A CULINARY CATCH BOBBY FLAY’S SHARK ISN’T YOUR TYPICAL SEAFOOD RESTAURANT By Heather Turk
While walking through the newly remodeled Palms Casino Resort when it was still under construction, celebrity chef Bobby Flay (“The Flay List”) realized what he was going to name his first seafood-focused restaurant when the property’s $690 million transformation was complete. “It was a moment of fate,” Flay recalled. “I was told that when the lobby bar was finished it would have a 13-foot tiger shark on display. So, between that, opening a seafood restaurant and just playing off the term card shark being in a casino, I decided to name the restaurant Shark.” Offering Flay’s signature Latin take on one of his favorite foods to cook — fish — Shark boasts a menu of “quality fish enhanced by flavors guests aren’t expecting.” Many of its dishes, such as the popular Tuna Tartare with crispy green rice and Peruvian chile sauce, incorporate chiles, which Flay stressed aren’t used just for heat.
Shark’s menu also features world-class sushi and sashimi from former Nobu chef Kiyo Asano that will have taste buds dancing, according to Flay, with options like the South American-style Spicy Blue Fin Tuna specialty roll made with rocoto chiles. There are a couple of shareable non-seafood entrées diners can savor, too, with the sweet and spicy Fried Chicken served with toasted red chiles, lime and rocoto pepper honey being one Shark’s best-selling dishes. The Grilled Corn made with coconut milk, yellow chiles, oregano and cotija is also not to be missed, nor is the Pacific Purple Yam Cheesecake for dessert. Boasting views of the resort’s pool from its indoor patio, Shark opened in April and marks the third restaurant in Las Vegas helmed by Flay, following Mesa Grill at Caesars Palace and Bobby’s Burger Palace near Waldorf Astoria Las Vegas. “I never use chiles to burn out a guest’s mouth,” he said. “I use them to impart different flavors and textures to a dish.” For guests who want to add some heat to their dishes, every table is given a bottle of the restaurant’s Amarillo Hot Sauce made with aji amarillo and rocoto chile paste, which pairs perfectly with almost everything on the menu — particularly the succulent Beef Tenderloin Tacos wrapped in fresh-made, purple corn tortillas. Of course, most palates will find Flay’s fare perfectly flavorful on its own, like the robust Grilled Octopus topped with clementine, gooseberries, bacon and Marcona almonds. Foodies hungry for something new during their trip to Las Vegas will discover several palatepleasing restaurants have recently opened on Las Vegas Boulevard. BLVD & MAIN TAPHOUSE AT THE STRAT HOTEL, CASINO & SKYPOD Serving a menu of elevated grub for lunch and dinner, this spacious taphouse is far from your typical pub. While there may be plenty of big screens to watch a game on, there are also several pieces of art on the walls created by local artists to give the pub an urban vibe. Guests can choose from 24 beers on tap, like the signature SkyJump Golden Ale that has a touch of malt sweetness to it, and savor their selection with such delicious dishes as the Pigs in a Blanket (bratwursts wrapped in house-made pretzel dough), BBQ Short Rib sliders, beer-brined Brick-Pressed Organic Chicken or warm Apple Pie Flautas. Having spent the past 45 years entertaining audiences around the globe, it’s hard to imagine legendary magicians Penn & Teller not performing together — let alone not performing magic at all. However, Penn Jillette has been very outspoken about the fact that if it wasn’t for Teller, he likely would’ve never become a magician. “I was very antagonistic toward magic,” Jillette told Sunseeker. “When I was 12, I saw this mind reader who I thought was doing a scientific experiment performing these cheesy tricks. I was embarrassed when I found out later on how the trick was done in a magic book at the library. I raged against magic, as I found lying as a form of entertainment to be repulsive. But then I met Teller and The Amazing Randi (James Randi) who told me that magic could be done morally and that being immoral wasn’t built into the framework.” Today, Jillette prides himself and his partner on their unique approach to the art.

“A lot of magicians, their goal is to fuzzy up the truth. They want people to believe the trick that they just did,” he said. “For us, it’s just the opposite. We don’t want anyone to leave the theater thinking they witnessed a homicide, even though they just saw us saw someone in half. We don’t want anyone to believe anything that we don’t believe is true, and that’s a difficult goal.” Difficulty, though, is what Penn & Teller thrive on. Having spent the past 18 years headlining their own show at Rio All-Suite Hotel & Casino, the two are constantly challenging themselves by coming up with “crazier” illusions to perform onstage. “Most acts develop new material to keep working — we keep working to develop new material,” Jillette said. “We’re both over 60, so we have enough material to last the rest of our lives. Yet, we keep writing new stuff. The motivation is internal. The goal is to always keep challenging ourselves. We get the most excited now over the possibility of things we can’t do, many of which we actually can’t. We only want to do hard stuff.” That’s obvious during their show, which features some of the most innovative illusions audiences will see on a Las Vegas stage. One of Penn & Teller’s newest bits, “Glass Portrait,” is a twist on the classic illusion where a magician has someone in the audience sign a playing card and then rips it, only to have the signed card magically reappear intact. d e s t i n at i o n ▪ L a s V e g a s

