ml margarine
ml all purpose flour
ml black pepper, ground
ml dry vegetable base
L water
ml worcestershire sauce
ml croutons, plain
Preparation:
In a saucepan over medium heat, melt margarine and saute onions until tender.
Add flour and pepper. Cook for 10 minutes.
Combine water and base to make broth. Add worcestershire sauce and bring to a boil. Reduce heat and simmer for 30 minutes to internal temperature of 165F/74C.
To serve, ladel soup over 10 ml of croutons.

For an elegant holiday meal, salmon and shrimp are a winning combination that will be sure to delight everyone.
Grilled Sweet Salmon & Shrimp Tempura
(Serves 25 portions)
Ingredients
25 each Pacific Salmon Loins, 114 g, frozen 1 x 10 lb 3 oz (SF04845), 4 oz (SF04846) 10 ml Lemon pepper seasoning 8 ml Garlic powder 250 ml Soya sauce, reduced sodium 330 ml Brown sugar, lightly packed 250 ml Water, tap 50 each Tempura Shrimp, raw, 21 25 ct 5 x 2 lb (SH02467) 60 ml Canola oil
Directions
• Place the thawed salmon loins in a pan and season with lemon pepper.
• Stir together soya sauce, brown sugar and water. Pour over the salmon loins, coating both sides. Marinate in the refrigerator for at least 2 hours.
• Remove salmon from the marinade. Place remaining marinade in stock pot and bring to a boil; reduce heat and simmer for 5 minutes.
• Cook tempura shrimp according to package directions on a lined baking sheet.
• While the shrimp are baking, heat oil on grill top over medium heat. Place salmon loins on the hot grill and cook for 3 5 minutes per side or until the salmon flakes easily with a fork.
• Transfer to a pan and cover with heated marinade.
• Serve grilled salmon loin with 2 pieces of shrimp tempura along with your choice of sides and dipping sauce.
