The moment my husband and I had kids, the holidays took on a new importance. For the first few years, Myles and I would pack up the whole family and head West to spend Christmas with our relatives but, after a couple of attempts at boarding flights with strollers, car seats, Christmas presents and even snowboards and skis, we came to our senses and decided the season was best spent in Toronto (even if the skiing wasn’t as good). Suddenly, we had to figure out how we wanted to celebrate Christmas — and which traditions we would embrace and which ones we would skip. When it comes to decorating our tree, I lean toward ornaments we’ve picked up on our travels (something my mum always did), toilet paper rolls dripping in glitter made by my children, and lots of tiny white lights. It’s a bit of a mess, but the memories each ornament brings back are worth the less-thanperfect overall effect. For Christmas dinner, I try to recreate the meal I grew up with, including a plum pudding that I set

14 H&H NOVEMBER 2019

alight before triumphantly bringing it to the table to the delight of my children. It’s a lot of work for a dessert nobody eats except me, but I couldn’t imagine dinner without it. Thankfully, I won’t have to think too hard about what gifts to give this year. If you’re on my list, there’s a good chance you’ll get a copy of my first book, Nomad: Designing a Home for Escape and Adventure. (See page 30.) My journey to write it began in 2015 when a book agent from New York reached out to me. What followed was a rollercoaster four years that saw countless proposals, an offer from Artisan Books, and two years of research, travel, writing and editing. The end result is a beautifully photographed book (photos are by Sian Richards) that captures a growing community of vanlifers, liveaboards, Airstreamers and tiny house dwellers who have decided to forge a new life for themselves — one that values experiences over things, is environmentally conscious and is often more budget-friendly than their rooted lives ever were. It’s a lifestyle that’s rapidly gaining followers and changing the way we think about how we live. For me, it was an experience I’ll never forget, and I’m excited to finally share it with family, friends and you. From all of us at House & Home, Happy Holidays!

I searched for a new design magazine for a few years and stumbled upon yours on a trip to L.A. What a find! I signed up immediately for two years. I now have had almost two years of checking out your magazine and have never been disappointed in the quality and your sensitivity to your consumers, who are not the one per cent of income earners. I always find something that is either useful, inspiring or generally attainable! The September issue was unquestionably full of inspirational and aspirational spaces. But my favourite feature by far was Luke Havekes’s (“Personal Style”). Although it’s often overlooked as filler for bouquets, this member of the carnation family is eye-catching when a healthy handful is tucked into a vase en masse. For the holidays, mix it with a few delicate evergreen sprigs.

WHAT WAS YOUR FIRST THOUGHT WHEN HOLT RENFREW ASKED YOU TO DESIGN ITS TOILE? That it

was too good to be true! I had to pinch myself. HOW DID YOU BEGIN? My process starts with creating a mood board. The design brief was for a toile de Jouy that presents the natural beauty of Canada with an arctic spin. My research led me to elements special to Canada, such as snowcapped mountains and fir trees.

FUN FACT: Baby’s breath became popular in the Victorian era as a symbol of purity and everlasting love.

AND WINTER-LOVING ANIMALS! I think they’re

perfect for the theme of the design. The three featured are the polar bear, arctic fox and mountain hare.

KING PROTEA So named because its spiky bracts look like a crown, this regal flower has a natural grandeur due in part to its size — blooms can reach up to 12 inches in diameter and plants can be over three feet tall. Arrange one or two in a simple white vase. FUN FACT: Proteas are among the oldest flowering plants, dating back 300 million years.

PAPERWHITES Part of the genus Narcissus like the daffodil, these star-shaped flowers bloom in showy clusters three weeks after planting and are famous (or infamous) for their sweet, musky fragrance, which can fill a room. Group five or more bulbs for a stellar display. FUN FACT: Narcissus represent good fortune and are a favourite for Chinese New Year celebrations.

WHY DO YOU THINK TOILE HAS SUCH TIMELESS APPEAL? It has a lot of

character and it often tells a story. For me, the most exciting part is incorporating different elements that give the classic pattern a modern twist. IS THIS THE FIRST TOILE YOU’VE DESIGNED? It is!

It was tricky to create a beautiful flow and connection between all of the design elements. I hope people view it as a unique artwork that represents Canada. I’ve realized Canada is even more beautiful than I imagined. I’ve never been, but it’s on my bucket list.

Our goal was to make something incrediby soft and eco-friendly,” says Kyle. LOCAL COLOUR: Stephanie and Kyle both worked for fashion brands and had been looking for a business to build together. While vacationing in Peru in 2016, the avid travellers noticed herds of alpacas grazing amid the snowcapped Andes. “We realized the alpacas were the answer we’d been looking for,” says Stephanie. “We plotted everything for Blacksaw during a 14-hour bus ride.” OUT OF OFFICE: The couple works where inspiration can strike. Their fall collection was designed in Bali. FUR SURE: Baby alpaca fibre (baby is a misnomer: it refers to the finest fur fibres, which grow on certain parts of the animal) is seven times warmer than wool, softer than cashmere and hypoallergenic. Blacksaw’s premium blankets are also double-sided woven and reversible. “They’re much heavier than traditional alpaca blankets,” says Kyle. “We wanted something that felt weighty.” UP NEXT: A larger zero-dye collection. They currently offer one version, dubbed Harvest Moon. “We’re hippies at heart,” jokes Kyle.

