We are celebrating this June as Sussex Living Magazine reaches the grand old age of 10! Thank you for all your support over the years, and for the future years together. East Grinstead Spinners - a local group of spinners, weavers and dyers - was formed 20 years ago in May 1995. To celebrate our birthday we will be putting on an exhibition at the Chequer Mead Centre in East Grinstead from the 5-9th June – do come along and see our work! The inaugural meeting brought together a group of spinning friends who met in each others’ houses and students from a local adult education spinning class. A meeting place was found for us at Neale House and regular monthly meetings began with a mixture of spinning sessions, talks and spinning demonstrations at outside events. Three years later we changed our venue to St. Mary’s Church Hall in Windmill Lane, which has been our home to this day. In 1999 we were accepted under the umbrella organisation of the Association of Guilds of Weavers, Spinners and Dyers which among other objectives seeks

Since 1995 the east grinstead Spinners have been spinning at their wheels producing beautiful wools – an art lost to some but kept alive by this enthusiastic group as they celebrate 20 years together. to improve the preservation and improvement of hand weaving, spinning and dyeing and in promoting public education in these skills. Apart from the great enjoyment we all get from these crafts, it is important to all our members to pass on our enthusiasm to others, and to this end we go out demonstrating and talking to the public at many local events and are willing to talk to groups of all ages when asked. Today, we are now a group of between 25-30 members, meeting on the fi rst two Wednesday afternoons of every month. Our talks and workshops are varied, ranging from knitting and crochet to felting, tasselmaking, macrame and, of course on our core textile skills, weaving, spinning and dyeing. Every year in the summer we spend a day in a member’s garden dyeing with natural dyes, and each Christmas we celebrate with an enjoyable lunch! Demonstrating at local events and venues has always been an important part of our activities. Some of our earliest ventures were at the East Grinstead Ploughing Match. However, weather has always been something to look out for; spinning wheels and weaving looms are valuable items and need to be sheltered under cover, out of rain and bright sunshine. I remember one occasion when we had been kindly housed in a cow barn to protect us from the sunshine. As the heat intensified, the smell of the (then absent) cattle became rather overpowering! continued on page 8

It is important to all our members to pass on our enthusiasm to others. continued from page 6

For the last 15 years we have had a close association with our local Llama park, spinning alpaca fibre weekly and on special occasions throughout the summer. On a warm day nothing can beat spinning a lovely soft yarn, with the animals close by and many interesting people to talk to! We are now invited to many local venues, including agricultural shows and arts and crafts venues. We are often asked, what do we do with our handspun yarn? And the answer is, we put it to many different uses! Many of our members are knitters and crocheters, but we also use it in weaving and embroidery. Some of us enjoy dyeing using both natural and chemical methods, and others like the many natural colours available. We are lucky these days to have a wide variety of fibres to spin. Not only wool but goat, rabbit, silk and cotton, and a multitude of modern man-made fibres such as tencel and bamboo. Using sheep’s wool to felt is another textile skill popular with many of our members. Wet felting using water, soap and elbow grease, and needle felting using barbed needles, foam mats and concentration (to avoid the occasional pricked finger). The items made have ranged

from flowers to hats and pictures. Whatever we make with our spinning or felting, a good fun and social time is always had by all.

Hoping to get a better idea of bee activity in our gardens, the Bees ‘n Beans project is underway for 2015, and is looking for some volunteers! Read on to fi nd out how you can help.

It is easy to think of urban environments as all concrete and glass, greyed-out map spaces more home to buildings than beehives. Yet our towns and suburbs can be surprising havens for all sorts of wildlife, from blackbirds feasting on leftover puddings to ladybirds overwintering around window-frames. Gardens and allotments in particular, offering carefully-maintained flowers over many months, make important homes for insects and other animals. Some interesting changes in behaviour of citydwelling creatures have been spotted recently, as our wilder neighbours show their own ways of dealing with the pressures of city-living. Built-up areas are generally warmer than surrounding natural landscapes and may provide over-wintering species an earlier start in Spring. Indeed, ‘bufftailed’ bumblebees (Bombus terrestris – a common garden bumblebee) in parts of London have stopped hibernating and now fly through winter, collecting pollen

and nectar from “exotic” garden plants that flower in colder months. So there could be benefits for wildlife from living in our backgardens, or at least, not as many drawbacks as might be thought. Urban animals can be charming, or pests, depending on your point of view, but is it important that we make space for wildlife in our towns? This is certainly the case for bees and other insects that pollinate many of our garden favourites. Peas, beans, courgettes, tomatoes, apples, strawberries and many other fruit and veg need to be insect-pollinated, and a loss of bees would make ‘growing your own’ much more difficult! Bee populations in the UK are currently in decline, and so there is even more need to understand where our bees are and how well they are doing, so that conservation efforts can be best focused.

This is where we come in!

The Bees ‘n Beans project hopes to get a better idea of how well bees are doing across the UK. Rather than trying to count bees (given there are a lot of different species, and they are small and fast) the project instead uses volunteers, setting up a simple experiment at home to look at how well the local insects are actually performing pollination. From this, we should be able to see where in the country continued on page 12

there are differences, and where pollinators might be in trouble. This “Citizen Science” project uses a dwarf variety of broad beans, easy to grow in pots and pollinated by long-tongued bumblebees. Volunteers need to grow three plants to flowering, from the kit provided. One plant is left alone, to see how well the local pollinators manage in that area. Another plant is covered in garden fleece or insect-proof netting (pictured left), so no pollinators can get to the flowers. The third is handpollinated by participants, opening and closing the bean flowers themselves, to see what the effect is of maximum pollination. This experimental design was shown to work last year, and fi rst results suggest that bees are doing well in gardens – which is encouraging! The second year run of this project has just started, with over 500 participants UK-wide taking part (100 throughout Sussex county) and 33 schools.

How you can Bee part of it

Bees ‘n Beans has already started for 2015, but there are other ways that you can get involved. Help from volunteers is hugely important to our work. We want to better understand the extent and value of the role that bees and other pollinators take in our gardens. To do this, we need to work out the need for that pollination. We have designed a short (15 minute or so) multiple choice questionnaire to fi nd out what gardeners are growing, or intend to grow. Whether you have a garden or allotment, a window box or just pick blackberries down the road - we really do want to hear everyone’s views!

