Editor’s comment A warm welcome to our July issue of Sussex Living. This month we are definitely making the most of Summer, with loads of ideas for activities and days out in Sussex. Or why not make it into a whole week away, taking inspiration from our article on camping from page 46? Sasha Kanal and I had the fun task of drawing on past experiences, and getting out under the stars, to write this piece. So whether it’s glamping and pampering you prefer, or would rather rough it in the wilds, read on to discover how you too can enjoy the great outdoors. While visiting a Sussex cottage garden this month, Ruth Lawrence was canny, and patient enough to snap a beautiful shot of a dragonfly. You can see the picture, and read all about these elusive creatures on page 56. Also inspired by the Sussex countryside, this time in the rain, was Roger Linn. Read his evocative poem ‘Summer Rain’ on page 43. I have been fighting my own battles this month, with the slugs! They seem to enjoy munching their way through my veg patch, but I’m thrilled to report that I’m onto a winner with the sweetcorn, which is getting taller every day. Just can’t wait to grill them (sweetcorn, not slugs) on the BBQ! A clarification and apology: in the ‘Through the Garden Gate’ article in the June issue, the photographs were wrongly accredited. The title photograph on the first page, the pink rose and purple delphinium were taken by John Peters. Those long holidays stretching ahead with not a cloud in sight… a time to relax or a time to temper the cry of ‘I’m boooored’? Keep the kids entertained, and you too, with these fab ideas. Happy holidays!

With school holidays just around the corner, are you breathing a sigh of relief at the prospect of no more lunch boxes and school runs for a while, or panicking over how to amuse and entertain your young ones? Well fear not, as Mid Sussex has much to offer in the way of summer activities, many of which cost nothing (just your time and energy!). Here’s our guide to making the most of the holidays.

Do your Homework

If you are relaxed enough to simply go with the flow over the course of the summer holidays, consider yourself lucky. For us mere mortals, I always found it helped to create some structure. So, Mondays we’d go to the library, Tuesdays see friends, Wednesdays go swimming, Thursdays go out for the day and Fridays visit the park.

Obviously you don’t want to engineer every second of the day and there’s no need to stick to your plan rigidly, but in my experience it helped psychologically to know that something was planned, even if it didn’t happen.

Close to Home

Living in such amazing countryside, taking a picnic and exploring nature is always a popular option. The Woodland Trust run a scheme called Nature Detectives, providing free activity sheets you can download and print off to give some focus to your walk. Parks and playgrounds are also great places to take a picnic and meet up with friends. Hopefully, the children get to let off steam and play with their friends, while you get some adult company, or quiet time. Failing that, the garden is an endless source of fun and adventure. Encourage your children to make dens, or indulge in a spot of garden camping. Fresh air is always a winner. “Getting at least 60 minutes of physical activity a day is important for children’s overall health and fitness,” explains Rebecca Smethurst, who works with West Sussex County Council to offer free activity programmes to eligible children. Your local leisure centre is also a valuable source of distraction. While there are organised paid for activities throughout the summer, you can also use it on an ad hoc basis for activities like swimming, roller discos, craft, or gym activities. Cycling can also be a fun day out. Your local country park has dedicated routes for cyclists of all ages and many also hire bikes.

If the weather’s bad craft activities, cooking sessions, or creating a home cinema, complete with popcorn and friends, can all be enjoyable alternatives to getting outside. Having said that, sometimes a splashy walk in the rain can be surprisingly fun. The library is also a great place for ideas and every summer they run a Reading Challenge for children. This involves reading six age specific books. Planning some quiet reading time into the day gets children away from screens and can help to relax everyone, as well as calming the mood.

Further Afield

Living so close to the seaside, a day out at the coast is a splendid option. Travelling by train increases the sense of adventure and if you take a picnic, a walk on the Pier, or a paddle in the sea, the seaside can provide a great value day out. Mid Sussex also has a fi ne selection of museums, castles and historic homes to visit and if you’re feeling particularly inspired, you can bring

an educational element to the trip. Many of these attractions will have specific activities for children to enjoy during their visit. Most young children adore animals and again, we’re lucky to have a wonderful selection of farms and nature reserves on hand to visit. Joining up with friends and taking a picnic adds to the occasion. For older children, our local reservoirs offer courses in windsurfi ng, sailing and kayaking, although perhaps the summer holidays is the perfect time for them to explore their independence and learn to organise their own time around personal interests. Hopefully, some of these ideas will appeal and help you make the most of the summer. And if all else fails, just remember a combination of food, friends, sleepovers and pocket money are all excellent distractions.

Open Gardens

Burgess Hill Supporting St Peter & St James Hospice and Mid Downs Radio, take the Garden Safari tour on Sunday 12th July and meet the wildlife of Burgess Hill! When I approached the home of Cathy Barnett, it was unmistakably a house owned by someone who loved to be in the garden. It was a veritable smorgasbord of greenery, on the cusp of blossoming into the vibrant colours of summer. A scenario quite easily complemented by Cathy’s engaging, bubbly personality. “Burgess Hill, has a good sense of community,” she said as she began to tell me about the upcoming Garden Safari, on the afternoon of Sunday 12th July. Burgess Hill in Bloom is a Community Group, partly sponsored by Burgess Hill Town Council plus fundraising. From this event, around ten gardens are invited to take part in the Garden Safari, which is sponsored by Present Company this year. They might not necessarily be the winning gardens, but they are gardens that are interesting, different, large, small, traditional or quirky; gardens that provide a broad spectrum of colour and variety of style across the town. “And we’ve never had to advertise for gardens,” Cathy reflected. Those who wish to go on safari, can purchase a map on the day for £4 (children are free) and then from 1:00-5:30pm they can tour the gardens at leisure. “We put balloons on the gates of the gardens in safari, so they are easy to find,” Cathy told me. “There is no competition, there is no voting,” said Cathy. It’s an opportunity to look at other people’s gardens, chat to gardeners, share a cup of tea – and all in wonderful surroundings. “Even as organiser, I get to see the other gardens, pick other

brains and nab an idea or two. Everyone is nosey!” After the Safari, the gardeners and those who have been on safari have the opportunity to get together at a local pub, to draw the winning raffle tickets and to enjoy a buffet. “We’re a very friendly bunch here,” said Cathy beaming happily. The profits from the raffle and sales of the maps are split evenly between St Peter & St James Hospice and Mid Downs Radio. Last year £500 was raised to benefit these good causes. This year, Mid Downs Radio are promoting the event over the airwaves, just as they have done in the past. Cathy laughed as she remembered, “Last year a lady arrived at one garden where cream cakes were being offered to visitors. This lady came with a rug, and gladly accepted a cake or two. She promptly unrolled the rug and removed a few clothes, although thankfully not quite all of them. To the astonishment of the home owner, she then indulged in a little sunbathing.” All of which goes to prove that when you go on safari, you can never be sure of what you might see.

