Foodfirst CEO Eddie Gavigan was born in Scotland and grew up in the Glasgow suburb of Castlemilk.

As a child, he wanted to become a professional football player and by age 14 he played for Celtic Boys Club, a feeder club for the legendary Celtic Football Club. At 16, however, he signed a contract with Greenock Morton and played four seasons in the Scottish Premier League. So how did an aspiring footballer from Castlemilk end up in New Zealand, playing for Mt Wellington? “To be honest, back in 1983, I didn’t even know where New Zealand was,” Gavigan admitted. “My agent at the time had three offers; Australia, Hong Kong or New Zealand. He convinced me to take the New Zealand offer.” Gavigan got a foothold in the New Zealand food industry in 1986 as a sales rep for Bush Boake Allen, a flavour and fragrance manufacturer, before joining Griffith Labs five years later as national sales and marketing manager. Burns Philp Ingredients acquired Griffith, which was subsequently acquired by the Kerry Group in 1998. Gavigan has spent the last 27 years in various senior management positions, working his way up the ranks. From national sales and marketing manager, he moved to commercial director, before being appointed general manger NZ in 2002. In 2008 he served as general manager ANZ, before making a move to Singapore as VP/general manager APAC for Kerry’s Meat and Culinary Wet. His most recent role was VP general manager of Thailand for Kerry APAC, where he stayed for three and a half years before moving to Australia in 2017. Gavigan’s drive is to make Foodfirst the leading food co-operative, with new team members bringing focus, drive and excellent skills to support the network. The improved alignment with suppliers is improving the Foodfirst offering. "Our increased involvement

CHAMPION SCONE MIX Product Description: A versatile scone premix. Shelf Life: 9 months, when stored in cool and dry place. Product Status: None of the ingredients used in the manufacture of this product have been derived from any genetically modified materials, therefore this product can be classified as non-GMO. WHAT MAKES A GOOD KIDS MENU? Every parent dreams of having a kid that craves broccoli over chicken nuggets—but how realistic is this? Tailoring a kids menu requires walking a fine line between nutrition and appeal, something that Steve Gough, owner of Albert’s Post understands. “We have vegetable sticks and hummus on the Albert’s Post kids’ menu, which sits nicely alongside the tried and true favourites like pizza.” But appeal and nutrition are not the only things that matter. Parents often want to challenge their kids’ perception of food. Peter Jackson, executive chef of Mexico, said, “When I create my main menu, I create the kid’s menu from this, using the same dish items and components so kids can make their own choices. Parents love the fact that food is very similar to the main menu items, teaching kids to eat a variety of food they would not normally eat at home. Our kid’s menus offer a refreshing change, but more importantly, fresh, healthy food made to order.” Lastly, if all else fails, entertainment is always a way to encourage kids to eat. Michael Dearth, owner of Baduzzi, said, “The menu itself has to be entertaining with games and riddles.”

HERB ¯ ROASTED HASSELBACK POTATOES A fabulous recipe for herb-roasted Hasselback potatoes using general purpose, NZ grown potatoes like Desiree, Rua or Moonlight varieties. Desiree, Rua, Moonlight) • 6 sprigs fresh thyme or rosemary • 8 cloves garlic • ¼ cup olive oil • ½ cup parmesan cheese, grated • Salt and pepper • Fresh thyme to garnish Method Preheat oven to 220˚C, (200˚C fan-forced). Prepare potatoes by carefully cutting 3-5mm thick slices along each potato. You can have a wooden spoon sitting alongside
the potatoes to help stop you cutting the whole way through. Place potatoes on a lined baking tray, or baking dish and tuck a slice of garlic and the herbs in between each potato slit – it doesn’t have to be perfect. Drizzle with olive oil and season with salt
and pepper. Roast for 40 minutes, remove from oven and sprinkle with Parmesan. Roast for a further 5-10 minutes or until golden brown (larger potatoes may need slightly longer). Garnish with a few extra fresh herbs.

