feeling tired, irritable and resentful. However there is no reason why the rest of the family can’t join in and help out. Even quite young children can do small tasks and feel they are contributing. If this is a change from the usual form, then how you approach it is quite important. You have to tell people what you want and what you expect. However if you tell members of the family that they never help it is not going to have them lining up to do jobs. It may be that if you have always done everything yourself, then the family have assumed that you are happy with this state of affairs, if indeed they have thought about it at all. So explain that there is a lot of work and that you would also like to be able to relax and enjoy Christmas and you would like everyone to help out so that you can all enjoy it. Have a list of jobs that need doing and agree who will do what before Christmas so everyone knows what to expect. Of course everyone wants to decorate the tree so agree that if they do one of the tasks they enjoy they also do something else for example peeling the potatoes or hoovering so you don’t still end up with all the hard work. When they have helped even if you think they should be doing it without you asking, thank them and tell them you appreciate their help. They are more likely to help out again. You can’t of course control what everyone else says or entirely what they do, but if there are things that you find particularly frustrating let them know but keep away from the “you never…” or “you always.…” type of conversation. Instead try saying “I feel…” “I think...” So for example if you feel frustrated by cooking evening meals and finding no one is there because they have all gone off to
parties. Tell them that that you feel fed up when you have gone to the trouble of cooking a meal and no one is there to eat it, ask that if they are going to be out for dinner that they let you know by say lunchtime. You may have to start by reminding them or asking them but they should get the hang of it. Then there are visiting relatives, agreeing before they arrive how long they are staying means that you can plan for that time and keep everyone reasonably occupied to limit problems. Getting everyone out for a walk allows tempers to cool and introducing some games keeps every one occupied. Despite initial protests people usually end up enjoying them. It can be frustrating for you to be told by your mother-in–law or mother, in a knowing way, how to do things. It may be you feel their advice is useful, but if you find yourself gritting your teeth don’t get drawn into a long explanation of why you do this or that. They may not have had to balance working and bringing up children or they have a different idea of what is important. They are entitled to their view as you are yours, but getting into a discussion on what your teenage daughter is wearing or when you son is allowed out is bound to cause upset. Acknowledge that you know that is what they feel and explain you are dealing with the matter or tell them you feel it is not the right time to discuss it, whichever you feel is the appropriate reply. If necessary repeat this. Especially if, for example, the grandparent says they are going to talk to your child. Christmas is a time for traditions and everyone has their way of doing things. It can also be a chance to try new things, letting visitors help and perhaps letting your mother-in-law make the trifle in her own way can make her feel welcome and included. It does require some give and take but it can also help to make things go more smoothly. MINDFULNESS BY DANNY PENMAN
M
indfulness is a very simple form of meditation that was little known in the West until recently but now attracting devotees from all walks of life including celebrities such as Goldie Hawn, Ruby Wax and Heston Blumenthal. Mindfulness is about observation without criticism; being compassionate with yourself. When unhappiness or stress hover overhead, you learn to treat them as if they were black clouds in the sky, and to observe them with friendly curiosity as they drift past rather than taking it all personally. A typical meditation consists of focusing your full attention on your breath as it flows in and out of your body. Focusing on each breath in this way allows you to observe your thoughts as they arise in your mind and, little by little, to let go of them without a struggle. You start to realise that thoughts come and go of their own accord and that you are not your thoughts. With perseverance you will come to the profound understanding that thoughts and feelings (including negative ones) are transient and that ultimately, you have a choice about whether to act on them or not. Over time, mindfulness brings about long-term changes in mood and levels of happiness and wellbeing. In essence, it allows you to catch negative thought patterns before they tip you into a downward spiral and begins the process of putting you back in control of your life. Scientific studies have shown that mindfulness not only prevents depression, but that it also positively affects the brain patterns underlying day-to-day anxiety, stress, depression and irritability so that when they arise, they dissolve away again more easily. Other studies have shown that regular meditators see their doctors less often and spend fewer days in hospital. Memory improves, creativity increases and reaction times become faster. Despite these proven benefits many people are still a little wary when they hear the word ‘meditation’. So before we proceed, it might be helpful to dispel a couple of myths: Meditation is not a religion but a method of mental training and you can meditate anywhere and at any time that you can safely clear your mind and relax.