Blooming Great Tea Party Hosting a Blooming Great Tea Party to raise funds for Marie Curie between 20-29th June is easy and fun. Just gather together friends, family or colleagues and enjoy a fun tea party that can be as creative as you like. A vintage tea party, teddy bears picnic, fancy dress themed or just a good old cuppa and cake, whatever you choose you will be helping Marie Curie provide more free care to people living with a terminal illness in their own homes. Community Fundraiser Louise Bastable said, “We hope that the local community will get involved with holding their own tea parties across Sussex, joining others taking place across the country this June 20-29. Last year across the UK the Blooming Great Tea Party for Marie Curie raised

A Great Day For All! Haywards Heath is gearing up for another Great Day on Saturday 6th June to raise funds for Great Ormond Street Hospital (GOSH). Hosted by The Orchards Shopping Centre, it will also see the Finals of the hotly contested ‘Sussex Factor’ to find the very best young talent in the area. Beginning at 10.00am, there will be a Bucking Bronco for all our budding John Waynes to conquer, as well as a big Ball Pit

for our younger visitors. A local school choir will be opening the stage acts, followed by the ‘Sussex Factor’ Finals. Then gear yourself up for some dancing and fitness classes before relaxing and listening to another choir – although it’s hard not to join in with this wonderful crowd of singers. Tina Turner (aka Cylvian Flynn) will round off the celebrations of a truly memorable day. As orchards Manager, Nicola Bird, says: “Great Ormond Street Hospital is an incredible institution and one that deserves all our support – which is why I’m hoping everyone will come and join in our community fun day; last year, we raised over £3,200 in just one day so let’s see if we can’t do better on Saturday 6th June this year!”

Cuckfield Royal Observer Post Open Weekends In 1962 an underground bunker was built near Cuckfield churchyard as part of the Royal Observer Corps Post. It formed part of the Cold War early warning system and stayed in place until 1991 when the Post was closed. Mark Russell and Ed Combes have restored the bunker to how it would have

colours. When we started in April 2014, we hoped to be a service to the community and it has surpassed all expectations. The shop offers a wide range of products at reasonable prices; there are about 750 different items available – amazing when you see the limited space available. We also try to source locally - our meat, pies, bread, cakes, milk, honey and beers are all from local suppliers. Whilst we don’t have space for

a café, we do sell hot and cold drinks and a wide range of sandwiches and baguettes that, being fresh and hand-made on the premises, are getting fantastic reviews for both quality and value for money. We also try to help residents in other ways; for example we offer cashback on debit card sales – a service that is proving very popular, as there are no ATM machines locally. The only things we are short of are volunteers to help man the shop. You don’t need to live in Sayers Common to help, we have volunteers from Albourne, Hurstpierpoint and Twineham.

Burgess Hill Horticultural Society’s Summer Show takes place on Saturday 27th June in the Cyprus Hall, starting at 1:30pm. Once upon a time, seemingly every town and village in the country held a Flower and Produce Show. Picture the scene: a marquee pitched on the village green. Retired brigadiers’, with gout and bad tempers, battle over roses and delphiniums. Small boys, dragooned for sixpence, push unfeasibly large barrows of produce back and forth all day as elderly ladies, all doppelgangers for Miss Marple, wrestle with temperamental tea urns. Today’s world would not hold much appeal for Jane Marple, but one of the amazing things about Mid Sussex is that horticultural societies and flower shows still flourish in abundance. Bake for Sussex Air Ambulance Back by popular demand and following the success of last year’s Bake Off, the Sussex Vale Rotary Club and Hassocks WI have teamed together again to organise a local version of the competition. Taking place on 18th July at Adastra Hall in Hassocks, aspiring bakers will be pitting their favourite recipes against each other in the following six categories: Fruit Scones, Cooked Tray-bake, Chocolate Heaven, Victoria Sandwich, Vegetable Cake and Fruit Tartlets. Bakers can enter as many categories as they wish, each entry costing £2.50. This year there will two age ranges for Junior bakers, those aged 12 or under (decorated cup cakes) and those 13-16 (decorated cooked traybake) are invited to enter the Competition at 50p per entry. This is a challenging and fun event which will be assessed by an independent, qualified WI Judge. Prizes will be awarded to the winners of each class, with a further prize for the overall baking champion. Refreshments will be available after the judging when the competition cakes and scones will be sold. From 1st June, entry forms can be collected from and submitted to The UKCook Shop in Hurstpierpoint & Burgess Hill. All entries must be submitted and paid for by 11th July. Coro Nuovo at The Movies Leading Sussex choir Coro Nuovo are going to the Movies! Their summer concert this year has a “Movies” theme celebrating some well-known film music. The concert will be at the Ascension Church, Vale Road, Haywards Heath on Saturday 27th June at 7.30pm. International tenor, Andrew Rees is the choir’s Music Director and Gareth Hancock will be accompanying. Part of the choir’s aim is to support and encourage young musicians and this year they are delighted to introduce the violinist, Corey Wickens, who at just 20 shows enormous promise as a performer. Corey attended Hurstpierpoint College before starting her musical studies at the Royal Northern College. She graduates this summer and is now focusing on a future professional career. The choir have very recently entered into a sponsorship agreement with Hurstpierpoint College and are looking forward to working together in the future. The evening promises to be great fun!

