oving to the UK from Australia, Christen Pears and Chris Blake had a pretty clear idea of what they wanted from their new home. ‘We were specifically looking for a property with holiday cottages,’ says Christen. ‘I travelled ahead of Chris with an agreed list of nine properties to view in Cornwall and Devon. But that search stopped short after the very first viewing. This house ticked so many boxes and felt so right, I just knew it was meant to be.’ Cancelling the other viewings was a bold move, especially for a house that wasn’t the classic Georgian property Christen had thought she wanted. ‘I love that look but this house, although lacking in period features, had the cottages we wanted, space for a Pilates studio and an amazing garden,’ she says. The previous owner had renovated much of the house, but some parts of the property still needed attention. ‘The floors upstairs weren’t great and the old conservatory was held on with duct tape and had greenery growing through it,’ says Christen. ‘It involved a bit more work than we anticipated.’ A new extension resolved the wobbly conservatory and gave the couple space for an extra bathroom, too. ‘We’ve done our best to preserve the few original features that were here, and beyond that, we’ve tried to respect the house in our choices, reusing materials and running with a rustic feel.’ Christen took time to create a palette of soft, warm greys that worked in the predominately open-plan space. And while the couple have filled their home with mid-century classics, they have chosen from the rustic end of the spectrum, selecting chunkier styling and sticking with natural materials, such as leather and wood. The result is homely and inviting. Even the practical spaces have modern-rustic charm. Top of Christen’s wish list was a pantry, but they found space for a much larger scullery. ‘The scullery is great for keeping all the mess out of the open-plan kitchen when we’re entertaining,’ she says. They reused parts of the old kitchen to create the scullery, painting it a fresh shade of green. Repurposing materials not only helped keep costs down, but also created a relaxed and timeless look. A spacious downstairs cupboard was built from old floorboards and, out in the barn, Christen’s ever-growing book collection is housed on shelving made from scaffold boards. Although the barn was one of the selling points for Christen, it wasn’t in good condition. ‘The lower walls are granite and the top part is cob, so that needed completely redoing, using traditional methods and lime plaster. But it gave us a chance to put in a massive fireplace,’ says Christen. The asbestos and polycarbonate roof was also removed and salvaged beams were fitted. Before starting the work on their own house, the couple completely renovated the three cottages, plus the barn and the studio to get their businesses up and running. ’Doing things that way round gave us time to get to know the space and understand what works – you can’t overestimate the importance of that.’ To stay at one of the cottages, visit middlecolensofarm.co.uk

How do you make a mix of different furniture styles work? ‘I simply choose pieces of furniture that appeal to me. I suppose I was subconsciously following Josef Frank’s idea of Accidentism; in other words, if you mix styles and objects you like they will somehow blend harmoniously together.’

Which mid-century European finds are the best fit for an English country backdrop? ‘Rustic pieces with an emphasis on wood and leather lend themselves to a country setting.’

What about pattern and colour? ‘I’m quite cautious when it comes to pattern. When I do use it, it tends to be subtle. The exception is Josef Frank’s glorious botanical prints.’

mill house tucked away in a rural valley just three miles west of Dartmouth and a quick walk to the picturesque beach of Blackpool Sands became a bolthole escape from London life for Tanya Bird. It proved to be an idyllic spot for her and her three sons to enjoy holidays away from the city, with all the freedom afforded by the country-meets-seaside location. ‘It was a magical place for the boys to grow up,’ she says ‘Surrounded by the sea, they would spend hours swimming, sailing and making camps. All their childhood summers were enjoyed here, as well as Christmas and Easter breaks. It has always been very much a home from home for us.’ Fast forward 17 years and the boys, now young adults, are at different stages in life and family trips to the mill are saved for a few precious weeks each year. ‘The time felt right to renovate the mill and to rent it out as a holiday let between our visits,’ says Tanya. 'I approached Unique Home Stays and they suggested a couple of designers to help me manage the process.’ After initial meetings, Tanya commissioned Siobhan Hayles and worked closely with her on all elements of the transformation. ‘Siobhan has an incredible eye, both creatively and practically, and really helped to realise my vision. what I wanted, but she took my ideas to a level that I would never have achieved on my own,’ says Tanya. With Siobhan’s trusted trades team on board, building work commenced in the spring of 2017 and by the start of August that year, Tanya had her first bookings. Originally a working mill on the River Em, Ellesmera is one of four mills positioned along the stream and consists of two structures, linked together by a vaulted kitchen space at the rear. Initial work on the house involved damp proofing the property and digging new channels around the exterior to improve drainage, while pipework was updated for the water supply. On the ground floor, a former boat and wood store has been converted into an open outdoor/indoor snug that has transformed the house. The space features a woodburner, comfy sofas covered in throws, timeworn kilim cushions and old garden paraphernalia displayed eclectically on the original stone walls. ‘Whatever the weather, you can cosy up and feel close to nature,’ says Tanya. A decked platform replaces a former sloping lawn, while French doors from the adjacent dining room open onto original mill stones that have been inlaid into the deck as a nod to the property’s history. The boys’ former bunkroom has been updated with a stylish monochrome bedroom scheme; and the bathroom has been refreshed with a freestanding > 42

You haven't used traditional beach house colours – why is that? ‘I wanted the space to feel elegant and timeless. A predominantly white backdrop avoids the clichéd look and is very soothing.’

How practical is white in a busy family space? ‘White is surprisingly practical and can easily be refreshed. The simplicity creates an airy, almost sanctuary-like feel.’

How hard is it to create interest in a largely white scheme? ‘We mixed in natural, earthy tones and occasional pops of brighter colour to punctuate the space. The all-white bedroom features over 20 different shades but still feels cosy.’

