ith a myriad of “Food Network” shows that include “Guy’s Grocery Games” and the ubiquitous “Diners, Drive-Ins and Dives”, there’s barely a moment when the self-proclaimed Mayor of Flavortown’s bleach blond head and grinning mug isn’t gracing your screen. But before the chef/author/TV host became one of the most recognizable culinary personalities in America, known both for his huge personality and bold yet approachable fare, he got his start in Las Vegas. Fieri calls the University of Nevada, Las Vegas his alma mater, as he graduated
from the William F. Harrah College of Hotel Administration in 1990 (his oldest son Hunter is following in his UNLV footsteps as well). Believe it or not, he was a starving college student just like the rest of us, so he got creative when it came to eating on a budget. One of his go-to favorites was to dress up some thick-cut fries with hot sauce and blue cheese for a faux-Buffalo snack. Visitors have been flocking to his first Las Vegas restaurant at The LINQ, Guy Fieri Vegas Kitchen and Bar, since it opened in 2014, clamoring for Fieri-esque signatures such as his award-winning bacon mac-n-cheese burger. The Vegas Fries are a nod to Fieri’s college creation, except fancier, made with sidewinder fries tossed in buffalo seasoning and blue cheese crumbles, served with house-made buffalo sauce and blue cheese wasabi (that’s blue-sabi in Guy parlance). Fieri’s newest endeavor is as cheeky as he is: El Burro Borracho (the drunken donkey, en español), which recently opened at Rio All-Suite Hotel and Casino. Fun is the name of the game at the Mexican eatery, but Fieri also emphasizes that he’s offering “really good ingredients cooked in a very authentic manner with strong discipline in seasoning and composition.”

Growing up in California—and eventually owning property in Mexico—has helped shape Fieri’s taste of regional fare. There are classic versions of dishes such as grilled street corn and al pastor, but the true Fieri touch can be found in others such as lava rock shrimp tacos and the physics-defying stack of Trash Can nachos. Fieri’s has earned his reputation for being a regular guy, the one you’d want to watch the game and have a few drinks with, but who’s got chops at both the tailgate party and in the kitchen—and he’s learned some of those chops right in the heart of Las Vegas! The carne asada is tender and juicy, ideal for tacos or atop a mountain of French fries with nacho toppings that make the hybrid carne asada fries. Bobby Flay’s flagship is about as New Mexican as it gets—both in cuisine and regional origins. The “Food Network” chef’s trademark bold flavors and love of spice derive specifically from Southwestern cuisine. It’s not knock-your-socksoff heat (though there are a few habañeros found on the menu), but rather smoky, subtle notes from chilies such as anchos and Cascabel along with tangy green varieties direct from New Mexico. ierre Gagnaire might not recall the first dish he ever made, but the Michelinstarred chef behind one of Las Vegas’ most esteemed French restaurants, Twist by Pierre Gagnaire, does remember the moment he realized he had a gift for cooking. “I was about 17 or 18 years old,” Gagnaire told Sunseeker. “I was with friends and there was almost nothing in the fridge. It just had a few ingredients and I was able to create something with those. To this day, that’s when I felt I had the touch.” Named Le Chef magazine’s most influential chef in 2015, Gagnaire opened Twist by Pierre Gagnaire—his first and only restaurant in the United States—in 2009. Located on the 23rd floor of Mandarin Oriental, Las Vegas, the
stunning restaurant features a menu of classic French cuisine with a modern “twist” that changes seasonally, showcasing the Frenchborn chef’s impeccable flair in the kitchen. “It’s important to offer dishes that agree with the season,” Gagnaire explained. “During the summer I like to incorporate fruits—cherries, strawberries, blueberries—as much as possible, and not just in desserts. I also like more seafood in the summer: lobster, shrimp, eel, trout.” While menu items change often, there are a few favorites that remain from season to season. “Guests love the Langoustine (crispy langoustine with Terre de Sienne spice, Feuille de Brick, green lentils, bean sprouts, yellow mango, coconut foam and salpicón with green peppercorns), so we like to keep that on our menu,” Gagnaire said. “In Las Vegas, you have to offer meat (steak), too. It’s impossible to avoid, but we make it elegant.” Gagnaire credits the restaurant’s continued success on the Strip with having a menu and environment that’s both “comfortable and joyful.” Clearly he knows what he’s talking about: Twist by Pierre Gagnaire recently received Forbes Travel Guide’s coveted Five-Star award for the fifth consecutive year.

