Bring the roast to room temperature. Using a carving knife, carefully slice the rib rack fully off the roast, following the curve of the bones as closely as possible. Set the roast back onto the ribs. Tie the roast and ribs together using kitchen twine, tying a loop in between each rib. This will allow for more even roasting and easier carving. Preheat oven to 500F with a rack in the lower third of the oven.
Place the seasoned roast into a roasting pan boneside-down. Place a meat thermometer into the thickest portion of the meat. Roast at 500˚F for 15 minutes. Reduce heat to 325˚F and continue roasting until desired level of doneness (120F for
rare, 130F for medium rare, 140F for medium, 150F for medium well). Remember the internal temperature of the roast will rise approximately 5 degrees while resting. Remove from oven and transfer to a cutting board. Tent loosely with aluminum foil and let rest for 30 minutes before carving. Remove ribs and string, then slice with a carving knife to serve.

Pour 1L of the cold water into a 16L pot wide enough to fit the turkey or turkey pieces. Add the salt, garlic, sugar and chili powder to the pot and whisk until all the salt and sugar dissolves. Pour in the rest of the water and stir. Place the turkey into the pot breast-side-down. Cover and refrigerate for 24 to 36 hours. Remove the turkey from the brine and pat the turkey dry. Remove the giblets and neck from the body cavity, then rinse and wipe. Sprinkle with salt and pepper inside and out. Place the turkey breast-side-up on a wire rack in a 2½inch deep roasting pan. Brush with canola oil or melted butter.
Cover loosely with aluminum foil and roast in a preheated oven at 325F (165C). Follow the roasting time chart. Baste the turkey with pan drippings every hour. Turkey is fully cooked and ready to eat when the meat thermometer reads 170F (77C) for an unstuffed turkey. Remove the foil in the last hour of roasting for a rich golden brown colour. For a crisp, caramelised crust, brush with maple syrup in the last 30 minutes. Once the turkey is done, transfer to a carving board, keep covered and let rest for 20 to 30 minutes.

Combine the sugar and cinnamon. Set aside. In a large bowl, beat butter and cream cheese on low speed until blended and smooth. Add the flour and salt and continue on low speed until dough just starts holding together. Place the dough in plastic wrap and refrigerate overnight. Remove dough from the fridge one hour prior to use. Divide the dough into three equal pieces and let them rest for 20 minutes. Roll each piece into a 7-inch round on a floured surface. Spread dough with 3 tbsp of the raspberry preserves and sprinkle on cup of the pecans and 1 tbsp cinnamon sugar. Cut the dough into eight equal wedges with a knife or pizza cutter and roll up each wedge, starting at wide ends. Repeat the process with the remaining pieces of dough. Pour wine, water, sugar, cinnamon and star anise into a sauce pot. Zest half of the orange and add to the pot. Then cut the orange in half and squeeze the juice into the pot. Peel the pears, leaving the stem on, and immerse into the wine mixture. Ensure all the pears are fully covered by the liquid.
Poach on medium heat until the pears are just tender. Cooking time varies from 20 to 30 minutes depending on the ripeness or type of pears. Gently transfer the pears to a ceramic bowl. Strain the remaining poaching liquid and return to the saucepot.
Thicken with corn starch and 2 tbsp of water or reduce over medium heat until a syrupy consistency is achieved. Pour the syrup over the pears and refrigerate overnight or for a few hours. Optionally, you may slice the poached pears in half and remove the seeds with a scoop before serving.

Preheat oven to 375F. In a stand mixer, cream butter until soft. Add the brown sugar and continue creaming until soft and fluffy. Mix in egg, molasses and vinegar until combined. Add the flour, salt, baking soda, ginger, cloves, cinnamon and ¼ cup of sugar in a separate bowl and whisk together. Add the dry ingredients to the wet ingredients and mix until fully incorporated. Roll the dough into 1 tablespoon sized balls, dip the balls into the remaining ¼ cup of sugar, and place on a lightly greased baking sheet, flattening slightly. Bake for 10 minutes. Edges should be lightly browned and centre still slightly soft. Transfer the cookies to a wire rack so they cool quickly and do not overbake.