Throughout, rustic-finish rooms have been redecorated in shades of off-white, stone and soft mole, while pops of ochre, turquoise, warm reds, earthy oranges, dark blues and black punctuate soft furnishings, rugs, fabrics, and headboards. Original French herbarium specimens and fossils reference Tanya’s academic background in natural sciences and her passion for plants. Much of the conceptual work was completed remotely, followed by visits with Siobhan to Chelsea Harbour and Ardingly Antiques Fair to source fabrics and one-off finds. ‘I originally fell in love with the mill for its sense of calm and relaxed Provençal feel,’ says Tanya. ‘After 15 years of family life, it desperately needed renovating, but I didn’t want to spoil its inherent charm.’ A beam in the living room still bears a Latin imprint, painted by the previous owner: This corner of the earth smiles for me more than any other. ‘These markings are all part of the history of the mill and I wanted to treasure them. Siobhan understood my need to preserve the essence of the space. I wanted our home to feel comfortable and to have a sense of place and authenticity. When I walk through the door now, those sensory benchmarks are as strong as ever – I couldn’t be more delighted.’ Ellesmera Mill is available to rent via uniquehomestays.com

hat made them buy their home is an easy question for Helen and Rob Harry to answer. ‘The views, its character and, in particular, the exposed stone, wooden beams and numerous charming features,’ says Helen. ‘Also, the location on the Welsh coast makes for the perfect family home, being near the seaside and countryside but also easily accessible to the motorway for Rob’s work.’ The couple were already living in the area in a modern house. ‘But as our family started to grow and Rob’s career took off, we decided we wanted more space and for the kids to grow up in a rural setting,’ says Helen. ‘I’d always really wanted to do up an older property, especially after having previously refurbished two new builds, so when Rob spotted the barn for sale, we viewed it and, to be honest, the moment we saw it we imagined enjoying cosy nights in with the children and years of memory making. Plus, on a practical level, it allowed us to remain close to our family, friends and good schools.’ Although originally converted in 1999, there was, as is often the case, more to do to the place than the couple anticipated, so although it was not their original intention, they ended up completely renovating the barn from top to bottom. adding new plumbing and electrics, replacing the bathrooms, relocating the staircase and totally refitting the kitchen and utility room. ‘But we took the long-term view that if something needed fixing, we’d rather tackle it now and know we’d done it well. Then when it was finished, we could sit back and enjoy the home we’d created together without worrying about future problems cropping up.’ The couple were heavily involved in the renovation; when the building work began Helen was on site every day and Rob was always on the end of the phone. ‘We employed an experienced family-run building company that we had used before,’ says Helen. ‘Our builder project-managed the co-ordination of all the tradespeople, but the structural changes, design and interior styling were very much a team effort led by Rob and me. Rob has a great eye for detail and knows exactly what he wants when it comes to creating a space that works for us, and my role is choosing the colours, textures, fixtures, fittings and furniture, and pulling the whole scheme together once all the dust has settled. We make a good team. ‘We started by knocking a bedroom and old bathroom into a luxurious open-plan main suite for ourselves, complete with freestanding bath. The kitchen followed shortly afterwards as I knew exactly > 54

What stone additions did you make? ‘The high ceilings demanded a huge heat source for winter, so we built the big stone fireplace in the living room to accommodate a large log burner. We also wanted to improve the light in the kitchen, so we added another window incorporating a stone surround.’

How did you choose a master stonemason? ‘We contacted an experienced local stonemason who knew how to blend in the new with the old. The window looks like it has always been there.’

Any tips to share? ‘Be guided by the professionals; their skill is invaluable. Also, get the right planning permission and check building regulations.’

This is the oldest pub in Porthcawl and, with a wood fire and delicious Sunday lunches, it’s a great place to relax on a chilly lunchtime. It’s dog friendly, too! how I wanted to modernise that space as soon as I saw it. Both our bedroom and the kitchen are linked by a huge glass wall so the decor in both had to complement each other.’ However, outside wasn’t as simple. The property is a Grade II-listed building, so even getting an additional kitchen window meant negotiating for months to secure planning permission. ‘We contacted a highly experienced local stonemason, who we knew understood these buildings and he did an outstanding job of blending in the new window to look as if it had always been there,’ says Helen. The family lived in the barn during most of the work, apart from three weeks when the majority of the place was gutted and the ‘Beast from the East’ decided to make an appearance. Helen admits, ‘I’d be lying if I didn’t say the early days of the build were stressful and long, especially living on site with a young family. But with a great building team and my pragmatist husband by my side, I just kept thinking about the end game and why we started the journey in the first place and it was that attitude that got us through.’ The work took about a year from start to finish. ‘A house this age and size rarely comes without its foibles,’ says Helen. ‘So we genuinely feel we’ve earned our stripes on this one. But the barn deserved to be a beauty again and I believe that’s what we’ve made it.’

