This plant features the latest technology in material handling, aging coolers, and steak cutting capabilities. In March 2001, the company completed the addition of a huge aging cooler to facilitate continual growth.


Beef Grading and Marbling Feed

How is a steak marbled and who determines the grading?

Marbling can also be influenced by time on feed and type of feed. The longer that a pen of beef cattle are on feed on the feedlot the higher the chance that they will grade higher on quality scores but have much lower yield grades (percentage of carcass lean to fat ratio). Feeding a high amount of cereal grains such as corn or barley will change the color of the carcass fat from a yellowish to a white, plus increase the chance of obtaining a higher quality grade according to the USDA. It can be risky to feed a cattle too much grain to increase marbling, because it can cause acidosis. Cattle are ruminants; their stomachs are better at digesting grass, not grain. To increase marbling and rapidly increase weight gain, the contemporary beef cow is being selected for the ability to eat large quantities of corn and efficiently convert it to protein.

United States Grading System The United States Department of Agriculture’s grading system, which has been designed to reward marbling, has eight different grades; Prime, Choice, Select, Standard, Commercial, Utility, Cutter and Canner. Prime has the highest marbling content when compared to other grades and is capable of fetching a premium at restaurants and supermarkets. Choice is the grade most commonly sold in retail outlets and Select is sold as a cheaper but still nutritious option in many stores. Prime, Choice, Select and Standard are commonly used in the younger cattle (under 42 months of age) and Commercial, Utility, Canner and Cutter are used in older cattle carcasses which are not marketed as wholesale beef “block� meat but as material used in ground products and cheaper steaks for family restaurants.

inspected may carry the USDA shield of authenticity. The grading system determines the quality rating of beef based upon a very complicated inspection system which essentially measures the amount of marbling (fat specs) in the ribeye muscle (lean) portion and combines the maturity (age) of the beef carcass to arrive at the inspected grade quality. Basically, the higher the ratio of marbling and the younger the beef, the higher the grade. It is the fat marbling that determines tenderness, juiciness and flavor. The age of the beef determines beef texture and also affects flavor. Younger beef produces a finer texture and a lighter red color.

What makes Certified Angus Beef special:

Marbling and maturity 1. Modest or higher marbling – for the taste that ensures customer satisfaction 2. Medium or fine marbling texture – the white “flecks of flavor” in the beef that ensure consistent flavor and juiciness in every bite 3. Only the youngest classification of product qualifies as “A” maturity for superior color, texture and tenderness

The next three specifications ensure a uniform, consistent steak size: 4. 10- to 16-square-inch ribeye area 5. Less than 1,000-pound hot carcass weight 6. Less than 1-inch fat thickness

Are animals treated humanely? Yes. It is our first priority to make sure the animals are treated humanely. We have a number of programs in place to help ensure animals are treated properly and safely. Each farm must be USDA Process Verified. This program uses a third party to audit and confirm a producer’s documented animal welfare practices and feeding practices, among other information. Are White Marble Farms pigs raised indoors? Yes, White Marble Farms pigs are raised in spacious, climate-controlled facilities that keep animals cleaner and healthier. Additionally, these spacious facilities make clean, fresh food available at all times during the day for each animal. Pigs are able to move freely in state-of-the-art facilities. They are not restricted to one area. What are White Marble Farms pigs fed? White Marble Farms pigs are given an all-grain-based diet consisting of corn and soybeans that promotes growth and marbling. Each animal has clean, fresh food available at all times during the day.

Wellington Farms free roaming chickens are fed a diet of pesticidefree corn, soybean meal and soybean oil added energy source. The feed ingredients are milled into a powder and pelletized. Included in the feed formula mix is an all natural vitamin and mineral blend. They eat and drink in spacious screened natural daylight housing protected against wild predator animals and potential disease- carrying wild birds. Our feeds contain no animal by-products (used fryer fat from fast food restaurants, rendered poultry or animal fat, feather meal, or fishmeal), no bakery by- products, and no antibiotics EVER. Antibiotics are used by the large commodity broiler chicken companies for primarily three reasons. They enable chickens to survive in crowded growing conditions, promote accelerated weight gain resulting in better feed conversion ratios and reduce stress within the flock which in turn lowers flock mortality rates. All of the above are intended to enhance profits. However, chicken quality is sacrificed in the process.

What is AIR CHILLED and what makes the chicken better? With few exceptions , all chickens are presently water-chilled. Federal law allows water absorption up to 12% of carcass weight, and chicken companies want to sell water. It’s cheaper than chicken! Water chilled birds are immersed in ambient temperature water-filled chillers where absorption takes place.

The chickens then travel to the main chiller where they are again immersed into circulating water intended to bring carcass temperatures down to less than 40 degrees. These chillers are community style baths into which each day’s birds go in and out. What’s on or inside of one bird may also end up on another. With air chilling, each bird makes no contact with another and absorbs no water because it never is immersed or sprayed with water. It loses around 1% of its weight during the air-chilling process. What this means is that bacteria counts are 80% lower than those of water-chilled chickens and extends useful shelf life significantly. It provides for a distinctly different flavor and texture because the natural juices, proteins and enzymes remain in the meat during cooking whereas they are lost with water-chilled birds.