Dancing In The Street The East Grinstead Project is back this year with another High Street event. The Dance in the High Street is coming to East Grinstead High Street on Sunday 12th July at midday. Come along and you will see almost 2 hours of entertainment ranging from belly dancing, community dancing and musicians to stilt walkers, jugglers and stunts! The event celebrates our High Street and the East Grinstead residents while advertising some of our local businesses. We have also asked the Lions to join us and take donations on the day. So come along and soak up the atmosphere at the EGP Dance in the High Street.

Score For The Hillians It was quite a season for Burgess Hill Town Football Club. The Hillians played 65 league and cup games and amassed a record breaking 109 league points in the season, a new record for the Ryman League. They conceded only 39 league goals, and scored 105. An amazing quarter of their goals were scored in the last ten minutes of games. In their last game of the season – and with the championship already won – they earned a draw away to second place Folkestone when Joe Keehan scored in the 89th minute. There’s a clear message here – this is a team that never gives up. We didn’t give up easily in Cup competitions either, having good runs and beating opposition in higher leagues on the way. Last season attendances increased by about 60%. “This season has been special for so many reasons; cup runs, the nonleague day, improved facilities and a winning team have all been huge factors in recruiting supporters,” said a delighted Hillians’ General Manager John Rattle. “Everyone at the club has been overwhelmed with the way the town has supported the team

at the Green Elephants Stadium this year, with special thanks to those fans who travelled to away games.” This coming season the Hillians will be playing in the Ryman Premier League and we wish them well. In the meantime we have intriguing pre-season friendly matches to look forward to at the Green Elephants Stadium against Football League Division 2 teams Northampton Town (3pm on Saturday 11th July) and Crawley Town (7.30pm on Wednesday 15th July).

Charity Race Day Friday 7th August will be a great finish to the three-day racing festival at Brighton Racecourse. It’s a day to generate funds and raise awareness of the outstanding work of two great charities, Teenage Cancer Trust and Whoopsadaisy. Let’s Get Swimming St Lawrence CEP School, Hurstpierpoint, would like to transform the swimming pool into a fully enclosed indoor facility – but we need help to raise the £90,000 needed to fulfil this dream! So, if you would like to fundraise, donate or offer us corporate sponsorship we would be delighted to hear from you. The children enjoy swimming lessons from May once the air temperature meets the guidelines. But, it is an outdoor pool and with only a limited time during the year that it is warm enough to use, and with the growth in pupil numbers, the amount of time the children can spend in the pool is decreasing. An enclosed pool area would mean that the temperature

would be stable and the pool could be used on a more regular basis by a greater number of people. The pupils of St Lawrence School would have year round access to the pool, which will mean they are able to have more regular swimming lessons. We also hope there could be some community use of the pool outside of school times, subject to life guards and staff being available. Open-Air Shakespeare Join The Hurstpierpoint Players for an evening of Shakespearean fun as they perform William Shakespeare’s ‘A Midsummer Night’s Dream’ in the garden of The New Inn, Hurstpierpoint from 23rd to 26th July. We have now moved on to the final stage, when we will be working in co-operation with HKD Transition, the Wetlands Trust and the Adur & Ouse River Trust, to ensure the

health of the Herring stream, particularly relevant as it is fed by the Lag stream which is considered to be one of the most important unspoiled chalk streams in the south, if not the whole country. Since 1619 Sackville College in east grinstead has been providing homes and inspiration to the community; now it’s our turn to help this important historic building save its heraldic snow leopard. Sackville College is not a school but an almshouse, founded in 1609 by the will of Robert Sackville, 2nd Earl of Dorset. Institutions like this were sometimes called ‘College’ or ‘Hospital’, in the sense of a gathering of people for a common purpose. Robert Sackville died a few days after making his will without seeing a single stone laid. His son, Richard Sackville, 3rd Earl of Dorset, had the almshouse built by 1619. He included a grand wing, the Dorset Lodgings, for his own use. The purpose of the College was to provide a room and £10 a

year to 21 poor men and 10 poor women. Today, Sackville College is still an almshouse, offering affordable accommodation for independent living to elderly local people of limited means. Instead of 31 rooms with communal privies, the building has been divided into 14 lovely flats. It has survived through the efforts of the Patrons, who have all been descendants of the Founder, and the various Wardens over time, and all the volunteer Guides, Helpers and Friends of Sackville College. Visitors are welcome to this Grade 1 listed building, where you can see inside the beautiful quadrangle, hear about the Sackville family, and The Rev’d Dr John Mason Neale, who wrote many hymns and carols there, including ‘Good King Wenceslas’, and founded the Society of St Margaret, one of the fi rst Anglican sisterhoods of nuns after the Reformation. This year there is great need for funding as the heraldic leopard, a snow leopard or ‘ounce’, which should stand on top of the bell tower, was found to be leaning at a dangerous

angle. It has been brought down by crane for inspection and for repairs to the mountings and surrounding roof. This will be very expensive. This leopard has been on the roof since 1986, and replaced an older one which was up there for 130 years and can still be seen inside. It would be a shame if this local landmark could not be restored for lack of funds. There will be a Grand Book Sale during the Summer and in December there are Carol Evenings in the Chapel. These