FORMER WWE SUPERSTAR LEAVES HIS MARK ON CIRQUE DU SOLEIL’S “KÀ” By Heather Turk
T
he cast of Cirque du Soleil’s “KÀ” may be comprised of many superstar athletes, but it wasn’t until recently a former WWE Superstar joined the cast. Barri Griffiths, better known to wrestling fans by his ring name, Mason Ryan, debuted in Cirque du Soleil’s mesmerizing martial arts spectacular last December. The coming-ofage story of a Twin Brother and Sister who embark on a perilous journey to fulfill their destinies, Griffiths plays the villainous Chief Archer—a role he surprisingly learned about from his former employer.
“When people hear there’s a wrestler [in ‘KÀ’] they think I’m doing gymnastics or the high wire, but my role is the tough guy,” Griffiths explained. “Cirque was constantly asking me to put my own stamp on the character, so we developed the character to be more active and have more brutal fights.” During one of the rechoreographed fight scenes, Griffiths actually picks up another cast member over his head and throws him from the stage into an acrobatic net below. Griffiths credits his wrestling background for making the fights look so believable. While Griffiths enjoys being a villain, he knows there’s more to Chief Archer than just being “brutally barbaric.” “He has a good side,” Griffiths stated. “He has a daughter who he loves dearly, so it’s interesting to show both sides of the character.” For fans wondering if Griffiths ever plans on returning to the ring, Griffiths said his main focus right now is on being the best Chief Archer he can be—although if there’s anything this experience has taught him, it’s that you never know what the future holds. “I find myself in the training room watching all these amazing athletes workout and wonder, ‘How on earth did I end up here?’” Griffiths said. “This is just a dream come true.”

“When I left WWE, I left on good terms so we still kept in touch,” Griffiths, who continued to wrestle independently, recalled. “One day I got a call out of the blue from WWE about a job opportunity, so naturally I thought it was wrestling related. When they asked if I wanted to audition for a role in ‘KÀ’ it blew my socks off. That was the last thing I expected.”
Griffiths beat out three other wrestlers he knew for the part, which was then reworked to show off his unique skill set.

B
efore you check out Blue Man Group’s exciting new show at Luxor Hotel and Casino, go behind the scenes of one of Las Vegas’ longest-running productions with the Behind the Blue experience. Available for $55 with any ticket purchase, the 75-minute tour takes place each night before Blue Man Group’s first performance. Participants will meet up with their tour guide in the theater lobby two hours before show time to sign a waiver and pick out their complimentary luminescent souvenir from the gift shop before
After learning some of the show’s secrets, including what Blue Man Group’s grease-based face paint feels like, guests will briefly be taken back outside of the showroom so that they can see some past photos from Blue Man Group posted on the theater’s walls. It’s interesting to hear which photos are from other Blue Man Group productions and which images are of Blue Man Group’s founders, Chris Wink, Matt Goldman and Phil Stanton. One photo that’s particularly noteworthy is of the original Blue Men walking through New York City with a casket—signifying the death of the ’80s as a way to welcome the ’90s. The bit was filmed by MTV News, thrusting Blue Man Group into the national spotlight for the first time. The Behind the Blue experience concludes with participants sitting in on that evening’s soundcheck, where the cast and crew warm up and prepare for the night’s performances. Not only will guests get to see the Blue Men run through a few songs, but they’ll also get to watch them practice one of the show’s signature bits where one Blue Man throws gumballs and marshmallows into the other two Blue Men’s mouths.

HUMAN NATURE’S “JUKEBOX” TAKES AUDIENCES ON A MUSICAL JOURNEY By Heather Turk
A
ustralian vocal sensations Human Nature have much to celebrate this spring. Not only does the month of May mark the group’s seventh anniversary of performing on the Las Vegas Strip, but the acclaimed quartet also recently debuted a new show at The Venetian, “Jukebox,” which will run through 2018.
2014 album, Jukebox, a collection of covers from the 1950s and ’60s that was released in Australia and ultimately inspired the Las Vegas show. The album is scheduled for release in North America later this year and Human Nature is already planning on recording a second volume that showcases additional covers performed in the Las Vegas production.
A departure from the hit Motown show that made the group one of the Entertainment Capital of the World’s most beloved acts, “Jukebox” features Human Nature’s foursome—Toby Allen, Phil Burton and brothers Andrew and Mike Tierney—performing a wide range of music, from early doo-wop to songs from today.
In honor of the production’s name, an actual jukebox has been installed in the showroom’s foyer featuring 20 to 30 songs. Each night during the show, Human Nature performs their own unique version of the song that gets picked the most by ticket holders.
“The Motown show was a great start for us, but this show shows audiences more of what we can do,” said Andrew Tierney. “Singing Motown music is just a part of our career—it’s not all of it.”

