Care communities may also create their own high fibre recipes served in specified portions⁵ or consider the use of high fibre commercial products that can be spread on toast, mixed into cereal, or eaten on their own⁵. High fibre beverages (i.e. prune juice, commercial fibre drinks) are also ideal as they provide additional fibre and fluids.

Mediterranean Frittata Ingredients:

2 cups liquid whole egg* 2 cups milk 300 g hash brown potatoes 150 g black olives, chopped 150 g green peppers, diced 150 g red peppers, diced 130 g shredded cheese 1 tsp garlic granules ¼ tsp salt ¼ tsp ground black pepper *Option to use thawed Scrambled Egg Mix instead of liquid egg, milk and salt.
1. In a large bowl, mix together potatoes, green and red peppers and olives. 2. Blend in liquid egg, milk, garlic, salt and pepper. Pour egg mixture into baking dish and sprinkle with cheese. 3. Bake at 350°F for 45–50 mins or until the frittata reaches an internal temperature of 165°F (74°C). 4. Cut into squares and enjoy.
Make it Western by replacing the olives with diced cooked ham. For a bit of Southwestern heat, add some chopped jalepeño.

Fish Cakes Serving Size: 125 ml Yield: 50
Creamy Pesto Ingredients: Chicken Penne 2 5/8 kg Atlantic cod, frozen (cooked) 300 ml 100 ml 50 ml 300 g 5 ml 1 L 150 ml
mayonnaise, bulk whole liquid egg lime juice celery, minced salt bread crumbs, plain olive oil
Preparation: 1. Cook cod day before and remove skin. Blend mayonnaise, egg and lime juice in a large mixing bowl. Flake cod into small pieces and add to bowl. Mix in celergy and salt. 2. Pour bread crumbs on a sheet of waxed paper. 3. Form cod mixture into 60g patties. Gently place each patty in brrread crumbs and using a pancake spatula, turn to coat evenly. Heat oil in griddle, over medium heat. Place 4 fish cakes on griddle and cook until crumbs are golden brown, about 5 minutes per side; turn carefully.

Outlook WEST COAST Temps will remain warm to hot from the coastal regions inland and will reach the 90s in the San Joaquin Valley. Cooler temps will return by the weekend to a more normal trend.
MEXICO Hot and windy conditions are expected in the majority of Mexico. Strong winds will be followed by thunder and lightning storms in the eastern states bordering the Gulf of Mexico.
EAST COAST Temps are expected to be near normal with above normal precipitation.