HOW TO DO IT IN FIVE EASY STEPS Meditation can be simple and does not require any special equipment. This meditation demonstrates the basic technique and takes just a few minutes. It should leave you profoundly relaxed. 1 - Sit erect but relaxed in a straight-backed chair with your feet flat on the floor. Or you can lie on a mat or blanket on the floor, or on your bed. Allow your arms and hands to be as relaxed as possible. 2 - Gently close your eyes and focus your awareness on the breath as it flows into and out of your body. Feel the sensations the air makes as it flows through your mouth or nose, down your throat and into your lungs. Feel the expansion and subsiding of your chest and belly as you breathe. Focus your awareness on where the sensations are strongest. Stay in contact with each in-breath and out-breath. Observe them without trying to alter them in any way or expecting anything special to happen. 3 - When your mind wanders, gently shepherd it back to the breath. Try not to criticise yourself. Minds wander. It’s what they do. The act of realising that your mind has wandered — and encouraging it to return to focus on the breath — is central to the practice of mindfulness. 4 - Your mind may or may not become calm. If it does, this may only be short-lived. It may become filled with thoughts or powerful emotions such as fear, anger, stress or love. These may also be fleeting. Whatever happens, observe without reacting or trying to change anything. Gently return your awareness back to the sensations of the breath again and again. 5 - After a few minutes, or longer if you prefer, gently open your eyes and take in your surroundings. nyone who watches television must surely know Clare Balding. Born into a horse training family on the Hampshire/Berkshire borders, Clare became an amateur flat jockey. She joined BBC Radio in 1994 and made her TV debut the following year, becoming a familiar face in horse racing coverage. Away from sport Clare fronts everything from Countryfile to Crufts to Radio 4’s Ramblings. Other credits include appearances on Have I Got News For You, A Question of Sport and Countdown. She has also written regular columns for the Observer and Sunday Telegraph, as well as the Racing Post. But however you think you know Clare - presenter, writer, broadcaster, award winner - it is not until you read her bestselling biographies: ‘My Animals and Other Family’ and her latest offering ‘Walking Home’ , that you really start to feel as if you are getting to know the real Clare Balding. I met Clare recently when she officially opened the stunning new facilities at Farley Farm Equestrian Centre and was immediately struck by the warmth and humour of this very special lady. It is clear that this is some-one who is comfortable with herself and with others, the perfect skill-set for her chosen career path, putting people at ease from word one. Yet despite a remarkable array of top awards Clare is curiously modest about herself. She was awarded an OBE in the Queen’s 2013 Birthday Honours List, just a few weeks after she collected a special BAFTA award to recognise her on-screen contributions to the Olympic and Paralympic games. Notwithstanding such resounding recognition of her talents Clare admitted that the presentation of her OBE by the Princess Royal had not gone too well ‘I was just hopeless! I talked absolute gibberish … mucked my curtsey up, nearly fell over as I turned and walked away, messed up properly, but luckily not too many people had seen that.’ With her latest book hot off the press our conversation turned to walking and I was surprised to discover that roaming the British countryside was not something that featured in her early days. Clare admitted that she had always been very good at English at school, if not too much else, and had always dreamed of writing a book one day…but why walking, since it was obviously not a first
love? Her earliest view, perhaps coloured by her father, was that one only walked because one had to. This all changed in 1999 when Clare was approached by BBC Radio 4 producer Lucy Lunt to present a new series called Ramblings. Some 15 years, 45 series and 1,500 miles later Ramblings is still her favourite programme. Often accompanied by her Tibetan terrier Archie, Clare has discovered walking as the perfect way to enjoy the wealth that our British countryside has to offer. Despite every kind of wind, weather and mishap, walking has become a daily pleasure for Clare who tries to walk around 5 miles per day. Anyone who follows @clarebalding will know that Clare is passionate about promoting women in sport. 2014 has been another incredible year for Britain’s sportswomen and the shortlist is bursting with talented individuals who have produced dynamic sporting performances. Clare is presenting the trophy to the winner at BT Sport’s Action Woman of the Year Award this December. She will also be centre stage in Glasgow, alongside co-presenters Gary Lineker and Gabby Logan, for the 61st annual BBC Sports Personality of the Year taking place on Sunday 14 December. Finally I asked Clare about her plans for the future. She confided that she hoped to spend a little less time on TV and more time writing. THE MAGIC OF SENSORY EATING AN INTERVIEW WITH HESTON BLUMENTHAL OBE
