It’s hard to believe that the holidays are just around the corner. Personally, I am still recovering from celebrating Halloween for a month! The Hallmark Channel may have you believe you need to spend the holidays in a snowy mountain village wearing warm cable knit sweaters, but the reality of the holiday season is that you should spend your time with the people you love most of all, doing what pleases you. Maybe that’s cooking a traditional holiday feast, or maybe it’s homemade pizza in your jammies. Where ever you find yourself happiest, is where you should be… regardless of what media and especially social media may suggest! As we enter the season of giving, we must also remember that not everyone will be with family or friends this year. The Griese family took note of this six years ago and set out to do something about it. We are pleased to share the Griese, August 2021 Feature Family, Hospice Care blanket drive that is in its 6th year of bringing warmth to people who would otherwise be left out of the holiday season. We also introduce you to the Drinkwaters who are raising three sons, while also working law enforcement to keep people safe and connecting youth to the arts. In August, Kara Drinkwater began helping people stay connected in unique, creative, and beautiful ways through the launch of her new business, the Warrenton Picnic Co. You can read their full story on page 6. Staying in the realm of the arts and creativity, our Feature Nonprofit this month is Allegro Community School for the Arts. Allegro offers something for everyone in the arts, from classes geared to toddlers to a THRIVE program that keeps senior citizens moving. Allegro recognizes the value of keeping the arts in your life and works hard to keep the arts in the community. Learn more about this community staple on page 9. The Lasley Centre for the Performing Arts brings art to the stage with their annual Nutcracker performance. Check out our calendar of activities to find other holiday activities. Our recipe this month offers a warm treat for a cool evening and to really spice things up, read about Royce White, who grows hot peppers on his son’s farm to bring Poppi’s Hot Sauce to you! Life’s a Picnic for The Drinkwaters!

W

arrenton residents for over 15 years, Kara and Justin Drinkwater, are busy raising three young men. “Our oldest son, Noah, is 16 and just began driving and working this past July,” said Kara. He is part of the Spitony’s team that happens to be mostly male. “He loves being part of the team. Everyone there participates in each aspect of the business. Noah is hoping to one day work his way up to making pizzas.” When not at Spitony’s, Noah is taking AP classes as a junior at Kettle Run High School and plays soccer each spring. “This fall he is playing recreational soccer to stay active,” said Kara. He is also a guitar student at Modal Music in Old Town Warrenton, and he has recently transitioned from an acoustic to an electric guitar. Middle son, Cole, will be 15 this December and is a

NOVEMBER 2021

freshman at Kettle Run. He is enjoying high school, where he runs cross-country. He takes piano lessons at home and enjoys the stage and theater activities. At Warrenton Middle School, he performed in Legally Blonde. “Cole played the bad professor in Legally Blonde and just loved it,” said Kara. "He is looking forward to auditioning for Kettle Run’s spring performance of Soft Soap.” The youngest boy, Reid, is a fourth-grader at C. Hunter Ritchie. He also plays soccer and enjoys having his father coach the team. “Justin has coached Reid’s soccer teams for five years now,” said Kara. “He’s an energetic boy and a good soccer player,” she added. Justin is a Fairfax County Police Lieutenant and is looking forward to retirement in a few years. “He’s keeping his options open for what he will do after retirement,


but he wants to do something active. Maybe become a P.E. teacher in his own community or a park ranger,” said Kara. “Being a cop isn’t easy these days. He needs to pursue something less stressful.” Meanwhile, Kara recently stepped away from the classroom after 15 years and into the Assistant Principal’s office for two years before accepting a position managing the Institute for the Arts program in Fairfax County. The program offers 90 different arts classes during a summer program for Northern Virginia students. Kara has expanded her creativity and attention to detail to the picnic industry when not introducing students to the arts. “I always knew I wanted to run my own business and wanted to focus on the event industry. Visiting my sister-in-law in Florida this summer, she told me about a local Florida company that creates picnics full of ambiance. I thought it was a great idea.” The business launched in September, and by October 1, there were already 13 events scheduled for the month. “People just love it. I design intimate picnics using colorful

pieces with different textures to make a setting that is pleasing to the eye.” With a variety of themes, there is something to suit every taste. The newest piece of the inventory is a 16-foot cotton bell tent that can host sleepovers for both children and adults. “I recently had an engaged couple reserve the

tent for their wedding night! Their family and friends will all be camping after their wedding and she wanted the tent for her and her new husband,” said Kara. “This means I will have to up my game and make the tent really special for a wedding night,” she added.

