Show-stopping Sides Give your mains a run for their money with these exciting side dishes! EGGPLANT PA R M I G I A N A Prep time: 15 min Total time: 1 hr 15 min Serves: 3 to 4 1kg eggplant ½ cup olive oil 1½ cup Sunterra Market-Made pomodoro sauce 1 large tomato, sliced ½ cup mozzarella, shredded ¼ cup Parmigiano Reggiano, shredded 125g mozzarella, sliced Salt and pepper to taste Preheat oven to 350F. Wash and slice the eggplants, about 1/8 of an inch thick. Lay the slices on a lined sheet pan, drizzle generously with olive oil and season with salt and pepper on both sides of the slices. Roast for about 30 minutes, or until golden brown on both sides. Once cooked, let them cool. Brush a 6-cup casserole dish with a tbsp of olive oil and spread half the pomodoro sauce on the bottom of the dish. Lay half the roasted eggplant slices on top of the sauce in a shingled pattern, then place the tomato slices over the eggplant layer. Next, sprinkle on half of the shredded mozzarella and Parmigiano Reggiano and spread the fresh mozzarella slices over the shredded cheese. Lay the other half of the roasted eggplant in a shingled pattern on top of the cheese and spoon the other half of pomodoro sauce over the eggplant. Sprinkle on the remaining shredded cheese. Place the casserole in the oven and bake until golden and bubbling on the sides, about 25 minutes.
CORNBREAD AND CHORIZO STUFFING Prep time: 15 min Total time: 40 min Serves: 6 2 tbsp canola oil 1 cup yellow onion, chopped 2 tsp
garlic, minced
¼ cup celery, chopped 1 cup chorizo, crumbled* 1 tsp fresh thyme, chopped 1 tsp fresh sage, chopped 1 Sunterra 7-inch cornbread, cubed ¾ cup chicken stock *uncooked chorizo sold in our meat department as Spanish chorizo sausages
Heat oil in a sauté pan over medium-high heat. Add the onions, garlic and celery and sauté until the onions are translucent. Remove chorizo from the sausage casing, crumble and add to the pan. Sauté until fully cooked, then add the herbs and cook for a minute more. Add the cornbread and sauté over low heat, slowly adding stock as the stuffing dries out. Add enough stock to keep the stuffing moist but not soggy. Season to taste with salt and freshly cracked pepper. Serve as is or transfer the pan to a 350F oven to get a crisp top before serving.
BRUSSELS SPROUT AND KALE CAESAR SALAD Prep time: 10 min Total time: 30 min Serves: 2 2½ cups Brussels sprouts 2½ cups kale 4 tbsp Parmigiano Reggiano, shredded 1 lemon ½ cup French bread, cubed 1 tbsp garlic butter, melted 2 Sunterra Farms bacon strips 4oz Sunterra Caesar salad dressing Wash and thinly slice the Brussels sprouts. Wash the kale and cut into bite sized pieces, removing the stem. Grate the Parmigiano Reggiano and cut the lemon into wedges. To make croutons, toss the cubed bread and melted garlic butter in a bowl. Spread the bread out on a lined baking sheet and bake in a 350F oven for about 20 minutes. Meanwhile, fry the bacon. Once crispy, remove from heat, let cool and chop into small pieces. Just before serving, place the Caesar salad dressing in a mixing bowl and add the Brussels sprouts and kale. Toss the greens until they are coated with dressing. Add half of the Parmigiano Reggiano, croutons and bacon bits and toss again. Plate the salad in a serving bowl and sprinkle the remaining Parmigiano Reggiano, croutons and bacon bits on top. Serve with a lemon wedge on the side.

STUFFED PORTOBELLO MUSHROOMS Prep time: 10 min Total time: 30 min Serves: 4 ½ cup red onions, sliced 1 cup bell peppers, sliced 4 medium portobello mushrooms 3 tbsp canola oil 3 tbsp Sunterra basil pesto 4 tbsp Sunterra roasted red pepper and feta dip 4 slices provolone 4 slices Monterey Jack Salt and pepper to taste Preheat oven to 350F. In a frying pan, sauté the onions and bell peppers until tender and season with salt and pepper. Meanwhile, remove the stems and insides of the portobello mushrooms. Place the mushrooms on a lined baking sheet, drizzle with canola oil and season with salt and pepper. Combine the basil pesto and the roasted red pepper and feta dip in a small bowl. Spread the mixture along the bottom of the mushrooms, then stuff the sautéed vegetables inside. Top the mushrooms with one slice each of provolone and Monterey Jack cheese. Place the baking sheet in the oven and cook until the cheese is melted and golden brown, about 10 minutes.

When it comes to prime rib, cooking it low and slow is essential to getting that perfect melt in your mouth texture. Let your roast stand at room temperature for about 30 minutes before roasting to help it cook more evenly. Generously season with salt and pepper. Cook the roast fat side up in a shallow roasting pan at 300F until the internal temperature reaches 135F for medium or medium well. Remove the roast from the oven, cover it with foil and let it rest for 15 minutes. The meat will continue to cook while it is resting. If needed, increase the heat of your oven to 400F and roast for another few minutes to get that nice crisp crust.

If you’re looking for a classic holiday dessert, our plum pudding is bursting with festive flavours! Scratch-made in our markets, we are proud to still follow our original plum pudding recipe. First comes the fruit: our bakers macerate currants, raisins and citrus peels in brandy and wintery spices, like cinnamon and cloves, for at least a week in order to get that signature boozy flavour. The fruit mixture is then added to milk-soaked bread crumbs made from our artisan bread. Finally it’s time for cooking — each pudding is wrapped in cloth and steamed for four hours to achieve that perfect rich, dense texture. Serve your pudding warm with a dollop of our brandy butter for the ultimate seasonal treat.
