BUILD A BETTER BRUNCH Interested in starting a brunch service? We have some helpful hints that can make your brunch a huge hit. The Spring and Summer months can be a great time to launch a new service with amazing seasonal produce, longer days, and a slower pace of everyday life. Brunch service typically runs on the weekends, between the hours of 10am 3pm. If executed correctly, a brunch service can be an additional boost in revenue, while cross-utilizing many of your existing menu items. By creating a limited (but mouthwatering) brunch menu, accompanied with some delicious cocktails, mocktails, coffee and espressos, and a beautiful setting, customers are bound to have a great experience!
Did you know that brunch became popular in the US in the 1930s? This was due to Hollywood stars making transcontinental train trips would often stop in Chicago for late-morning meals.
MAKE YOUR BRUNCH Menu Engineering Creating a mouth watering menu to entice your customers is the first step to creating a successful brunch service. Finding the perfect balance of creating a new menu can be difficult. Utilizing products you already carry in-house is a great way to keep menu costs and kitchen labour down. Review the 4 P’s (Profitability, Preparation, Portability, Popularity) of menu engineering that guide your customers to the most profitable items on your menu.
Do Your Research One way to create your brunch menu is by seeing what others in your area are doing. What works for them? What is missing from their menu? Brunch is a more casual service, and this allows your Chef to play around with the menu. Do something that is fun and creative, and can cause some buzz for your restaurant! Simply put, give the customer a meal and experience that is unique to you!
A SUCCESS! Picture Perfect They say a picture is worth 1000 words, and this is the truth with brunch photos! Before launching a new brunch menu, ensure that you have high-quality, beautiful photos of your menu to market on your social media, posters, or signs. One great way to get lots of photos is by having a menu tasting with your staff. Encourage your staff to take photos of the dishes they are trying, and those who have the best photos win something special! (Maybe even brunch on the house!)
Spread the Word! Communicate often and market via all of your social media platforms. This is key to reaching your current customers and attracting new ones. To generate excitement, post photos of your new feature items. Always make your signage visible. Think about patio easels, sidewalk signs, and banners. This allows you to be seen by people passing by on the sidewalk or in their car. Sysco is here to help create these. “The bigger the better” for your signage is always more impactful!