Taking cuttings can be tricky, but thankfully Flo Whitaker is here to guide you through the process, from snip to soil, so you can try it yourself! People often say to me (well, a bloke down the pub once casually mentioned it), “I’ve tried taking cuttings of things - but they always die.” If this sounds like you then you’ll be delighted to know that in almost every case, the fault lies with the gardener and not the plant. The trouble is that different plants like to be propagated at different times of the year. They do this just to annoy us and those scholarly horticultural lists of ‘What to do and when to do it’ can be bewildering. However, midsummer is a good time to take cuttings of many garden favourites; including bedding geraniums, pelargoniums, fuchsias, penstemons, lavenders and pinks/carnations. For these types of plants, shoots that are inflexible and woody are too old to make good cuttings. Conversely, sappy and bendy ones are too immature. Look for those that are ‘semi-ripe’; vigorous

and green, but fi rm. Ideally, cutting material should be taken from non-flowering shoots but this may be impossible with things such as geraniums as they flower pretty much non-stop. If this is the case, simply remove any flower buds. Take shoots about 5 cms in length, cutting immediately below a leaf joint. Strip off the lower leaves and using a dibber or pencil, insert them into gritty compost around the edge of a small pot. Cuttings are sociable and enjoy close company. You can easily fit a dozen into a 10 cm pot. Water them and place in bright light but away from direct sunshine. Keep the compost moist but not waterlogged and pot on individually when new roots start to appear. There are several reasons for taking cuttings; the obvious one being the opportunity to increase plant stocks for free. Also, any self-sown seedlings will not necessarily ‘come true’ and be identical to the original plant. The only way to ensure an exact copy of a favourite variety is to propagate using living material, ie: ‘cuttings’. Another reason is purely practical. If a plant has spent the summer busily growing to enormous proportions but needs to be taken undercover for winter protection, you’ll need muscle to move it and a pretty big greenhouse to store it in. Taking cuttings allows you to severely cut back the parent plant or discard it altogether if lack of space becomes an issue. My terrifying and aged aunt, ( Jurassic period), returned from a three-month tour of Italy, triumphantly waving a grubby toilet bag. She’d persuaded some Venetian geranium cuttings to take root into a damp flannel. You won’t fi nd that propagation method in any gardening book, but it does indicate how amenable plants can be. So, if you’ve never tried before - give cuttings a go!

A Cottage

Ruth Lawrence visits another beautiful garden opening its gates for the national gardens Scheme this month, with a steep and varied land and waterscape.

Sitting directly opposite Ardingly Showground, Peter and Marlene Holter’s cottage stands on the edge of one of the steepest lanes in Sussex. Their long, sweeping garden reaches back to where the land drops into a valley and the planting is laid out as a series of ‘islands’ that divide the length into different habitats. When the couple moved to Cobb Cottage North, they planted a wide variety of contrasting trees and a hornbeam hedge which copes better with the wet soils than traditional beech. A variegated tulip tree is a particular favourite of Peters; its tulip like flowers bloom in the summer, then in autumn its leaves turn butter yellow before shedding to the ground. One large fi r was grown from a cone fallen from a tree at Borde Hill Gardens; it lay a long time in the greenhouse before the seeds fell out and the resulting tree now stands 25 feet tall. A home-grown sweet chestnut and a stately

weeping willow contrast with the orchard of apple, pear and plum trees. The ‘fiesta’ apple, a modern cross, yields a staggering 400lbs of fruit from a single tree and Peter produces his own apple juice. The fruit and veg garden provides for most of the couple’s needs; as well as leeks, shallots, aubergines and garlic, Peter grows exhibition onions which grow up to six inches in diameter and weigh up to 3 kilos. A visit to the Paprika Museum in Hungary yielded seeds which have produced a crop. Paprika is popular over there for use in stews and goulashes although it originated in South America. One of the most striking features of the garden is the series of ponds that take advantage of the slope; frogs and newts have made it their home but herons have made sure that no fish remain. It appears as a landscape in miniature with ferns and iris tumbling from between gaps in the

rocks. A rose arbour creates a stunning centrepiece where varieties chosen for their scents and colours complement one another throughout the season. Walking through the garden, I was drawn by the contrast of colour, shapes and even sounds; a self seeding annual grass called ‘briza’ gave a distinct rustle in the wind while the spreading silvery leaves of a cardoon contrasted with the purple black leaves of an ornamental elderflower. Large native teasels stood tall and spiky while pretty bright lilac phlox will be in flower for the Open Garden days in July. A beautifully gnarled twisted willow came from a window box cutting which sprang into leaf and it now stands 20 feet tall while the distinctive red lantern-like flowers of a clerodendron draw the eye into another corner of the garden. Bird and insect life is rich here; finches, green and spotted woodpeckers, jackdaws and nuthatches are regular visitors while bees are in thankful abundance. I followed the flight of a spectacular dragonfly as it hovered and dived from pond to plant; it

was a treat to see one at such close range. Peter and Marlene keep chickens as part of their drive towards self-sufficiency. The birds roam freely on grass and their eggs have a naturally bright orange yolk, much to the delight of friends and neighbours who get to share them. The half-acre garden not only caters for culinary and aesthetic needs, it also works on a sensory level, engaging the visitor as they walk around the contrasting zones. During the Open days, tea and homemade cakes will be on sale – Victoria sponge, bakewell tart and fruit cake have been promised! Home grown plants will be on sale and advice will be to hand on any aspect of the garden and its evolution; there will also be plenty of parking next to the cottage and across the road.

Zone Out If you have the space you might want to consider creating different zones within your garden, using plants, fencing and hard landscaping, to differentiate between relaxing, dining, cooking, or children’s play areas. You could create a lounging sector beneath the shade of a tree by adding a platform deck, or use architectural planting to create a designated space for a children’s play area. Interesting fencing, pergolas, wooden arches and trellises, can all be used to map out ‘rooms’ and if you have any unsightly walls, either think about painting them in bold colours to add drama, or camouflage them by adding some horizontal wooden panels. Side gardens are often neglected spaces. Creating a curved path and seating area, can add intimacy and make the area feel more purposeful. If you are short on space, building a small terrace can make room for both a dining and a lawned area. Built-in planters and benching can also make the most of a small patio garden. Boomerang This September 12/13th sees an inaugural music festival come to our local community in Mid Sussex. Boomerang Hickstead promises to be a grand weekend of music, frolics and fun! Edward and Lizzie Bunn are the brother and sister team who run the All England Jumping Course at Hickstead. Their late father, Douglas Bunn, purchased Hickstead Place in 1959 and he developed the venue into the world-class show jumping venue much loved and admired, throughout the equestrian world today. Hickstead hosts two international events each year, The Equestrian.com Hickstead Derby and the Longines Royal International Horse Show. But this year, there will be a third event and one that is completely different – Boomerang Hickstead – a musical event spread over two days on the 12th and 13th September. Edward told me enthusiastically that planning for Boomerang began five years ago, although the event could not be held until the A23 improvements had been completed and a traffic survey had been undertaken. “We had hosted some classical concerts about twenty years ago,” he said with a smile, “but this event will be on a different scale, completely.” Lizzie pointed out “We know how to host horse events, but we’ve been learning how to host concerts.” Agreeing, Edward said, “At Hickstead, we like to do it big and do it right.” Just a few minutes in their company reveals the level of passion and excitement they both have for Boomerang. At racecourses, musical events are usually tacked on to the end of the race card as an addendum. But at Hickstead’s equestrian events where up to 3,500 horses are on site, along with