Henfield Festival of Gardens & Arts This year’s festival, the 16th, is larger than ever with well over 30 venues open during the weekend of 13/14th June from 11am to 5pm each day. There are many attractive gardens to visit, some offering homemade lunches, cakes and teas. Displays of art can be found in gardens and other venues covering painting, photography, ceramics, jewellery, metalwork, glass sculpture among others. Music is always popular and all tastes are catered for with performances by local choirs and solo artists, jazz, brass bands, Morris dancing,

guitar lessons, handbell ringing and much more. Entry is free to all venues, but charitable donations are welcome. For the second year running the chosen charity is our local scout group, the oldest surviving one in the world, who are fundraising to rebuild their deteriorating scout hut. Mid Sussex Home Birth Group is a free, voluntarily run service, providing information and support to women planning or considering a home birth. It is good to be back in a more village like atmosphere away from the hustle and bustle of our Brighton and Hove office. Residential Conveyancing is something which many people do come across at some point in their lives, whether it is buying their first home, moving to a bigger family home, or having to deal with the sale of the family home when a parent dies. There is a minefield of paperwork which may not make much sense to a layperson, but which a professional can decipher to ensure that a client (and the lender where appropriate) is protected. It is often said that buying and selling a house is one of the most stressful things in life and yes, this can be the case when you are dealing with different personalities and different expectations from all parties concerned, exacerbated by the legal jargon which seems to materialise throughout the transaction be it “rights of access”, “restrictive covenants” or “indemnity insurance” all of which can cause panic! This is where you need an approachable legal representative with whom you can discuss issues calmly without feeling you are taking up “too much” of their time. ‘Client care’ is a keen principle of the ODT ethos; treating each client with equal importance and giving time as required to ensure that each client is taken through the process as smoothly as possible and with as little stress as possible. Residential Conveyancing does not just cover the buying and selling of houses and flats - it includes transfer of equity (sometimes when there is a matrimonial issue, then as part of the divorce proceedings there may be a requirement to transfer the property from joint names to the sole name of one of the parties); re-mortgaging (the changing of lenders which often occurs when a fixed interest period expires

on a mortgage and the borrower can achieve a keener rate of interest with a new lender); granting or surrendering a lease; splitting a property into two or more titles or the voluntary registration of unregistered land. There are many instances in property law, where you may need advice - be it a boundary dispute, a landlord and tenant issue, a party wall matter, adverse possession, leasehold enfranchisement – all of which can be dealt with by experienced members of the ODT team at competitive and fair rates having regard to the service being provided, with everything being clearly defined at the outset. There are so many things to consider when buying and selling property, including the completion of all the ‘standard’ forms, dealing with issues as and when they arise, or even the more practical side of packing and removals and trying to obtain a place for your child(ren) in the new school. Consideration should also be given to other aspects of your life such as: Wills – these deal with the distribution of your property (not just your house) and other properties on your death, and can determine who looks after your children and their welfare should you die prior to their reaching adulthood. Declarations of Trust – these deal with how a property is held by two or more people - either as joint tenants (this is where the parties own the property equally and automatically falls to the survivor should one party die); or as tenants in common (this is where the property is owned in specified shares and goes generally as per your Will). Often, when people are unmarried, it is advisable to put a Declaration of Trust in place as it can record how much capital or payment of outgoings each party is putting into the property, and clarify how the property proceeds are dealt with after all costs and disbursements have been cleared if the relationship breaks down. It should also be used by parents who are contributing

This month Ruth Lawrence visits three open gardens, all raising money for St Peter & St James Hospice. Perfect for a summery day out, enjoy the blooms, views, tea and cakes! Hurst Open Gardens

Hurstpierpoint Open Gardens on Sunday 14th June features six contrasting and characterful gardens dotted around the village, offering surprises galore for the curious. All proceeds go to St Peter & St James Hospice, an indispensable refuge for those needing care and respite. All gardens are within a fifteen minute walk (although the community bus is offering as many journeys as you need for a pound) and are open from 1-5.30pm, giving ample time to savour their particular delights. I visited two participating gardens to experience a flavour of the day to come. Lesley Manning’s powder pink house is a perfect setting for her wraparound gardens which seem to blend seamlessly with a breathtaking view of Lesley Manning and her dog in their Hurst garden

Wolstonbury Hill. When Lesley bought Culver Croft fifteen years ago, she was lucky enough to inherit a garden filled with beautiful mature plants and she has built on that happy foundation over the years. A towering yew tree is a wonderful contrast to Lesley’s favourites, the colourful peonies and spectacular magnolias, although she loves the clematis, which is intertwined with a gorgeous climbing rose. Lesley’s philosophy is refreshingly relaxed; “I tend to buy a plant and hope,” she admits, frequently unearthing bargains in the sale sections of garden centres, which quickly thrive with nurturing and attention. Lesley clearly adores her garden and so does the wildlife; a slow worm lives in the rockery and owls, redwings and fieldfares are frequent visitors. On the open day visitors can enjoy teas while savouring the magnificent view and plants that will also be on sale. Elizabeth is the proud owner of the second garden I visited. This garden in Cuckfield Road was originally a field for sheep and its transformation into a peaceful retreat, flanked by

long gardens was a long labour of love. Elizabeth, a talented artist, returned to her creative passion five years ago after attending Brighton Art College in her student days. Her delicate watercolours will be on sale to raise funds for the cause, and there will also be plants and elderflower cordial for sale. The original apple trees were still in blossom during my visit and we were lucky enough to see a common blue butterfly, more usually seen on the downs, fly past in the sunshine. Elizabeth’s favourite plant is the red azalea; by June the whole garden should be

The owners of Orchard House in Cuckfield are opening their stunning, extensive garden in aid of St Peter & St James Hospice from 2-5pm on Saturday and Sunday 4-5th July. I took a leisurely stroll around their two acres of glorious colour and well considered planting (pictured left and right by John Peters). The garden was originally part of an orchard of a larger adjoining house and many of the original trees remain, some six decades later. While there was no real plan to begin with, the garden has evolved to include magnificent herbaceous borders, vegetable and fruit beds and a North American prairie meadow. Two greenhouses shelter the self propagated plants and a wide selection will be on sale during the day. The garden shares the same ridge as Nymans Gardens, where the soil is on the acidic side of neutral. This means that anything, including heathers, which provide autumn and winter colour, can be grown here. One of the owners’ favourites is the magnificent ‘Wedding Cake’ tree, a name which is immediately suitable the moment you set eyes on it from a distance. Rhododendrons and magnolias add grandeur to the enclosed courtyard which opens up into a stretching view of colour and height, within which

A wild area has been put aside, much to the delight of resident birds, which include woodpeckers, nuthatches and buzzards and the herbaceous borders with a variety and

vividness of colour attracts bees. After removing the original 8ft high privet hedge, the owners planted a replacement beech hedge which has since grown to become a background feature of the garden. The owners will be on hand over the weekend to offer advice and information over a cup of tea and cake; dogs are welcome too and parking is available in a nearby field. There is something for everyone in this well thought out and productive garden; tranquillity, colour, scale and surprise in equal measure. Visitors will be certain to come away informed, inspired and excited by the variety on display and perhaps recreate some of the ideas in their own gardens in the future.