In this luxe book, fashion designer Lisa Perry shows off her enviable homes (and studio) in the U.S. and France, and reveals a razor-sharp eye for editing — and integrating — art. Like Lisa’s ’60s-inspired fashion, many of her homes recall the mod grooviness of 2001: A Space Odyssey, with its white sofas and sculptural furnishings in primary colours. How do you pull it off? My motto is “less is more.” If it was realistic, I’d live in a Japanese-style home with a tatami mat on the floor and one piece of great art on the wall, and that’s it! Why don’t you use many printed fabrics? I like patterned furniture but only if the piece is the star of the room. Patterns can be a bit limiting and often fight with art. I design with a colour scheme in mind, so I have an idea of which art will work for which space. It’s not a typical way to design, but I find it really focused and fun. How would you describe your signature style? An all-white, fairly minimal room with pops of vibrant colour plus one key piece, which is often a large, fabulous sofa.

Summer Rayne Oakes posts local plant swaps in a calendar on her website homesteadbrooklyn.com.

Why not try spreading around some green at the holiday cookie swap and bring a plant, too? With more than 600 plants in her Brooklyn, N.Y., apartment, Summer Rayne Oakes, author of How to Make a Plant Love You, knows the importance of sharing the wealth. “Bring a pest-free beautiful plant for trade,” says Summer. “They can be potted or bare root, as long as you’re prepared to part with them.” She notes that those who tend to bring more than one plant or have more interesting varieties, end up going home with cooler stuff. HOUSE & HOME: What was your jumping-off point for this kitchen? EMILY GRIFFIN: The stunning Lacanche range and custom vent hood we designed to pair with it. Lacanche has been making ranges in a small village in Burgundy since the late 18th century, and it inspired us to create a classic French bistro–style kitchen. We chose a beaded 54 H&H NOVEMBER 2019

H&H: How do you mix multiple metals in a single space? EG: Most people think you pick one hardware style for an

entire kitchen, but sometimes “one size fits all” doesn’t work — especially in a twotone kitchen. I chose four different finishes for the hardware but stuck to styles from the same series for continuity. H&H: What makes the seating area so inviting? EG: The layered rugs and antique-looking patterned tile are meant to evoke the

feeling of a lived-in European home. Some people wouldn’t pair a Morocccan ottoman with a busy Kazak rug layered on top of a jute rug but, to me, layers are what make a room feel cosy and inviting. H&H: What’s your secret to creating a timeless kitchen? EG: Stick to tried and true colours and finishes, and deny, deny, deny trendy kitchen fads.

H&H: Did you or the homeowners have any nonnegotiables? EG: I felt very strongly about hiding the television in the island rather than mounting it above the fireplace. ara Hurst starts her holiday decorating on December 1, regardless of what day of the week it happens to fall on. Her husband, Michael Zary, carries a fragrant, fresh-cut spruce home on his shoulder from the garden store just down the street and sets it up in a corner of the dining room. Then, the heavy lifting done, he relaxes with a rum and eggnog while Tara carefully extracts her treasured wooden ornaments from cloth pouches and judiciously hangs each one while classic choral Christmas music plays softly in the background. “This is the Christmas house; it just has that energy,” says Tara, with a laugh. “I love a traditional approach and Michael is a good sport because I’m way more into it than he is.” Tara, a creative director, and Michael, a contract specialist, moved into their 1,500-square-foot Arts and Crafts bungalow in Victoria five years ago, following an extensive renovation. “It was completely run down,” says Tara, “but we could see its potential.” Come Christmastime, the century home’s understated elegance is reflected in both her tasteful long-term design decisions and her subtle holiday decorating, neither of which are to be rushed. “As a designer, the joy of decorating for me is in the process,” says Tara. It’s why the couple didn’t have a coffee table until last year and why there’s still no art on the walls — every piece is carefully considered and chosen after much deliberation. “I’ve taken my time,” she says. “I’d rather wait for something I really love rather than rush to fill the space. At no point am I decorating a room just to get it done.” Her patient approach gives the house a rare and inviting depth of feeling. Tara and Michael preserved some of the home’s unique H&H NOVEMBER 2019 57


PERSONAL STYLE historical features, from the stained glass windows to the built-in hutch in the dining room to the original fir floors, and paired them with elements that resonated personally, such as the woolly rugs they shipped home while on holiday in Morocco last year and the white plates and platters Tara discovered in Burgundy’s Brocante markets. (The plates are perched on the plate rail in the dining room when not in use for parties.) “I’m a bit of a romantic and love that every object has a story,” she says. Tara also loves entertaining; their home has become something of a holiday hub within their friend group. She hosts a party early in the season for 40 or so girlfriends and is the one most likely to be pulling a turkey from the oven on Christmas Day. “I’m in my element when I have a handful of people in my home,” she says. Guests are greeted with a glass of bubbles and warm gougères fresh from the oven before they inevitably gravitate toward the cosy window seat nestled beside the fireplace in the living room. The fresh scent of cedar from the boughs draped over the mantel adds to the festive air. Says Tara: “I love making everyone feel welcome and watching them enjoy themselves in my home.”