“Since we’re a big boy band in Australia, we sing some songs from boy bands that influenced us,” Tierney said. “There’s some New Kids on the Block and a little *NSYNC and Backstreet Boys, but we also broaden the term ‘boy band’ to include groups like The Beach Boys and The Beatles.” Naturally, Human Nature peppers in a few Motown classics throughout the production as well, including songs by The Temptations and The Jackson 5. he new T-Mobile Arena is a joint venture between AEG and MGM Resorts International, and key stakeholders in both companies are stressing that this new project is for all-comers, not solely for MGM Resorts properties. This shiny, new and completely state-of-the-art arena, located in the heart of the Las Vegas Strip behind New York New York, just opened this spring. Fans have been wowed, to say the least! “It’s important for fellow Las Vegas resort operators, in addition to event promoters worldwide, to know that we have specifically created the T-Mobile Arena to be very welcoming for the entire resort community,” said Mark Prows, senior vice president, Arenas, for MGM Resorts International, in a recent article in Sports Business Journal. The wellness spa opened in August of 2013 to help replenish guests with a variety of intravenous and vitamin hydration treatments. Developed by a group of experienced emergency room physicians, REVIV features a wide range of hydration treatments to combat dehydration, whether it’s from time in the sun, a late night out, a strenuous workout or even before or after a long flight. Not surprisingly, its hydration treatments have become very popular with professional fighters after a bout at the MGM Grand Garden Arena, while vitamin drip infusions in general are gaining popularity thanks to celebrities like Rihanna and Simon Cowell who are doing them.

The process is fairly simple. After choosing what type of IV infusion a guest wants, visitors are asked to fill out a quick questionnaire to make sure they don’t have any medical problems that might affect the treatment. Then, guests are brought back to the prep room where some vital signs are taken (blood pressure, pulse, temperature). Once they get the okay from the resident nurse, they are escorted into a private room where they are hooked up to the IV of their choice. While the treatment is being performed, guests will be given an iPad to help pass the time as they relax in a soothing full-body massage chair. Since the fluids are kept at room temperature, guests may get a little chilly as the IV drip enters their veins, but blankets are provided to keep visitors nice and cozy. The resident nurse

Artists who have performed as part of the Rock of Vegas summer concert series include such notable names as KC and the Sunshine Band, Spin Doctors, Bret Michaels, The Smithereens, Seether and Kansas.

or all the millennials whose parents told them that playing video games would never amount to anything, now is your chance to prove them wrong. The future of gaming has arrived in downtown Las Vegas thanks to Downtown Grand Hotel & Casino’s new Downtown Underground eSports Lounge. Powered by local gaming technology company Leet, the 1,140-square-foot space is designed to house video game programs and platforms of all kinds with video game stations able to accommodate up to 50 players depending on the tournament. Although Downtown Grand is one of the first Las Vegas casino properties to embrace eSports, the worldwide phenomenon is expected to become a nearly $500 million industry by the end of 2016. Currently there are approximately 32 million eSports fans in the United States, and that number is expected to grow to more than 50 million by 2017 according to the research firm Newzoo. Downtown Grand has already hosted several exciting gaming events since the lounge opened last October, including the opening event for the 2016 Madden Community Championship powered by GamerSaloon this past March. The winning team walked away with $1,200. The property also hosted the Wargaming.net League North America Season 2 2016 Regional Finals for the popular multiplayer online video game

