Chaque année, lorsque vient l’hiver en Suisse, des plaques lisses ou gelées se forment sur les pistes aux côtés de la poudreuse. Là où en été, les lacs sont bleus, les paysages verts et les falaises grises, on ne trouve plus que de la glace. L’eau gelée est idéale pour chausser les patins, partir en randonnée alpine ou utiliser piolets et crampons pour l’escalade. On peut la sculpter en créant de magnifiques œuvres d’art ou bien l’habiter. En Suisse, la glace offre de nombreuses possibilités insolites. Par exemple au Suvretta House, à Saint-Moritz, qui accueille chaque hiver ses clients avec de monumentales statues de glace dans le parc. The ice experience in Switzerland offers a great deal of diversity. For instance at the Suvretta House in St. Moritz, where guests are greeted every winter with magnificent ice sculptures in the park. When winter descends on Switzerland, glassy smooth and harsh, frozen surfaces as well as freshly powdered pistes are calling. An ice age reigns over the blue lakes, green landscapes and grey rocky slopes of summer. Frozen water lends itself magnificently to ice skating, high-altitude hiking or climbing with ice axe and crampons. It can be sculpted into natural works of art and can even be lived in. À un « Whisky on the Rocks », à une caipirinha avec de la « glace pilée » ou au prochain stand de glaces, où vous pourrez déguster de délicieux produits glacés. Mais ce n'est que la moitié de la réalité : Zurich a encore beaucoup plus de glace à offrir ! La patinoire artificielle Dolder se trouve au-dessus des toits de la ville, à deux pas de l'hôtel Dolder Grand. Construite dans les années 1930, elle porte fièrement le titre de la plus grande patinoire artificielle ouverte d'Europe, avec une superficie de 6 000 mètres carrés. L'attraction séduit également les clients de l'hôtel de luxe. « En plus des habitants de la région, on rencontre de plus en plus de nos hôtes sur la patinoire artificielle », observe Stephanie Seibert, attachée de presse du Dolder Grand. Le patin à glace fait partie de la Suisse hivernale au même titre que le ski. Le nombre toujours élevé de visiteurs dans les nombreuses patinoires ou les succès remarquables de l'équipe nationale de hockey sur glace aux Championnats du monde parlent d'eux-mêmes. Si la neige tombe sur une mince couche de glace, la couverture blanche a un effet isolant et ralentit considérablement la formation de l'épaisseur de la glace. When you travel to Zurich and hear the word “ice”, one of the many trendy bars in the city on the Limmat river inevitably springs to mind. A whisky on the rocks, a caipirinha with crushed ice or the next ice cream stand selling tasty frozen treats. But this is only half the story, because Zurich has so much more ice to offer. Above the roofs of the town, a stone’s throw from The Dolder Grand Hotel, is the Dolder ice skating rink. It was built in the 1930s and boasts the title of the largest open air ice skating rink in Europe with its surface of 6,000 square metres. The attraction also entices those from the luxury hotel. “Alongside the local population, more and more of our hotel guests can be found on the ice skating rink,” observes Dolder Grand press officer Stephanie Seibert. Ice skating is just as much a part of wintertime in Switzerland as skiing. This is evident not only from continuously high numbers of visitors to the many indoor ice rinks and the remarkable World Cup successes of the national ice hockey team. People frequently and gladly don their ice skates for a few laps where in summer fish swim, flowers grow and policies are made. Discover lakes, town squares and landscapes on ice skates This has an intimate connection to nature in Switzerland. Europe's moated castle with its many lakes automatically turns into a land of natural ice rinks in winter. Yet paradoxically, less snow means more ice. When snow falls on a thin layer of ice, the white covering has an insulating effect and significantly slows the formation of thick ice. In this way, conditions for ice skating are better in winters with little snow. According to the marketing organisation, the high density of Swiss artificial ice fields will be supplemented by at least 30 frozen lakes nationwide.

L'une des destinations les plus attrayantes pour le patinage sur glace naturelle est la Haute-Engadine, avec le Lac de Silvaplana, le lac St-Moritz et le Lac de Sils. Sur le Lac de Silvaplana, outre le patin à glace, le snowkite constitue également une grande attraction. Les lacs Seealpsee à Alpstein, Obersee à Arosa, Oeschinensee et Lauenensee dans l'Oberland bernois, le lac de Joux dans le Jura vaudois ou le lac de Champex, près d'Orsières dans le Bas-Valais, sont également très appréciés pour s'adonner aux plaisirs du patinage. L'expérience a montré que les petits et moyens lacs suisses à partir de 1 100 mètres au-dessus du niveau de la mer sont régulièrement gelés en hiver. L'emplacement des plans d'eau a également son importance. Les chances de trouver un lac gelé sont nettement plus élevées dans les cuvettes que dans les paysages ouverts. Le Lac Lioson aux Mosses dans le canton de Vaud propose une attraction unique : la plongée sous glace. Trois trous d'accès restent ouverts tout au long de l'hiver. Il est toutefois nécessaire de disposer d'un brevet de plongée pour tenter l'expérience. En hiver, outre les lacs rocailleux, de nombreux autres endroits, régions et spots offrent en Suisse une excellente occasion de faire quelques tours en patins ou de courir après un puck de hockey sur glace. Par exemple, la place fédérale de Berne se transforme en hiver en une patinoire toute lisse. Tout comme la Piazza Grande à Locarno, pendant la période de l'Avent. Une adresse exceptionnelle : la patinoire naturelle Alp Raguta, située à 1 950 mètres au-dessus du niveau de la mer à Tomils dans les Grisons, où vous pourrez déguster des spécialités locales, patiner ou jouer au curling, tout en profitant d'un magnifique panorama sur les montagnes. Vous y vivrez aussi de fascinantes expériences. La Suisse n'est pas seulement le pays des lacs. C'est aussi celui des glaciers, même s'ils fondent malheureusement depuis des années : en 1973, il y avait 2 150 glaciers en Suisse. Aujourd'hui, il n'en reste que 1 400. Ils ont atteint leur apogée au cours du Petit Âge Glaciaire, vers 1850. La superficie totale des glaciers nationaux à cette époque était de 1 735 kilomètres carrés, ce qui correspond exactement au territoire du canton de Zurich. À ce jour, il n'en reste que 890 kilomètres carrés, soit seulement un peu plus de la moitié.

