‘It’ll be Great to See Staycations Again this Summer!’

We get the low-down from Hollie Brewer, formerly General Manager of The Kingscliff Hotel, who now heads up The Mill Hotel.
Tell us a bit about yourself and career to date…
I’ve worked in hospitality for 10 years in all areas, including bar, restaurant, weddings and events, operations and management. I studied at the University of Chichester where I obtained a Marketing and Events degree. This followed onto my first event management job at the Hog’s Back Hotel in Surrey where I first joined Surya Hotels in 2016.
From there, I’ve worked my way around Head Office, The George, Colchester – overseeing events – and then landing at the Kingscliff Hotel in January 2019 as Operations Manager. In July 2020, I was then made General Manager. I absolutely love what I do and definitely see myself in hospitality for a very long time.
What was your previous role and when did you join Surya Hotels?
I joined Surya Hotels in 2016 as the Wedding and Events Co-ordinator at the Hog’s Back Hotel. Previously, I worked at the Frankie & Benny’s restaurant chain throughout college/ university years.
What does your day-to-day role involve?
A great perk of the job is no day is the same. It always depends on the day of the week or month of the year. Day to day around the hotel highly involves keeping on top of the team throughout and interacting with guests throughout the day (otherwise known as ‘doing a lap’), alongside usual admin duties, meetings with team members, and forward planning with the Heads of Departments.
Just coming out of Christmas, we had a very successful month with many, many parties enjoying the festivities around the hotel. My main role within this is to ensure high guest satisfaction and to ensure all areas of the hotel are working together.
What do you love most about your job?
The Team – the people you work with really make your job.

Last year was a very tough year for hospitality – what are you most looking forward to in 2022?
Hospitality has had its ups and downs through the past 18 months, and it’ll be great to see staycations again this summer. Summer 21 was amazing, it really brought everyone together in Holland-on-Sea and we were a very popular holiday destination. To see all our locals come back to business and enjoy what we have to offer. I am also excited about new challenges within the company, and how we will undertake these as a team.