here’s a fairy-tale, gingerbread house feel to Jane and Richard Stark’s beautiful Cotswold home – it’s the frosted white façade and the green paintwork, liked piped icing, around the Gothic windows. Yet once over the farmhouse’s doorstep, just like magic, the interior looks like a typical English country cottage, with low ceilings, beams and an Aga. The Strawberry Hill Gothic exterior was a major attraction when the couple first came to view the property. They were living in a cottage nearby, but decided to move when their son Oliver came along. The property had begun life as a cottage and was extended over some 100 years until in the 1800s the Strawberry Hill Gothic frontage was added. ‘This house was much bigger than we had intended,’ says Jane. ‘We viewed it and thought it had character and was slightly quirky. It didn’t look English; more middle European. But we fell in love with it. It had a warm, cosy, lived-in family feel, especially the kitchendiner with its Aga at the heart of the house.’ The property was in good condition, so didn’t require much modernisation – a few of the windows needed repairing, plus missing roof tiles had to be replaced, walls repointed and the exterior repainted. ‘Because the house is Grade II listed, work had to be done using traditional >

methods and materials,’ says Richard. An instant transformation occurred when they changed the colour around the windows from a yellowy-orange shade into a fresh green that complements the cream walls. Inside, Jane and Richard decided to embrace more colour. ‘When we lived in our previous cottage, everything was neutral and we regretted not introducing more colour and pattern,’ says Jane. ‘We thought this house could take strong shades because it’s so big, and it would help us put our individual stamp on it. Plus, we knew we could always paint over it if we didn’t like it.’ The starting point for the bold decor in the snug was a teal velvet chair that Jane found. ‘I wanted the room to feel like a jewellery box and bought the teal chair, followed by a purple one. I then had to work out what colour would work with those jewel tones. We spotted a teal paint and I knew it would pull the look together.’ Sumptuous velvet cushions and gold accessories complete the opulent look. The kitchen with its Shaker-style units was given a refresh, with the cabinets painted a neutral shade that complements the cream Aga and the rustic wooden beams. The island has been painted in the same teal as the walls of the snug to link the two rooms and add drama. A classic scheme was chosen for the living room. ‘I spotted an offcut of fabric that I loved in an interiors shop > 64

and I thought it would work for the curtains,’ says Jane. ‘I built the rest of the room around it. We chose a bold blue for the walls, and offset it with neutral furniture and raw wood pieces from Scumble Goosie, which gives it a relaxed look. We saw this house as being like a big cottage and raw wood furniture works really well as it introduces a cosy country feel.’ The one part of the house that doesn’t feel like a cottage is the large hall, complete with pyramid roof. ‘When we first viewed the house, it was full of ancestral portraits and antelope heads,’ says Richard. ‘We were daunted by the scale of the room, which felt somewhat cold, large and anonymous. Then we had the idea of turning it into a library room, which has made it feel cosier and much more welcoming.’ The solution was to add panelling painted in a soft green on one wall and go really bold with patterned wallpaper, inspired by the garden outside. To complement the eclectic feel, the couple replaced the existing heavy metal lantern with a long chandelier created from wood shavings by Tom Raffield. The house is still a work in progress, but it’s proving to be the perfect country home. ‘We have woodpeckers, thrushes, owls, buzzards, foxes, deer, rabbits and badgers in the garden,’ says Richard. ‘We have a large terrace and we open the double doors in the kitchen to bring the outdoors in. It feels like we’ve always been here.’> 66

LIVING THE DREAM Jane has used colour and pattern to inject personality and interest

What colours and patterns do you like? ‘I love colours that I find in nature, so greens and blues, but also purples, pinks, reds and yellows. In fact, I like colour in general! I tend to be drawn to organic patterns, such as trees, plants, flowers or animals, or abstract patterns that feel quite organic.’

Why did you decide on such dramatic decor? ‘While I like neutral, muted tones, they can feel a bit boring if they are everywhere and result in a house that lacks character and personality.’

Have your choices altered the feel of the rooms? ‘In the teal snug, the intense colour has made the room feel more cosy. While in the library, the panelling, bold wallpaper and the chandelier have made it more welcoming.’

Kirkby Lonsdale THE PICTURESQUE FORMER MILL TOWN SURROUNDED BY NATIONAL PARKS

aving one famous beauty spot on your doorstep is impressive enough, but Kirkby Lonsdale, on the River Lune in Cumbria, enjoys three. The Lake District and the Yorkshire Dales sit alongside it, while to the south lies the atmospheric Forest of Bowland. Local landmark Devil’s Bridge, once the only bridge over the river for miles, is now closed to traffic and has become a popular recreational spot. There are 163 listed buildings in the town, many of which are occupied by independent shops, and community spirit is in abundance. ‘From postmaster to fireman, you know them all,’ says local tourist officer Janet Nuttall.

Take your pick of elegant Georgian townhouses and terraced stone cottages, often set on cobbled courtyards. Expect slate roofs and charmingly named streets, such as Salt Pie Lane. Parking is more difficult to come by. Most buyers come for quality of life – to raise a family, or redress work-life balance. The second homes market is also strong. ‘High demand means satellite villages – High and Low Biggins, Barbon, Casterton and Arkholme – are all sought after,’ says Jo Bond, estate agent at Davis & Bowring. The churches are active, holding regular concerts, with preparations now gearing up for December’s threeday Christmas Fair. Plus, the brewery holds regular movie nights, and

motorbike enthusiasts congregate at Devil’s Bridge on Sundays. Locals also love to climb the Radical Steps on a sunny day to soak up the famed Ruskin’s View. SCHOOLS It’s good reports all round. The local primary was rated ‘excellent’ by Ofsted, while the secondary achieved ‘outstanding’. GET AROUND Only seven miles from the M6, Kirkby is wellconnected despite its bucolic setting. Lancaster and Oxenholme railway stations are nearby. IN THE AREA From fell walking to mountain biking, outdoor pursuits are a given. There are waterfalls at Ingleton, and caves at White Scar. istening to Julia Brendel talk about her fabrics, it is easy to see how she has drawn major interest with her unique take on folk patterns and archive designs. Her passion and creative capture of traditional patterns keep her clients enthused, but Julia would be the first to say that it was a lengthy process deciding how to make her mark. ‘I live in a lovely little village in Kent, in a beautiful Tudor and Georgian house, but I’m originally a city girl from Poznań in Poland,’ explains Julia. ‘It was being in this country, in a quiet, beautiful place, that gave me an outlet to begin a new career.’ Always a creative person, and with a background in product design, Julia says, ‘I wanted more than just being at home with my children and I missed the artistic opportunities that stopped when I had my family. Also, I’m what my friends call a “perpetual beginner”, having done all sorts of practical arts and craft classes. I needed a career that blended all kinds of imaginative inroads and outputs.’ It was at one of these courses, at the V&A in London, that the seed of an idea was planted