Searching for eternal ice Those who have outgrown their ice skates after so many adventures can set out into the high-alpine regions of Switzerland with more solid footwear. Here, too, fascinating ice experiences await. Switzerland is not only the land of lakes, but also of glaciers, even though these have regrettably been melting for years. In 1973 there were 2,150 glaciers, today there are around 1,400. They reached their peak during the Little Ice Age around 1850. The total surface area of the country’s glaciers amounted to 1,735 square kilometres back then, which equates precisely to the territory of the Canton of Zurich. Today, approximately 890 square kilometres of this remains, which is just over half.

In many places, people are fighting back against glacial melting. Today, for example, the Titlis and Rhône glaciers are partially covered with fleece blankets to lessen the impact of solar radiation and protect the ice. In Engadine, covering the glaciers with artificial snow is also being considered. Such measures may be effective and sensible on a local level, nevertheless glaciologists agree that in the long term they will not prevent glacial retreat.

D'une longueur de 23 kilomètres, le glacier d'Aletsch, également classé au patrimoine mondial de l'Unesco, est sans aucun doute le plus long courant glaciaire des Alpes. Avec pas moins de 27 milliards de tonnes de glace, le « Grand Glacier d'Aletsch » offre un spectacle naturel fascinant. De nombreuses espèces animales et végétales – en partie rares – trouvent encore aujourd'hui leur habitat dans la forêt d'Aletsch voisine. The large Aletsch Glacier is the undisputed longest ice flow in the Alps with a length of 23 kilometres and is also among the protected UNESCO world heritage sites. No fewer than 27 billion tons of ice make the Great Aletsch Glacier a fascinating natural spectacle. The Aletsch Forest, located nearby, is home to countless and in some cases rare plant and animal species to this day. The local tourism organisation Aletsch Arena organises regular glacier tours with local and experienced mountain guides. Excursion tip: The Eggishorn, accessible by cable car from Fiesch, offers an impressive panoramic view of the meandering upper part of the Aletsch Glacier.

Même dans l'environnement glacé des montagnes suisses, on peut profiter de tels moments. Il y a plus de 20 ans, d'ingénieux entrepreneurs ont fondé l'organisation Iglu-Dorf (Village d'igloo) et construit le premier petit complexe de bungalows au-dessus de la plate-forme panoramique « Motta Naluns » dans la ville de Scuol, en Engadine, en n'utilisant que des constructions de glace pour l'hébergement. The Swiss Deluxe Hotel Kronenhof Pontresina has an intimate relationship with ice. Every winter the hotel prepares a beautiful ice skating rink to be enjoyed by both guests and locals. In addition, the Kronenhof cooperates closely with the Pontresina mountaineering school to offer ice climbing to its guests at first hand. Demand for it is rising. Spend a night in the ice After action-packed adventures on ice skates and glacier trails, in artificially decorated ice grottos and along frozen climbing walls, peace and relaxation is the order of the day. This can be enjoyed even in the icy surroundings of the Swiss mountain landscape. Resourceful entrepreneurs founded the organisation Iglu-Dorf (igloo village) over 20 years ago and built the first small bungalow made solely of ice and offering overnight accommodation above the “Motta Naluns” viewing platform in Scuol, Engadine. Over the years the business expanded on its idea in other locations. Igloo villages offering double as well as family rooms and even suites have since sprung up in Davos-Klosters, Engelberg, Zermatt, Gstaad, on the Stockhorn above Thun and very recently on the Schilthorn. 19

It was Englishman Charles Sydney Goldman, a member of the British Parliament, who owned the Villa Suvretta and 4.5 hectares of land in unspoiled, idyllic countryside on Chasellas, about two kilometres outside of St. Moritz. An agreement was quickly reached with Swiss hotel pioneer Anton Bon and the Suvretta House was built in the record time of barely two years before its opening on 21 December 1912. The iconic luxury hotel in a unique and peaceful setting on the famous Suvretta hillside of St. Moritz is owned to this day by the Candrian-Bon family. With its 181 rooms, junior suites and suites, the Suvretta House is an oasis of recovery and relaxation; an icon of the Swiss luxury hotel industry.

