Celiac Disease According to the National Institutes of Health, celiac disease affects as many as 1 percent of the U .S. p opulation. The disease occurs when t he body ’s natural defense system reac ts to glut e n b y at t a c k i ng t he l i n i ng of t he sma ll inte st ine. W it hout a hea lt hy i nt e s t i n a l l i n i n g , t h e b o d y c a n n o t absorb the nu nutrients it needs. “Having a federal definition of ‘gluten-free’ is critically important� “Some people don’t get immediate symptoms, but when they do, they are typically gastrointestinal-related, such as abdominal pain, bloating, and diarrhea,� says Luccioli. “In infants, there may be a lot of vomiting, and they don’t grow and thrive.� And some people do not have any symptoms at all, adds Luccioli, but still may have intestinal damage and risk for longterm complications. It is important for individuals with celiac disease, who may vary in their sensitivity to gluten, to discuss their dietary needs with their health care professional. Grocery shopping is challenging for people with this disease, says Andrea Levario, J.D., executive director of the American Celiac Disease Alliance. “When they find a product labeled ‘gluten-free,’ they don’t necessarily know what that means because today there is no federal standard for the use of this term.� Having a federal definition of “gluten-free� is critically important, says Levario. “If we have one national standard, the individual will know that all products labeled ‘gluten-free’ will have no more than a minimal amount of gluten.�

Is Gluten-Free for Me? “Eating gluten-free is not meant to be a diet craze,� says Rhonda Kane, a registered dietitian and consumer safety officer at FDA. “It’s a medical necessity for those who have celiac disease.� “There are no nutritional advantages for a person not sensitive to gluten to be on a gluten-free diet,� she adds. “Those who are not sensitive to gluten have more flexibility and can choose from a greater variety of foods to achieve a balanced diet.� Gluten-free is not synonymous with

low fat, low sugar, or low sodium. For people who must be on a glutenfree diet, Kane says it’s important to check the ingredients list and Nutrition Facts information on food labels to find the most nutritious options.

How Is FDA Proposing to Define ‘Gluten-Free’? In 2007, FDA proposed to allow manufacturers to label a food “glutenfree� if the food does not contain any of the following: 1. an ingredient that is any type of wheat, rye, barley, or crossbreeds of these grains 2. an ingredient derived from these grains and that has not been processed to remove gluten 3. an ingredient derived from these grains and that has been processed to remove gluten, if it results in the food containing 20 or more parts per million (ppm) gluten 4. 20 ppm or more gluten In the notice reopening the comment period, FDA states that it continues to believe the proposed definition of “gluten-free� is the correct one. FDA’s notice also describes current analytical methods that can reliably and consistently detect gluten at levels of 20 ppm or more in a variety of foods. The agency is interested in hearing from the public and industry. The public comment period on the proposed rule is reopened for 60 days. Make Your Own Gluten-free Pizza The following are recommended portion guidelines for one 10" Par-baked Gluten-free crust: - Sauce: 1.5 oz. - Cheese: 3 oz. - Gluten-free pepperoni: 1 oz. - Fresh mushrooms: 2 oz. - Green or red peppers: 3 oz. - Onions: 2.5 oz. - Black olives: 2 oz. - Tomatoes (fresh, thinly-sliced): 4 oz. Make sure when building your pizza that your ingredients (sauce, cheese, topping) are gluten-free. Please see our Sourcing Guide for Gluten-free Toppings.

Handling Instructions: • Wash hands with soap and water and wear gloves • Remove the desired number of crusts, along with their pans, from the case • Top with desired gluten-free ingredients • Bake until the cheese melts and crust turns golden-brown (oven times vary): - Deck: 375˚F to 400˚F for 5-7 min. - Convection: 425˚F for 7-10 min. - Impinger: 500˚F for 3-5 min. • Remove from oven, let cool for one minute, cut and serve!