While starting a new business has been very exciting, juggling the launch of a new endeavor, work, and the schedules of her sons has become challenging. “Right now, I am managing the business on my own. But if I need to hire someone to take on requests when I have family obligations, I will have to hire someone with an attention to detail to make sure my clients are getting the best quality event I can offer.”

“As the business evolves, I enjoy connecting with other small businesses to bring value-added items to the picnic package,” said Kara, who recently began working with Wild Blue Farm, the Brookside Neighbors May feature family. “And it’s always great to have clients from outside Fauquier County come to our community for an event,” she added. The timing for launching a new small business was ideal. “Because of COVID, people have just become more comfortable doing small, intimate gatherings. Add an outdoor element and it’s the perfect combination of intimacy and comfort.” For now, everything is running smoothly for the Drinkwater's. Justin and Kara enjoy introducing their boys to other cultures and frequently travel to Mexico, the Dominican Republic, and Jamaica. “We had a trip to Costa Rica cancelled because of COVID and are looking forward to rescheduling that.” A trip is sure to be planned between picnics.

The Allegro Center for the Performing Arts was founded in 2004 as a Kindermusik organization by founders who had been teaching private lessons for years. Within the first year, the Allegro expanded offerings to include private instruction in piano, guitar, and voice.

Allegro offers THRIVE, an exuberant, inter-generational program of music and arts designed for people over the age of 55, who want to live their senior years with gusto, optimism, a sense of belonging, and friendships. Through Allegro, the arts are brought to every generation

In 2006, Allegro relocated to Vint Hill Farms Station and in 2013, moved again to their present location in Old Town Warrenton. During this time, co-founder Sam Yoder took over as Executive Director. For nearly a decade, Allegro has been a strong community supporter participating in events in Old Town Warrenton, Warrenton Town Limits at the WARF, Spring Festival, and other events throughout the county, all while growing their programming and expanding their repertoire of services. Allegro has since added theater classes and stage performances that today draw competitive thespians from Northern Virginia to audition for. Not long following the COVID-19 lock-down, Allegro acquired Excell Dance. With this acquisition, Allegro offers the full complement of performing arts education and performance opportunities: music, theater & dance, which means our students and families get a full performance arts experience as all the groups come together, performing together. Marijuana Legalization and Driving Under the Influence By Mark B. Williams Mark B. Williams & Associates, PLC

D

rug laws are rapidly changing around the United States, and they have recently changed in Virginia as well. As of July 1, 2021, recreational use of marijuana is legal in the state for adults over the age of 21. With that said, the new law does not mean Virginians can drive under the influence. Despite the recent legalization of marijuana, the relaxing of the law does not apply to the rules of the road. According to the state legislature, drivers who are under the influence of marijuana can still face DUI charges. Based on the new law, Virginians can legally possess, grow or gift up to an ounce of the popular “soft” drug. However, it is still illegal to sell, drive under the influence or possess more than an ounce. Other “soft” drugs, like psilocybin mushrooms, which are legal in some states, remain illegal in Virginia.