I went for a lot of magnolia — it’s less fussy than cedar, and the rust-coloured underside of the leaves is dead chic. Living in London taught me that lavender and lilac are neutrals — they go with everything and ground most colours.”

I looked long and hard for the right colour of ribbon that was more purplish than red to accent the greenery. I would have loved to have hung a wreath on each of the narrow double doors, but it felt too cramped. Hanging one on the street lantern was a better choice.”

MILLAR HOUSE IS A GRANDE DAME in Port Dover, occupying a prominent position in town, and in the hearts of locals. Its owners, floral and interior designer Cynthia Zamaria and her husband, Graham Loughton, who works in market research, refer to the heritage house as a “her” and believe they are but stewards caring for this beautiful piece of history. The 5,000-square-foot Georgian home was built in 1857 by a Scottish immigrant named Millar, and the couple purchased it in 2017 and started renovating immediately.

Cynthia’s vision was to peel back the layers that had been added on over the years, which she felt concealed its true character, and to update the home with modern amenities. Today, architectural features gleam while vintage and big-box furniture and accessories mingle effortlessly with bespoke millwork and to-die-for floral arrangements. Freed of heavy layers of wallpaper, drapery and paint, Millar House can breathe again. Cynthia’s love of locally grown, organic and seasonal florals is apparent in her pared-back SEE SOURCE GUIDE

approach to Christmas decorating. Often foraged from the property, seasonal boughs and berries quietly find their way into almost every room, highlighting the home’s architectural beauty. Over the holiday season, the couple and their three children Ben, 20, Ruby, 17, and Theo, 12, see countless pairs of shoes at the door as they share their home with family, friends and even strangers (Millar House is a popular stop on the town’s holiday home tour). We asked Cynthia about her design style and how she dresses her home for Christmas. H&H NOVEMBER 2019 81

Q&A HOUSE & HOME: What was your vision for this house? CYNTHIA ZAMARIA: We wanted the understated elegance of an English country home and the creativity of a French atelier — something classic mixed with a bit of zip. It was a romantic notion to save a heritage house and bring it back to its glory. This home is a landmark but not a museum, so we wanted it to be really lived in. The best way to keep an old house relevant for how we live today is by sensitively updating it and filling it with modern amenities. H&H: How do you describe your style? CZ: I like to say I practise emotional design. The house tells me what it wants. It starts with a feeling and that drives the vision. I like easy and elegant and eclectic, the three Es. I like to mix old and new, treasures and trash, to make a mashup that really has meaning. The things that surround you should speak to you, whether it’s a treasured antique or something you find on the side of the road. H&H: How do you find such great vintage pieces? CZ: It’s creative optimism. I can see the beauty in things all around me. My husband is a great trash collector, too — it helps to have scouts out there! We’re always on the hunt. Graham was born in England and his parents were great antique hunters. We both love going to antique and vintage shops. H&H NOVEMBER 2019 83

H&H: Did you make any major alterations to the home? CZ: We moved the kitchen to one of the original parlours on the other side of the house. What is currently the mudroom and butler’s pantry used to be the original kitchen. We used a local cabinetmaker and contractor who was like-minded and excited to get creative. We wanted to create an English scullery kitchen. H&H: How do you approach holiday decorating? CZ: For Christmas, we don’t overdo it; it’s an understated display of holiday. I like things more restrained. We just want to give her a little bit of blush. Most of the greenery is foraged from the property for a very natural look. H&H: What’s your go-to Christmas tabletop look? CZ: It should be special but not a caricature. For this home, it’s elegant and simple — maybe something you’d have in an old English manor house. I’m a bit romantic that way. For the table runner, I made little bundles of greenery with wire and just kept going. You don’t have to spend a lot on holiday decorations. It’s about bringing the outside in and creating a warm feeling. H&H: What’s your favourite Christmas tree? CZ: Oh, I love balsam fir. The tree is statuesque, dark green and dense but so soft when you brush up against it. And the smell is gorgeous and lasting, so the house smells like Christmas for a long time.

“I HAD FUN GETTING INTO A HOLIDAY MOOD IN MID-AUGUST!”