Lizzie told me “The decision was made to make Boomerang a distinct event, independent from the equestrian shows. An event with its own separate identity, but one which we hope will generate a crossover from our normal audience” The name itself – Boomerang – comes from the horse of the same name, which Irishman Eddie Macken rode to victory in the British Jumping Derby over four consecutive years from 1976-1979. But it also has another meaning as Edward told me, “A boomerang always comes back and we hope our concert goers will do the same.” Experts have been brought in to book the artists and on Saturday 12th September it will be the turn of headliners Simple Minds to take to the stage, with support from The Proclaimers, The Shires and Andreya Triana. On Sunday 13th September, Jesse J and The Vamps will be the headline acts, supported by Soul II Soul and Rae Morris, plus further acts are still to be announced. It’s a balance and blend of artistes that should appeal to all music lovers. There are acts for Mum and Dad, something for the twenty-somethings and teenagers, while the bill will also have plenty of excitement for the younger members of the family. Edward revealed that the fi rst year is the hardest, in terms of establishing an event, getting it off the ground, getting a good reputation and avoiding clashes with other concerts. That’s why Boomerang is being held in September, as an event to round off the summer. The concerts are expected to begin around 3pm and on both days the artistes will perform until 10:30pm (check website for up-to-date times). There will be free car parking and for those that prefer not to drive, there is the pre-bookable ‘Boom Bus’ which will shuttle ticket holders back and forth from Burgess Hill Station, before and after the

concerts. And to keep everyone fuelled all day there will be pop-up food stalls and bars within the arena. From the office, high above the showground, Edward and Lizzie indicated where the stage and arena would be configured. The stage will be on one side of the showground, with grandstands on the other. In between there will be space for those who wish to spread themselves out on the grass and for those who like to be packed like sardines in front of the stage. “Well spaced or tight,” as Edward says, “we have a capacity for 15,000 people.” Factor in what sounds like an impressive lighting plan and it should be an event to remember. Whether it’s the picnic-like atmosphere of the afternoon, the magic twinkling lights of sunset and twilight, or the strobes and lasers of darkness, it all bodes well. Lizzie added, “We’re trying to create an experience, a day out to remember.” Edward went on to tell me that all residents within half a mile of the venue have been given a pair of free tickets, adding that, “It’s all been positive feedback so far. Even where we thought there might be some resistance there has been nothing but kind words spoken. People seem to be excited about having an event like this on their doorstep.” He pointed out “The South East is missing an event venue like this, one that is adjacent to a main arterial road and with good public transport links.” Both Lizzie and Edward are “extremely optimistic” about Boomerang. It certainly promises to be a fantastic and memorable couple of days to round off the summer and I, for one, cannot wait.

Walk

Get out and about this July with a lovely circular walk through the High Weald countryside around Horsted Keynes. This enjoyable 5 mile walk passes through lovely High Weald countryside to the north of Horsted Keynes. It follows mainly field paths and tracks with short sections of quiet country roads. It is a little hilly in places, with short sections likely to be muddy after wet weather. The paths are generally well signed and waymarked. From the car park in the centre of Horsted Keynes village, return to the crossroads and take the narrow lane opposite indicated by a pair of concrete bollards. Follow the lane ahead downhill to the Church. Keep to the left of the Church, and opposite the school, take the signed footpath downhill. At a path junction keep right and follow round the edge of a lake. Just before reaching a field, turn left on a signed path over plank bridges and follow this path uphill through a strip of woodland and into a field. Cross the field and out to the road. Turn right along the road for approximately 100 yards, and opposite a timber clad building, turn left, and follow a narrow fenced path alongside Leamland Wood to emerge in a field. To your left, is Horsted Keynes Station, an important stop on the Bluebell Railway which operates between Sheffield Park and East Grinstead. Cross the field diagonally to join a gravel track and a small private car parking area and a bridge over the railway. Go over the bridge, and follow a track downhill and into a large field. On reaching the field, turn sharp right and go through a rather awkward metal barrier to regain

the railway. Turn left and follow a narrow fenced path along the west side of the railway. On reaching a pedestrian crossing turn right across the track, then immediately left and follow up the east side of the railway to join the access track to Horsted House Farm. Cross to the path opposite and follow a narrow fenced path along a field headland. At the end of the fenced section, go over a stile and maintain direction ahead to a metal gate leading into a paddock. At the next signpost, close to an oak tree, bear slightly left to a stile in the hedgerow in front of you. Go over the stile and follow a confi ned path out to the road at Vox End. Cross to the wide verge opposite, and turn left for 50 yards to a small wooden gate opposite Saxons. Follow a wide grassy path down the field and at the bottom, go across a narrow walkway along the top of a pond. On the other side, turn left then right uphill through woodland to emerge in a large field. Turn left and then right along the edge of the field and walk downhill to fi nd a gap in the trees ahead. Descend to a footbridge, then uphill to a kissing gate. Turn left and then right on a fenced path and follow this out to a road close to Restlands. continued on page 38