Additionally, Downtown Grand began hosting members of a newly created eSports league for the world’s top players of the first-person shooter game “Counter-Strike: Global Offensive” last November. Gaming events are held every Friday and Saturday night in the Downtown Underground eSports Lounge with pricing depending on the type of tournament. Winners are guaranteed at least a $250 cash prize. ew Mexican cuisine is the regional fare of New Mexico that includes influences from Spanish, Mexican, Mediterranean, Native American and cowboy cultures. This style of food is known and loved for its heat levels, which vary based on the type and amount of chiles included in a dish. LA RISTRA NEW MEXICAN KITCHEN Gilbert, Arizona, in Phoenix’s East Valley has become a hotspot for dining. La Ristra is a spicy part of that mix. Here, the Blue Corn Enchiladas are New Mexican-style, meaning stacked, not rolled. You pick the filling and the sauce(s) and the restaurant will serve it to you topped with a fried egg. Hedgehog cactus blooms come in vibrant shades of fuchsia and deep purple and line the walking trails at Desert Botanical Garden. Prickly pear cactus blossoms are also on display through late May. Orange, yellow and even purple flowers set the tasty fruit, which ripens later in the year. Pay close attention to the cholla cactus flowers, which begin in mid-May and last until late August. Summer rains will prompt the barrel cactus to bloom by mid-June. ver the last decade, Phoenix area restaurants have become dining destinations for a wide range of cuisine, especially sushi. In a desert region where temperatures often hover around 100 degrees and higher, you wouldn’t expect to find a seafood mecca, but with so many outstanding restaurants serving fresh and innovative sushi and Asian-inspired dishes, it became inevitable. Music has been described as the heartbeat of Hawaii; kamaaina love to sing, dance and play instruments. Launched in 2011 as a month-long musical celebration, Mele Mei (Music May) has expanded this year to include events through June. Enjoy the sounds of the ukulele and steel guitar, Island-style reggae and rock, traditional Hawaiian music and slack key tunes at restaurants, theaters and other venues. Sometimes those in the audience jump up spontaneously to share their talent! One of Mele Mei’s signature events is the Na Hoku Hanohano (Stars of Distinction) Awards. Kamehameha Day, June 11, is an official state holiday honoring the great warrior king who united the Hawaiian Islands and established a ruling dynasty that endured for nearly 80 years. On Friday, June 10, long floral garlands will be draped over the arms of the Kamehameha statue fronting Aliiolani Hale, the Judiciary Building (417 South King Street). The following morning, a parade of floats, marching bands and equestrian units will delight spectators as it proceeds along Punchbowl Street, Ala Moana Boulevard and Kalakaua Avenue to Kapiolani Park. ur mechanics work diligently to make sure that our planes are ready for hundreds of travelers each day. Even though they work behind the scenes and under planes, their hard work does not go unnoticed. Meet Harold, a Maintenance Technician at Allegiant’s Phoenix/Mesa maintenance base. Harold loves to travel just as much as our passengers and has a decades-long passion for the aviation industry he loves. Sunseeker: How long have you been working for Allegiant? Harold: I’ve been with Allegiant for one year, but have been working on planes for more than three decades. I specialize in working on MD-80s and A319s. Sunseeker: What about your job gets you excited to go to work? Harold: Each day is something new for me. We often take road trips to other cities to work on our planes, so even though I am based in Mesa I have had the opportunity to travel to bases all over the West Coast as well as one of our newer bases in Cincinnati, Ohio. Sunseeker: What was your journey to becoming a mechanic? Harold: I love it; it’s in my blood. I grew up on
a farm in a small town south of Pittsburgh, Pennsylvania. I was always fixing things and tinkering around on the farm. I later went on to spend 21 years in the Air Force working on planes. To this day, I work on my cars and my motorcycle in my spare time. Sunseeker: What would you say is your favorite thing about being an aircraft mechanic? Harold: The best part is watching the plane “rotate and climb”, which means watching the plane take off. I also love my team members; everyone is thorough, professional and great to work with. Sunseeker: What has been your favorite part about working at Allegiant? Harold: I enjoy seeing and experiencing new things each day, especially while doing what I love the most. I also love to travel, so being able to fly to different states all over the country is also another great aspect of working for Allegiant. Sunseeker: If you could travel anywhere in the United States on vacation at this moment, where would you go? Harold: I love traveling anywhere and everywhere. There are so many different places to visit in the United State; every place is an experience. Between working for Allegiant and my previous work experience, I have been lucky enough to travel to all 50 states. Sunseeker: Do you have a “locals” tip for Allegiant travelers going to the Phoenix/Mesa area? Harold: Mesa is beautiful. We have a lot of parks, mountains and lakes. I love being able to ride my motorcycle through Mesa and seeing all of the amazing scenery. Arizona is unique because within three hours you can travel from a desert oasis to snowy ski resorts in nearby Flagstaff. SUNSEEKER

his past spring, Allegiant employees turned out in record numbers for the Las Vegas Walk For Wishes event. Held annually by the Make-A-Wish® Foundation of Southern Nevada, the 5k walk helps raise needed donations for Wishgranting services. Las Vegas-based Allegiant has enthusiastically supported and sponsored the Las Vegas fundraiser each year since partnering with Make-A-Wish® in 2012. Employees have always been excited to participate and this year was no exception. More than 140 employees turned out to help raise over $400,000 for the local Make-AWish® chapter.
The Las Vegas walk is one of seven in Allegiant cities across the country that the company has committed to sponsoring in 2016.