House & Home, Christmas comes in August. And then for months after that, there are TV segments to tape, studio vignettes to set up and holiday events to prep for. By December 24th, I’m done — I don’t want to see another pine bough, bit of ribbon, holly or ball of any kind! But then there’s still Christmas at home, which I love and can’t ignore. For years, I’ve relied on the same no-fuss formula of table decorations and red candles. No one complained and it was nice but, after a decade, I must change it up. Using the modern art at home as the inspiration for a fresh take and calling in help from florist Todd Caldwell ( far right) at Emblem made it easy. I promise you, these are straightforward ideas that you can use to customize your own style. It took me a day to buy supplies and fuss and be crafty. (OK, full disclosure, our craft stylist helped me by making samples of crackers that were amazing!) Now setting the table on December 24th will be simple. My best tip is to consider your rooms, your china and the things you already have before you pick a new theme. You may like the look of a “Kinfolk Christmas” on the pages of magazines, but kraft paper and pinecones may not bring much style to a classic city house. Here’s what worked for me.

EASY FABRIC GIFT WRAP This is a super simple yet beautifully elegant wrap. You create bundles by wrapping any gift in either tissue or a remnant of solid-coloured fabric. Chose a shade that will complement the silk gauze that’s going on top. For the gauze layer, cut a generous square of fabric and tie it up in a bundle. Thick kraft paper tags tied on with leather laces are the perfect combination with the silk gauze. Turn to page 132 for the full instructions.


LONG-LASTING ARRANGEMENTS Todd Caldwell taught me this. Fill a vase or pot with greens to create a base. I like to mix pine, salal, spruce and holly, or any red berries. Then pop in a few roses with large heads. My colour mix is red, orange and hot pink. Sometimes I add a celery shade like green hydrangea for contrast. Change the water every day and, eventually, when the roses die, replace them. The greens will go on much longer. In the front hall, Todd used a favourite old Chinese export pot. PUT YOUR ENERGY INTO HOMEMADE CRACKERS They’re the best because they make great table decorations and you can personalize them by filling them with wonderful treats. You can either use store-bought ones and just swap out the contents, or you can make your own. It’s so easy that you won’t regret trying this. It’s what’s inside that counts. Write custom fortunes. Fold up lottery tickets or gift certificates to anything. I like to give movie vouchers from Cineplex that are always a hit. Key rings, iPhone earbuds, lip gloss, a beautiful pen, and there’s always jewelry! This is a wonderful project for kids. Turn to page 132 for the full instructions. SETTING THE TABLE On the table I’ve used colourful elements that play off the mobile and other art. The placemats are by Chilewich in rose gold, the plates are stone-coloured and very simple, and the combination of Waterford crystal champagne flutes, stemless rose-coloured tumblers and fabulous blue-and-white painted water glasses is playful and fun. The napkins in chartreuse linen are an old set that I treasure for the amazing colour that’s so hard to find. The handmade crackers are the finishing touch. ON THE OUTSIDE, GO FOR DRAMA I keep it simple and all-green with very little other colour except for the chartreuse velvet ribbon; the ribbon colour varies from year to year. I don’t like too much going on with exterior lights or decorations. I prefer a swag of pine to a wreath because it hangs better. For the urns, it’s always winter greenery and natural bits like pinecones and berries. This is a traditional house and the elements are great, so why mess with it? Archie, our bearded collie, seems to agree!

OTHER TIPS • I like to scatter a few favourite tree ornaments on the dinner table. See the sparkling glass grape ornament (left). • This is the one time of year when my candles change from cream or black to red or gold metallic. • Instead of placecards, you can write the name of each guest right on their cracker, or tie on a name tag.

“We kept the finishes of the home simple, leaving lots of room for art, furniture, music and plants to fill up the spaces,” says homeowner and designer Todd McMillan. His sentiments ring true in the family’s living room, which easily transitions to holiday mode with the addition of a simply decorated tree and stockings hung from the Douglas fir stair rail. THE FIRST CHRISTMAS in a new house is exciting — it’s fun to figure out your holiday decorating style, to see what looks right and what will suit the character of the home. For Todd and Kristen McMillan, spending Christmas in their new-build was a perfect opportunity to pair their love of mid-century modern minimalism with holiday warmth, which, it turns out, go together as naturally as sugar cookies and holly boughs. The McMillans are co-owners and designers at Ben Homes, a custom design and build company in Burlington, Ont. In early 2017, when they set out to design a home, the second one they’d built for themselves, their two kids, Drew, 9, and Fisher, 6, and the family’s beloved dog, Ben (for whom their company is named), there was no question as to the style. “There’s a giddy, creative feeling that both my wife and I get from visiting original mid-century modern homes,” says Todd, who often builds in this style for the company. “These spaces are always perfectly laid out and simply detailed, which allows the person in the space to feel refreshed, clear and creative.”