The new building has doubled the total volume of the hotel, and it was very important to the owners to retain the warm, individual ambience of the hotel which is held in such high regard by regular guests. By Ed Rampell k The homage from Badrutt’s Palace to Sir Alfred Hitchcock – who was a guest at the hotel for half a century and one of the greatest artistic geniuses of cinema – and the concurrrent celebration of his anniversary in 2019 can simply bee summarised as follows: A classic commemorates a classic. aFilm stars appearing in front of the camera are often immediately recognisable to everyone. Very few cinema-goers, however, r, know the faces of the directors. Through the years, one of the he most well-known film-makers was undoubtedly Alfred Hitchhcock, the director of exciting and creepy classics. Viewers easily recognise “Hitch” by the unmistakable personality of the bald-headed, corpulent Brit with the flabby cheeks and oversized lower lip, who since 1927 has always appeared briefly in the opening sequences of his films and from 1955 to 1961 presented the television series “Alfred Hitchcock Presents” and from 1962 to 1965 “The Alfred Hitchcock Hour”. Thanks to the endeavours of hotelier Johannes Badrutt, since the 19th century upper-class English tourists have been traditionally spending the winter in the elitist enclave of St. Moritz, in the south-east of Switzerland's exquisite Engadine high valley. Being half-Irish and the Catholic son of a greengrocer, Hitchcock did not belong to this privileged British group when, in the winter of 1924/1925, he happened to arrive in the elegant village in Switzerland. Hitch was working as an artistic director, screenwriter and assistant director for the film “The Prude’s Fall” directed by Graham Cutts. He first discovered St. Moritz and Badrutt’s Palace during his work as a location scout. As John Russell Taylor wrote in his 1978 biography, “Hitch: The Life and Times of Alfred Hitchcock”: “Hitch and one of Balcon’s [the British producer Michael Balcon] assistants set out with Cutts on a journey to find shooting locations, as different glamorous places in Western Europe were required for the shooting of the film... In Paris, Cutts and his girlfriend joined them after a few days. She liked it in Paris, so Cutts decided to stay there with her while Hitch and his partner travelled on to St. Moritz. A week later, Cutts and his girlfriend arrived in St. Moritz. She liked it there, too, so Hitch was sent to Venice to select more locations and meet the actors and the rest of the crew. Everything was going very well until Cutts arrived with his girlfriend. She didn’t like it in Venice (...) so the whole group (...) set out for Lake Como. On the day they arrived, a storm broke out above the lake and she didn’t like it here either (...), so they all travelled onwards to St. Moritz. Or at least in the direction of St. Moritz: an hour’s train ride away from St. Moritz they discovered that the route

This futile undertaking, however, marked the beginning of Alfred Hitchcock’s lifelong love affair with the exclusive oasis in Switzerland. As Gary Chapman, author of the 2014 book “London‘s Hollywood”: The Gainsborough Studio in the Silent Years”, writes: “Although it is evident that no usable metre was filmed, it seems very likely that this was Hitchcock's first visit to St. Moritz and Lake Como, and he returned there many times for work and recreation with Alma.”

Alfred and Alma “married on 2 December 1926 and from 4 December to 10 December”, the young married couple spent their honeymoon at Badrutt's Palace in St. Moritz, according to Evelyne Lüthi-Graf, historian and archivist and responsible for the archives of the Palace Hotel. This was the first of supposedly eleven holidays that the Hitchcocks spent at the posh five-star hotel to celebrate their wedding day, Christmas and New Year. Most of their stays in St. Moritz occurred after the couple moved from England to Hollywood. The online news website https://amuse-i-d.vice.com/ claims: “He paid no fewer than 34 visits there.”

In the summer of 2018 Lüthi-Graf spent a week at the Palace and trawled through Badrutt's extensive archives; however, her research did not reveal any of Hitchcock’s captivating escapades. There were “no scandals or similar,” tells the archivist. Although Peter Lorre and other actors told how “Hitchy” loved playing pranks on people, other stars, including Tippi Hedren in particular, posthumously accused Hitchcock of being offensive. Badrutt’s guestbook describes the Brit as being “very nice,” tells Lüthi-Graf.

As far as the holiday in 1937 is concerned, Lüthi-Graf said: “During this stay they had to move rooms and then they switched floors, from the second and third floors. The first floor of a hotel is always the best, the Bel Etage. Most of the time they were on the first or second floor, never higher,” Lüthi-Graf tells Ambiance about the Hitchcocks’ last stay at Badrutt’s Palace, before World War II made Switzerland too dangerous due to Nazi-occupied and war-torn Europe.

The researcher added: “Between 1896 and 1936 the guest book was sorted alphabetically according to customer, we know the rooms, residential addresses and the preferences that are important in a hotel.” Other guest books have been lost over time.

In the post-war period, Alfred and Alma returned in December 1950 with another screenwriter, Whitfield Cook, an American, whose works include Hitchcock’s “Stage Fright” from 1950 and the sinister “Strangers on a Train” from 1951. As stated by “the. hitchcock.zone”, the Hitchcocks also spent the Decembers of 1952, 1954 and 1958 at Badrutt’s Palace. During this last trip the American screenwriter Samuel A. Taylor was present, whose work includes Hitchcock’s “Vertigo” from 1958. His most wellknown work, however, was surely the romantic comedy “Sabrina” (1954), in which Audrey Hepburn played the leading role and Billy Wilder directed (remade in 1995).

Lüthi-Graf describes, however, the Hitchcockish dilemma that was exacerbated by the haute cuisine and the Palace’s labyrinthlike wine cellar: “He was a gourmet and had a weight problem. He loved food and he loved drinking. The problem was that he always wanted to lose weight. Yet he never managed to lose weight, as he ate and drank constantly. Hitch was a humorous man and always had a joke to tell: ‘I am a thin man born by accident in the body of a fat man’,” recites Lüthi-Graf, based on the memories of Hansjürg Badrutt in the book “Pioniere”. After their honeymoon, the Hitchcocks returned to Badrutt’s Palace from “19 to 28 December 1933”. “What is interesting,” observes Lüthi-Graf, is “that he paid his bill with American Express. It is remarkable - a way of paying without cash” in the early 1930s, where a - presumably - wealthy Hitch used AmEx traveller's cheques, the precursor to the credit cards that the company introduced in 1958. Lüthi-Graf explains further that in the hotel register, the in-house book in which the visits, needs and behaviour of guests were recorded, that “in 1933, it states that he is a film director.” And he stayed here with a child and a servant... and of course with Alma, who always accompanied him. Alfred and Alma’s only child Patricia was born on 7 July 1928.