in Julia’s mind. A cushion-making class, inspired by folk-style costumes of the Ballets Russes, led Julia to draw upon her own Polish roots. ‘Our villages have unique customs and I’ve always loved how Polish places have different costumes, embroidery and woven patterns celebrating their history,’ she says. ‘This course was a serendipitous moment that sparked my career path, creating textiles inspired by my Hungarian and Polish past.’ Julia returned to Poland to search out traditional weavers and their historic skills, but looked to British talent, too. ‘Polish textile weaving is world renowned for its intricate yet still modest finish,’ she says. ‘I really wanted to capitalise on this authentic advantage but I also wanted to use UK weavers for their artisan techniques.’ Julia’s large, bright, barn-style studio provides a creative hub to work in, yet she can still be on hand for her family. ‘Folk designs are mainly inspired by nature, with the colour palette taken from local fauna and flora and the light,’ she explains. ‘Living in the countryside brings me closer to this natural environment. There is huge design potential in the wildlife here in Kent, with its many >

MY DESIGN STUDIO – I’M IN THE VILLAGE JUST ❝ MINUTES AWAY FROM SHOPS AND EVERYTHING I NEED, AND ONLY AN HOUR FROM LONDON beautiful flowers, birds, butterflies and even my vegetable garden – they all inspire my patterns and designs.’ Her Hungarica, Arabica and India collections all hint at Julia’s interest in travel and her eclectic look at the world’s heritage. The newest designs are called Tribes and Laibik. ‘They are very much a melange of influences that I’ve seen during my travels, at exhibitions, in books and on the Internet; effects that I experienced and loved,’ says Julia. ‘I can't count all the separate elements that contributed to these collections. Designing Tribes, with its horizontal and vertical stripes, and Laibik – inspired by the beautiful costumes of Polish highlanders – was a bit like throwing different scraps and

sketches from my memory into a bag, then shaking it and pouring it onto the fabric.’ Julia also worked hard to ensure that the earthy colours of raspberry, amber, midnight blue and wheatgrass were all sympathetic and work well when mixed together across the designs, creating a cohesive and pleasing combination. Bespoke colours are also available. Julia’s fabrics are sold by the metre but she also sells ready-made table linens, cushions and lampshades. Julia admits she was lucky to be in a good financial position when she started, as her husband, Gerry, had just retired and there was money behind her to begin with. That security, plus her positive attitude, gave Julia the confidence to take on more than just a designer’s hat, securing places to sell, thinking of retail strategies and sorting out trade fair opportunities. ‘When I look back, I realise I’ve learnt so much with every high and low,’ she says. ‘I think being in the right place has allowed me to do this. That, and sometimes the odd late night!’ Julia has found like-minded fabric designers very supportive, too. ‘I met Sarah Hardaker at one of my first trade fairs and she gave me lots of tips and even shared some of her resources, which was incredibly generous,’ she says. ‘I love the fact I work in such a creative community. Even though I work alone in the country, there are many ways to connect, whether it’s to find suppliers or a dose of support on a bad day.’ The hard work has ensured many highlights for Julia, from early positive feedback at trade shows to when her fabrics were used to make costumes for a Polish national opera. ‘I have my sweet moments every day; it might be a good customer review that reminds me how much I’ve progressed,’ says Julia. ‘I’m a long way from where I was born, but I really believe that I’ve found a new spiritual home to revive my roots with my designs.’ Julia Brendel, 01795 599840, juliabrendel.com

DON’T BE OVERLOOKED With the textile industry being highly competitive and full of big brands with even bigger budgets, it’s easy for smaller companies to get lost in the crowd. ‘It’s important to target the right customers with their own unique or specific information,’ says Julia. ‘This will help to build up brand trust, loyalty and business.’ FIND YOUR USP TO ATTRACT LIKE-MINDED CLIENTS ‘I make authentic, culturally and archive-inspired designs,’ says Julia. ‘I know my textiles are of specific interest to a certain amount of people. It’s not for everyone but it’s far better to draw a smaller but correct crowd.’ MAKE YOUR WEBSITE WORK HARD ‘Although I have stockists, they don’t have full stock,’ says Julia. ‘A customer may have a fabric sample book in their shop, but they won’t have my scarves or all the cushions, so the best way for me to drive sales is for a retail client to visit my website. I make sure it’s well stocked and frequently updated with new items. I write blog posts to keep it

informative and I produce newsletters, which non-subscribers can see. I don’t want to bombard people with lots of emails, so this way, visitors can dip in and out of the information they want to view. Newsletters and blogs have to be more than just about driving sales to gain attention and you have to be far more creative. I’m passionate about what I do so I hope this comes through in an infectious update!’ TARGET TRADE SHOWS ‘I’ve done large and small fairs with different outcomes in varied timescales,’ says Julia. ‘Large interiors shows are more expensive, and you might not see any benefits for a while due to lead times, but they do attract clients from further afield, even worldwide. Smaller shows let you be more specific with regards to sales driving and I can choose to market just one item or provide an overview of my brand. I also do a couple of seasonal gift shows at Christmas and link up with my Polish community at another. Make sure you research who else is attending the fair and where you’ll be positioned, so you attract the right people.’