A mix of natural materials, pale colours and artful accents creates an oasis in the principal bedroom. A family heirloom painting completes the serene look. Their two-storey, 4,128-square-foot home (including the basement) is an exercise in tasteful restraint, with an openconcept main floor flooded with light from floor-to-ceiling windows at the front and back of the house. Pale Douglas fir floors, cabinets and window trim contrast elegantly with museum-white walls, which provide a showcase for the family’s collection of iconic mid-mod furniture. Finishing the home just in time for the holidays created the ideal occasion to fill the space with friends, family and Christmas traditions both old and new. “The open concept of a mid-century home allows the festive energy to flow through and creates a great setting for entertaining,” says Todd. Thanks to a front courtyard shielded from the street by a stone wall fronted by plants and a Japanese maple, views of the snowy landscape outside are always close at hand. Inside, a built-in wood-burning fireplace (a typical feature of mid-century home design), means the aroma of wood smoke wafts through the house all winter long. SEE SOURCE GUIDE

Among the couple’s favourite Christmas traditions is picking out the Christmas tree together and trimming it as a family. “We like keeping our decorating simple,” says Todd. “We always go to a little place that puts name tags on its trees, and then we use past name tags as ornaments.” The tags are supplemented with other cherished Christmas decorations. A corner of the living room near the front door proved the perfect location for the tree and family stockings (including one for Ben, of course), which look right at home hanging on the stair rail instead of the more traditional mantelpiece. The tree, backlit by natural light flooding the foyer and framed by views of the front courtyard, also inspired another new holiday tradition. “We decided that, since we had grown so attached to our tree, we would set it up outside after we were done with it,” says Todd. It remained there until the next spring, a gentle reminder that a “traditional” family Christmas is whatever you choose to make it. H&H NOVEMBER 2019 101

PICTURE THE PERFECT HOLIDAY HOUSE: a happy winter wonderland where children’s laughter, the swish-swish of skates on ice and snowballs whizzing by your earmuffs are the soundtrack of daily life. Naturally, it’s everyone’s favourite gathering place, complete with a huge, handmade kitchen table designed to cope with elbow-to-elbow family feasts and Christmas cookie–making marathons — a country home designed for comfort and joy. That’s where Angela Wheeler, a former engineer, and Josh Malcolm, a fireplace retailer, live year-round with their four lucky kids, Aiden, 12, Jessie, 10, Stella Jane, 8, and Will, 3, and their dog, Griffin. They designed and built the 4,000square-foot, six-bedroom farmhouse on a 30-hectare property near Port Perry, Ont., surrounded by nothing but rolling hills, forest and sky. Once the snow flies, the firewood is stacked and the pond freezes over, every day feels like Christmas here.

This idyllic scenario started when Josh asked Angela to look at the property in the fall of 2006. It was nearly uninhabitable but for two ramshackle barns and an abandoned, 120-year-old farmhouse. “We peeked in the windows, and I was surprised when he said he wanted to buy it,” says Angela. His enthusiasm soon won her over, though, and a month later, the couple moved into the small 1,000-square-foot farmhouse, rolled up their sleeves, and started fixing it up. Six years, three kids and a dog later, the place was bursting at the seams. But instead of moving, they decided to design the country home of their dreams. Walnut Farm, so named because the driveway is lined with century-old walnut trees, took a year to build. The family moved, well, if not heaven, then at least 60 truckloads of earth and 70 tons of limestone to create the house. Its simple exterior was inspired by “Belgian farmhouses, SEE SOURCE GUIDE

English country houses and the shape of old barns,” says Angela. Built just 50 feet from the original house, it’s high enough to afford sweeping views of the countryside yet sits comfortably on the land, like it was always meant to be here. When it was time to place the last stone on the house, the family tucked a time capsule into the wall that holds a family photo, a letter about their family, the history of their home, blueprints for the house, coins and some toys. “Our stonemason encouraged us to do it, and I thought it was a thoughtful idea,” says Angela. Having spent years in small rooms, the couple wanted the new house to be more spacious but still feel cosy and warm. So, while the floors are concrete, they’re also heated, the sofas are sink-in soft and sensibly slipcovered in natural linen and, throughout, there are furnishings the couple had designed and made using wood boards reclaimed from the now demolished but fondly remembered original farmhouse. “We’re always looking for things that add character and wonder to our home,” says Angela, who enjoyed the process so 108 H&H NOVEMBER 2019

much that she switched careers to become a designer. Which brings us to the property’s cutting garden. And the trees. To everything there is a season, and nowhere are you more aware of the seasons than at Walnut Farm. Summer days are spent swimming, picnicking and counting tadpoles by the pond, or picking vegetables from the garden for family dinners around the big harvest table in the kitchen. In the winter, the house starts to smell like Christmas a month or more before it arrives as Angela makes holiday decorations out of evergreens foraged from the farm. “I love the look and smell of fresh evergreens so much that I start making wreaths and garlands right after Remembrance Day and continue over the whole Christmas season,” she says. The family has planted thousands of seedling trees on the property and, three years ago, they planted apple trees. “I came from a family that was always on the move,” says Angela. “When I planted those apple trees, I knew I was finally putting down roots. I had never thought about a place like that before. We were home.” SEE SOURCE GUIDE