The Nutcracker: A Holiday Tradition The Nutcracker has become a long-standing holiday season tradition for countless families. Kalie Lasley, executive director of the Lasley Centre for the Performing Arts in Warrenton, said the original story of The Nutcracker was a dark tale written in 1816 by German romantic author of fantasy and gothic horror Ernst Theodor Amadeus Hoffmann. In 1845, that story was rewritten by Alexandre Dumas and premiered as a ballet December 18, 1892, in St. Petersburg, where it was performed by the Mariinsky Ballet. The music was composed by Pyotr Tchaikovsky and choreographed by Marius Petipa. “The production was a flop and the ballet and music largely sank into oblivion until the musical score was resurrected in 1940 by Walt Disney for use in the animated film, ‘Fantasia,’” she said. “George Balanchine’s version of The Nutcracker, which was televised in the 1950s, served as a catalyst for the popularity of what is now a national Christmas tradition.” Lasley said she first experienced The Nutcracker at the age of 10… but as a performer, not as a spectator. “It was my first opportunity to perform on a large stage, and I still remember the ethereal plastic snowflakes gentle fluttering through the air, the warm glitter of sequins and rhinestones under the colored stage lights, the orchestra playing the classic Tchaikovsky score, and all the magical characters coming to life,” she said. “This would become my tradition for ushering in the holiday season for the rest of my life.”

December. Generally, though, most remain fairly true to the traditional storyline. Lasley explained that The Nutcracker is a ballet in two acts. The first act opens on a Christmas celebration at the Stahlbaum home. The young Marie (now Clara) and her brother Fritz share the scene with the enigmatic Herr Drosselmeyer who performs magic tricks, produces life-sized dancing dolls from an empty magical wardrobe, and brings gifts for all the children including a special nutcracker for Clara. Clara beseeches her dear uncle Drosselmeyer to bring the nutcracker to life as well, but he refuses. As the party comes to a close and the guests depart, the real magic begins. The dramatic tale unfolds with a battle between life-sized toy soldiers and mice led by the evil Mouse King and the handsome Nutcracker Prince. In the end, the toy soldiers reign victorious, aided of course by the brave Clara who slays the Mouse King and saves the prince. Clara then travels with the prince to the Land of Sweets, where she is honored by a host of enchanted characters for her act of bravery.

The Lasley Production Unlike most classical ballets, Lasley said, both the story line and choreography for The Nutcracker are diverse and vary with each company. Most stay true to the basic format of the party scene followed by the Land of Sweets.

“We felt there was a lack of cohesiveness in the storyline between the first and second act, therefore we have filled in some of the blanks to create better continuity,” she said. “We conclude the ballet with the question: Was it Clara’s dream or did she really travel to the magical Kingdom of Sweets?”

Saturday and Sunday, Dec. 4 and 5 at 4 p.m. “We are fortunate to have extraordinarily beautiful costumes consisting of hundreds of yards of silk, thousands of rhinestones, and brilliant colors,” said Lasley. “Our Mother Ginger’s skirt alone stands 5 feet tall and 11 feet wide and houses a total of 10 dancers and two operators. The Peacock costume is hand painted and stitched with a full tail. Each costume was custom designed and created to bring together a gorgeous production.” Auditions—which were open to the public—were held in August. The cast began rehearsing in September.

Although many of the main roles are held by Lasley dancers, the studio has a longstanding relationship with a few renowned ballet dancers. “We are honored to welcome both the Nutcracker Prince, Cory Stearns, LCPA guest faculty and principal dancer with American Ballet Theatre and the Sugar Plum Fairy, Hee Seo, principal dancer with American Ballet Theatre,” said Lasley.

But one year, she decided to take in the performance from a different perspective. “I sat in the audience and had the good fortune to be seated next to a little boy and his father,” she said. “When the magic wardrobe was wheeled out, the doors were opened, revealing an empty box. Then Drosselmeyer waved his arms, and the doors reopened to a life-sized doll. The little boy exclaimed, ‘Dad, did you see that?’ As a good dad should, he gently shushed his son. I smiled to myself.” The boy’s excitement (and volume) increased when the doors opened a second and third time.

