sk any chef, owner or operator, what it is that makes or breaks a restaurant? Most will tell you it is the people. However, even the most skilled among us will acknowledge that your team can only do so much without the proper ingredients, products, services, resources, and tools to do the job. In this our second Restaurant & Cafe Buyer’s Guide, we’ve once again curated a wide range of products and services that will improve a restaurant or cafe’s overall business. Whether it’s a ready-to-go gravy or jus, the latest equipment for the kitchen, or glassware that can take the knocks, the products and services outlined here elevate and inspire menu offerings, can streamline back-ofhouse and up the performance of any establishment.

Hospitality is all about people, your team and your customers. Operators who can turn a meal into an experience; put customers at ease and who are the backbone of the foodservice industry in New Zealand. We are here to help industry innovators to do what they do best, by being better informed of the options that are in the market today.

HELLERS

Five generations on, and you could say that butcher is in the name. The Heller family tradition of butcheries began in the 1880’s where smallgoods were supplied to the gold miners from a small shop in Arrowtown. Todd Heller continued the long line of butchers by opening his first butchery in New Brighton, Christchurch, in 1985. Inspired by his travels, Todd began offering greater variety and new flavours – very little of which were available at the time. Todd Heller Meats started supplying supermarkets, outgrew the old factory, moved to a new plant at Kaiapoi and began supplying throughout the South Island. When the company began distributing nationally in 2002, the London Pride sausage was created and judged New Zealand’s best sausage.

Today over 500 staff can produce up to 800 tonnes of sausages in 80 different varieties a week along with bacon, ham and other service deli smallgoods. In more recent years, Hellers has taken on brands Santa Rosa, bringing turkey and chicken into market in various flavours and cuts. The second brand is the historic Kiwi Bacon, an ethical and natural bacon and ham range taking the pork industry by storm. Other brands include Huttons and Ryans. Driven with a vision to bring both traditional and innovative new tastes available to Kiwis everywhere, Hellers is New Zealand’s leading brand of sausages, bacon, ham and small goods.

WALNUTS NEW ZEALAND

FOOD BEVERAGE

Think a walnut is a walnut? Think again. When it comes to nuts, freshness is everything. Once cracked the clock is ticking on flavour, texture and nutritional value. Imported walnuts are cracked many months before they get to New Zealand, meaning that they are well past their prime by the time you use them. Walnuts New Zealand’s walnuts are grown right here in New Zealand, and cracked to order, meaning you get the freshest walnuts around. You can taste the difference – crisp, sweet and flavoursome. Simply delicious and so versatile. Walnuts New Zealand is a co-operative of around 50 passionate growers based in Canterbury, nurturing their orchards over decades and sharing expertise to bring customers the highest quality, freshest walnuts. The orchards limit spray usage, and all nuts are tested to be free of any spray residues. The range offers ice making solutions for all domestic and commercial requirements including restaurants, cafés, bars, hotels, supermarkets, luxury yachts, ice suppliers, medical care facilities and any other industries requiring ice. Hoshizaki machines are designed for commercial use and offer a variety of shapes and sizes, so it is important to consider these factors when looking for the correct ice machine for your business. For instance, a tall ice machine may not suit a café or restaurant with limited space, therefore an under-counter ice machine option could

be considered. Hoshizaki is the only brand offering the unique crescent style ice cubes – a hard, slow melting ice that keeps drinks cool while melting slowly. Hoshizaki is also the only brand to offer stainless steel evaporator plates in most models. The biggest advantage of a stainless-steel plate is it prevents flaking and evaporator wear and tear, ensuring longer life and consistent performance. In New Zealand, Hoshizaki is distributed by Steelfort a family owned business operating since 1946. With growing demand and a wider range available, Steelfort has made Hoshizaki ice machines price competitive and offers comprehensive after sales parts and service backup, essential for machines working in a commercial environment.

INSINKERATOR Inefficiencies, down the drain – foodservice disposers from InSinkErator. Over 80 years ago, InSinkErator invented the very first food waste disposer. Today, foodservice facilities world wide rely on InSinkErator food waste disposers to help their kitchens run at peak performance. From restaurants and hotels to healthcare and education institutes, its disposers are proven to divert food from landfills, improve kitchen hygiene and reduce overall operating costs. According to the NZ Ministry for the Environment, 700,000 tonnes of organic waste is trucked to landfills each year in New Zealand. Once there, waste quickly decomposes and produces methane, an environmentally harmful greenhouse gas at least 21 times more potent than CO². In contrast, InSinkErator disposers provide a convenient alternative to transporting food waste to landfills. Plus, capable wastewater treatment plants can even recycle the food waste to produce energy that helps power the facility. It’s no secret: food scraps disposed of in bins create odours, attract pests and serves as

a breeding ground for bacteria. InSinkErator disposers help keep food waste out of rubbish bins improving kitchen sanitation and hygiene. They also cut staff trips to the bin and reduce waste hauling costs, all while increasing kitchen efficiencies and profitability. InSinkErator food waste disposers can play an important role in saving your operation money and minimising your carbon footprint. And with payback of initial investment in as little as one year, it’s just good business.