Gingerbread with Rosewater Cream Cheese Glaze MAKES 30 LARGE COOKIES

PLAN AHEAD: Dough needs to rest overnight in fridge for best flavour, and glaze needs to set overnight on baked gingerbread PREP TIME: 40 minutes TOTAL TIME: 60 minutes This is an adult gingerbread! Cocoa powder and spices make for a dark and flavourful dough that isn’t overly sweet. The cream cheese glaze is a perfect counterpoint, but it will soften the cookies slightly. Glaze the cookies the day before you plan to serve them. Gingerbread 350 g (about 2¾ cups) all-purpose flour 2 tbsp unsweetened cocoa powder 3 tbsp ground ginger 1 tbsp ground cinnamon 2 tsp ground cloves 2 tsp freshly ground black pepper 1½ tsp kosher salt ¼ tsp baking soda ½ cup plus 2 tbsp unsalted butter 80 g (about ⅓ cup plus 1 tbsp) sugar 1 large egg ⅓ cup molasses 1 tbsp corn syrup Rosewater Cream Cheese Glaze 2 tbsp block-style cream cheese, softened 2 tbsp unsalted butter, softened 182 g (about 2 cups) sifted icing sugar ¼ tsp vanilla extract ¼ tsp rosewater, or to taste ⅛ tsp salt 1 tbsp strained fresh lemon juice ¼ cup water or milk, as needed Dehydrated raspberries and roasted pistachios, for garnish!

MAKE GINGERBREAD 1. In bowl, sift together flour, cocoa powder, spices, salt and baking soda. Set aside. 2. In bowl of stand mixer with paddle attachment, beat butter and sugar until just fluffy. Add egg and scrape down sides as needed, and beat until combined. Add molasses and corn syrup, and beat until uniform. 3. Add dry ingredients to wet and mix until dough is just combined. Use your hands to knead dough slightly until it’s uniformly moist. 4. Lay two pieces of plastic wrap on countertop and divide dough between them. Wrap balls and flatten into discs. Refrigerate overnight. 5. Preheat oven to 350°F. Working with one disc at a time, roll out dough on lightly floured surface until about 3 mm thick. Use 7.5 cm round fluted cutter to cut circles, then use 2.5 cm cutter to cut out centre to make wreaths. Gather, chill and reroll scraps as needed. Bake for 8 to 12 minutes, or until bottoms of cookies are lightly browned. Transfer to rack and let cool. MAKE GLAZE AND DECORATE 1. Using handheld mixer, combine cream cheese and butter, and beat until uniform. Add icing sugar, vanilla extract, rosewater and salt, and beat until glaze is thick. Beat in lemon juice, then add enough water or milk to achieve desired dipping constancy. Glaze should be opaque and hold at edges of cookie without running off when dipping. 2. Glaze and decorate gingerbread as desired. Allow glaze to set and dry overnight before packaging or stacking.

Earl Grey Shorties MAKES 48 SANDWICH COOKIES

PLAN AHEAD: Dough needs to chill for 1 hour before cutting out rounds, and filling needs about 2 hours to set before piping PREP TIME: 40 minutes TOTAL TIME: 70 minutes These delicate and delicious shortbread sandwich cookies are lightly flavoured


with Earl Grey tea leaves. Use a highly flavoured tea for the best results. If you have a silicone baking mat with a textured surface, roll your dough out on the mat to “stamp” a simple design on top of your cookies. Earl Grey Shortbread 2 cups unsalted butter, softened 150 g (about 1½ cups) sifted icing sugar 1½ tsp kosher salt 2 tbsp Earl Grey tea leaves, finely crushed 520 g (4 cups) all-purpose flour Zest from 1 small orange White Chocolate Ganache Filling ¾ cup whipping cream 425 g white chocolate, chopped (about 3 cups) 100 g good-quality candied orange rind, chopped into small pieces MAKE DOUGH 1. In bowl of stand mixer with paddle attachment, cream together butter, icing sugar, salt and tea leaves. 2. Add in flour and orange zest, and mix until just combined. 3. Lay 2 pieces of plastic wrap on countertop and divide dough between them. Wrap balls and flatten into discs. Refrigerate for 1 hour, or until firm but pliable. MAKE FILLING 1. In medium heatproof bowl, add chocolate. In small pot, add cream and bring just to a boil. Pour cream over chocolate and let sit for 2 minutes. Stir with rubber spatula until fully melted and uniform, then transfer to shallow container to set (this will take about 2 hours at room temperature). BAKE AND FILL COOKIES 1. Heat oven to 325°F and line 2 baking sheets with parchment paper. 2. Working with one disc at a time, roll out dough on lightly floured surface to about 3 mm thick and use a 5 cm round cookie cutter to cut out circles of dough. Return dough to fridge if necessary, making sure it’s cold at all times. Gather and reroll scraps, as needed.

