Chilli chia nachos

With Black Beans & homemade tomato salsa

Ingredients - Serves 4

• 135g Chia tortilla chips

• 150g Chilli marble, grated

• 2 tsp Carla’s piri piri seasoning

• 1 tsp Carla’s paprika seasoning

• 1 tin Mr Organics black beans, rinsed

• 1 avocado, diced

• 6 tbsp Tim’s Dairy natural Greek yogurt

For the Homemade Salsa, combine all the following ingredients and stir well.

• 300g Nutbourne cherry tomatoes, diced

• 2 tbsp Loft Pickles chilli jelly

• Juice from ½ a lime

Method

1. Heat oven to 180C fan. Arrange the tortilla chips over two-thirds of the baking tray, spoon most of the salsa on top of the tortillas and scatter over half of the cheese.

2. Mix the remaining salsa with the red pepper and beans, and tip onto the empty third of the tray. Scatter over the rest of the cheese and sprinkle the nachos and beans with the paprika and piri piri evenly. Bake for 1015 mins or until the cheese has melted.