There is plenty to be getting on with in the June garden, from squeezing in a couple more bedding plants to growing that second batch of beans, enjoy! As late spring quietly morphs into early summer, the garden centres sell off their remaining springtime stock. Sadly, not every plant will make it to a new home. No matter how temptingly cheap, the tired and malnourished-looking specimens are to be avoided. Yellowing leaves are a sign that compost has long run out of food and a plant displaying a mat of pot-bound roots will never fully recover – these individuals are destined for The Great Compost Heap in the Sky. However, it’s well worth scanning the sale shelves as there are genuine bargains to be had. You reckon your borders are already crammed full? What nonsense! We’ve all got room for a couple more trays of bedding plants. On the veg patch, there is plenty of seed-sowing to be getting on with. Salad crops grow fast and are best eaten when young and tender. Don’t make the mistake of sowing an entire packet of seed, then having a glut when everything matures all at once. Stagger the crops by sowing in small amounts every 10 days or so. In summer, lettuce and radish can suddenly ‘bolt’ and run to seed, a natural process which is triggered by high temperatures. Try growing them out of direct sunlight – they flourish in slight shade and the cooler conditions delay the bolting process. Early-sown peas will be flowering now, so there’s time to get more started to give an additional crop in August. Likewise, it’s always worth growing a second batch of French beans. Climbing French beans

are attractive to look at and have a longer cropping season than the bushy varieties. They’ll also tolerate drier conditions, although any plant that is in the flowering/cropping stage will need plenty of water, otherwise the yield will be significantly reduced. Courgettes, pumpkins and other members of the squash family sulk and stop growing in chilly conditions, which makes them prone to rotting off. Although May is the ‘correct’ time to sow them, you can usually get away with a sowing in early June when temperatures, (particularly at night)

They can be sown direct into the soil, but starting them off in pots will give better protection against slug and snail damage. They will grow at a tremendous rate and soon catch up with earlier sowings. It’s hard to think of a more underwhelming and inedible-looking vegetable than a butternut squash. Hard as granite and dull-skinned, but, inside, it’s a different matter altogether. Chopped and roasted with a little garlic, the vivid orange flesh tastes delicious. Add chunks to a risotto, or blend it down to make a smooth, silky soup. Perfect for when those autumn nights start to draw in …

Franciscus Sylvius invented Gin in the 17th century. He has much to answer for. Originally it was sold as a herbal medicine to ‘help’ with problems like lumbago, stomach ailments, gallstones and hilariously in my view, gout. Jenever, as it was then called, was simply a distillation of spirits flavoured with Juniper berries, but whilst Franciscus gets the credit, earlier varieties of Jenever are recorded as being used by soldiers in the Low countries for its calming effect before going into battle - hence the expression ‘Dutch courage’. Today, Gin has of course matured from a rough old ‘remedy’ into a sophisticated and thoroughly grown-up social drink with its own ‘World Day’. It is the essential ingredient in hundreds of cocktails from the well known ones like Martini and Singapore Sling, to the more exotic Satan’s Whiskers and Fallen Angel. All of them, regardless of the name, will make you talk funny. Gin’s transition from soldiers’ friend to posh cocktail has not been without controversy. In the middle of the 18th century, London was overtaken by The Gin Craze. The government allowed unlicensed Gin production and at the same time imposed heavy duties on the importation of foreign spirits. The effects were devastating. Cheap Gin made from poor quality grain and often with creative additives like turpentine, was sold for pence and it became the scourge of the capital’s impoverished, slum-ridden masses. The Gin shops were blamed for everything including rising crime rates, madness, prostitution and public disorder. For the fi rst time, women were allowed to drink alongside men and seemed to have taken full advantage of the ‘privilege’, hence ‘Mother’s Ruin’. Things only calmed down when the legislation was repealed and Gin could get on with becoming respectable, especially with the 20th century discovery that it mixed very well with Tonic. The ubiquitous ‘G&T’ turned out to be not only delicious, but in certain parts of the world, you could always claim you were drinking it medicinally to protect against malaria. Actually it was the quinine in the Tonic that was doing the job, but it certainly worked for me.

Food Glorious Food

With some light and delicious offerings for June, our food writer Robert Hanson has gone potty over shrimps and raving over risotto.

The poet, Ernest Dowson (1867-1900) is now best remembered for just two haunting lines: ‘I have been faithful to thee Cynara, in my fashion’ and ‘They are not long the days of wine and roses’. I’ve always felt that for the days of wine and roses Dowson must have been thinking of June. So, as well as wine and roses, what about shrimps and a lovely risotto?

Perfect Potted Shrimps Serves 4 200g of unsalted butter Juice of ¼ of a lemon ¼ teaspoon of ground mace ¼ teaspoon of white pepper ½ teaspoon of anchovy paste 200g of cooked and peeled brown shrimps Cayenne pepper 1. Over a gentle heat melt the butter and then, watching it very carefully, allow it to simmer until you see the first dark flecks. Strain the butter into a jug through some butter muslin or two pieces of kitchen roll. 2. Wipe out the pan and pour in 2/3 of the melted butter. Add the lemon juice, mace, pepper, anchovy paste and a pinch of salt. Simmer this very gently for 5 minutes. 3. Take it off the heat and allow it to cool but not set. Divide the shrimps between 4 ramekin dishes and press them in tightly. When the butter is just warm and still liquid divide it between the ramekins. 4. Put them in the fridge to set. Once set, pour over the remaining butter and return the ramekins once more to the fridge to set once more. Serve with a sprinkling of cayenne and lots of hot toast.