USE SOCIAL MEDIA WISELY ‘I make good use of various social media platforms to get my message out or to do research, whether it’s to find business clients or to reach the end purchaser,’ says Julia. ‘I found a fair via Facebook, which I attended and it was really successful. This platform is great for finding a like-minded community and industry-connected forums. Instagram is a fun marketing tool with instant rewards. Textiles are largely visual, so Instagram really fits my product, and it’s much better than Twitter for what I do.’ ENCOURAGE WORD OF MOUTH ‘There is nothing like being recommended by someone else,’ says Julia. ‘A personal suggestion from someone instantly endorses what you do as a brand. This is a bit harder to steer but being seen in the right places, shows and press is a good starter. I go out and see people quite a lot. I try to keep aware of new shop openings, but I also like to invite people to visit my studio. It puts my designs into context, and it’s always good to see behind the scenes and have a nice chat.’

Meet House of Quinn

QUILT MAKER AND DESIGNER Julius Arthur launched House of Quinn in 2016, blending traditional quilting techniques with modern design to produce one-of-a-kind pieces. He’s recently become part of Toast’s ‘New Makers’ programme Do you have a background in design? I’ve always loved creating. I remember experimenting with papier-mâché, clay and fabric at my kitchen table and making such a mess. Luckily, my family were supportive! I studied fashion at the University of Brighton, but later realised it wasn’t for me and began exploring interior textile design. Talk us through the ethos behind House of Quinn. I’m all about a slower pace of living and I like reusing fabrics. I love that ‘things’ can offer links to memories, people and places – I’m a bit of a hoarder at heart! House of Quinn was born from this concept – every item is designed to last a lifetime and be passed down through generations. Describe your workspace. Right now I work from home in Brighton, but I’m hoping to move into a

dedicated studio soon. My walls are covered in various textiles that have been printed using natural inks and handmade block stamps – it looks a bit crazy at the moment! Where do you look for inspiration? Rural scenes and rustic motifs. The rich colours of the Cornish landscape, where I grew up, are the inspiration behind my most recent designs for Toast.

Describe your making process. Quilting is a bit like making a collage, combining and layering different shapes, colours and textures. A larger design can take anywhere between four weeks and four months to complete, depending on complexity, but it’s incredibly satisfying work. Where do you source your materials? Friends Claire Ashton and Gaynor Soulsby are sparking a countryside revolution, tackling plastic waste and shopping miles with their Pop-Up Eco Supermarket Inspiration for our pop-up supermarket came last November when Gaynor and I were chatting over coffee. We talked about a morning spent doing the rounds of independent shops in the area, buying plastic-free, organic and locally made items. All those miles clocking up, while trying to be more sustainable. If only these wonderful sellers could be brought under one roof… Gaynor suggested just the solution – a pop-up superstore, for eco-only products, at the village hall. I used to work as a bank manager and Gaynor was a teacher. She now runs a sewing workshop and pet-sitting business. With her creative skills, my business background and our shared love of sustainable living, we make a good team. We’re both fans of farmers’ markets, but don’t like how you always have to nip to the shop for a couple of extra bits to make a full meal. We had something far more comprehensive in mind – selling everything from food to laundry

refills. Importantly, there would also be a recycling and repairs section, with a seamstress, a cobbler, tech repairs and knife-sharpening services. People were queuing along the lane for our inaugural event in February. We were worried it wouldn’t happen, as a thick blanket of snow had fallen overnight. We were concerned that the sellers wouldn’t be able to get to us, but not a single one let us down. Turnout from customers was equally impressive – we had 400, more than 100 of whom arrived on foot. Unlike traditional supermarkets, people mingle and get to know each other at our pop-ups. They can also learn more about eco alternatives there. All we ask from sellers is that they share the cost of renting the hall. Running the events is a labour of love for us, which we do for free, and it’s been successful beyond our wildest dreams. Our pop-up is inspiring the village to be more sustainable. Gaynor and I now manage litter picks. We

go into schools to paint red noses for Comic Relief in place of plastic ones. Our pop-up featured at the first Sherborne Independent Market in June this year. This was a great success – our presence has even prompted Sherborne Chamber of Commerce to push for plastic-free status. We’re also working closely with our district council to draft its response to the climate emergency. Our logo is a dandelion with the strap line: ‘Sowing the seeds of change’. We chose a dandelion for its associations with time and making wishes come true. And because it is a prolific self-seeder. We haven’t trademarked it because we want people to copy it! We already have followers online across the world, and our dream is for pop-up eco-supermarkets to go viral. Things are coming full circle. IN THE ZONE Open-plan living may have ushered in a more relaxed approach to dining, but it’s still nice to retain an air of distinction. All the best interior designers advocate zoning the dining area, and using a rug is one of the fastest routes to success. ‘In an open-plan room, a large rug is often all you need to establish a dining zone,’ says James Langley, managing director at Woven. ‘We recommend laying out newspaper on the floor to get a sense of scale. Aim to buy a rug that is big enough for all dining furniture legs to fit comfortably within its perimeter.’

ON THE BENCH If you’re struggling to find room for a separate dining table in your home, banquette-style seating could be the answer. ‘Built-in bench seating is great for maximising space as it can be tucked into the corner of a room – perfect for turning kitchens into kitchen-diners,’ says Melissa Klink, head of design at Harvey Jones.’ Boost your storage by requesting liftup seats or built-in drawer units, and go for medium-firm foam seating for extra comfort. HEART OF STONE Never far from the next food spillage, dining room flooring should, above all, be easy to clean. Solid surfaces are the most practical, especially if you have young children. Engineered flooring and luxury vinyl are both great options, but in a country home it’s hard to beat the natural beauty of stone floors. ‘Real stone improves with age and will enhance the value of your home now and long into the future,’ says Hamish Smith, creative director at Artisans of Devizes.