3. Bake cookies for 12 to 15 minutes, until edges are lightly golden. Do not overbake. Transfer cookies to rack to cool completely. 4. Spoon thickened filling into piping bag and pipe generous amount onto middle of one cookie. Place 4 to 5 pieces of candied orange rind in centre and sandwich with another cookie. Repeat with remaining cookies.

Toffee Pecan Dark Chocolate Shortbread

Hazelnut Amaretti MAKES 24 AMARETTI

MAKES 48 COOKIES

PREP TIME: 30 minutes TOTAL TIME: 80 minutes This shortbread is very buttery and is baked in a mould. Roselle uses round silicone moulds that are about 6.5 cm wide and 1.5 cm deep. If you have a similar mould, you can make individual round shortbreads using lightly flattened 2.5 cm balls of dough (bake for 12 to 14 minutes). Otherwise, bake shortbread in one big pan and cut into small bars as suggested below.

This is a delicious and satisfying cookie that’s very simple to make! If you want to keep the sugar content down, don’t roll the cookies in icing sugar. Decorate instead by pressing a whole almond into the centre of each cookie before baking. 95 g (¾ cup) hazelnuts 190 g (2 cups) ground almonds 385 g (about 4 cups) sifted icing sugar, plus more for dusting 40 g (½ cup minus 1 tbsp) cocoa powder 100 g (⅓ cup plus 1 tbsp) egg whites

125 g (1¼ cups) whole pecans 360 g (about 2¾ cups plus 1 tbsp) all-purpose flour 70 g (about ½ cup) cornstarch 2 tsp kosher salt 2 cups unsalted butter, softened 150 g (about 1½ cups) sifted icing sugar 200 g (1⅓ cups) toffee bits 1 cup coarsely chopped dark chocolate

ROAST AND GRIND HAZELNUTS 1. Preheat oven to 375°F. Place hazelnuts on baking sheet and bake for 10 minutes, or until hazelnuts are very lightly toasted and skins have begun to split. 2. Pour into clean kitchen towel and rub vigorously to remove skins. Let cool. In food processer, add hazelnuts and pulse until finely ground.

MAKE SHORTBREAD 1. Preheat oven to 350°F. Lay pecans on baking sheet and bake for 10 to 12 minutes, or until well toasted. Let cool and coarsely chop. 2. In bowl, sift flour, cornstarch and salt together. Reserve. 3. In bowl of stand mixer with paddle attachment, beat butter and icing sugar together until smooth and creamy. 4. Add flour mixture to butter and sugar, and mix until just combined. Add in toffee bits, chocolate and pecans until dough just comes together. 5. Line 9" x 13" baking pan with parchment paper. Scrape in shortbread

MAKE AMARETTI 1. Reduce temperature to 345°F and line 2 baking sheets with parchment paper. 2. In bowl of stand mixer with paddle attachment, combine ground hazelnuts, almonds, icing sugar and cocoa powder, and mix until uniform. Add egg whites and mix until dough is evenly moistened. 3. In separate bowl, add about 1 cup of icing sugar. Using scoop or spoon, form dough balls about 2.5 cm in diameter. Frollini Cannella MAKES ABOUT 75 COOKIES

PLAN AHEAD: Dough needs to chill for 1 hour before cutting out shapes PREP TIME: 40 minutes TOTAL TIME: 60 minutes These crisp and lightly spiced cookies are studded with sliced almonds. Cut them into rectangles or into whatever shape you desire. It’s essential to make sure your dough is the same thickness throughout, or your cookies will bake at different rates. Let this cookie get deeply golden for the best flavour. If you can’t find small eggs, just beat large eggs and weigh out the quantity needed. 400 ¾ ¼ 1 ¼

g (3 cups plus 1 tbsp) all-purpose flour tsp baking powder tsp salt tsp ground cinnamon tsp ground ginger Pinch ground nutmeg Pinch ground cloves Pinch ground allspice 270 g (1 cup plus 3 tbsp) unsalted butter, softened 280 g (1⅓ cups lightly packed) light brown sugar 2 small eggs (84 g) Sliced almonds, for garnish MAKE FROLLINI CANNELLA 1. Heat oven to 370°F and line 2 baking sheets with parchment paper. 5. Working with one piece at a time, roll out dough on lightly floured surface into rectangle about 3 mm thick. Use ruler and pizza cutter to cut dough into rectangles about 7.5 cm long x 5 cm wide. Gather and reroll any scraps, as needed. Transfer cut-out cookies to prepared baking sheet with about 2.5 cm of space between them, and sprinkle with sliced almonds (it isn’t necessary to press them in). 6. Bake 1 sheet at a time for 10 to 14 minutes, or until deeply golden. Let cool on tray before removing to rack to cool completely. Transfer cooled cookies to airtight container. Cookies will keep for 2 weeks.