For more information and to see their range of five commercial models, visit InSinkErator.co.nz

MENUMASTER - SEARCHFIELD Commercial microwave ovens by design are one of the most efficient and lowest cost appliances found in commercial foodservice kitchens. Commercial microwaves use up to 80 percent less energy than conventional ovens. Microwave ovens cut energy costs by only using energy when cooking – eliminating the need for pre-cooking and holding. During the cooking process, existing water molecules within the food are activated to create steam and shorten cook times even more. Plus there’s no need for costly ventilation.

The next step up is the Xpress range (pictured). These have convection and forced air options that maintain crispness and freshness. The forced air (impinger) also allows us to brown and crisp while at the same time using microwaves to heat. Only the best for your kitchen.

SHEPHERD FILTERS

New Zealand’s top kitchens are getting on board disposable grease filter revolution. The game is changing for New Zealand’s restaurant industry. Frustrated by the undesirable cleaning of traditional metal filters; removing, soaking overnight, pressure washing in the morning, sending a river of chemicals and grease down the drain; kitchen staff are demanding an easier process; one with a smaller carbon footprint. Furthermore, metal filters divert only 20-40% of airborne grease, meaning despite all cleaning effort, up to 80% of the grease can escape through filters into the hood, ducting and onto the roof. For kitchen owners, the hefty cost of a duct cleaner scraping this treacle-like enemy from exhaust systems is a painful experience. Meanwhile, working environments become very unattractive for kitchen staff, as grease drips from hoods, coating every available surface in the room. Murray Upton, of Waihi Beach Bakery says working in a bakery is ‘similar to working in a hot oven.’ With an atmosphere like this, kitchen owners are taking every step they can to minimise controllable discomforts; the most disagreeable being grease. Consequently, forward-thinking kitchens

are adopting an exciting new biodegradable disposable grease filter; Shepherd Filters. ‘Shepherd Filters are perfect for maintaining a comfortable working environment,’ Upton says. ‘They are easy to install, fit perfectly and reduce maintenance and cleaning.’ Named the AIRAH ‘2019 Product of the Year,’ Shepherd Filters are compostable grease filters, made of 100% natural NZ wool. The wool captures the grease, eliminating the need for chemicals. These filters can be changed out with a simple clip process, taking under 60 seconds per filter. Staff will notice it easier to clean kitchen surfaces, as Shepherd Filters capture up to 98% of the grease floating in the air, leaving the entire kitchen cleaner and smelling better. Furthermore, natural wool makes Shepherd Filters fire-retardant. It only takes 2mm of grease to fuel a kitchen fire, yet standard filters cause major grease build-up between duct cleans, putting kitchens at risk for a large amount of the year. By never allowing grease to build up inside the duct, Shepherd Filters offer your kitchen protection 24/7, 365 days a year.

SKOPE: FOCUS ON WHAT MATTERS WITH REFLEX FOOD STORAGE Spend more time on what’s on the plate, not what’s in the fridge If you work in food service, you’re short of time - and you can’t afford to spend it managing your cool storage. That’s something SKOPE Refrigeration has recognised with its new ReFlex series of food storage fridges and freezers that

took out the top equipment award at last year’s Fine Food Australia show. Like all SKOPE fridges, they are on the cutting edge of high-performance efficiency and natural refrigerant green thinking. But what really sets ReFlex apart are the food-grade 304 stainless steel builds and the digital innovation of the free SKOPE-connect app. When it comes to food safety and quality, both have your back. Here’s how: While the quality of the build can deliver market-leading reliability, the app provides an extra layer of protection by keeping you in the know and streamlining the actions you need to take to protect your food stocks. fridge or freezer you get an alert on your smartphone so you can take action. If the temperature records are needed for HACCP compliance, you simply export the data from your mobile device at the touch of the screen. No more fiddling about with temperature probes. But ReFlex even has your back when you need to make big changes. In the past, if you changed the food you store to keep up with a menu change, that meant calling in a tech to re-optimise the fridge’s temperature or even buying extra refrigeration. With SKOPE-connect and ReFlex, you can change temperature settings by using the app’s handy pre-sets. You can calibrate your fridge from fresh fish to poultry or your freezer from ice cream to soft serve in moments. ReFlex – Reliable Strength. Incredible Technology.

Energy efficient gas-infrared heaters are an ideal solution to cater for this trend. Since in many restaurants and hotels, natural gas or

Hence, the air is not heated directly. The