Broad Bean and Pea Risotto Serves 4 1 tablespoon of olive oil 100g of butter 2 shallots, peeled and chopped 175g of Italian risotto rice, Arborio or Carnaroli 100ml of white wine 600ml of hot vegetable stock 50g of finely grated Parmesan 200g of fresh peas (starting from about 1kg peas in their pods) 200g of broad beans (starting from about 1kg of beans in their pods and skins, both to be removed) 1. Heat the oil and a quarter of the butter in a large pan and add the shallots. Cook until they are soft and translucent, 4-5 minutes. Stir in the rice and cook it for two minutes. Increase the heat, add the wine and let it bubble to evaporate the alcohol. 2. Now start adding the stock a ladle at a time making sure that it has been absorbed into the rice before adding more. Don’t stop stirring. Depending on the rice, the stock adding and absorption should take between 15 and 20 minutes. 3. In a pan of boiling water blanch the beans and peas for 2 or 3 minutes. Drain and set them aside. Take the risotto off the heat and stir in the rest of the butter, then, when it has melted, add the Parmesan, beans and peas. You may well wish it would be June forever.

Recently, I offered to help my wife with the weekly shop. At least I thought I was helping, but apparently my inspired selection of items were becoming a distraction, and I was invited to go and have a coffee. The bright, airy cafe wasn’t busy and I was greeted by a smiley, coffee-sales person who asked me what I’d like. “A coffee please,” I said. He gave me a slightly quizzical look and asked me what sort of coffee, indicating the large and exceedingly complex menu hanging on the wall behind him. It was like playing ‘Pointless’ because I only recognised three of the alternatives and in any event, I can never remember which is the small tar-like coffee which makes you bad-tempered and stops you sleeping for days, and which is the one which most resembles ordinary coffee. Faced with Skinny Lattes, Cappuccinos, Espressos, Americanos and a host of other incomprehensible choices, I asked if I could have a tea. “What sort of tea?” he enquired, indicating the tea menu this time. I didn’t read it. “Can I just have an ordinary, breakfasty sort of tea?” I pleaded. “Certainly,” he replied. “What’s your name?” This threw me a little and when I asked why, he said, “Because I pass your order down to the other end of the serving counter and when it’s ready, that lady calls out your name and you can have your tea.” “But there’s only me here,” I said. He waited patiently with the air of a man whose entire life was spent dealing with people who’d been released into the community too early. I gave him my name and my money and we both walked down to the other end of the counter where he gave my details to the lady who’d been waiting for us. I went over to a corner table and sat down just in time to get up again and walk back to the counter when she called my name. I was extremely relieved when Liz turned up with the groaning shopping bags.

There is gold in the hills of Sussex buried beneath the trees, and those that know it’s whereabouts hold the secret dear. But if you are lucky enough to find the treasured truffle, savour its awesome flavour. When I hear the word ‘truffle’, I immediately imagine a dense chestnut forest in France where a solitary prospector digs for the black gold, helped by a specially trained dog. Yet in 19th century Sussex there were men who earned a living as truffle hunters, using pigs or dogs to sniff out the prized delicacies. According to Thomas Walker Horsfield’s History, Antiquities and Topography of the County of Sussex, (published 1835 by J. Baxter, Sussex Press, Lewes) beech woodland in the parish of Patching was the best place to find the Sussex truffles. Four decades earlier, a man called William Leach had come from the West Indies with truffle hunting dogs on a mission to find the elusive fungi. Having scoured the coast from Lands End to the mouth of the Thames, he

found the abundance he sought in Patching, where he stayed, hunting successfully, until his death. In 1931, an elderly Irishwoman, Mary Hack was selling truffles she found in the same area and she took their secret location with her to the grave. Truffles apparently like chalk and limestone and are symbiotic with beech, hazel and oak trees; as they grow on tree roots they will normally be found within the diameter of the canopy. Today, a licensed truffle hunter can teach participants how to locate the delicate black truffle we have here called ‘tuber aestivum’ or ‘summer truffle’. Altitude seems to play an important role in locating them and they are generally found over 100ft and below 1000ft above sea level; the entire ridge of the South Downs falls within this altitude. Truffles are ‘allelopathic’ which means that they inhibit the growth of other plants; this can be a clue to their whereabouts as the ground cover of normally green vegetation will be missing. This doesn’t mean they are parasitic as they actively aid trees by taking out and breaking down the chemicals they need which is useful on poor soils such as chalk. Within this circle devoid of greenery, animal activity can be a sign of truffle presence; the truffle relies on foraging animals to disperse its spores by eating them and depositing the remains in a new location. The truffle looks almost like a small group of stuck together dried blackberries; an unlikely delicacy but sought after for its’ nutty flavour. Interestingly, they were not always associated with luxury; French and Italian peasants used to eat them in times of war or hardship, to flavour a pot of beans when no meat was available. Today, although certain Italian or French truffles can fetch thousands of pounds a kilo, the truffles found in Sussex are of relatively low value and are best grated raw over a dish such as scrambled eggs or risotto.

With Summer finally under way and tennis season on the horizon I thought that my fruit shortbread rounds would make a lovely treat. I have filled mine with strawberries and cream but you could use any fruit you wished. I find they are best enjoyed after a strenuous (and in our house very competitive) game of tennis with a long cool fruity cocktail or cloudy lemonade with ice. Makes 24, 7cm round shortbread biscuits Preparation 15 minutes Cooking time 12-14 minutes Oven temperature 170 C fan, 190 C, Gas 5 Baking tray lined with baking paper Ingredients: Biscuits 125g soft butter 125g golden caster sugar 1 teaspoon vanilla extract 1 egg 2 teaspoon xanthan gum 225g gluten free plain flour Filling 1 large punnet of strawberries, hulled and washed 300ml double cream Icing sugar to dust Top tip Xanthan gum is used as a substitute for gluten and it is completely natural and vegetarian. It improves the texture of food and if used correctly will prevent the biscuits from being too crumbly.

1. In a large bowl place the butter, sugar and vanilla extract and beat together. 2. Beat in the egg and gradually beat in the xanthan gum and flour, until all ingredients are incorporated. 3. Wrap dough in cling film and chill in the fridge for at least 30 minutes. 4. Roll the dough out between two sheets of baking paper, cut out plain circles approximately 2mm thick. 5. Place the circles on oven trays lined with baking paper, and bake for 12-14 minutes or until lightly golden. 6. Remove from the oven, cool for 5 minutes and transfer to a wire cooling rack. Softly whip the cream, pipe or spoon onto one biscuit round and top with 1 sliced strawberry. Top with another biscuit and dust lightly with icing sugar.

Our local Rotary Clubs are working with young people in various Youth Initiatives, serving the community, learning new skills and having fun along the way!

