When almost dry add 1/4 cup coconut milk and cook on low heat until dry.
Place frying pan over fire with 3/4 cup coconut
When milk starts to boil add spices and all herbs except cinnamon and nutmeg powder
Add roasted egg plants and other vegetables
Allow to simmer for 5 minutes then add quinoa.
Allow to simmer for 5 minutes and turn off heat
Place 1 cup water in pan with cinnamon and bay leaf
Add strawberry when water starts to boil stirring continuously
Add molasses sugar
Allow to boil until syrup is formed
Place syrup on the bottom of plate with quinoa stew over it.
