SPOTLIGHT

John Walsh Account Executive Alberta Region I have been with Sysco Calgary for 21 years and worked with many associates and customers since I began in November of 1999. (Yikes…where has the time gone!) For 14 years I’ve worked with local and national customers, and for 7 years was in the transportation department managing routing and distribution. The experience of having worked on both sides of the business is really of great value when trying to find service solutions that are effective for both our customers, and Sysco. I started off in the restaurant business as a teen, and then in the bread business for 20 years before coming to Sysco. I am currently the Account Executive managing Alberta Health Services for the SAB locations. As with all positions, there’s been some good challenges here through the pandemic. I am the proud father of 5 adult children and “papa” to two grandsons. I am also a deacon in the Catholic church when I was honoured to preside at my daughter’s wedding and baptize my grandsons. 2:40 pm

March is Nutrition Month! Every year Dietitians of Canada leads a month-long campaign celebrating nutrition, health and the important role dietitians play in supporting healthy living for all Canadians. This year’s Nutrition Month theme emphasizes that there is no ‘one-size-fits-all’

approach to healthy eating and will explore how culture, food traditions, personal circumstances and nutritional needs all contribute to what healthy looks like for you. Leading Sysco Canada’s Nutrition Month campaign is our Nutrition Services Team– consisting of registered dietitians and culinary experts. Our Nutrition Services Team offers insight on trends, research, and best practices for nutrition in foodservice.

Ingredients: 1 5/8 Kg 50 mL 10 mL 5 mL 850 g 400 g 83 mL 10 mL 10 mL 30 mL 50 mL 10 mL 5 mL

Preparation Steps: Salmon, Pieces Raw (SUPC 0328126)

Oil, Olive Salt, Kosher Pepper, Black Ground Cream Cheese Yogurt, Greek Plain Shallots, Fresh Chopped Garlic Powder Onion Powder Seeds, Poppy Seeds, Sesame Salt, Kosher Pepper, Black Ground

Preheat oven to 385°F/195°C. Place Salmon on parchment lined baking sheet. Drizzle with Olive Oil and season with Salt and Pepper (Cook to an internal temperature of 158F/70C held for at least 15 seconds.) In a mixing bowl, combine Cream Cheese, Yogurt, Shallots, Garlic Powder, Onion Powder, Peppy Seeds and Sesame Seeds. Flake fish with fork and stir into Cream Cheese mixture. Season with Salt and Pepper. Mix well. CCP-Maintain <40F/4C

Preheat oven to 325°F (160°C). Place 50 omelettes side by side in bottom of 9” x 12” greased pans. Heat oil in a skillet. Sauté onions & green pepper until soft. Add in tomato sauce, garlic powder & Italian seasoning and mix well. Heat for 2-3 mins & reduce to simmer. Spread sauce mixture over omelettes. Sprinkle mozzarella cheese over mixture. Cover pan loosely with foil. Bake at 325°F (160°C) for approximately 15 mins until cheese is melted and omelettes reach internal temperature of 165°F (74°C).