“Teller has an audience member draw on a piece of glass and then he shatters it, only for the glass to reappear,” Jillette explained. “It’s impossible, and it’s something Teller worked on for years. It’s one of the nicest bits we’ve done in the show.” Audiences are always treated to exciting new illusions during the production, as Penn & Teller are constantly adding new tricks they’ve been working on. Other challenging bits the duo is currently perfecting include a trick on forging bills, a piece on how magic is done from Jillette’s point of view called “Stupid” and a fun illusion called “Ball Pit Troll” where a child from the audience enters a ball pit onstage only to be “eaten” by a troll. No doubt masters of their craft, Penn & Teller recently released an online MasterClass to teach other aspiring magicians some of their tricks. The class is a tribute to their own mentor, The Great Tomsoni (Johnny Thompson), who taught Penn & Teller that most magicians stop thinking too soon and that there are four ways of doing things. Jillette hopes the class not only helps students polish their own skills, but also teaches them the importance of empathy and how they’re seen in other people’s eyes.

Celine Dion may have ended her Las Vegas residency in June, but there’s no end of the road in sight for Boyz II Men’s hit residency at The Mirage. “The hotel is going to have to kick us out,” joked Boyz II Men’s founder, Nathan Morris, who along with Shawn Stockman and Wanya Morris make up the legendary R&B group.

Morris said that when Boyz II Men first started performing at the property in 2013, they had no idea if their residency would succeed in the Entertainment Capital of the World. “We were hoping to do what we’ve been doing,” he stated. “We were looking for a regular place to stay at so we didn’t have to travel around anymore, and Vegas is great because you get a different audience every night with people from around the world.” Not only did audiences end up embracing Boyz II Men’s show, but their residency is often regarded as one of the Strip’s best thanks to the guys’ pitch-perfect vocals and how interactive they are with fans. In addition to hosting a postshow meet and greet for VIP ticket holders, the guys pass out red roses to select audience members during the show while singing “I’ll Make Love to You,” and even step offstage while performing “End of the Road” to dance with fans and take a few selfies. “We realized that when people see a show in Las Vegas, they often sit down, watch the show, clap and then leave. They never really feel like they’re a part of it,” Morris noted. “We didn’t D e s t i n at i o n ▪ L a s V e g a s

Billboard magazine’s “Venue of the Decade: 2000-2009” is set to reopen its doors in September after getting a modern makeover this summer. Home to such must-see music residencies as “Rod Stewart: The Hits,” “REBA, BROOKS & DUNN: Together in Vegas” and Mariah Carey’s “The Butterfly Returns,” The Colosseum at Caesars Palace closed its doors throughout most of July and August so that it could undergo an exciting evolution. Scéno Plus, the world-renowned theater designers out of Montreal who originally worked on The Colosseum, returned to lead the redesign project and make sure that all of the changes being implemented still preserved the celebrated character and prestige of the iconic theater. Not only was every plush red seat in the venue refurbished with new custom fabrics, but a new VIP area was added, complete with banquettes for groups from two to 10 and bottle/ cocktail service. Zuiker, visitors will report to one of three crime scenes where they’ll use augmented reality to note any evidence they find on an electronic tablet. Then, they’ll take their findings into different labs where they’ll use their forensic investigation skills to do things like match fingerprints found at the scene of the crime to a list of possible suspects. Once guests think they’ve solved the case, they’ll submit their report digitally to Gil Grissom (William Petersen) to find out if they have what it takes to be a real crime scene investigator. REBAR Almost everything is for sale at this Main Street bar, which is known as much for its antiques as its affordable drinks (draft beers start at only $3). Visitors will often find vintage beer memorabilia, retro ’70s and ’80s toys, taxidermy animals and beer steins available for purchase, with many of the items priced from just $10 to $30. A cast member at Disneyland Resort for more than 23 years, Ford has held several positions since he first started working for the iconic Southern California destination as a high school student. Once a food and beverage cashier in Fantasyland, Ford has done everything from work as an inventory receiver to a systems analyst. Today, he works with the digital guest experience team as a project manager to keep various projects on task. Through it all, he’s never lost sight of the most important part of working at Disneyland Resort: providing guests with an excellent experience.
“Being able to use the Disneyland app to help guests get more out of their visit is very rewarding,” Ford said. “We’ve heard a lot of positive feedback from guests. To know that I help create memories that families can take with them, that really excites me day to day.”
“I constantly am speaking with guests to see what parts of their visits can be enhanced,” Ford told Sunseeker. “We’re always looking for ways to take the entire guest experience to the next level.”