Young at Heart It is a common misconception that Rotary Clubs are only for older people. Kids Out has been a firm favourite with local Rotary Clubs for over 20 years and takes place annually, usually in June, when we take disadvantaged school children for a day of fun and happiness to an adventure park. For instance, the Sussex Vale and Burgess Hill Rotary clubs combine to take out youngsters with special learning needs for a fun day. It is a nationwide event when 440 Rotary Clubs entertain over 25,000 children, at events all over the country. Your local Rotary Clubs of Sussex Vale, Burgess Hill, Cuckfield & Lindfield and Haywards Heath already work with schools and other youth organisations to provide opportunities for character building and developmental activities, whilst having fun doing so. The list of areas we help with is extensive, but examples in Mid Sussex include - Young Chef, Youth Speaks – a debating

competition, Young Musician, Rotary Youth Leadership Award, assisted reading, and interview training. This year our ‘Young Chef’ area winner,15 year old Lewis Wilson, who was sponsored by the Rotary Club of Horsham, became the deserving UK champion. His prize includes the trip of a lifetime to the olive groves in Tuscany where Lewis will experience real Italian cooking. He will also enjoy a day’s tuition at a Michelin-starred restaurant. The local Rotary Youth Leadership Awards (RYLA) is an annual leadership development program which focuses on secondary school students, university students, or young professionals from this area and occasionally, international guests. Our local RYLA event is a residential course, typically 5 days long and held at an outdoor activity centre in Surrey. It covers a variety of challenging and entertaining topics including orienteering, night initiative tests, problem solving, aqua sports and many more! INTERACT is a club for those aged 12-18 who want to connect with others in their community or school. The club members have fun while carrying out service projects and learning about the world. They organize at least two service projects a year: one that benefits their community and one that encourages international understanding. For instance, last year one Interact Club prepared and served afternoon tea with musical entertainment to a local old persons’ home. Many schools welcome this approach, and it is an area local Rotary Clubs are keen to develop. Rotary Youth Exchange offers great opportunities for young people. It is considered one of the best youth-exchange programmes in the world where participants can broaden their minds and their horizons with or without vocational experience or academic study. Rotary Clubs are made up of active, enthusiastic men and women from all walks of life who want to make a difference and have a great time in the process. Working with young people is one of our most important ambitions and there are other youth opportunities, besides those already mentioned. Want to know more? Life, Luck & Magic The life story of Fergus Anckorn is a tale of extreme hardship, torture and endurance, yet prevailing through it all is his uncanny ability to rise above, stay present in the moment and above all, to be thankful of the life he has. Ruth Lawrence meets this magic man.

Four years shy of his hundredth year, Fergus Anckorn brims with vitality and an irrepressible humour. I recently caught up with him at home in Hassocks after hearing his remarkable life story at a talk he gave last year in Clayton. Fergus was captured in Singapore in 1942 and forced to work on the infamous Burma Railroad, immortalized in the film ‘Bridge over the River Kwai’. He was the first man in Kent to be called up and as the youngest member of the Magic Circle, a skill honed since he was a young boy, Fergus was given the task of entertaining the troops as the only magician in the concert party. He performed shows every night and eventually his regiment was called to go overseas. The day before he left, he became engaged to his sweetheart, Lucille, but on a wage of 12s and 6d a week, he couldn’t afford a ring. He took a farthing to his local jeweller and asked him to cut it in half, hanging each piece on a separate chain, one for Lucille and the other for himself. Trained for desert warfare, his regiment were ordered to alter course to Singapore after Pearl Harbour. “We got there five days before Singapore fell; the Japanese were looking for targets and bombing the docks,” he described, telling me how he jumped into the water whereas his six friends continued on page 45

who sought shelter were killed. After his regiment’s gun was hit in action, he was sent to bring back another and on the way back, he was hit by Japanese bombers. Despite his right hand literally hanging off, he managed to kick open the door and was shot in the back of the knee as he jumped out. Found in a ditch after fi rst being assumed dead, Fergus was told his hand would have to be amputated but by chance, the orderly about to administer ether recognised him as a magician and told the surgeon to save his hand as he was a brilliant conjuror. He woke up in another hospital to fi nd his hand still on but pouring with blood and the building under attack from the Japanese who were systematically bayoneting doctors, nurses and patients. Fergus put a pillow over his head, waiting to be killed and thinking to himself, “I’m dead; I wonder what I might have been.” Miraculously, Fergus turned out to be the only person who survived the hospital massacre; the killers must have assumed he was already dead on seeing the blood pouring from his wound and passed him by. From there, Fergus ended up in the notorious Changi POW camp in Singapore; his hand remained clawed and useless for nearly four years and he could only walk with difficulty after the bullet wound to his knee. In the camps, brutality, executions and death by starvation and disease were commonplace; his mother had been told he had died and in his opinion it was sheer luck and his skill as a magician that saved his life during those hellish years as a prisoner. Working for 18 hours a day in 110-120 degree temperatures, the handful of rice each prisoner was given was

barely enough to keep them alive. “I ate rats, cockroaches, maggots and slugs,” Fergus recalled, yet with the camp commanders and guards requesting he entertained them with magic, he was able to secure extra food by using it in his shows to conjure with. “The Japanese refused to touch any food touched by a prisoner,” he remembered; his best coup was to obtain 50 eggs when he had authority to take only one. After Furgus and his friends had enjoyed a secret 49 egg omelette in his hut, he was summoned to the commander’s room. Fearing an instant beheading, Fergus told him he had used the other 49 eggs to perfect his trick and he was let off without further question. Fergus’s mother had taught him a valuable skill as a child; shorthand. Fergus found he could translate English into Japanese with the help of an interpreter by writing it down phonetically in shorthand; today he can still speak Japanese phrases he remembers from his internment. Shorthand proved a way of communicating his survival to his mother; he included the characters for ‘still smiling’ into a signature (his mother’s nickname for him was ‘smiler’) on a rare card sent to her home. Once she recognised the code, she knew he was alive and both herself and Lucille could hope for an eventual reunion with Fergus. After another close escape, when he was about to be executed by guards after the Japanese surrender, who, fearing reprisal, changed their minds at the last moment, Fergus was sent to Burma to put weight on before returning to England. He weighed just five stone after emerging from nearly four years of starvation and overwork; three months later he had put on a stone and was sent home aboard the SS Orbital. Life at home was not easy; no one understood what

he had been through and his family thought he’d been well fed while they’d had to endure rationing at home. Unable to convey just how horrific his incarceration had been, Fergus felt bewildered and unable to settle into civilian life. One day he went to London and while sitting in a café with fi ne linen, silver cutlery and an orchestra playing, broke into tears at the realisation of what he had survived and the enormity of his new freedom. He found that once his confidence had returned, nurtured by Lucille, he felt free and focused enough to continue his life. Six years after the war, walking in Gower Street in London, a man tapped him on his shoulder and asked him how his hand was. The man was

