Mixed Berry Bread Pudding Ingredients: 6 1/4 L 1 3/4 L 4 1/8 L 1 2/3 L 166 ml 1 L 20 ml 40 ml 20 ml 10 ml

whole wheat bread, diced mixed berries, frozen milk, 2% egg, liquid whole unsalted butter, melted brown sugar vanilla extract cinnamon, ground nutmeg, ground salt

Preparation: 1. Preheat oven to 350F/180C. Lightly great a 9”x12” pan (or half hotel pan) with pan release spray. 2. Mix cubed bread with mixed berries and distribute evenly in bottom of pan. 3. Whisk together milk, liquid whole eggs, melted butter, brown sugar, vanilla, cinnamon, nutmeg and salt in a large bowl. 4. Pour the egg mixture evenly over the bread mixture in the baking pan, ensuring all bread is well coated. Let mixture sit for about 15 minutes to ensure egg mixture is well absorbed. 5. Bake at 350F/180C for approximately 50 to 55 minutes or until set in the middle. 6. Let cool. Divide into 3”x3” pieces for serving. MARCH 2022 17

Chick Pea & Cauliflower Curry Serving Size: 250 ml Yield: 50

Ingredients: 7 1/2 L 80 ml 800 ml 800 ml 90 ml 90 ml 144 ml 4 3/4 L 1 ml 8 ml 2 2/3 L 3 1/2 L 2 L 90 ml 250 ml

basmati rice, prepared canola oil white onions, diced red peppers, diced garlic, minced ginger, crushed red curry paste cauliflower, chopped salt black pepper, ground chick peas, drained & rinsed vegetable soup coconut milk lemon juice cilantro

Preparation: 1. Heat Oil in a large rondeau over medium heat. Cook onions, peppers, garlic and ginger for 3-5 minutes or until slightly softened. 2. Stir in Curry Paste and cook additional minute. 3. Stir in Cauliflower, Chickpeas and Salt & Pepper. Stir well and cook 5 minutes until all is well coated and fragrant. 4. Stir in Soup & Coconut Milk; bring to a simmer, stirring often. Simmer 20 5. minutes until mixture is thickened. Stir in Lemon Juice. 6. Serve with 150 ml of Rice and top with 100 ml of Curry Mixture. Garnish with Cilantro.ml of Curry Mixture.