D
espite his whirlwind lifestyle I managed to catch up with international chef-extraordinaire Heston Blumenthal at The Hind’s Head in Bray, just one of the growing empire of Heston eateries. I had been warned that we only had 60 minutes so I arrived in good time, armed with a list of questions about the man, the food and the restaurants. From the moment we started to talk I realised that all my careful planning was in vain. Here was a man with such passion and conviction about his food and his life that no formal interview plan would be possible. So I abandoned my list and prepared to allow Heston to take me on a ‘tour’ of his world. When I mentioned to colleagues that I was to meet with Heston Blumenthal I was somewhat saddened by the fact that many people seem to get hung up on Snail Porridge! He did indeed launch this somewhat unusual dish on the unsuspecting diners at his signature restaurant The Fat Duck. This is a huge shame because it fails to allow an understanding or appreciation of the sensory experience which Heston brings to all that he does. It is necessary to suspend our preconceived ideas about food and allow our all our senses to take over. Our preconceptions may be simply about the name… after all what is Smoked Salmon Ice Cream if not simply frozen smoked salmon mousse? To try to understand Heston Blumenthal at 48 it is necessary to go back in time and get to know a little about the teenager who fell in love with the whole dining experience while on holiday with his parents in Provence in 1982. It wasn’t just the excellent food and wine but the whole stage-setting. As Heston told the tale it was clear that he was able to visualise it all, but he confided that the clearest memory is of the sights and sounds rather than what he ate. He told me the mental trigger that can transport him back to that ‘al fresco’ meal was the sound of footsteps in the gravel as the feast was unfolded before his family. As a devoted fan of all things Provencal I found myself travelling back in time with him. Heston knew that he wanted to create and share this wonderful dining experience with others but the journey has not always been easy. Mostly self-taught, Heston worked hard to get where he is today but does not recommend it to aspiring new chefs. It took more than a decade to realise his dream. By day he worked in a variety of jobs while at night he worked his way through the classical repertoire of French cuisine, cooking the same dishes over and over, perfecting the techniques and seeking out the best ways to harness flavour. Each summer he would spend two weeks travelling across France, visiting restaurants, suppliers and wine estates, learning about every aspect of gastronomy and banking flavour memories for the future. After four years of reading and researching Heston found a book that challenged all his previous convictions on food preparation. The book was ‘On Food and Cooking: the Science and Lore of the Kitchen’ by Harold McGee. It aroused Heston’s natural curiosity, encouraging him to take nothing for granted and promoting a

scientific approach to cooking. For example: if the notion that searing = sealing was untrue, as the book demonstrated, then how many other such ‘rules’ could be bent, broken or ignored? From then on the rigorous questioning and testing of culinary concepts became as important as the more traditional kitchen skills. In fact today Heston’s Coat of Arms hangs on the wall in The Hind’s Head with the motto ‘Question Everything’. In 1995 he bought a 450-year-old pub in the tiny village of Bray, Berkshire. Small, and with an impossibly cramped kitchen, it was hardly an ideal choice for a restaurant, but it was affordable. The Fat Duck, as it became known, took all his energy and skills. He worked long hours and survived with precious little sleep in the early days…but he has no regrets. In January 2006 he was awarded an OBE by The Queen for his services to British Gastronomy and he appears to collect Michelin Stars and culinary awards as effortlessly as others might collect stamps. Heston’s empire now includes two pubs in Bray as well at The Fat Duck restaurant, The Hind’s Head and The Crown, plus a stunning restaurant at the Mandarin Oriental hotel in Knightsbridge – Dinner by Heston Blumenthal – which showcases historical recipes with modern twists as featured in his latest book ‘Historic Heston’. In January 2015 The Fat Duck in Bray will close for 6 months for total renovation and all the staff will relocate to The Fat Duck which will open in Melbourne on 3rd February. It will occupy space in the award-winning Crown Towers hotel in Melbourne, which will then become Dinner at Heston Blumenthal when The Fat Duck returns to Bray! With so much going on I wondered how Heston managed to keep stress at bay and discovered that he has found Mindful Meditation to be the perfect solution. He also loves to play table tennis and ski. Keep it simple; avoid catering for hordes unless this really is your thing. Just relax, cook stress-free meals and enjoy the time with close friends and loved ones.

