MARKET ALERTS CHICKEN + DAIRY MARKETS CHICKEN Wings are in short supply and high demand. They will continue to be tight until March. The Fresh market has increased since the beginning of November. Demand is strong during the NFL playoffs leading into March Madness. Please look into our Sysco branded frozen item 4367953 for a great competitive item.

DAIRY - MILK CREAM AND CHEESE Milk, cream and butter are up and remain firm. Block cheese is slowly declining.

MARKET ALERTS BEEF MARKET BEEF Ground Chuck is on the rise. This is in direct correlation of the rise of chuck pricing that occurs every winter as retail sales shift focus from grilling season (steaks like Rib eye and NY) to roasting season (pot roast, etc.). This has caused a 55 cent PO cost increase since Nov. 22nd. Please hold your margins.

FISH – SALMON ARTICLE LINK. CLICK TO READ. GSMC Panel : Salmon to Continue “Phenomenal” Rise Fresh • One of largest Atlantic Salmon Producer’s in the world has a 35%-40% reduction in production. This situation will continue until the end of May. • Two Atlantic Salmon supplier’s in Western Canada have zero salmon at this time. Both of these suppliers will be out until the end of February. • The country of China is now allowed to purchase Norwegian Salmon. This opens a huge customer base in an already market in short supply. • Scottish Salmon prices remain high due to the Sea Lice issue affecting the harvests. The above situations have caused a major shortage in the market place which has driven up prices for the first quarter. We are working with all of our suppliers to ensure we have the product needed to meet the demands of our customers. Frozen Norwegian farmed salmon prices have firmed up over the past two weeks. Currency exchange rates, fish pool index, and increase demand, production quantities are driving factors in the price increase. Good news: Supply is steady and Portico program is strong. Bad news: Our pricing on Norwegian Portico farmed salmon will go up effective Jan 1st. 2017 based on the quarterly adjustment. Many retailers and wholesalers are reporting shortages in the market on farmed salmon supply.

MARKET ALERTS SEAFOOD MARKET CANNED/FROZEN CLAMS & CANNED CLAMS JUICE

Due to poor weather conditions and bad yields of clam meat, there is an industry shortage on clams. Our CatMan supplier has advised that they will substitute our Sysco brand items with their supplier brand whenever they are out of Sysco brand items. In addition, all canned and frozen clam items are taking a price increase in January 2017 as a result of the industry shortages.

Mahi season in South America is a bust so far. The “La Nina’” phenomenon is very strong. It is keeping the water temperature very cold. As a result the mahi-mahi are not coming closer to shore for the boats to catch them. There are little to no signs of fish. Beach prices are very high, with small quantities available and poor quality. Most of the fish is going to the local or fresh market. Contrary to what was reported previously, the plants in Ecuador do not have raw materials to pack mahi-mahi portions for us. Therefore, our shipment from Ecuador will be delayed until further notice. Our supplier has started packing fish in Portico but not enough to make a full container. Our sourcing team is currently working on sourcing supplier brand mahi-mahi to keep us in supply. In the meantime, please continue to utilize the Limited Time Offers from Sysco’s approved suppliers to supplement our Portico mahi-mahi. There is a shortage industry wide and mahimahi offers are hard to come by.