Let’s face it, spinach is the tough guy of the vegetable kingdom. When other vegetables lie simpering on your plate showing how well they get on with the meat and potatoes, spinach looks up at you saying “OK, come over here if you think you’re hard enough.” Of course part of this reputation as a bit of a bruiser comes from the vegetable’s long-term relationship with Popeye and his fondness for a can of the stuff when bulging muscles and super strength were required in a crisis. However its slightly salty, tangy taste certainly gets your attention and is very much in vogue with today’s culinary fashion. This nononsense veg is a nutritional powerhouse packed with iron, manganese, magnesium and a veritable alphabet of vitamins, so its supposed ability to restore vitality and energy is probably well deserved. Spinach may have a big personality, but that doesn’t mean it is without friends. Nutmeg and garlic, lemon juice and olive oil, butter and even chopped raw onion bring new dimensions to the taste, and when combined with something as simple as poached

In haddock, or even just a poached egg, will provide a delicious meal. When cooking it’s worth remembering it will dramatically reduce in volume, so well worth cramming as much as possible into the pan with only the smallest amount of water. But beware, cook for too long and it will end up as green gloop. Washed and then torn into ragged pieces, spinach becomes a great ingredient in stirfries, and all kinds of sauces from bolognaise to cheese, with the added advantage that as spinach is present in the dish, you can pretend it is really sophisticated and call it ‘Florentine’ - always impresses my guests. From its origins in Persia in the 12th century, through a period as the children’s most detested food, to today’s ‘go to’ vegetable for healthy living, added brain power and great taste, spinach has come a long way. All hail the mighty veg!

Spicy Chicken Wings 1 380g bottle of sweet chille sauce ½ a teaspoon of Tabasco sauce (or perhaps more to taste) 2 tablespoons of soy sauce 1 tablespoon of Worcestershire sauce 1 teaspoon of garlic powder 2 dozen chicken wings Chopped coriander leaves, for garnish

1.Preheat the oven to 190°C/375°F. Cover a baking sheet with aluminium foil. 2.In a large bowl mix the four, sauces and the garlic powder. 3.Add the chicken wings and toss them to coat well. The glaze should be thick enough to easily coat the wings. 4.Transfer the wings to the baking sheet and roast them until fully cooked, 15 to 20 minutes. Raise the oven temperature to 220°C/425°F and continue to cook the wings until their glaze begins to brown, about 5 minutes. 5.Transfer the wings to a serving dish and garnish them with the coriander leaves.

Tomato & Basil Elephants’ Ears Whenever I come across the words elephants’ ears, which admittedly isn’t all that often, I’m reminded of a very famous aria from a very famous Italian opera in which the singer (in Italian) suddenly appears to be singing ‘elephants’ ears’, which, of course he isn’t, but it sounds remarkably like it. I won’t name the opera because it just might spoil it for you. So, what about eating some Elephants’ Ears rather than hearing them? 250g of sundried tomatoes, chopped 9 cloves of garlic, peeled and chopped A large handful of basil leaves, chopped 1 teaspoon of salt 1 teaspoon of freshly ground black pepper 4 or 5 tablespoons of good olive oil 150g of freshly grated Parmesan cheese 1 sheet of puff pastry, defrosted 1 egg mixed with 1 tablespoon of water, for egg wash 1. Preheat the oven to 200°C. 2. First, make the paste: put the sundried tomatoes and garlic in the bowl of a food processor fitted with the steel blade. Process for 30 seconds. Add the basil, salt, and pepper. With the blade running, slowly pour

the olive oil into the bowl through the feed tube and process until puréed. Add the Parmesan cheese and purée for 15 seconds. Set aside. 3. Now unfold one sheet of puff pastry and put it on a lightly floured board. With a rolling pin, lightly roll the dough until it’s a 13-inch square and spread with the paste. 4. Fold the sides of the square toward the centre so they go halfway to the middle. Fold them again so the two folds meet exactly at the middle of the dough. Then fold one half over the other half as though closing a book. You will now have 6 layers. Slice the dough into 3/8-inch slices and put the slices, cut side up, on baking sheets lined with parchment paper. Brush each piece with egg wash and put in the oven. Bake for 6 minutes. Turn each pastry slice over and continue baking another 5 minutes.

greased and lined with baking paper 1 x piping bag 1. preheat oven. 2. place a heatproof bowl over a pan of simmering water and melt 120g white chocolate and the butter, cool for 5 minutes. 3. in a large bowl mix the sugars with eggs and vanilla essence. pour in butter and chocolate mixture. 4. Fold in self-raising flour, chocolate chunks and raspberries. pour into the brownie tin, level the top and bake in the centre of the oven for the set time. The cake will rise and be golden brown, it tends to sink slightly in the middle once removed from the oven but don’t panic as its just proof the blondie will be slightly gooey in the centre. 5. Cool the blondie in the tin. Melt 30g white chocolate in a heatproof bowl over a pan of simmering water. Fill the piping bag with the melted chocolate and cut off one corner to make a small hole; drizzle over the blondie, sprinkle with freeze-dried raspberries to decorate. Cut and serve. They will keep in an airtight tin for two days.

I got to test out my version of glamping on a two-week family holiday to Provence in 2013 (see left). This time we really did our research into what we needed to create our very own child-friendly haven in France and boy, did we do it in style. We placed colourful Moroccan rugs inside the living area along with large floor cushions, which the children could lounge on before bed. modicum of luxury on our watch. Replacing our one-ring fuel stove (intended for expeditions rather than camping holidays) with a four-ring gas cooker meant we could expand our culinary repertoire and avoid arguments about keeping the old stove out of the wind for fear of losing the flame (not very glamorous). With this in the bag, the seating and dining table set-up was next to be overhauled. Proper camp dining chairs and a sturdy, but lightweight outdoor dining table are a must for civilized feasting. Add a colourful oilcloth to the table (easily removed when it comes to a game of cards once the kids are in bed) and you make a statement that it’s mealtime. It’s these little rituals that count when you camp and help to delineate different points in the day - especially useful if you’re short on space. Making sure that all your tableware and cutlery matches, also ups the style ante and makes you look organised even if you’re not. This area affectionately became known as our ‘Camp Kitchen’ in France and we even had lightweight shelves and a collapsible larder cupboard to store things like tins and jars. The next best thing we did was to invest in a large canvas canopy to attach to our tent and the surrounding trees (many come with their own poles if there’s nothing to attach it to). This created a wonderful dining/cooking and living area outside and proved invaluable for providing some much needed shade from the searing Provencal sun. From Mongolian yurts and traditional bell tents to shepherd’s huts, gypsy wagons and Scottish bothys, the aim is to experience all the benefits of life outdoors but with some trappings of luxury thrown in. Safari-style lodges are hugely popular all over the UK at present and come with kitchens, wood-burning stoves and butler’s sinks. Deluxe tree houses complete with their own designer bathrooms and outdoor hot tubs would turn the most die-hard haters of camping into Tarzan for the night. Persian tents kitted out with antique rugs, chandeliers and a four-poster bed adds a touch of five-star hotel to the proceedings. A Wild Night Out Its time to get back to basics for a night out with nature, just you and a crackling campfire under the stars – the only question is, how wild will you go? I can’t actually remember the first time I went camping; it has just always been part of my life. And no matter how many times I go, I don’t think I will ever lose my appreciation of waking up with the birds in the first light of dawn, then snoozing until you are stifled by the suddenly boiling air and you desperately throw off the blankets and rip open the zip and then – bliss – the still dewy grass, the cool morning breeze and smell of sizzling bacon come wafting into your tent as you lay back and watch the clouds scudding past. That, for me, is pure camping heaven. My childhood holidays were usually spent in a tent, giving my siblings and I the chance to run wild in the safety of the campsite and explore the surrounding areas. It didn’t matter where we went – here or abroad – as long as we had some canvas over our heads and grass beneath our feet, we were happy as sandboys. School trips were often spent camping, and as I advanced into my first foray of teenage holidaying, a tent was still my shelter. I have camped on a Portuguese beach, around much of Europe, gone bivouacing in a Welsh forest and spent many happy