THE BUDDING HEMP INDUSTRY Last year the New Zealand Government announced that hemp seeds as food would be legalised, much to the surprise of consumers. The Beehive announced that hemp seeds would be treated just like any other edible seed. “The Misuse of Drugs (Industrial Hemp) Regulations 2006 and the Food Regulations 2015 will be amended to allow the sale of hemp seed as food. Hemp flowers and leaves will not be permitted,” announced Food Safety Minister Damien O’Connor. Even with the consumption of hemp allowed there are still an array of restrictions that surround the nutrient-dense seed. Hemp seed food items are prohibited from featuring the word ‘cannabis’ or displaying a cannabis leaf on their packaging. While New Zealand consumers still have a long way to go with their hemp education, there is an increasing trend of adopting the seed as the next great superfood. This isn’t surprising, considering that hemp is thought to be one of the most nutrient-dense seeds on the planet. “Hemp truly is a wonder food. If ever a food deserved the title ‘super’, hemp would be it,” said Scott Baragwanath of Blue Frog Breakfast. So, what are the benefits? Hemp seeds are a complete source of protein and contain all nine essential amino acids; They also contain fatty acids omega-3 and omega-6. Hemp is also high in fibre and full of vitamins and minerals. These benefits make it great for heart health, reducing inflammation, improving certain skin conditions, relieving rheumatoid arthritis and regulating the immune system. With such a long list of benefits it’s no wonder that the industrial hemp market is expected to reach US$10.6 billion by 2025. Grand View Research is anticipating that the market will continue to grow at a CAGR of 14 percent. New Zealand growers and importers have noticed the demand for the seed with stocks around the country selling out. “We sold the local supplier out last year and have had trouble obtaining New Zealand supply. This season changes that as it shapes up to be the largest yet,” said Chris Woodney, director of NZ Hemp Brokers. Is the introduction of hemp just the beginning? Is cannabis the next big thing to be legalised? 2020 will see New Zealanders vote on the legalisation of cannabis for personal use. While some have strong opinions about the referendum, if legalised it there is potential growth opportunities for the foodservice industry. Cannabis industry experts are predicting that America’s cannabidiol (CBD) market alone is expected to reach $22 billion by 2022. America has recently seen an influx of CBD infused foods and beverages. Constellation

Brands has reportedly been buying stocks in Canadian cannabis company Canopy Growth as have major players Heineken and Molson Coors—even CocaCola is reportedly eyeing a similar opportunity. “We think CBD has some real functional benefits and we want to position ourselves as a healthier drinks company. That’s a good space to be in and certainly where the trend is at the moment,” said Chris Morrison of Karma Cola. With an influx of hemp and cannabis products, we are sure to see a shakeup of what chefs and restaurateurs can offer across New Zealand’s restaurant and café scene. “We’ll start to see more hemp suppliers innovate with hemp seeds and oils, starting a food revolution and encouraging food entrepreneurs to create change,” added Antoinette Laird, head of external relations, Foodstuffs NZ. Hemp can help fight global warming. Hemp consumes four times as much CO2 as trees do, and its short 12-to-14-week growing cycle makes it an incredibly sustainable crop. Hemp is believed to be the first domestically-cultivated plant, with evidence of hemp fabric found in Turkey thought to be 8,000 years old. Hemp paper is naturally acid-free and so does not yellow as quickly as tree pulpbased paper.

• 220ml Alpro Soya ‘For Professionals’ • 10ml (sugar-free) vanilla syrup or 1 tsp vanilla essence • 2g spirulina powder Put the spirulina powder and vanilla syrup in a glass.

As veganism and plant-based living grow in popularity, the dairy-free milk industry is diversifying at an astonishing rate to keep up with demand. Soymilk is no longer the default choice, with many cafés choosing these days to also stock almond milk and coconut milk as standard. With a relatively simple manufacturing process, dairy free milks made from all kinds of grains, nuts, and legumes are popping up left, right, and centre.
