A MATTER OF CREATIVITY Creativity bears fruit. That may sound simple enough, but the challenges that the food service industry and the community at large have had to face this year have been so disruptive that finding solutions is far from easy.

In just two months, more than 20 years of growth have been affected by COVID-19, and the sector as we know it will no doubt be changed forever. The food service industry, which had the wind in its sails, now looks like it will take several years to recover. That said, the obstacles of the past year have highlighted the indispensable nature of creativity in business. That creativity has emerged in several forms—in the kitchen, in sharing initiatives, and in team spirit, simplicity and responsibility. Whatever the initiative, the objective remains the same: to innovate while demonstrating a great capacity to adapt. And it’s with great pride that we look back on the road we’ve traveled, the solutions we’ve found and the resilience that’s been shown by all. Our teams are more ready now than ever to go the extra mile to drive the industry forward.

One thing’s for sure: the uncertainty surrounding the severity and duration of the effects of this crisis is one of the greatest challenges facing the food service industry today. Solidifying business partnerships, fostering team spirit and demonstrating creativity is more necessary now than ever. Suzanne Aubry, Corporate Vice-President of Sales, Food Service, shares her vision of what the future has in store.

As Corporate Vice-President of Sales, what are your priorities? The important thing in a sales department is to identify opportunities, capitalize on them, and then involve all of the departments that can help provide a solution. Sometimes the solution may be to dig deeper together, it then becomes our job to create other opportunities. My goal is to ensure that when a customer, an independent owner, a chain or a distributor thinks about creating a recipe featuring juice, they think of us.

Interview
Is Lassonde still the reference in the industry? I really think so, but we have to do all that we can to make sure that we stay top of mind. Before the crisis, we attended more than 140 sales shows a year across Canada. It was a unique opportunity to see people from all over the country, from Rimouski to Victoria. We had a gathering point that no longer exists, and that is pushing us to find new ways to connect.
After 20 years in the industry, how does Lassonde Food Service stand out? We’re very close to our customers. That makes it easier to target the various industry needs. Despite the size of our company, we can adjust quickly. We have a unique culture that fosters our team's entrepreneurial spirit. And that's special.

What are the challenges you have to juggle on a daily basis? Are there specific issues related to food service? It can be difficult to connect with our clients on a daily basis. Restaurants and hospitals, for instance, cannot let us visit our buyers. Because we don't deliver to them directly, we have to find creative ways to connect with our partners. That’s why we’ve developed recipes, sales brochures have been replaced with videos, distributor sales training, communication tools for distributors, virtual content for our new reality and more. Human relationships, even with our customers, are now virtual. It’s a new business relationship that will improve over time, and that’s a good thing. COVID has only accelerated this transition.

Can you give us an example of how Lassonde uses creativity in its sales department?
What would you like restaurant owners to know about the sales department at Lassonde?
The key to our success has always been the team spirit that allows us to find creative solutions. Whether it's with the ordering department, production, logistics, marketing, or the revenue management department, we’re always in solution mode. The most successful people are those who bring others on board and rally them around a common goal. We’re all about seizing opportunities and capitalizing on them together.
That we’re thinking about them and the industry, which is in a state of distress. A lot of landmarks and institutions are closing, and that breaks my heart. We have to find solutions together. The ones who make it through this will be those who succeed in reinventing themselves. I don’t want our customers to forget us. Yes, we have bottled apple juice, but we also have a sales team ready to work on other solutions to help them get through these trying times.

Érick Plante has worked at Lassonde for more than two years as the Senior Director of North American Logistics and, during this time, he has had the chance to showcase his creativity on several occasions. For him, it's all about team spirit and the ability to adapt, solve problems in real time and do everything possible to meet customer expectations. He talked to us about the challenges his team faces and his desire to constantly improve.

Ready to Go Logistics
What does a typical day in the logistics department at Lassonde look like? The logistics team is responsible for retrieving customer orders from our systems and then grouping them according to the product specifications and orders. The team also makes sure to select the right carriers to ensure that deliveries are executed perfectly to meet the requirements of each of our clients.
What are your priorities as the director of logistics? My priority is my team. Without my people, I'm not much at all. Each team member is assigned specific delivery regions and carriers across Canada. They are familiar with the particularities of each of our clients and carriers, in addition to ensuring that the merchandise is delivered according to our clients' expectations. I have to make sure that they work well together, that they help each other out and that they have the right tools and the right carriers to ship the deliveries.

My second responsibility is to manage our vast network of business partners. They need to have a clear understanding of our expectations when it comes to the performance and quality of each of our deliveries.
What does creativity in business mean to you? To be creative, we need to know our distribution network well. We need to have a good understanding of our geography, where our various shipping points are located, who our customers are and what the particularities of each of our carriers are. We also need to have access to the necessary data to be able to quickly identify where there’s room for improvement. The team is always in optimization mode.

Do you have an example of how Lassonde demonstrates creativity in the management of its logistics?
What are the challenges that you have to juggle on a daily basis? Are there any issues specific to food service?
We make it special! We have refrigerated trailers with adjustable floors between Montreal and Toronto, and that allows us to double the loading capacity. We’re very agile when it comes to moving inventory between our plants, and, because of that, we can effectively minimize supply shortages.
You never know what to expect from one day to the next. In the morning when we arrive, we have to be ready to put out fires. If a snowstorm hits, chances are it’s going to be an intense day for us! We look at the weather forecast and, when they’re calling for snow or other tricky weather, we know it won't be easy. The team is always on guard and ready to react quickly. Our order levels are constantly fluctuating and we have to stay on top of everything at all times.

What are the most little known What is the one thing you’d like restaurant owners to know issues in logistics? about logistics at Lassonde? We're in pure operation mode. In the morning, as soon as we arrive, we know that e-mails and calls are going to be pouring in. There are a lot of things we can't control: traffic jams, strikes, customer delays... all of this has an impact on my team's work. A lot of things can change during the day, and that forces us to be in optimization mode at all times and to adapt to changes as they arise.
How do you see the future of food service logistics?
We're here to serve you and to carry out a good delivery operation. There are days in the Montreal area when we can deliver over three million pounds of juice to our customers. Divided by 40,000 pounds per truck, that’s a delivery every 20 minutes for the Greater Montreal area alone. The whole thing is an incredible choreography. It sounds simple, but there’s a lot of logistics going on behind the scenes!
I think the last few months have pushed us to be even better than we were. They say that a smooth sea never made a skilled sailor. We’ve developed new reflexes and solidified points that needed to be improved. The whole logistics department has grown and the customers now benefit from an improved service.