weekends under the stars at some of the numerous campsites Sussex has to offer. In recent years, camping has undergone a bit of an overhaul. It no longer has to be your basic tent, beans and sleeping bag scenario; it has moved to the realms of positive luxury. But being the seasoned camper that I am, I’m not here to talk about luxury camping; I love my tent, beans and sleeping bag. The next step on from basic camping is wild camping. There is some discussion among the experts about what exactly constitutes wild camping, but really there are no hard and fast rules. For some it might be taking your tent to a large leafy campsite with naturally segregated areas creating a sense of independence, and basic amenities to hand. For others it might be taking your tent and only the very basics to a field or woodland and enjoying the peace and quite. continued on page 52

And for the serious wild camper the tent stays at home, the bivi bag and tarpaulin come out and nature is fully embraced. It is important to remember that all land in the UK is owned, so permission from the relevant landowner must be sought before tucking yourself away for the night. Once you have permission to camp, it is also vital to be respectful to and look after the land. Try not to trample wild flowers and vegetation, discretely bury natural waste and take all rubbish away with you. If possible, leave no trace at all. Taking all this on bored, and with permission

from the landowner, my husband and I set off for a night of wild camping. We settled somewhere between the ‘very wild’ and the campsite, so packed our rucksacks with tent, sleeping bags, basic cooking equipment, food, water and a few other vitals. It is unlikely you will be able to reach your wild campsite by car, so making sure all you need is comfortably on your back makes the trip more enjoyable. We arrived on a sunny afternoon at our chosen destination and pitched up along the far edge, the trees at our back for protection and the open field sloping away in front of us, ready for a beautiful sunset. Our tent, now so well travelled it is almost threadbare in places, was up in minutes, Come our sleeping bags morning, we and unrolled. fire on, protecting the earth underneath. Where possible, it is best to build your fire on rock, use an already established fire pit or clear the grass to the bare soil. Also, building a wall of rocks around your fire will help protect it from the wind, keep the fire enclosed and personally, I love to rest my feet on the rocks which stay warm for hours with residual heat; just be careful not to burn your soles! It is amazing how very deeply dark it gets away from towns and villages (unless you are camping under a full moon) so I find it important to bring a torch. However, I use it sparingly as I find my eyes get accustomed to the dark quite quickly, and it actually prohibits vision to focus on a very bright light. After we had eaten, drunk and chatted the night away, I took a moment before crawling into my sleeping bag to step away from our campsite and out into the field. Here, I stood quietly and looked up to the sky. With the gentle crackle of the dying fire behind me, I listened to the night. It was so quiet, and then as I listened deeper, individual

sounds sprung out at me. There was the wind rustling through the trees, creating a sort of shore shingle sound. A slightly disconcerting quick dart of a startled animal in the bushes, the gentle hum and tick of insects in the grasses. The single call of a bird, I imagine half asleep calling to it’s young. If you are lucky, you may see and hear owls just before dusk and after dawn out on the hunt. Come morning, we woke early and – my favourite part – opened the tent to let nature in. Soon it was time for breakfast so we stoked the fire alight again and boiled water for tea in a mess tin. We had picked up a few rashers of bacon the day before, which went very well with a tin of beans! A cursory hand and face wash under a bottle of water, then we packed the tent down and gathered our belongings. Looking over our shoulders as we left we made sure the only thing that remained from our visit was the slightly flattened grass we had slept on. Wild camping may not be everyone’s cup of tea, and I wont deny it is smashing to come home to a hot shower, but just one night away from mod cons relaxing in the arms of the wild is a revitalizing and exciting experience. Even in your own back garden, a night under the stars is a night well spent.

The aerial manoeuvres of the dragonfly and damselfly are a sight to behold, dipping and diving over water, flashing their iridescent colours and whirring wings.

Stand beside any lake, pond or stream at this time of year and you are almost certain to glimpse a flash of iridescent colour, accompanied by the whirr and flicker of wings. Dragonflies and their daintier relatives, damselflies are not only spectacular fliers but they have a remarkable life cycle that spans years from egg to adult. Once the egg has hatched, the underwater larva is fiercely predatory, tackling tadpoles and insects to nourish itself. Its skin sheds to grow fresh ones over the next one or two years (although a Golden Winged Dragonfly takes five years), when the nymph climbs a plant into the air, emerging from its aquatic skin. The wings, soft at first, take a couple of days to harden and the wind scatters them from their birthplace. Once transformed into