WOOD WORKS Farmhouse-style furniture is hard to beat if you’re seeking a timeless look for a country home. ‘Timber is a natural and sustainable material,’ says John Sims-Hilditch, co-founder of Neptune. ‘Its soft palette and warm texture can bring a depth and personality into your home that epitomises understated English style.’ Wooden chairs are also surprisingly comfortable, as long as they are ergonomically shaped to your body’s curvature. BIG BUT COSY It can be hard to achieve a relaxed atmosphere in a large dining room with high ceilings. Here, Stephanie Dunning, interior designer at Dunning & Everard, employed various techniques to ensure diners feel comfortable. ‘Previously the playroom, this space had no focal point at eye-level, so we commissioned bespoke shelving,’ she says. ‘The beautiful chandelier also helps lower the sense of height and achieve ambience. The curtains help to soften all of the hard surfaces.’

A moody scheme will instantly achieve an intimate atmosphere for dinner parties and evening entertaining. Painting architectural features such as coving, skirting boards and fireplaces in the same colour as the walls feels more modern, and can also have a heightening effect in rooms with low ceilings. ‘We love how dark paint colours showcase art and furniture, making them stand proud,’ says Nicola Oaten, director and senior interior designer at Bear René. ‘Dark walls can also form a striking backdrop to masses of candles in the evenings – the more flickering flames the merrier.’

HOUSE RULES A housekeeper’s cupboard was traditionally found in the scullery, but they look great as a feature in a modern dining room, where they combine practicality (all that space for storing tableware) with display (glazed doors are a must). Position the cabinet close to the table to make laying the table for dinner a cinch. Using a tonal paint will stop a large piece from seeming overpowering and will put the focus on the ceramics that are on display inside. 116

■ ENCLOSED FLAMES INCREASE EFFICIENCY We all love the charm of an open fire, but by enclosing the flames, efficiency increases to around 80 per cent. ■ IN SOME AREAS, YOU NEED A DEFRA-EXEMPT APPLIANCE Under the Clean Air Act, local authorities may declare their district a smoke control area, meaning you cannot burn wood unless you’re using a DEFRA-exempt appliance. From 2022 more stringent regulations will come into force. Visit gov.uk/smoke-control-area-rules for more information. ■ NOT ALL STOVES WILL SUIT YOUR NEEDS You should verify the heat requirement for its intended location before buying. ‘To calculate the heating demand of a specific space, work out the volume of the room in cubic metres and divide by 14,’ says Declan Kingsley-Walsh from Morso. ■ ALL WOODBURNERS NEED A FLUE Building Regulations require flues to be at least 4.5m high. The exact time I first started to draw is hard to pinpoint. As a child, I’d draw on anything and everything, to the exasperation of my parents: cereal boxes, books, official documents, letters from school complaining about me always drawing at school! As I got older, my work became less about destruction and more about channelling my efforts into creating a portfolio. Now, I just want to keep drawing until I can no longer hold a pen. I see beauty within the female form. I want to translate it into my artwork – a wit, a certain mannerism, a composure, a unique imperfection, a smouldering look, a trailblazing attitude. I find these attributes in female characters in literature, in strong cinematic female leads and in historical heroines. I’ve named most of my ladies after French heroines. I begin by drawing a female figure I’m inspired

by, and then I trawl through magazines, collecting various fragments that I incorporate into my illustrations to create a collage effect. The cuttings come from anything that catches my eye – jewels, flowers, textiles, lampshades, staircases… literally anything. This stage of the composition can take days until I’m completely satisfied with the piece. When hanging artwork, leave some blank walls. The pieces you choose are a reflection of you; they create a mood. My style is a free-flowing mix of Pre-Raphaelite, Art Nouveau, with a touch of Eighties glamour. The effect is even more potent with some negative space. They chose to have glazed doors on some of the cupboards to stop the kitchen feeling top heavy

reestanding kitchens designed to come with you when you sell up are a brilliant idea, unless you are the ones moving into the kitchen-less house! This was the situation Charlotte and Matthew Lilley-Jesson faced when they upsized to gain more space. ‘Of course it was noted on the sale agreement so it wasn’t a surprise, but it did feel odd to move into a house with no kitchen at all,’ says Charlotte. Fortunately, the pretty stone cottage, with its lovely gardens, rustic outbuildings and fields beyond, more than compensated. The couple had been living in a two-bed property that they had renovated, but when Brodie came along it felt too small. ‘The cottage is big enough for mum to live with us, too, which is really lovely, not to mention handy on the childcare front. Plus, Brodie gets to grow up in the countryside with all the space and fresh air,’ says Charlotte. Once they’d all moved in, getting a kitchen fitted was their priority. Charlotte knew exactly which one she wanted, having seen the Masterclass Marlborough

range in a magazine. ‘I love how its classic design fits well in a cottage setting but the colours are young and fresh,’ she says. Settling on a layout wasn’t quite as straightforward as there were a few architectural details, such as the original chimney breast and three doorways, that impeded matters. Charlotte really wanted an island unit and considered every possible way she could squeeze one in, but eventually her practical head won and the layout was arranged to fit where the previous owners had plumbed and vented their freestanding kitchen. ‘We could have moved the extractor and drains, but it would have added significant time and expense to the project,’ says Charlotte. ‘And although I didn’t get my island, I did manage to fulfill my dream of a large pantry cupboard, which is built into the chimney breast.’ Charlotte’s second love-at-first-sight moment came when she found the perfect flooring at Fired Earth. The tiles swallowed a significant wedge of the budget, but for Charlotte they were worth every penny. ‘I love our kitchen, but the flooring really is the icing on the cake.’