Julian Taylor, eventually knighted for his work in orthopaedic surgery, the very same man who, as an orderly had asked the surgeon to save Fergus’s near severed hand in the field hospital all those years ago. He invited Fergus to be his guest at University College Hospital and took 10 days to work on his damaged hand under local anaesthetic until he regained its movement. Today it still functions perfectly and a long scar bears witness to the original injury and it’s healing. Taylor had been a POW at Changi too and had used his ingenuity to construct artificial limbs from fan blades despite the unspeakable conditions. If anyone was to understand the consequences of Fergus’s injuries, it would have been him and their chance meeting was a life changing and fortuitous event. Fergus told me that his survival was down to sheer luck, having looked certain death in the eye not one but four times and I asked him how it had affected his attitude to life. He told me that “to discover you’re free and alive is wonderful” and that “every morning I look out at the trees and listen to birds singing and think how wonderful it is to see all this.” His obvious delight in the here and now has given him the vitality of a man a third of his age and his sleight of hand skill is nothing short of jawdropping. Fergus produced a pack of cards and proceeded to reduce me to incredulity with a series of ‘tricks’ that seemed able to read my mind. Now I understood how his skill had kept him alive; those who imprisoned him must have been as desperate for entertainment as his comrades and an ability to make magic as seamless as this must have been

invaluable to enrich the days of his captors. Fergus’s people skills proved to give his own life meaning after he eventually readjusted to his freedom; he became a teacher and a Special Constable until his retirement at 62. “I love teaching,” he admitted, having held two lectureships at West Kent College. “I was always a child who asked questions.” He recalled being decades ahead of his time when as a young boy he’d been chided by his short sighted teacher for describing how a rocket might reach the moon and return. His credo as a teacher was to encourage questions and engagement, much to the chagrin of those in authority. His wartime experiences had left him fearless of his superiors and he challenged accepted teaching methods to gain results that were life changing to his once struggling pupils. Former pupil Jenny Godfrey wrote in an article how Fergus had “taught and given me something vital for my future, hope and confidence. Mr Anckorn is a very special man, the most amazing, inspirational man I have ever met.” Despite the knee injury he endured throughout the war, Fergus managed to run an astonishing 45,000 miles between 1950 and 1981, a hundred miles a week, accompanied by his loyal dog, Sam.

Sam became part of Fergus’s magic act; the pair were able to communicate and audiences watched, disbelieving, as Sam appeared to read minds on stage. I wondered how he kept going, month after month for those 3 ¾ years of confinement and fear and he answered that he tried never to think of home, concentrating fully in the present. When about to sleep at night, he remembers thinking, “don’t think of the last day or tomorrow, be alive tonight.” He always maintained

the concept of ‘dressing for dinner’ even though dinner might have consisted of a few grains of rice; he wrapped a fragment of mosquito net around his finger as a ritual before eating as a way of focusing his mind. He developed a way of finding strength in the most frustrating circumstances…. the Japanese once gave the grateful, starving prisoners four pigs to fatten for Christmas; everyone donated a spoon of their precious rice a day to put weight on the pigs in anticipation, but on Christmas Day, their captors ate the pigs themselves. Fergus remembers realising “that things could only get better” after what him and his comrades had endured and that “we learned to get our priorities right” by focusing on camaraderie and helping one another. He had managed to keep a tiny photograph of himself and Lucille throughout the war; when he was in the jungle, he found a discarded wristwatch face and set the photo inside, fastening it about his emaciated wrist with a thin webbing strap. He showed it to me; the image was bright as the day it was taken and it was a graphic reminder of his condition in the camp. The strap was barely wide enough to fit a child’s wrist.

Over fifty years ago, in 1965, Hal Wallis had an idea to form a Society. He was a lover of nature, of walking on the Downs and countryside around him in Hassocks, and was keen to share his interest with others. The large turnout of the first meeting in April 1965 assured Mr Wallis that this was a Society well received and supported by his fellow countryside enthusiasts, and so with a small group of committee members appointed, the Hassocks Field Society was born. The aim of the Society is to “stimulate interest in and protect the amenities of the countryside”. This is achieved through a series of illustrated talks, twice yearly lecture-series lasting for 10 weeks, organised walks, holidays, coffee mornings and social gatherings. Community is a very important aspect of the Society, and many funds have been raised through their coffee mornings to support the Monday Group (working to keep paths clear and stiles in good working order around Hassocks), as well as many other local charities and projects. Much enjoyed by the members are the coach outings and holidays. Over the years the Field Society has explored most of the country either on holiday or day trips to stately homes and gardens,

places of interest and historic sites. Coach holidays have been spent in Cornwall, Derbyshire and this year the Society spent a few days in Norfolk. Holidays to the continent have also been enjoyed by members visiting France, Belgium and the Netherlands. The Society has a twice yearly news letter called ‘Field Fare’ (taken from the name of the bird which is their logo). All members are free to contribute to this, making for varied and engaging reading. I was interested to see some carefully preserved copies dating back to September 1980, and I was struck by the lovely ‘stories’ inside. A Mr George Ellis writes about their trip to Fittleworth, entitled ‘The Fortunate Fittleworth Few’. But it is not simply a report; he paints a picture of the weather, the accommodation, food (hot pasties included in their packed lunches), and notes all the little details for his fellow Society members. I was delighted to read in one entry which appeared in the 40th Field Fare, about a young Les Campbell, who along with his faithful boxer dog, Pip, was messenger-boy for the Society, and has been a member since he was 16! As many of our readers will know, Les is our local walks expert and contributes to Sussex Living every month. To mark their 50 years, the Society held a special meeting to commemorate the first meeting held on the same date 27th April 1965. I am assured they had great fun enjoying nibbles, drinks and a Birthday cake, cut by Jane Richardson, Chairman of the Society. To further celebrate, there is a special Anniversary Dinner on 1st June, as well as a recreation of the first walk the Society enjoyed, on the 27th June. This will be a trip to Jack and Jill Windmills, with a picnic and celebrations. We are lucky to have this Society on our doorstep, which not only supports the community around it, but the nature and countryside for us all to enjoy.