During the 1960s, the Hitchcocks spent three holidays at Badrutt’s Palace. There is a quirky photograph that shows him on one of these trips bowling on the Chesa Veglia, the oldest farm in St. Moritz, which was built in 1658 near the Palace. It now houses three restaurants and two bars owned by the Badrutts. In 1961, Alfred and Alma helped celebrate Marlene Dietrich's sixtieth birthday on December 27 at Badrutt’s Palace. With the German superstar in the lead, Hitch directed the film “Stage Fright” (1950), a crime thriller which is played out in the world of theatre and is explained in part through flashbacks. Marlene plays a diva who in this thriller breathes “The Laziest Gal in Town” into the microphone. Jane Wyman, who had won the Academy Award for Best Actress Oscar in 1948 for the film “Johnny Belinda” and was married to Ronald Reagan, also appears alongside her in the film. Patricia Hitchcock made her screen debut in “Stage Fright”.

Dietrich was just one of the Palace’s rich and famous guests with whom the Hitchcocks - who were now a part of Hollywood nobility themselves - remained in close contact in the decades they spent in the distinguished niche in St. Moritz. Other prominent figures included the former Empress Soraya of Persia, Greta Garbo and members of the European royal families. According to Lüthi-Graf, “they (Alfred and Alma) took their meals with Anikò and Hansjürg Badrutt,” the long-standing majority shareholder of the Palace, with whom they had a deep friendship. (Hansjürg being the great-grandson of Johannes Badrutt, the pioneering hotelier who popularised winter tourism in St. Moritz in the 19th century.) A strange coincidence connected the Badrutts and the Hitchcocks - there was only one day between the birthdays of both couples’ spouses. Some believe that Hitchcock got the idea for one of his most sinister stories while at Badrutt’s. “Seemingly, it was his observation of a flock of Alpine choughs around the tower at Badrutt’s which gave him the idea for his groundbreaking film “The Birds” (according to https://amuse-i-d.vice.com/). “The birds come at a certain time of day, when the wind direction changes,” explains Richard Leuenbarger, General Manager of Badrutt’s. “This is almost a ritual.” Yet it might also be an urban legend: “The Birds”, Hitch’s terrifyingly technical tour de force with Tippi Hedren playing the leading role, was released in 1963. However, it was Daphne du Maurier - also author of the novels “Jamaica Inn” and “Rebecca”, which were filmed by Hitch - who put pen to paper for the short story “The Birds” more than a decade before the film version about our “friendly” feathered friends. On their final journey to Europe in December 1975, Alfred and Alma - who had begun their life together as 20-year old newlyweds in Badrutt’s Palace - visited the Grand Hotel, where

A heritage of 700 years of wine culture On arrival at the vineyard, there is a palpable aura of something very grand and unique. The ingredients of elegance, dedication, finesse, creativity and innovation are the keys to great wine culture. And there are the approx. 700 years or over 30 generations of the Marchesi de’ Frescobaldi dynasty. The family’s history goes back to the year 1300. In the 14th century, the Florentine noble family supplied many European rulers with wine, including the French court under Catherine de Medici and the English court under Henry VII. The Grand Duke of Tuscany also appreciated the quality of the Frescobaldi vintages. The first Cabernet vineyard was planted in Castiglioncello di Bolgheri in 1944. It was only after many years that it became apparent that international grape varieties perfectly matched the climate in Bolgheri, resulting in the Mediterranean interpretation of Cabernet and Merlot wines. With the creation of Ornellaia, Bolgheri’s reputation as a unique terroir spread across the world. Shortly afterwards, in 1994, the registered designation of origin was introduced. An extraordinary microclimate on the coast The Ornellaia vineyard is located close to the sea. In addition to the abundant sunlight, the vineyards benefit from the light reflections on the surface of the sea and an extraordinary microclimate, which further reinforces the Mediterranean character of the wine. In the summer, a cool sea breeze blows across the vineyard, favouring the slow ripening of the grapes resulting in the freshness of the wines. In the winter, the hills protect the vineyard from the cold north winds. Thanks to the high variability of the soils (seabed, alluvial soil or volcanic soil), there is a wide range of micro-terroirs in connection with the relief which form the basis for the wide variety of Ornellaia wines. This range of soils allows for the growing of very different grape varieties within their fairly unique requirements. The Ornellaia vineyard currently grows the following varieties: Cabernet Franc, Cabernet Sauvignon, Merlot, Petit Manseng, Petit Verdot, Sauvignon Blanc, Verdichhio and Viognier. And each plot is worked by clearly-defined teams to ensure the continuity and experience of each individual crop, which is essential for the quality of Ornellaia wines.