“I, of course, was thrilled to know that we had effectively created something that could hold such a young child spellbound for an entire ballet!” she said. “I wanted to lean over and tell the father that it was OK. a young man, I worked as the Vice President of marketing and traveled internationally. Wherever I went, I would bring home some hot sauce for my dad,” said Royce. In his opinion, the Netherlands had the best hot sauce outside of the United States. “There was a restaurant in Holland that had a conveyor belt running between tables and you would just grab the plates that appealed to you. That hot sauce had some amazing flavor,” he recalled. For years, Royce would make hot sauce and give it as gifts to friends and family. About three years ago, his son Dustin left his managerial job at Cabela’s to try his hand at farming. “Dustin asked if he could use my recipe to make hot sauce to sell,” said Royce. Having grown peppers in buckets on his deck, Royce was happy to have garden space for his peppers. His second year working with Dustin, they planted 1,000 pepper plants. Nine months ago they moved their hot sauce operation to a commercial kitchen in Vint Hill where Dustin’s wife Brittany

Working with hot peppers has its challenges. “We need to be careful when we grind the dry peppers to make rubs,” said Royce. “You don’t want to get the powder in your eyes.” Royce enjoys making a full-bodied hot sauce. “The flavor comes first, then the heat,” he said. “Hot peppers hit the mouth in different places. We produce gourmet hot sauce. This is not for someone who just wants to burn his face off. We are making good flavored hot sauce,” said Royce. “The key for us is flavor,” he added. The addition of a hoop house will help extend the pepper season. “We are growing a prolific crop of peppers right now and plan to just keep harvesting them,” said Royce. Royce enjoys his niche in the community. “It’s nice to work with other farmers and connect with the community. There’s nothing more enjoyable than watching your potential customers taste test the sauce and really, really like it," he added.

FRENCH ONION + WILD MUSHROOM BRAISED BEEF BRISKET

This Braised Beef Brisket with French Onions and Wild Mushrooms is the most delicious, succulent way I have ever eaten beef brisket. If you are looking for a new way to cook a brisket that doesn't involve a smoker, here it is. This is such a cozy dish - perfect for chilly weather. Brisket is not just for your summer barbecues, people!

INGREDIENTS Æ Æ Æ Æ Æ Æ Æ Æ Æ Æ Æ Æ Æ

1 7-8 lb brisket, trimmed of excess fat 64 ounces mixed wild mushrooms 1 lb shallots, peeled and thinly sliced 1 lb yellow onions, peeled and thinly sliced 4 cloves garlic, peeled and chopped 2 cups white wine 4 cups beef broth 2 cups water 2 tablespoons balsamic vinegar 1 tablespoon chopped fresh thyme 2 tablespoons chopped fresh rosemary 2 bay leaves Kosher salt and black pepper

INSTRUCTIONS

Preheat oven to 300 degrees F. Preheat a large Dutch oven or other oven safe pot or large roasting pan over medium high heat. Generously salt and pepper your brisket all over with about 1 tablespoon each of salt and pepper. Add a tablespoon of neutral oil to preheated Dutch oven and add brisket. Cook on both sides until very golden brown. Remove brisket from pan, and if there is an excess of fat in the pan, pour it off. You want about 2 tablespoons in the pan to cook the onions. Add onions, turn heat down to medium, and cook, stirring often, until the onions are very caramelized. This will take anywhere from 20-30 minutes,

so be patient. Add a splash of water if the pan is getting too dark. You want brown, not black onions. Once onions are deeply caramelized and very much reduced in volume, add mushrooms, garlic, bay leaves, herbs, ½ teaspoon of salt and ½ teaspoon of pepper and continue cooking for about 10 minutes until the mushrooms brown a little and reduce in volume. Add wine, balsamic, beef broth, and water and stir to combine. Place brisket on top, cover with foil or an oven safe lid and cook in preheated oven for 5-6 hours until brisket is very tender. Once the brisket is tender, skim off as much fat from the broth as you can. And either slice brisket or shred, removing any large chunks of fat as you find them. Serve with creamy mashed potatoes, rice, polenta or grits and your favorite vegetable side. I like to serve this with freshly steamed carrots tossed with butter and lots of fresh parsley and dill. NOTES: This is an excellent make-ahead dish as it just tastes even better the next day or the day after. Also, once cooled, it is easier to slice the brisket and much easier to remove any excess fat that has risen to the surface and hardened after refrigeration. Make sure to use a large Dutch oven or stovetop and oven-safe dish. That way you don’t have to wash up two pans. You’ll brown the meat and caramelize the onions on the stovetop and then finish the dish in the oven.
