Try Spatchcock to Reduce Roasting Time Cook a delicious turkey in no time with our spatchcock turkeys. Spatchcock is a unique method of preparation where the bird is split and laid flat by removing the backbone. This process allows the legs to cook fully while the breast stays juicy. You’ll get more evenly cooked meat and crisp skin in nearly half the time versus a whole turkey.

Preheat your oven to 350F. Remove the spatchcock turkey from its bag and place it skinside-up on a flat roasting sheet. Roast until the internal temperature is 170F in the breast and 180F in the thigh (approx. 30-35 minutes per kg). Once roasted, transfer to a carving board and let rest for 20 minutes before carving.

cooking guide Diagonally score the ham to create a diamond pattern about ¼-inch deep. Brush the ham with glaze, allowing the flavours to penetrate. Place the ham in a 2½-inch deep roasting pan. Add ½ cup to 1 cup of water at the bottom of the roasting pan and cover with aluminum foil to retain moisture. Roast in a preheated oven at 325F (165C) following the roasting time chart. Baste the ham with glaze every 30 minutes until it has reached an internal temperature of 140F (60C). Remove the foil in the last 15 minutes to get a crisp outer layer. If using turkey necks and trimmings, cook until brown and add to the pan. Add the stock and drippings (optional) to the saucepan and bring to a boil. Simmer for 18 to 25 minutes until slightly reduced. Skim and discard any fat that may rise to the top while simmering. When finished, strain the stock to remove the solid ingredients.