Bern became Protestant around 1530, but for many Bernese, “their” Schweizerhof is still sacred today. Jack’s Brasserie, the trendy Sky Terrace and the only spa in the city of Bern are as much a part of Bern as the federal parliament building or the Bern Minster. The owner and managing family Gauer – as of 1975 Jack Gauer’s son Jean-Jacques took charge of the hotel’s destiny – were famous for organising such celebrations, including family festivities. For instance, a few dozen bottles of wine from the wedding of Jack and AnneMarie Gauer-Dubois in 1940 were stored for many years in the hotel's wine cellar. Emeline and Jean-Jacques Gauer married in the Schweizerhof in 1978. Since then there has been no more wedding wine in the cellar…

For this reason, bread, noodles, rice, white sugar and gluten are dispensed with. In addition, exclusively lactose-free milk products are used. “z Menu Vo Hie” – the local menu at the Victoria-Jungfrau Grand Hotel & Spa The restaurant La Terrasse at the Victoria-Jungfrau Grand Hotel & Spa in Interlaken spoils its guests with the new local menu. All products are sourced around Interlaken, no further than 40 kilometers from the hotel. By finding the products needed, Stefan Beer, met a lot of small producers. In order to guarantee for an extraordinary quality, he keeps a very personal relationship with all the producers. Their workplace and products inspired him to the “Menu Vo Hie” – the local menu. Stefan Beer and his team love to share these stories with his guests. They should feel the connection of the hotel with its surrounding and the stories behind the dishes and products. To round off the culinary experience, accompanying regional wines, selected by our Head Sommelier Daniela Wüthrich, are offered.

La Fromagerie – the cheese bunker of Gstaad It was a revolution locally - and a trendy pub - when no-one had thought about themed gastronomy. In 1975/76, Ernst Andrea Scherz, former well-travelled owner of the Gstaad Palace converted the bunker, which was used during the Second World War to get documents and gold to safety, into a fun and cheerful meeting place called “La Fromagerie”. Exclusively reserved for the gold of Saanen: specifically for the divine Alpine cheese, deliberately served with casual charm, decorated with cosy staves, wooden tables and red and white ruffled tablecloths, mixed crockery and cutlery, fine Chasselas and other local wines. For the 2018/19 winter season, this jewel will shine in a new light: interior designer Marina Nickels has selected antique furniture, shabby chic lights and alpine finds – offering visitors a feast for the eyes as they enjoy traditional culinary delights in cosy and comfortable surroundings. Perfect synergy between alpine feeling and the Grand Hotel style Just in time for the upcoming winter season, Kulm Hotel St. Moritz will present its 40 completely refurbished rooms and suites. Tying in with the latest room renovations in 2015, award-winning French interior designer Pierre-Yves Rochon is once again the creative mind behind the ongoing refurbishment. Several walls were moved to create spacious, modern feel-good areas with prime views on the remarkable Lake St. Moritz. What is lost in number of overall rooms is gained in comfort. While the rooms have a contemporary feeling, tradition has not been forgotten. Swiss stone pine wood, very typical for the Engadine region, is found in every room and makes for the typical timber aroma. Rooms facing the south are equipped with wooden ceilings, others with wooden slats, all made from Swiss stone pine. Lacquered wood, warm and smooth fabrics, for example by Loro Piana, as well as spacious clear white bathrooms are featured in these rooms and suites. Two new stars over the Grand Resort Bad Ragaz His aspiration is to tell stories, bring back old memories and create new ones: In July 2019, Sven Wassmer (holder of 2 Michelin stars and 18 GaultMillau points) will launch a new hospitality concept at the Grand Hotel Quellenhof in Bad Ragaz. The star chef and his wife, Amanda Bulgin, who, as sommelier, will be responsible for the wine offering at the Quellenhof, will start in January. The concept planned together with the young Fricktal native will replace the former Bel Air restaurant and will be divided into two units: a health-conscious lifestyle restaurant, which is open daily, and the signature restaurant of the two-star chef Sven Wassmer, which will be open five nights per week from July 2019, providing an informal atmosphere, with a show kitchen and a spectacular wine cellar. Sven Wassmer’s aim is always to inspire diners and gourmets in equal measure. He is unrivalled in his ability to passionately combine culinary treasures from the region with top ingredients from around the world. “I can hardly wait to shape the future of this tradition-rich resort with my identity”, enthuses the team-oriented chef about his new venture.

In late November each year, over 70,000 bright lights on Zurich’s tallest Christmas tree in the Baur au Lac park mark the start of the festive season. Just like every year, the tradition-rich establishment invites guests and Zurich natives to the Christmas Tree Lighting to enjoy mulled wine, punch and traditional Christmas cookies. They are entertained by live music from singer-songwriter Levin Deger and singer Nyssina, while the children get to meet Santa Claus and his helpers. From 1to 30 December, the Baur au Lac will once again conjure up comfortable hospitality and a festive lodge atmosphere for guests in the Chalet au Lac, which is located in the hotel-owned park. Children can look forward to a family concert on 9 December in the Maag concert hall, a collaboration between the Zurich Youth Symphony Orchestra and various children's and youth choirs. In the spirit of the occasion, the children will be invited to the Baur au Lac for afternoon tea with hot chocolate and gingerbread. Into the heart of the skiing area with one push of a button With the hotel’s own mountain railway, guests of the Tschuggen Grand Hotel reach the skiing and hiking area Arosa Lenzerheide in just two and a half minutes. Since summer 2018, the ride with the “Tschuggen Express” is even more comfortable: the existing funicular has been completely renovated and features two new cabins. Since 2009, guests of the Tschuggen Grand Hotel enjoy a unique offer: With the private funicular, which is operated by a push of a button, guests reach the skiing area Arosa Lenzerheide directly from the five-star-superior hotel. The “Tschuggen Express” requires less than two and a half minutes for the length of 536 meters and the 155 meter climb to the summit station. But he’s in the mountains whenever he can. In winter on touring skis and in summer on his mountain bike. “The peace, nature and going somewhere with a friend. That is really important to me.”