THE LAYOUT A large window, three doorways and a disused chimney breast meant space for kitchen cabinetry was limited. A generous peninsula provides plenty of storage and prep space, without obstructing access to the adjacent dining room. While Charlotte couldnâ&#x20AC;&#x2122;t quite find space for an island, she gains many of the same benefits from her peninsula. So called because it connects to the wall at one end, a peninsula provides generous prep space. Adding a breakfast bar on the rear, as Charlotte has, will make your kitchen more sociable and provide space for casual dining. Allow at least 20-30cm overhang to sit comfortably at the peninsula. Choosing backless bar stools will enable you to tuck them out of the way when not in use.

One of the reasons Charlotte fell for the Marlborough range was the curved cabinets. ‘I didn’t want the wall units to stop abruptly above the peninsula. The curves feel softer and are ideal in a cottage that doesn’t have straight walls,’ she says. Curved cabinets don’t have the storage capacity of standard units, so think carefully about your storage needs before you buy. ‘We considered curved open shelves but I was put off by the dusting,’ says Charlotte.

Perhaps the only downside to choosing a peninsula over an island is the issue of what to do about the inevitable deep, dark corner unit. There are several solutions but the most effective bring the contents out of the corner, making everything easy to reach without having to get down on hands and knees. Do buy the best you can afford – look for smooth gliding runners and squeak-free operation. Also check out the recommended load bearings as some are not designed to support cast-iron pans, for example.

Illustrator and photographer Anya Raczka lives on the outskirts of Sheffield, a stone’s throw from some of the Peak District’s most beautiful hiking trails. She spends her spare time exploring with camera and dog, Doug, in tow I remember when I first fell in love with hiking. I’d just moved to Sheffield and was finding city life a little suffocating. I’d begun to discover a passion for photography, so I took myself off for the day to Burbage Valley in the Peak District. As I scrambled over rocks, navigated my way through peat bogs and wandered through woodland, I felt this overwhelming sense of freedom. Childlike joy ran through me, and I decided there and then that I was going to explore all of the incredible landscapes surrounding my new home. There are two things I always take with me on a hike – my camera and my Dachshund cross Jack Russell, Doug Pickles. We’ll usually walk for at least an hour or two, perhaps

stopping now and then to photograph an animal print or a pretty plant. It’s not always easy to find the time, but thinking about how uplifted I’ll feel afterwards gets me reaching for my boots. Stumbling across hidden paths is usually a happy accident, but sometimes I’ll scour maps to find a remote place to explore. There’s something so exhilarating about discovering a trail that is seldom used by others. I once hiked along a route that took me deep into the moorlands of the Dark Peak. After a couple of hours it suddenly ended. I stopped to take in my surroundings; it was completely silent apart from the pitter-patter of paws amidst the heather… I looked down and was treated to the sight of a group of

mountain hares scampering ahead. It was a truly magical moment. For me, hiking is an act of selfcare. Not just in terms of physical health, but mental health, too. It’s an opportunity to slow down, reflect and dwell on some of nature’s simplest joys – from the sound of the wind rustling through the trees to the heady smell of wild heather. With so many wonderful hiking spots left to explore, I’ve got a lifetime of exciting discoveries ahead of me.

30g cold unsalted butter, cut into small cubes 1 egg, beaten

1 Preheat the oven to 190°C/Fan 170°C/Gas 5. Grease a 900g loaf tin (about L25xW12xD6cm). 2 Put the butter in a food processor and whizz. Add the sugar and salt and blitz. Add one egg and mix again, then add half the flour, then the second egg and finally the rest of the flour. Pulse briefly to mix after each addition. (Alternatively, beat the mixture by hand using a wooden spoon.) 3 Use a small sharp knife to slit open the cardamom pods. Remove the seeds and crush with a pestle and mortar. Add to the cake mixture with the lemon zest and juice. Pulse the food processor to mix, or beat in with a wooden spoon. 4 Spoon the mixture into the prepared tin and bake for 45min, or until the mixture is golden and a skewer inserted into the centre comes out clean. Leave to cool in the tin for 10min. 5 Meanwhile, put the lemon juice and honey in a small pan. Heat gently until the honey has melted to form the drizzle. 6 Remove the cake from the tin and put it on a plate. Using a skewer, pierce the top of the cake deeply. Carefully and slowly pour the drizzle mixture all over the top of the cake. Store in an airtight container. This is best eaten within three or four days.

2tbsp plain flour Single cream or crème anglaise, to serve

1 Make the pastry in a food processor by pulsing the flour, salt and butter until the mixture resembles breadcrumbs. Add the egg and pulse until the dough comes together in a ball, adding a little cold water if needed. Wrap the dough in cling film and chill for 30min. If using dried figs, soak them in warm water for 30min at this stage. 2 Heavily dust a work surface with flour. Dust your rolling pin and the top of the dough and roll out to form a large thin disc, about 25cm in diameter, giving it a quarter-turn every few rolls to keep it even. Use the rolling pin to carefully lift the pastry into a 20cm round loose-bottomed tart tin. Gently push the pastry into the sides of the tin and trim off the edges. Chill for 20min. 3 Meanwhile, preheat the oven to 180°C/Fan 160°C/Gas 4. Put a baking sheet into the centre of the oven. Don’t precook the pastry, the heat of the baking sheet will help the bottom to cook through. 4 Mix the butter and honey together in a food processor. Add the brandy or rum and eggs and stir until well combined. Fold in the ground almonds and flour. Dollop spoonfuls of the mixture into the pastry case and spread evenly. 5 Cut the figs in half, removing any stalks, and arrange on top of the frangipane mixture. Bake for 25min. Turn the oven down to 160°C/Fan 140°C/ Gas 3 and cook for a further 15-20min. If the pastry looks as if it is burning, cover the edge of the tart with foil. Leave to cool in the tin for 10min. 6 Meanwhile, gently heat the honey for the glaze. When the tart is slightly cool, remove from the tin and put on a serving plate. Brush the honey generously all over the top. 7 Serve warm or cold, with single cream or crème anglaise, flavoured with a touch of brandy.