Fletching

Walk

Take a Summer stroll along this peaceful 4 mile circular walk around Fletching, taking in the birdsong and beautiful countryside as you go. This walk starts from the centre of Fletching village and follows field paths and relatively quiet stretches of country roads through peaceful countryside often with just birdsong for company. It is generally well signed and waymarked, but there are a few stiles to negotiate some of which might prove a little tricky for the less agile! In 1264, Simon de Montfort stopped at Fletching for the Bishop of Worcester to bless the troops prior to the Battle of Lewes. Historians will know that he defeated King Henry III’s troops at this battle. From the car park turn right, and follow through a housing estate, and at the far end, turn left on a concrete road then right just past house number 14. This leads into a burial ground, and ahead of you is a metal kissing gate. Go through the gate and bear half right across a large field aiming for a protruding hedgerow. Go over a stile, and maintain direction to another stile, which you should go over and then turn right on a farm track. At the end of the track, go over a stile and bear half right as indicated

by a waymark. Soon the next stile comes into view; go over this, and go downhill through a strip of woodland to cross a substantial footbridge, and up some steps into a field. Cross the field to a stile and follow the waymarked path ahead going over the brow of the hill and downhill to a gateway. Bear half right to the hedge, which conceals a footbridge over a stream. Go through a gate beside the barn ahead, and follow a concrete track out to join Daleham Lane at Dale Hamme. Cross to the signed path opposite, and follow the fenced path ahead. The path bears right and narrows leading into a field. Follow along a fence line with a pond on your right to join a shingled drive with a house on your left. Side step to your right, to fi nd a confi ned path (indicated by a black arrow), and follow this out to Down Street by the Old Stables. Turn left along Down Street for a little under a mile ignoring the turning off to your right, Picketts Lane, and carry on along Down Street. Just before the buildings of Black Ven Farm, look for a signed path on your left between two ponds. Go over a stile and into a field and keep close to the field boundary on your left, and aim for a gateway beside a pond. your right to a conifer plantation. Follow around the plantation to a stile leading into a paddock, and go through a gap in the trees beside a house. Join an unsurfaced track going uphill, and shortly at a “T” junction, bear left and follow this track out to Bell Lane, a quiet lane between Nutley and Fletching. Fletching was once the home of the actor the late Jimmy Edwards! Turn left, along Bell Lane to the crossroads at Splayne’s Green, carrying on ahead to the centre of Fletching.

Action Dad! With the month of June comes Father’s Day and the opportunity to give thanks to the paternal figure in your family. Sasha Kanal shares her ideas for a fun filled day. Always celebrated on the third Sunday of this month, this year Father’s Day falls on 21st June. Said to have its origins in the USA, Father’s Day celebrations here in the UK only really gained ground during the 1970s. Indeed the day itself has become synonymous with cards illustrated with foaming mugs of beer and a proliferation of Father’s Day gifts on the shop shelves. But whatever your views on celebration days, in our time-poor world, they can serve as a good reminder for us to get together as a family and do something different. If the dad in question is an active type, then why not plan a walk through the wonderful Sussex countryside (particularly alluring in June) and end up at a country pub for that foaming mug of beer? It’s never too late to learn something new and gifting an experience to a loved one has gained popularity in recent years, with so many companies offering a whole range of pursuits. From kayaking, surfing and supercar driving to bouldering and flight simulation, the dad in your life might be glad for the chance to get out there and try his hand at something totally novel. For the epicurean, a wine-tasting course or a visit to one of Sussex’s stunning vineyards are unique gifts. Similarly a gourmet picnic while watching a village cricket match would be a great

way to bond. Some good quality, crusty bread, Sussex cheeses and chutneys from the local farmer’s market are all that’s required to elevate a picnic to something noble and it beats a dry sandwich any day. For those who prefer to relax and tune out for a few hours, then fishing, one of the UK’s most popular pastimes, is a relatively easy sport to get involved with. All you need is a fishing licence (which can be very low cost for the day), available from the post office and some basic fishing rods. There are many tranquil ponds, lakes and rivers offering fishing in Sussex. Perfect for whiling away a few hours with your pop – catching fish is a bonus. Cultural connoisseurs can get their kicks at the many stately homes and houses in the county or by searching out their nearest museums and art galleries - many of them with free entry. Follow your highbrow wanderings with a cup of tea and a slice of cake and you have the perfect Father’s Day on a plate. So whether dad’s a gourmand or a culture vulture, there’s something out there to suit every taste and no excuse this year for cufflinks or a dodgy tie!

The classic red lip has been adding a pop of colour to women’s makeup for years, and today it is as popular and striking as ever. The 1940s may have been a time of war, but they were also an instrumental time in the evolution of British women’s place in society. Cuckfield Royal Observer Post Open Weekend

There is no doubt that over the past few years there have been some devastating losses in business, but on the bright side there have also been some stirring success stories. This recent wonderful weather has certainly benefitted the gardens and countryside of Mid Sussex. From the hedgerows to the lush green of meadows and lawns, everything is looking lovely, and hopefully the abundant spring blossom is a signal of the forthcoming summer. We had a great time at the Burgess Hill Means Business exhibition on 15th May, and were pleased to see many local business’s attending. All in the name of raising funds for St Peter & St James Hospice, we had a go at the charity darts. Needless to say, a bit of practice wouldn’t have gone a miss, but it was great fun! Our thanks to Peter Liddell and everyone involved in organising this event. Holiday season is beginning in the office, with both Sonya and Deborah enjoying a well-earned break over the next month. Wishing them both a great holiday, and don’t forget to send us a postcard! Wishing all those Dads out there a very happy Father’s Day on Sunday 21st June.