Il fait encore nuit noire lorsque Franck fixe les peaux de phoques sur ses skis de randonnée. Il commence l’ascension accompagné de son ami de longue date, le guide local Pierre-Olivier Bagnoud. L’aurore... Le soleil enflamme le ciel et les montagnes, les colorant d’un dégradé de rouges et inondant la vallée de la lumière chaude du matin. « Ces instants, tu ne peux pas les acheter », s’enthousiasme Franck. À la Cabane des Violettes, Franck et le gardien de refuge Pierre-Olivier vivent leur rêve d’un refuge de montagne parfait. Au menu, une cuisine montagnarde traditionnelle. Préparée avec la touche de celui qui a déjà travaillé dans la cuisine gastronomique de Franck. Et accompagnée, bien-sûr, d’un bon cru valaisan.

It’s still pitch black when Franck attaches the climbing skins to his touring skis early in the morning. He sets off walking in the direction of the mountain with his old friend and local mountain guide Pierre-Olivier Bagnoud. The sun starts to rise and lights up the sky and mountains in a thousand hues of red, bathing the valley in warm morning light. “You can’t buy moments like these,” enthuses Franck. In Cabane des Violettes, Franck and hut warden Pierre-Olivier live out their dream of working in a perfect mountain hut. Down-to-earth mountain-dwellers’ food is on the menu. Prepared with that certain je ne sais quoi by somebody who used to work in Franck’s gourmet kitchen. And accompanied of course by a fine drop of Valais wine.

Une même passion pour la musique lie Nemo de Bienne et Dani de San Salvador. Les deux musiciens ont tissé une belle amitié lors de la visite de la CROIXROUGE SUISSE au Salvador.

The same passion for music unites Nemo from Bienne, Switzerland and Dani from San Salvador. The two musicians have forged a wonderful friendship during the visit of the SWISS RED CROSS to El Salvador.

Daniel Lopez, 22 ans, rêve d’une carrière dans la musique. Depuis tout petit, il écoute du rap. Plus tard, il crée ses propres rythmes et écrit des textes de chansons dans sa maison en tôle. Un logement d’une seule pièce qu’il partage avec sa grand-mère de 86 ans et sept autres membres de sa famille à Ciudad Delgado, un quartier défavorisé de la capitale du Salvador.

Daniel Lopez, 22, dreams of a music career, and was listening to rap from a very young age. He later created his own rhythms and writes lyrics in his hut, built with corrugated sheets of iron. A one-room dwelling he shares with his 86-year-old grandmother and seven other members of his family in Ciudad Delgado, a poor ghetto in the capital of El Salvador.

Non sans fierté, il fait découvrir aujourd’hui ses compositions à Nemo Mettler, le jeune rappeur biennois de 19 ans devenu célèbre en Suisse. Nemo avait le même rêve que Dani. Tout récemment, il l’a réalisé en raflant quatre Swiss Music Awards et en plaçant sa chanson « Du » dans le top 10 du hit-parade suisse. Même si les deux ne se comprennent que par l’entremise de la traductrice, la passion de la musique les unit. « De quoi parlent tes textes ? » demande Nemo à Dani. « De la vie en ville, de la violence, de la drogue mais aussi d’amour », répond Dani tout en jouant quelques beats sur lesquels il se met à rapper. Nemo balance la tête en rythme. Dans ce morceau, Dani évoque trois de ses amis disparus, « le premier est mort d’overdose, le deuxième a eu un accident et le troisième a été abattu ».

Not without a sense of pride he’s now showing his compositions to Nemo Mettler, the young 19-year-old rapper from Bienne has become famous in Switzerland. Nemo shared the same dream with Dani, which he recently achieved by winning four Swiss Music Awards and his song “Du” made it into the top 10 of the Swiss charts. Even if the pair don’t speak the same language, through the translator they can understand the passion for music that binds them. “What are your words about?” Nemo asks Dani. “Life in the city, violence, drugs, but also love”, says Dani while playing some beats he starts rapping over. Nemo moves his head to the rhythm. In this piece, Dani describes three friends he has lost; “the first died from an overdose, the second had an accident and the third was shot.”


Impressed At home, Daniel Lopez plays some of his songs to Nemo: “You’re really talented”, the Swiss musician assures him.

San Salvador is one of the most dangerous cities in the world, with an average of ten homicides every night. In a country half the size of Switzerland, gangs make the law and terrorise the population.

Au Salvador, un quart des jeunes sont des «ninis – ni trabajan, ni estudian», ni salariés, ni étudiants. D’une part il est trop dangereux de passer de l’école obligatoire au lycée si ce dernier se trouve sur le territoire d’un autre gang, et d’autre part les employeurs n’offrent que peu de chances aux jeunes issus des quartiers défavorisés. Compte tenu de cette situation, la CRS soutient des projets qui permettent d’améliorer les perspectives d’avenir des jeunes avec des offres de formation à leur disposition. A San Salvador, ils sont 3400 à profiter de ces programmes.

A quarter of young people in El Salvador are “ninis – ni trabajan, ni estudian”; neither working nor studying. On the one hand it’s too dangerous to go from compulsory school to the high school if the latter is located in a rival gang’s territory and, on the other, employers offer few opportunities to young people from poor neighbourhoods. To remedy this situation, the SRC (Swiss Red Cross) is supporting projects to improve the future prospects of young people by providing training opportunities. 3,400 youngsters in San Salvador have benefited from these programmes.