HONEY IS ONE OF THE MOST DELIGHTFUL AND VERSATILE INGREDIENTS IN THE KITCHEN. USE IT AS AN INGREDIENT, SEASONING OR TO ADD THE FINISHING TOUCH TO A DISH

POLLEN BUTTER SHORTBREAD The sweetish and slightly grainy texture of pollen makes it an unusual ingredient that is fun to explore. In this recipe the golden flecks combine with the snowy sugar to make this a shortbread with a difference.

MAKES 8 TRIANGLES 100g plain flour 100g fine semolina

(salted or unsalted), fridge cold, cut into small pieces

70g granulated sugar, plus 2tsp for the top

Large pinch of sea salt (if butter is unsalted)

125g best-quality butter

1½tsp pollen

1 Mix the flour and semolina together in a mixing bowl and stir in the sugar. Rub the butter into the dry ingredients until the mixture resembles breadcrumbs. Bring together with your hands to form a rough, slightly crumbly ball of dough. 2 Press the dough into a 20cm diameter tin so it is about 2cm thick. Cover with cling film and put in the fridge for at least 1hr, ideally overnight. 3 Preheat the oven to 150°C/Fan 130°C/Gas 2. Prick the shortbread all over to ensure it cooks through. Put the tin in the centre of the oven and bake for about 40-45min, checking after 30min and turning the tin around a couple of times during cooking to ensure it bakes evenly. The shortbread is ready when light brown on top. 4 Remove from the oven and leave for 2min. Cut down into the shortbread to make eight triangles (but don’t pull them apart yet). Sprinkle 2tsp sugar over the shortbread, then sprinkle the pollen over the top and push the grains down lightly with the back of the spoon to help them stick. 5 Leave the shortbread in the tin to cool completely, then break into triangles. Store in an airtight container for up to a week.

Some recipes really show ‘value for honey’. These classic little buttery cakes, traditionally made in shell-shaped moulds, use a small amount of honey to great effect.

MAKES 20-24 100g unsalted butter, plus extra for greasing 2tbsp honey (a fragrant medium or dark honey such as heather is best)

3 eggs 100g caster sugar 100g self-raising flour 50g ground almonds Pinch of sea salt

1 Melt the butter and honey together in a small pan over a low heat. Leave to cool. 2 Put the eggs in a large bowl, add the sugar and beat together using an electric whisk for 10min,

until tripled in volume. Whisk in the cooled honey butter until well combined. 3 Carefully fold in the flour, almonds and salt until the mixture is thoroughly combined but holding as much air as possible. 4 Ideally, leave the mixture to rest, covered in the fridge, for 2hrs. This makes it easier to spoon into the moulds and also means it rises slightly more and holds its shape. 5 Preheat the oven to 180°C/Fan 160°C/Gas 4. Grease a madeleine mould or a shallow bun tin with butter. Put 2tsp of the mixture in each mould, but don’t overfill. 6 Bake for 7min or so, until light brown; check the cakes after 5min, as honey burns quickly, and remember that the madeleines will be browner on the bottom than on the top. 7 Leave to cool in the mould for 5-10min, then carefully turn out the madeleines and place on a wire rack to cool completely. Store in an airtight container and eat within a couple of days.

MY FAVOURITE VIEW...

The bay of Port Isaac About 10 years ago some friends of mine bought a house in Cornwall’s Port Isaac, where they film Doc Martin, and ever since then I’ve been going back and forth to visit. I’d been to Cornwall before, of course, but only ever for work, and I’d never stayed anywhere quite like this.

It’s a popular area in the summer, but I love it just as much in the winter, too. When the sea is really rough, it’s so beautiful and calming. I tend to stay there with my family and we love to spend time out on the bay and go bodyboarding – whatever the weather! There are these amazing little cafés with fireplaces, so you can be out in the cold water all morning, then come in and warm up by the fire. One of my favourite things about Port Isaac is all the fresh seafood on 162

offer. We just pop down to the fishing boats each day and order what we want – maybe crabs or lobsters – and then we go and collect it later for our dinner. Enjoying freshly caught, simply cooked seafood is truly wonderful. I also head to Cornwall to escape the city – it’s quiet, calm and so peaceful there. It’s the perfect place to spend time with family and friends. It’s also about appreciating what’s there and what the heritage has to offer. I love popping into all the little, local shops, picking up honey and clotted cream. You’ve got to have scones while you’re there and really indulge in a nice cream tea. There are also plenty of fantastic walks to go on through the woods. Spending time in the countryside is a great way to refresh your head any

time, but especially so if you’ve just come down from a big city. Before I go back to Port Isaac for another break, I’ll be judging the S.Pellegrino Young Chef competition in London – it’s really exciting and I’m so happy to be part of it. Our top finalists from this stage will go on to compete in the World Finals in Italy next year and, although it’s a lot of pressure for these young chefs, it’s a great way to see what they’re capable of. I know they’ve all been practising and perfecting their dishes since early this year and, for me, it’s wonderful to see where they’ve come from, what they’re passionate about and how that comes through in their cooking. The UK and Northern Europe final of the S.Pellegrino Young Chef Competition is on November 12.