he Alexander James Group seems to be on an award-winning roll at the moment. In September, the group had five projects from Alexander James Interiors, Lida Cucina and Futurehome shortlisted for the International Design and Architecture Awards. On this occasion, it was the kitchen side that triumphed, winning the award for Best Kitchen Design Over £50,000. Last month, it was Alexander James Interiors’ turn for success winning Best Interior Design of a Private Residence (South East) at the UK Property Awards. Best Interior Design of a Private Residence (South East) Situated on a prestigious Berkshire estate, the winning property ‘Shamwari ’ is filled with interesting design features. Despite its many attractions, the owners felt the interior layout was cold and disproportionate, with high ceilings but low doors and windows. Also, with an interior that looked clinical and lacked emotion, it was too bland and minimal for their tastes. Enlisting the help of Alexander James Interiors team Natalie Rudland, interior designer and interior architect, Marina Demarchuk, the two worked with the owners to create a stunning and luxurious environment for entertaining using rich, warm colours with pattern and texture. Numerous structural changes took place including raising the
windows and doors, moving walls, building internal columns and constructing a fireplace. Bespoke statement pieces were designed and created including a two metre square mirror, fret work screen, marble fireplace, spiral chandelier and mood lighting throughout. The clients now love their new home, commenting, “Alexander James Interiors completely transformed the interior 360 degrees and now the property has the wow factor effect. The end result is an attractive, wonderful home for us all to live in and entertain.” Best Kitchen Design over £50,000 Created by Lida Cucina designer, Kate Rayner, the winning kitchen is in a contemporary new build property in South London. Integra kitchen furniture from Italian manufacturer Pedini was specified in glossy silver grey lacquer and grey oak veneer, with custom-made high level shelving. The unusual five bedroom house curves around a large oak tree which is protected by a preservation order and this, along with the modern architecture of the building, provided Kate with inspiration for her design. Kate comments, “I used grey oak as it is more contemporary and combined it with the glossy silver grey lacquer that reflects the natural light from outside. The use of curves creates a more intimate and sociable area that softens the hard lines and I also used high level shelving units to mirror the interesting architecture of the building .”

night Frank is often approached by private individuals considering a relocation for their businesses and families. Usually initiated having been advised by wealth management and taxation teams, clients are often asked to focus on destinations that will maximise the efficiency of their tax arrangements rather than those offering the best lifestyle. Whilst the rest of the report provides more in-depth observations on each of the selected locations, we felt that it may be interesting to note the overall leading locations, taking what we believe to be the key lifestyle factors into account. KEY FINDINGS For the majority of individuals, these key factors were: education, climate, leisure pursuits and the availability of quality restaurants. Interestingly the majority of the more traditional locations did well in certain categories, but were further down the list on others. This gave us a clear message that if you want to find the best location across the board, providing there was a reasonable presentation in each category, consistency was key. On this basis, Dubai came out on top as it boasted a top three position in three out of the four categories, while the Cayman Islands and Mallorca were consistently strong but without very high scores in any given area. Of the other major cities, Geneva came out on top, closely followed by Hong Kong as both could offer strong figures in the education and restaurant categories, but were down in the sunshine index compared to others. LIFESTYLE COMPARISON For example, whilst a young entrepreneur will want certain factors to support their lifestyle, a family is focused on different considerations. We therefore decided to demonstrate this by selecting three rather typical client genres; the entrepreneur, the family and the retired couple. The Entrepreneur Moving due to success of a business, this individual needs political stability, ease of travel, good climate and an array of restaurants and bars for personal and business entertainment.
The Family The initial drivers may be similar, however education and security are the key considerations. Leisure pursuits are also important to entertain a young family and entice them to stay at home during the holidays. The Retired Couple Quality of life, cost of living and personal security are the chief drivers, with a degree of interest in leisure pursuits, but mainly in ease of travel both for holidays and to visit family. After discussions with many clients on this subject, healthcare was often mentioned as another clear factor. All locations in our list offer numerous hospitals, but only a few offer specific medical speciality centres making it hard to make a comparison. The overall outcome is very interesting with all three groups showing different results except for strong representation from both Auckland and Geneva. This was mainly due to being the top two locations in the Mercer’s Quality of Living rankings and having low political risk. They also offer a variety of leisure pursuits and a well serviced airport. WINTER SUN For most individuals moving overseas, a good year-round climate is an attractive factor when it comes to deciding on a location. ormerly dubbed ‘Britain’s Mozart’, Shane Thomas is quite possibly the most talented teenager across the British music industry. His new single, ‘Mrs Matisee’ is to be released 10th December, prior to the release of his debut album, ‘From Me To You’, due for release soon after. ‘Mrs Matisee’ showcases Shane’s incredible talent and demonstrates the amazing capabilities of this young composer. The track is undeniably stunning and transpires audiences into the fascinating world of Shane Thomas. Shane was inspired to write the track earlier this year when he saw a painting by Henri Matisse. He was so taken with the beauty of the painting that he decided to compose a piece of music about it. Shortly after writing the track Shane discovered that Debussy had been inspired by the very same painting and written a well-known piece of music called Arabesque. Shane began playing the piano at the tender age of seven and has since taken on the challenge of mastering the art of the cello and percussion. Shane dreams up all of his music. He has never sat at a piano to compose anything. He does it all in his head, then later sits to play the piece. He can immediately play any melody or song he hears. Aged ten, Shane was the youngest person in history to be signed to a music publisher - E.M.I. music. Peter Andre, Jamie Cullum, Bradley Walsh and Jason Mansford are all fans of the child star. The Royal Academy of Music and Yehudi Menuhin school both describe Shane as ‘’A complete one off ’’.