Ham and Cheese Panini / Yield: One Panini INGREDIENTS

Rich’s® gluten-free, par-baked pizza crust teaspoons mustard ounces sliced ham ounces sliced Swiss cheese Pan spray Heavy-duty foil Cut Rich’s® gluten-free pizza crust in half. Spread each half with mustard and top one half with meat and cheese. Top with other half of gluten-free pizza crust. To avoid cross contamination, place sandwich between two pieces of heavy-duty foil that have been sprayed with pan release. Place on hot Panini grill and cook until cheese is melted and crust has golden grill marks. Serve hot. 1 2 2 2

roasted Vegetable PiZZa / Yield: One 10” pizza INGREDIENTS

1 Rich’s® gluten-free, par-baked pizza crust 2 tablespoons extra virgin olive oil 1/2 large red bell pepper, sliced 1/2 inch thick 1 /2 large yellow bell pepper, sliced 1/2 inch thick 1 small eggplant, sliced 1/3 inch thick 1 large Portobello mushroom cut in 1/2 inch thick slices 1 small zucchini, sliced 1/3 to 1/2 inch thick 6 garlic cloves, minced 2/3 cup shredded mozzarella cheese 1/4 cup freshly grated parmesan cheese Wash vegetables and pour 1 tablespoon of oil into roasting pan. Add garlic and vegetables, and toss to coat. Roast for about 20 minutes, stirring occasionally, until vegetables are tender (oven times may vary). Set aside to cool. Brush pizza crust with the remaining 1 tablespoon of oil. Sprinkle pizza crust with half of the mozzarella, and top with the roasted vegetables. Add the remaining mozzarella and parmesan cheese. Bake according to time and temperature for your oven type, until the cheese is melted and the crust is golden brown in color. Enjoy! Fruit Pizza / Yield: One 10" pizza INGREDIENTS

Cheese Pizza / Yield: One 10” pizza INGREDIENTS

1 Rich’s® gluten-free, par-baked pizza crust 3 /4 cup gluten-free tomato sauce 3 teaspoons extra-virgin olive oil 1 1/2 cups shredded mozzarella 1/2 ounce fresh parmigiano-reggiano, finely grated (about 2 tablespoons) 6 large fresh basil leaves, roughly torn Brush 1 teaspoon of olive oil over the crust. Cover with sauce, leaving 1/2-inch bare around the edges. Sprinkle with mozzarella and parmigiano-reggiano cheese. Drizzle the remaining 2 teaspoons of olive oil over the pizza. Bake according to time and temperature for your oven type, until the cheese is melted and the crust is golden brown in color. Remove from the oven, let cool for 2 minutes. Sprinkle with basil leaves, cut and enjoy!

FILLING

1 1/2 cups of gluten-free ricotta cheese 1 /2 cup of confectioners’ sugar 1/2 cup almonds, sliced and toasted 1 teaspoon almond extract TO P P I N G

1 1/2 cups of fresh mixed berries (strawberries, blueberries, raspberries, etc.) 1 /2 cup of gluten-free seedless raspberry jam, warmed Bake crust according to time and temperature for your oven type, until the crust is golden brown. Set aside to cool. Blend the ricotta cheese, powdered sugar, almonds and almond extract. Spread the mixture over the gluten-free dough, leaving 1/3 inch uncovered around the edges. Top the ricotta mixture with berries and drizzle the warm raspberry jam over the pie. Chill until ready to serve.

Pizza Margherita / Yield: One 10" pizza INGREDIENTS

1 Rich’s® gluten-free, par-baked pizza crust 3/4 cup gluten-free tomato sauce 1 teaspoon dried oregano 4 1/2 ounces fresh sliced mozzarella cheese 2 Roma tomatoes, sliced 1 tablespoon extra virgin olive oil 3 fresh basil leaves torn into small pieces Freshly ground black pepper Spread the tomato sauce over the dough, leaving 1/4 to 1/2 an inch bare at the edges. Arrange slices of cheese on top, and sprinkle with oregano. Top with slices of tomato, drizzle with oil and season with pepper. Bake according to time and temperature for your oven type, until the cheese is melted and the crust is golden brown in color. Remove from the oven and let cool for 2 minutes. Sprinkle with basil leaves, cut and enjoy!

Bananas Foster Pizza / Yield: One 10" pizza INGREDIENTS

1 Rich’s® gluten-free, par-baked pizza crust cup brown sugar cup butter, melted cup chopped pecans 2 cups Jell-O banana cream pudding (make ahead of time from box directions) 2 bananas, sliced 1/3 inch thick 1 cup gluten-free whipped topping Bake crust according to time and temperature for your oven type, until the crust is golden brown. Set aside to cool. Combine the brown sugar, butter, and pecans with the pre-made banana cream pudding. Fold in bananas, and spread evenly over crust. Top with whipped topping and garnish as desired. Chill until ready to serve. 2