« Mes chansons témoignent des difficultés que rencontrent les jeunes au Salvador », explique Dani. Il raconte que sa mère est décédée lorsqu’il était enfant et ajoute : « Mon père n’était pas un exemple à suivre. » A 12 ans, Dani quitte l’école. Pour survivre, il vend dans la rue téléphones portables et autres appareils électriques : « Personne ne se souciait de mon avenir. » Les jeunes comme Dani sont des proies rêvées pour les gangs – les maras – qui font d’abord office de famille de substitution avant de les exploiter pour leurs basses œuvres.

“My songs reflect the difficulties young people face in El Salvador,” says Dani. His mother died when he was a child and he adds: “My father was hardly a role model.” Dani left school at 12 years old and sold mobile phones and other electrical devices on the street: "Nobody cared about my future.” Young people like Dani are dream prey for gangs, the maras, who initially act as surrogate families before proceeding to exploit them for their criminal acts.

Il y a trois ans, lorsque la Croix-Rouge suisse commence à travailler dans le quartier de Dani, il y voit une chance. Avec ses amis et le soutien de la Croix-Rouge, il y construit une place de jeu. Grâce à ce projet, Dani rencontre des gens qui croient en lui : « Ma vie a alors radicalement changé. » Il commence par retourner à l’école et, aujourd’hui, il suit une formation d’aide-soignant. Il aimerait ensuite poursuivre des études avec « la musique comme plus grand rêve » en tête. Avec son amie Janida, qui travaille à l’hôpital, il élève son bébé de 4 mois. « Je veux que mon fils s’en sorte mieux que moi », déclare le jeune papa.

He seized his chance three years ago when the Swiss Red Cross started working in Dani’s district and built a playground with his friends and the support of the Swiss Red Cross. This project enabled Dani to meet people who believed in him: “My life then changed radically.” He started attending school again and is now training to be a caregiver. He would then like to pursue his studies with “music as my biggest dream”. He’s bringing up his 4-month-old baby with his partner, Janida, who works at the hospital. “I want my son to have better opportunities than I did,” says the young dad.

Tanja Wegmann dispose d'une solide expérience de gestion dans le domaine de l'hôtellerie internationale et dans le secteur du luxe. Après avoir occupé différents postes en Suisse, en Europe et en Asie, elle a travaillé au Grand Hotel Les Trois Rois à Bâle de 2005 à 2009. Tanja Wegmann a ensuite passé six ans à des postes de direction dans des marques de luxe renommées. Tanja Wegmann, née à Bâle, est diplômée de l'École hôtelière de Lausanne et titulaire d'un MBA du Henley Management College dans l'Oxfordshire, Angleterre. Tanja Wegmann has extensive leadership experience in the international hotel industry and luxury goods segment. After career stages in Switzerland, Europe and Asia, she worked for the Grand Hotel Les Trois Rois in Basel from 2005 to 2009. Subsequently, Tanja Wegmann was employed in management functions for well-known luxury goods brands for six years. Tanja Wegmann was born in Basel, graduated from the Ecole hôtelière de Lausanne and holds an MBA from Henley Management College in Oxfordshire, England.

Pourquoi avoir choisi d'exercer un métier dans l'hôtellerie ? Après mon bac, j'ai dû prendre une décision professionnelle importante : je devais choisir entre des études de psychologie, de design d'intérieur ou une école hôtelière. Mon grand-père, autrefois grand entrepreneur, qui est une personne très importante dans ma vie, estimait qu'aucun de ces choix n'était pertinent. Néanmoins, j'ai décidé de m'inscrire en hôtellerie et j'ai rejoint l'École Hôtelière de Lausanne.

Why did you decide to work in the hotel industry? After my maturity diploma I was faced with an important professional decision: a degree in psychology, interior design or hotel management school. My grandfather, formerly a great businessman and a very important person in my life, believed none of the three pathways was the right one. Nevertheless, I opted for the hotel industry pathway and visited the Ecole hôtelière de Lausanne.

Qu'est-ce que l'excellence du service signifie pour vous ? Un mélange de professionnalisme et de passion. Fondamentalement, l'un ne fonctionne pas sans l'autre. Cette qualité n'est garantie que si les bons employés occupent les bons postes dans l'entreprise et si un esprit d'équipe règne dans tous les services. Chaque collaborateur doit tout mettre en œuvre pour le client et faire de son mieux pour rendre l'impossible possible. Une erreur peut toujours se produire, mais nous sommes clairement conscients de la responsabilité et de l'engagement d'un hôtel 5 étoiles. Mon credo : il n'y a pas de problèmes, il n'y a que des solutions.

What does excellent service mean to you? A combination of professionalism and passion. Whereby one without the other fundamentally does not work. This quality can only be ensured if the right employees occupy the appropriate positions in the company and a team spirit prevails across all departments. Every employee has to go the extra mile for the guest and do his best to make the impossible possible. Mistakes are sometimes made, because we are only human, yet we are fully aware of the responsibility and requirements of a 5-star hotel. My firm belief is: There are no problems, only solutions.

Quelle est l'expérience qui vous a le plus marquée au cours de votre carrière ? L'école de gestion hôtelière de Lausanne et ma formation « Fast Track » en gestion d'entreprise à Intercontinental Hotels, ainsi que mes études de MBA. L'ouverture du Grand Hôtel Les Trois Rois en 2006 et la reprise de la direction générale de l'hôtel peu de temps après constituent très certainement l’un des moments les plus importants pour moi. Cet hôtel, c'est un « coup de foudre », en quelque sorte. Raison de plus pour moi d'être ravie de revenir au Grand Hôtel Les Trois Rois en tant que directrice d'hôtel après 9 ans dans le secteur du luxe. Dans cette maison chargée d'histoire, nous appliquons au quotidien notre slogan « Rich in history, young at heart » (« riche en histoire, jeunes de cœur ») et allons toujours plus loin avec de nouveaux projets.