In his current position, Ford works closely with the digital product team at Disneyland Resort, which develops specific technology to make guests’ visits more enjoyable. Ford believes that Walt Disney would have been excited to see the new digital features introduced in recent years that allow guests to maximize their day, giving them more time to enjoy all of the magic that Disneyland Resort offers. If she’s not hard at work or on a plane headed to her next destination, you can find her doing extensive research and creating travel guides for the places she’s planning to visit. I sat down with Alexandra to chat about her recent adventures and passion for her job:
How long have you been with Allegiant? I joined the team six years ago as a customer service representative in customer care. I worked as a team lead and supervisor before starting my current position, manager of customer relations. I oversee a team of representatives responsible for handling all incoming emails from customers, as well as being available for our live chat feature on the website. As someone who travels often, it’s rewarding being able to help thousands of people make their vacations a reality.

Visiting 30 countries in a lifetime, let alone by age 30, is a hefty goal. What inspired you to make this happen? It is! I spent two years teaching in Japan, and as I headed back to the states, I took a trip to
30 countries by 30
Cambodia. I was on a tour and met a man who mentioned he was visiting 30 countries by his 30th birthday. I asked him more about his goal and left feeling inspired and encouraged that I could do the same thing. I wish I could tell him "thank you!"
Wow! If he only knew! So, has the goal been accomplished? I’ve met so many people and have remained connected via social media, but unfortunately, I never got his contact information. Yes! I celebrated my 30th birthday this past June in Spain — country number 30! Congratulations! I’m sure working in aviation helps — has Allegiant been supportive? In every way! From the travel benefits, flexibility and a supportive culture, I truly couldn’t have done it without Allegiant. The best part is the incredible friendships that I’ve built with my coworkers who love to travel too. There were so many people cheering me on! I’m sure it helps having travel buddies. What was your favorite trip? It makes for great memories, but I’ve also traveled quite a bit on my own. I’ve learned a lot along the way, not just about other countries and cultures, but about myself. I went to London for my birthday a few years ago, and the entire experience was amazing. The flights were smooth, the free museums were a plus, and I loved the people and the food. Are you taking a break from traveling or do you more plans? Nothing as intense as my last goal — but I have so much more of the world to see! I plan to visit Switzerland later this year, but my goal now is to focus on visiting different cities in the United States, especially on our growing Allegiant network. Sunseeker ▪ 61

Blood Drives The American Red Cross provides about 40 percent of our nation’s blood and blood components, all from generous donors. It’s estimated someone in the United States needs blood every two seconds. Unfortunately, only about three percent of age-eligible people donate blood yearly. Recognizing that one of the main obstacles in donating blood is finding time to go to a blood bank after a full day of work, we host blood drives at Allegiant’s corporate headquarters in Las Vegas four times per year. We have seen participation grow over the years in this life-saving program as a result. And with the American Red Cross’ mobile app, our team members can actually track where their own blood is being utilized for people in critical need. TRAVELER INFORMATION SAFETY FIRST
Customer safety is Allegiant ®’s first concern. Please be advised that interference with the duties of crew members, including flight attendants, is a violation of federal laws. Our crews are thoroughly trained in all safety procedures. To ensure your own safety, we hope you take a moment to review the safety information card located in the seat pocket in front of you. Be aware of the following:
• Location of the nearest emergency exit • Location of your emergency oxygen mask, if needed • Correct procedure for exiting the cabin in an emergency SEAT BELTS
Seat belts must be fastened ANY TIME the seat belt sign is on, during taxi, takeoff and landing. Once the seat belt sign is turned off, you may walk around the cabin. Due to unexpected turbulence, it is strongly recommended that you keep your seat belt fastened any time while in your seat. Allegiant’s exit seating policy does not allow the use of seat belt extensions in the exit seats due to tripping hazards.
Unlabeled seats or seats manufactured before Jan. 1, 1981, are not acceptable. Child restraint seats are to be placed into a window seat and secured with an aircraft seat belt.
PHOTOS & VIDEOS ONBOARD
The use of small cameras or mobile devices for photography and video is permitted onboard provided you keep the purpose of your photography and video to capturing personal events. Photographing or recording other customers or airline personnel without their express consent is prohibited. Airline personnel reserve the right to prohibit photos and videos onboard the aircraft if it becomes a disturbance to them or other passengers.
ALCOHOLIC BEVERAGES
Allegiant is forbidden to serve alcoholic beverages to anyone who appears to be intoxicated or who has not yet reached the age of 21. It is a violation of federal regulations to drink alcoholic beverages during a flight unless they have been served by Allegiant personnel.
SMOKING
CHILD RESTRAINT SEATS
Federal Aviation Administration requires that all child restraint seats used on planes meet federal safety standards. Acceptable seats bear proper labeling
“THIS RESTRAINT IS CERTIFIED FOR USE IN MOTOR VEHICLES AND AIRCRAFT" from the manufacturer.
Smoking, the use of other tobacco products, e-cigarettes and other similar smoking devices are not permitted on any Allegiant flight. Federal law imposes fines of $1,000 for smoking and up to $2,000 for any attempt to disable an aircraft smoke detector.
