Slice the Al Pastor thin from the Cone.

Toast the Baguette, and Cut lengthwise down the middle. Puree the Fois Gras Pieces with equal parts to Mayo, Roasted Garlic and Salt and Pepper. Combine the Go Chu Jang with equal parts honey and mix thouroughly. To assemble the sandwich, spread the pate onto the bread. Add the pickled veg, followed by the meat and finally the Korean BBQ sauce. Serve immediately.

SWEET POTATO FUNNEL CAKE
CURRIED CASHEWS, COCONUT LIME DUST Directions

1.Cook the sweet potato in a 350 oven until tender. Puree until smooth.

2.Combine the butter, water, sugar and salt and bring to a boil. 3.Add the flour all at once and stir vigorously with a wooden spoon until the batter pulls away from the pan. This should take about 2 minutes. Remove the pan from the heat and transfer to a mixer fitted with the paddle attachment. 4.Begin running the machine to cool the batter and add the eggs one at a time until the dough becomes almost runny. Fold in the sweet potato. 5.Transfer the dough to a pastry bag without a tip. 6.To candy the cashews, combine the curry powder, butter and brown sugar into a small pot. Melt and stir in the cashews. Toast at 350 until golden and allow them to cool. 7.In a deep fryer, fry the sweet potato pate choux by streaming in a circular motion to form a ring. Fry until golden brown, flipping to achieve an even cook. 8.To plate, dust the funnel cake with brown sugar and top with chocolate gelato and candied cashews.

How Cold Brew Changed the Coffee Business COLD BREW ICED COFFEE If you crave a good iced coffee in the summer, but loathe the way so many end up tasting watery or overly bitter, then there’s only one solution: cold brew iced coffee. This method guarantees a smooth and icy cup, every time. Making cold brew iced coffee is no great secret, nor does it require the ninja-level skills of a trained barista in order to master. You don’t even need much special equipment beyond a large container for making the coffee and a strainer. Recipe: Here’s how it works: 1 lb. of course ground coffee to 1 gal. of water. Combine the grounds with water, then let it steep overnight, or for around 12 hours at room temparature or put in the cooler for 24 hours. During this time, the coffee slowly infuses into the water, creating a strong, concentrated brew. Strain the next morning, and you’re ready to go.
