Tomato Feta Relish Palomino
Ingredients: 3 cups Canned Whole Tomatoes (roughly (3) 14 oz. cans) 3/4 cup Extra-Virgin Olive Oil 2 tbsp Fresh Garlic (4-5 cloves minced) 2 tbsp Fresh Julienned Basil 1/4 cup Kalamata Olives (seeded, chopped) 2 tbsp Maui Onion (diced) 2/3 cup Feta Cheese (large crumbles) 1/4 cup Red Wine Vinegar
Directions: 1. Drain tomatoes well, place in medium bowl & crush by hand. 2. Fold in remaining ingredients. 3. Serve with crisp bread. Makes about 16 pupu size servings.
Note: I think Lori may be too “young” to remember Palomino Restaurant, but they served this relish with their bread. It’s a super easy pup to make. Cathy