magnificent fliers, their sole purpose is to mate and give birth before they die within two or three weeks. The males will fight to the death to defend a mating site and you can often see them, jousting in mid air, performing the most complex manoeuvres in an effort to win the territory to mate. Dragonflies first evolved 360 million years ago when they had the wingspan of a seagull. Once aerial predators had developed, they responded by becoming smaller, better fliers. Their adaptation paid off; they have survived every extinction event and there are well over 5,000 species worldwide with about 17 dragonfly and 12 damselfly species breeding here in Sussex. Migrants come to our shores via southerly winds from France and one recent resident, the Small Red-eyed Damselfly is anticipated to become fairly common over the next ten years as climate change pushes the warmer temperatures north. I recently watched a finger sized Broad Bodied Chaser dragonfly (above) twist and turn her way through a Sussex garden; her golden abdomen distinguished her from the bright blue male and her flight was so swift that it was near impossible to follow with eye, let alone camera. Sussex is home to descriptively named species such as the Downy Emerald, the Ruddy Darter and the Brown Hawker; few insects conjure up such a magical sight as these breathtaking fliers dancing and diving above tiny streams and large reservoirs, over dewponds and rivers in their quest to feed and reproduce. The best way to attract dragonflies is to build a pond. They dine on garden pests, armed with powerful jaws and thorn-like serrations for seizing prey. Stand still at the water’s edge and watch closely while they battle, feed and mate during their all too brief, incandescent lives.

Stocking a full range of specialist health products, Northlands Pharmacy provides such respected healthcare advice, that the local surgery even use the team as a triage resource when GP appointments are full. As pharmacy services move beyond simply dispensing prescriptions towards a more patientcentred role, Northlands continues to offer patients many additional services. One of the most important of these is the Medicines Use Review, aimed at those with chronic conditions on long-term medication. “We sit down with patients and ensure they understand what they are taking, the best time to take it and reinforce the importance of their medication,” Intan explains. “That’s where our new rooms will benefit patients.” The emphasis today is on preventative medicine and Northlands also provide a New Medicines Service, keeping in regular contact with those

taking new medication. “It helps people through any early side effects they may experience. Gary began his career in pharmaceutical manufacturing, but made the decision to move into retail pharmacy with the Northlands store thirty years ago and has never looked back. “In thirty years I’ve never got up in the morning and thought I don’t want to go to work today,” he smiles. “There’s always something new to learn and being able to help people with health advice and continuity of care is very uplifting. It’s also wonderful being such a part of the local community and seeing our customers and their families grow up.”

As temperatures rise with Summer finally heating up, make sure you know how to keep cool and safe in the sun. It isn’t just about comfort – dangerously high temperatures can result in heat-related illnesses, such as heat exhaustion and heat stroke. Follow these easy tips to make the most of the hot summer days ahead. Wear lightweight, light-coloured cotton or linen clothes. Heat is trapped by synthetic material, but cotton absorbs perspiration and its evaporation helps you feel cooler. The light colour reflects the heat and sunlight better than anything dark. Shorts and skirts paired with tops made of loose, airy material increase ventilation and help regulate your body temperature. Don’t forget to use sun cream on any exposed skin, with a minimum 15 SPF to avoid sunburn, which can lead to quicker aging of the skin and serious skin health problems. Flip-flops and sandals allow the feet to breathe; there’s nothing worse on a hot day than wearing closed shoes with no air circulation. Too much makeup can prevent sweating, making you feel hotter. Try to loosely brush on some matt powder for oil control during the day and for the evening, when it starts to cool down, a light foundation is good for better coverage. Tying up your long hair and keeping it off your face and neck is a wise choice in scorching temperatures. Run your wrists under a cold tap for 30 seconds

each, every couple of hours. Major veins pass through this area, so it helps to cool the blood. Fill a spray bottle with water and keep it in the fridge for a quick, refreshing spray of cool water after being outdoors. Try taking tepid baths or showers just below body temperature, especially before going to bed. Cold showers may seem more tempting, but your body will generate heat afterwards to compensate for the heat loss. Drink plenty of water! Keep plastic bottles of water in the freezer: the ice will melt in the heat leaving you with amazing icy cold water to sip on the go. As an alternative, try drinking chrysanthemum tea, which is said to be a cooling herbal remedy, but do check you are safe to drink it before consuming. Avoid drinking alcohol and caffeine as these are dehydrating. Eat small meals and more often! A larger meal increases the metabolic heat your body creates to break down the food. Try eating salads, raw food and fresh fruit and vegetables to avoid cooking – standing over the stove isn’t what you want on a hot day. Enjoy the sun and remember the hottest part of the day is between 11am and 3pm, so when out and about avoid the direct sun as much as you can. And of course, if you feel ill always consult your doctor.

Did you know that this Summer is all about culottes? What you might not know is that these ‘divided trousers’ have a bit of a feminist backstory: they were popular in 18th century France, where they were associated with the ruling class (so much so, that working class revolutionaries were known as ‘sans-culottes’ – without culottes). After this they became popular in Victorian England. These long split skirts allowed women to ride a horse astride a man’s saddle rather than having to use the more ‘ladylike’ sidesaddle. They also enabled more freedom of movement for riding bikes and playing sports, like tennis. This season culottes have had a mixed reception and are notoriously tricky to wear well. Nevertheless, the shops are bursting with culottes for every budget, taste and occasion in a wide variety of different materials such as denim, leather and crepe. They are available in all sorts of styles; from patterned to colour-blocked,

full-length to three-quarter length, and mid-rise to high waisted. As styling them can be difficult, here are a few tips on how to wear them. A vest top or T-shirt tucked in or short enough to show the waist helps counterpoint the volume of the trousers. A tailored shirt tucked in but left part unbuttoned with rolled up sleeves lends a smart-casual look and can be perfected with a pair of stilettos. Or choose block heels if you want to feel taller but are looking for something more casual.