Speculaas MAKES ABOUT 80 SMALL COOKIES

PLAN AHEAD: Dough needs to chill for 1 hour before cutting out shapes PREP TIME: 40 minutes TOTAL TIME: 60 minutes Speculaas are crisp Dutch spice cookies often embossed with a windmill design. Blackbird Baking Co. makes its version as small rounds and etches them with a windmill-like pattern, but you can use the tines of a fork to make a simpler design. If you can’t find small eggs, just beat a large egg and weigh out the quantity needed. Spice Mix 5 tbsp ground cinnamon 1 tsp ground nutmeg 1 tsp ground cloves ¾ tsp ground ginger ½ tsp ground cardamom ½ tsp ground aniseed ½ tsp ground white pepper ½ tsp ground coriander seed Dough 330 g (2⅔ cups minus 1 tbsp) all-purpose flour

Add egg and beat until fully incorporated. Add milk and beat until uniform. Add flour mixture and beat until just combined. 3. Lay 2 pieces of plastic wrap on countertop and divide dough between them. Wrap balls and flatten into discs. Refrigerate for 1 hour, or until dough is firm but pliable. 4. Roll out dough on floured surface to about 3 mm thick. Use 1¾" round cookie cutter to cut out rounds, and transfer to prepared baking sheet. Place baking sheets in freezer for 15 minutes before etching cookies with pattern. 5. Preheat oven to 350°F. In small bowl, combine warm water and coffee powder and stir until dissolved. Add egg yolk and beat to combine. Remove cookies from freezer 1 sheet at a time and immediately brush with glaze. Use skewer or fork to etch a hatched design into surface of cookies. 6. Bake for 15 minutes, or until cookies are lightly browned at edges. Transfer to rack and cool completely. Store in airtight container.

EASY DIY: FLOWER TREE ADVENT CALENDAR WHAT YOU’LL NEED: • Magnolia branch (or similar) • Rocks • Vessel • Moss • Crepe paper • Scissors • Glue gun • Small chocolates • Tags • Floral wire HOW-TO: 1. SECURE a magnolia branch in a vessel with rocks and dress it with moss. 2. CUT petals out of different coloured crepe paper. Fan out five petals in a circle to make a flower, and attach each petal at the centre point with hot glue. Repeat. 3. POSITION a chocolate in the middle of each flower and wrap with floral wire. 4. CURL the crepe paper petals with your hand until they reach the desired frill and secure the finished blooms onto the branch with floral wire. 5. THREAD a tag onto the floral wire to display each calendar day.

PREP TIME: 20 minutes TOTAL TIME: 60 minutes Stoemp, pronounced “stoomp,” is a delicious — and affordable — comfort dish originating from Belgium. The potatoes and butter are always a must, but you can also use this recipe as a guide for adding in well-cooked greens or other root vegetables. Travis’s version gets lots of flavour from garlic, horseradish, herbs and spices, but match the flavourings to whatever ingredients you include and whatever protein you’re serving it beside.

1 kg Yukon Gold potatoes (4 medium, chopped) 250 g sweet potato (1 small, chopped) 113 g carrots (2 large, chopped) 1 cup unsalted butter 1 tbsp grated garlic 2 tbsp prepared horseradish 1 tbsp mustard seeds 1 tbsp ground white pepper 1 tsp ground nutmeg Kosher salt 3 tbsp chopped fresh dill 3 tbsp chopped fresh chives MAKE STOEMP 1. Peel root vegetables and cut into 5 cm pieces. In large pot, add vegetables with enough cold, salted water to cover by at least 2.5 cm. 2. Bring vegetables to a boil. Cover pot, reduce heat to medium-low and simmer for 30 to 45 minutes, or until vegetables are very tender. 3. Drain and return vegetables to pot. Add butter, garlic, horseradish, mustard, pepper and nutmeg, and mash with a potato masher to desired consistency. Season with salt, to taste. Stir in herbs and serve hot.

We’re moving into a new home that has a fireplace with decorative niches on one side of the wall. Could you recommend a mantel style and help us furnish the space? — M.B., Kanata, Ont.

Congratulations on your new place! Instead of adding a mantel, why not try something with serious impact? For a truly modern focal point, tile or paint the fireplace wall black, similar to the Inspiration room designed by Amber Interiors. This will visually unify the television and fireplace and really make a statement. I recommend drywalling over the niches to simplify the look. Opt for a paint treatment if you’re not sure you want to commit to tile, but a large, matte black, flat-edged subway tile with black grout would look very polished.

Ideally, you could replace your current fireplace with a larger version that would better anchor the room. Make sure that the fireplace and television are installed in the centre of the wall, with the television above. Next, cosy up the space with a large leather sectional so that the wall adjacent to the fireplace isn’t left empty — and you’ll also get plenty of lounge space. To add depth and colour, layer in modern and traditional rugs and, for a textural accent, opt for a round rattan coffee table that can do double duty as an ottoman. Finally, set an open-framed accent chair just left of the fireplace. With these steps, you can enjoy an inviting and modern living space, perfectly set up for entertaining.