Which of your experiences has influenced you most during your career? The hotel management school in Lausanne and my corporate “fast track” management training at Intercontinental Hotels as well as my MBA studies. The opening of the Grand Hotel Les Trois Rois in 2006 and becoming Hotel General Manager shortly thereafter is certainly one of my biggest highlights. This hotel was something like “love at first sight”. I am all the more overjoyed to return to the Grand Hotel Les Trois Rois as Hotel Director after spending nine years in the retail of luxury goods; to a hotel steeped in history where we live by our slogan “rich in history, young at heart” and press ahead ever new projects.

Quels principes et valeurs aimeriez-vous partager avec les jeunes collaborateurs ? Par-dessus tout : la passion pour l'hôtellerie. Jeunes, nous devons nous orienter très tôt et les doutes sur nos choix professionnels nous accompagnent quasiment tous. De mon point de vue, on ira plus loin dans la vie si on s’investit plus que les autres. Et en restant authentique et honnête, on gagne la sympathie de nos supérieurs et de nos clients, mais aussi de nos collègues et de notre entourage. Dans quel pays ou quelle ville aimeriez-vous diriger un hôtel ? J'ai eu l'occasion de travailler dans certaines des villes les plus captivantes du monde. C'est l'une des raisons pour lesquelles j'apprécie beaucoup la Suisse aujourd’hui. Peut-être serai-je attirée par la mer quand je serai plus âgée, et j’aurai alors davantage envie de profiter du « Dolce Far Niente ». Quelles sont les évolutions qui auront le plus d'influence sur l'hôtellerie de luxe à l'avenir ? Le client d’aujourd’hui est plus mobile et décide de manière rapide et spontanée de sa prochaine destination. Les médias sociaux influencent de plus en plus ses choix. Nous devons être plus rapides, plus flexibles, plus spontanés et offrir une excellence de service en toute situation. Nous pouvons également mentionner la numérisation et « l'intelligence émotionnelle ». Nous travaillons en permanence à leur intégrer ces deux thèmes, partout où cela s'avère judicieux. Mais cela ne doit jamais se faire au détriment de notre accueil cordial et personnalisé du client. D'ailleurs, il y a deux autres sujets qui nous intéressent beaucoup en ce moment : la durabilité et la sécurité à tous les niveaux. Quel est votre conseil personnel pour découvrir la belle ville de Bâle et sa région ? Bâle a beaucoup à offrir avec son triangle des trois nations. Elle est aujourd'hui la « capitale culturelle » de la Suisse. Sur le chemin du retour, descendez du tramway à Kleinbasel et traversez le Rhin avec le légendaire ferry bâlois vers le Palatinat. De là, promenez-vous de la Münsterplatz jusqu'à l'hôtel. Pour l'après-midi, selon la saison, une visite de la foire d'automne ou du marché de Noël devrait certainement être au programme. Par ailleurs, Bâle propose de nombreuses visites de la ville, telles qu'une visite guidée de l'art urbain. Le soir, vous pourrez vous installer confortablement pour un apéritif devant notre cheminée et terminer la journée avec un menu des Rois dans notre restaurant le Cheval Blanc de Peter Knogl, triplement étoilé Michelin.

What principles and values do you want to pass on to younger employees? Passion for the hotel industry is the most important thing. As a young person, you have to make decisions early and almost everyone is faced with uncertainty when it comes to choosing the right professional pathway. In principle, the following goes for me: Those who achieve more than others will get further in life. And those who remain authentic and honest reap the benefits of affection, from superiors, guests, as well as professional colleagues and privately. In which country or city would you like to run a hotel? I have already had the opportunity to work in some exciting cities around the world. This is one reason why I have great appreciation for Switzerland now. Perhaps I'll be drawn to the ocean when I'm older, where I can more easily enjoy the “Dolce Far Niente” (sweet idleness). What development will have the greatest impact on the luxury hotel industry in the future? The mobility and decision-making of guests has changed a lot. The guest of today spontaneously decides where to go and in the future, social media will certainly influence such decisions even more. Hoteliers have to be faster, more flexible, more spontaneous and yet deliver top-class service in every situation. There’s also digitisation and "emotional intelligence" and we are constantly working to integrate them into our hotel operations wherever it makes good sense. But it must never be at the expense of cordiality and personalisation vis-à-vis guests. There are two further important and current topic areas that currently occupy us a great deal: sustainability and security at all levels. What is your personal tip for discovering the beautiful city of Basel and its region? The city of Basel has much to offer with its border triangle and today is the “cultural capital” of Switzerland. For me the perfect stay in Basel looks like this: After a delicious breakfast overlooking the Rhine here at Les Trois Rois, enjoy a visit to one of the world-famous museums, such as the Fondation Beyeler in Riehen, the Vitra Design Museum in Weil am Rhein, or the Tinguely Museum in Basel's city centre. On the way back alight from the tram in Kleinbasel and cross the Rhine on the legendary Basel ferry to the Pfalz. From there, take a leisurely stroll from Münsterplatz back to the hotel. Depending on the season, a visit to the Autumn Fair or the Christmas Market should definitely be on the programme. Alternatively, Basel offers a range of city tours, such as the urban art tour. In the evening, enjoy an aperitif in front of our cosy log fire and conclude the eventful day with a Menu des Rois in our 3 Michelin-starred restaurant Cheval Blanc by Peter Knogl.