It’s time to get on your bike and put your pedal power to the test at The Big Road Ride, one of Sussex and Surrey’s leading cycle events raising money for St Catherine’s Hospice. Taking place on Sunday 19th July 2015, The Big Road Ride offers a chance to have fun, keep fit and raise money for a great cause, all under the power of your own steam. There is nothing quite like the rush of the wind and the sounds of the country whizzing past to stimulate and excite, guaranteeing you a fun fi lled and adventurous day. With something for everyone, there are three routes to choose from, all tailored to different ability levels. All routes have been designed on low traffic country lanes and traffic free cycle paths, so depending on your experience you can choose to take on: 10 Mile Route: A family-friendly 10 mile ride complete with nature trail and the opportunity to stop half way at Forest Row where there will be refreshments. You can set your own pace, take it as leisurely as you like or push yourself hard. 40 Mile Route: An energetic chip-timed 40 mile route which follows the roads north of Imberhorne Road, mainly along country lanes and B roads. 60 Mile Route: The fi rst 25 miles follows the 40 mile route, as above, after which the route travels south to Heathfield. All routes start and fi nish at Imberhorne

School on Imberhorne Lane in East Grinstead, which is just an eightminute cycle ride from East Grinstead Railway Station and a short journey from the Worth Way, a 7 mile footpath and bridleway passing through the countryside of the High Weald. All cycle routes boast stunning views along marshalled roads or cycle paths and en route refreshments before riders are welcomed back with a reception and medal presentation at the fi nish line. Everyone who takes part in the event is asked to raise as much money as they can, either through sponsorship or donation, for St Catherine’s Hospice, a charity dedicated to providing end of life care and support to terminally ill people and their families across Crawley, Horsham, East Surrey and Mid Sussex. Michaela Clements, Assistant Events Fundraiser at St Catherine’s Hospice, said, “Raising just £46 can allow a patient to be cared for in the comfort and surroundings of their own home with an hour-long visit from a Community Nurse, or £62 provides a counselling session for a bereaved relative. By taking part, you’ll be helping us make a difference to these people’s lives.”

Based in Mid Sussex, Paws & Claws Animal Rescue Centre is home to a host of lovely cats, many of whom are looking to be adopted. Read on to fi nd out how you can help our furry friends.

purrrlease Paws & Claws in Sayers Common is a haven for homeless cats. It is run by a dedicated group of volunteers, who all happily give their time and energy to look after the resident felines, and as a small charity, it depends entirely upon the vital efforts of a dedicated band of fundraisers and the local community. Events such as coffee mornings, book fairs and an annual Open Day, this year on the 12th July from 2-4pm, bring in much needed funds, all of which go directly to the benefit of the cats at the Centre. Founded in 1977 by Pauline Cantor with the help of five friends and £30, Paws & Claws provided a much needed service in the Mid Sussex area. Now 38 years on, the animal rescue service is still going strong. Surrounded by the rolling Downs, the Rescue Centre comprises two Homing blocks where each cat has a comfortable pen and an outside run. There is also an Isolation unit where the cats go on fi rst arrival. For the older, long-term residents there is a special home called the Pavilion which is completely furnished for their comfort, with a sitting room, covered patio and garden. I met with Lyn, who is Chairman of the charity. She explained how gratifying it is to work with these animals, and to see them happily re-homed. “If we ever get kittens they get re-homed immediately, but it is the older residents who take

longer to fi nd homes for.” Lyn went on to explain how many of the older cats would make perfect companions for someone, and how lots of them still have many happy years left to enjoy. The cats at Paws & Claws arrive there through no fault of their own. Their previous owners may have gone into a nursing home, they may be longterm strays or perhaps got pushed out of the family home with the arrival of children. Whatever their back-story, Lyn emphasizes that the care for older cats is vital, and not to forget the forgotten. There are many ways in which you can make a difference to these cat’s lives, from donating cat food and toys, to raising funds and enjoying the fundraising events throughout the year. One of the biggest ways to support them is to sponsor a long-term resident, or even better still, to give a cat a new home. The friendly staff at Paws & Claws are on hand through the whole adoption process, from your fi rst visit to the Centre, to support and advise after you and your new companion have gone home. “It really is so rewarding to adopt,” Lyn tells me. “It provides you with a loving companion, and gives a new lease of life to the cat.” What a wonderful gift to give.

What is the major concern of small businesses in West Sussex? getting paid late! The Federation of Small Businesses is working in support of this, and other issues, to help your business grow.

Supporting Small Businesses Typically agreed contracted payment terms are 30 days but increasingly buyers are unilaterally taking decisions to pay in 60, 90 or even 120 days. Small businesses can do little about this if they want to continue with a contract and it may often appear better to have a contract and be paid late than not to have work. Sadly, late payments like this are the major cause of small businesses closing. In support of this we have produced guidance for small businesses in preparing an invoice that can be paid promptly without ending up in the pending tray (email info@horsham.co.uk). However there is some good news; the local authorities in West Sussex have made real efforts to comply with Government good practice guidelines and have targets of paying in 20 days or less and monitoring their achievements. West Sussex Policy Team are building on these efforts by campaigning for Prompt Payment and urging large and medium organisations in both public and private sectors to sign an annual commitment to pay promptly and monitor the targets. We aim to highlight the responsible buyers as being good organisations with which to contract. Other business organisations are being asked to sign up in support. Our first recognition of these was a wellattended event early this year where certificates were presented to those who had signed up as participants or as supporters. We aim to repeat this annually. Alongside this were the West Sussex Local Authority Small Business Friendly Awards with awards in Procurement, Best Programme and general Small Business Friendly. The ‘Be The Business Initiative’ funded by WSCC was a key factor in their success as overall winner. Crawley has long been known as a big business town partly due to its closeness to Gatwick Airport but the local branch of FSB has been delighted that in the last few years Crawley Borough Council

has been recognising the importance of the small business sector and its relevance to ongoing economic success and this was recognised in a Special Award. The key aims in our Good Practice in Procurement Campaign are to encourage good practice in reducing the amount of unnecessary paperwork, support the FSB’s Keep Trade Local initiative and ensure that their contractors pass the 30 day terms down the supply chain. It is too easy to continue using the same procedures and paperwork that have always been used rather than stepping back to ask whether there is a better, more efficient,

Summer is finally here… we think! As usual with the Great British Summer, the weather has been somewhat changeable. It does make dressing appropriately a problem; we’ve all been pulling on our emergency cardigans or fl inging open all the doors in the office, so lets hope it settles down. Of course July means the school holidays are upon us, so we hope that our article ‘Bored? Not a chance!’ will give you all some ideas of what activities to do over the Summer Holidays. There are options for all tastes and budgets, so all you have to do is have fun. There are also lots of Fairs, Village Days and Summer Shows to enjoy this month, so please check out our ‘Local Living’, ‘Diary Dates’ and ‘Fun Times’ pages to see what’s on where. We have been entertaining cats and dogs in the office this month, with both Banksy and Buster paying us a visit.
