Veal vs Beef

When it comes to beef versus veal, the age of the cattle is the main factor. Veal is the tender meat of young cows, whereas beef is from older cattle. If you're a Foodie with an eye for detail, you might notice that high-quality veal has a delicate pinkish tint while beef has a richer, deeper red hue. What about the flavour? Wondering how it compares to beef? Well, beef has a bolder taste and a rougher texture compared to velvety veal. Sink your teeth into a juicy, flavourpacked hamburger that's anything but basic! Veal is the MVP here, bringing its A-game with richer taste compared to beef or turkey. But, before you get flipping, make sure you give your patty mixture a chill in the fridge to keep it from falling apart. I suggest to not get going with the salt shaker just yet either, as it'll suck out moisture from the meat. Wait until the patties are on the grill or flat top. Making veal burgers is as easy as whipping up beef burgers, and cooking them is a breeze too.

VEAL PATTIES


GO AHEAD + MAKE THEM! Makes 6 Patties

1 1/2 pounds ground veal 1/2 cup (8-ounces) unsalted butter, softened 1 teaspoon freshly squeezed lemon juice 1/2 teaspoon kosher salt 1/8 teaspoon ground nutmeg Dash freshly ground black pepper 2 tablespoons olive oil, more as needed Combine ground veal, butter, lemon juice and nutmeg, and shape into 6 patties. Begin by heating oil in a sizable skillet over mediumhigh heat or on a flat top grill. Season patties with salt and pepper. When the oil shimmers, place the patties on the hot surface, making sure not to overcrowd the pan. Brown both sides of the patties, and continue cooking, flipping once, until the patties reach an internal temperature of 165F. STEWS Beef stew is a classic, but veal stew is as good or better and can command a higher price on your menu.

This is comfort food at it’s BEST! 1 tablespoon olive oil 1 medium onion sliced thin 3 lbs stewing veal cubed in 1 inch pieces 1 cup cremini mushrooms rough chopped 2 tablespoons olive oil ¼ cup all purpose flour 2 cups white wine 3 cups chicken broth 1 bay leaf 11/2 teaspoon of dried thyme 3-4 sprigs fresh salt and pepper to taste 3 yellow flesh potato cubed 2 carrots sliced

On medium-high heat, heat 1 tablespoon of olive oil in a medium pot.

Add sliced onions and cook until onions begin to soften. Stir occasionally for approximately 10 minutes.

While onions are cooking, cube veal into 1 inch pieces.

Remove cooked onions from pot and place in a bowl.

Add 2 tablespoons of olive oil in pot. Heat for one minute. Add cubed veal pieces and brown evenly then sprinkle flour over browned veal pieces and toss until well coated (in the pot). Cook for 12 minutes. (Colour of stew will depend on how long you brown the flour with the veal) Add the white wine while scraping the bottom of the pot., then a dd chicken broth, bay leaf, thyme, salt, pepper and cooked onions. Cover slightly and simmer gently for about 45 minutes on medium heat.

Add potato cubes and cook for another 10 minutes or until almost done.

Add sliced carrots and mushrooms then cook for 5 minutes or until done.

Veal is simply perfect for curries of all types!

Try this EASY to prepare curry and run it as an LTO. MARINADE 2 lbs Veal Cubes 1 ½ cups plain yogurt 1 tbsp crushed garlic 1 tbsp crushed ginger 1/4 cup chopped coriander, divided 1 tsp salt CURRY 2 tbsp oil (any cooking oil) 1 medium onion, finely chopped 1 tbsp crushed garlic 1 tbsp crushed ginger 2 tsp red chilli powder 1 tsp ground cumin 1 tsp ground coriander 1 ½ tsp turmeric 1 ½ tsp salt 1 small tomato, diced 4 medium potatoes, cut into 2 inch cubes 3/4 cup crushed tomatoes 1 cup fresh spinach, chopped

In a blender or hand blender, mix all the ingredients for the marinade together, leaving the veal aside. Once everything is well blended, pour the marinade over the veal in a large bowl, cover and set aside.

Chop onions, potatoes, and tomatoes.

In a stock pot, add oil and sauté onions. Let onions cook for 2-4 minutes, until they get soft and translucent. Add in garlic, ginger, and all the spices and mix well. Allow spices to toast a little. Add in tomatoes and mix well. The juice from the tomatoes will help the dry spices come off from the bottom of the pot.

Once tomatoes start to break down, add in the crushed tomatoes and mix well.

Add in the marinated veal and incorporate everything together.

Allow mixture to simmer until veal is tender.

Add in potatoes and spinach and mix well. Allow the potatoes cook until tender.

Once both the veal and potatoes are tender garnish the veal curry with remaining fresh chopped coriander.

Serve with basmati rice and yogurt!
