• Preheat deep-fryer to 350°F. • In a large bowl combine chicken, both cheeses, diced red pepper, diced jalapeno, cumin, salt and pepper. • Roll out pie crusts until thin and lightly brush edges of the crust with water. Fill center of the crust with chicken mixture, fold dough over the filling, pressing edges with a fork to seal. Repeat with remaining crusts. • Place empanadas in deep-fryer for 4 to 5 minutes until golden brown. Serve with warm queso dip. *this recipe can also be made with smaller 3” crust rounds to make bite-size empanadas! Makes 6 servings

Preparation Notes:

• Cut kielbasas in half, and cut pastry into strips. Roll each piece of kielbasa in puff pastry and place on baking sheet. • Beat egg in a small dish and brush generously over pastry. Bake in a 400°F oven until pastry is golden brown and puffed, about 20 minutes. Serve with mustard and fresh fried frips.

• Mix baking mix with cayenne pepper and enough water to make into moist biscuit dough (about 2/3 cup). • Turn out onto a floured surface and knead 3 or 4 times. Divide ball into 6 pieces. Roll each piece into a ball and mold around the back of a muffin cup to make a bowl shape. Bake biscuits for 10 to 12 minutes in a 450°F oven until lightly browned and allow to cool slightly. • Spoon hot chili into biscuit bowls. Garnish with cheese, sour cream, green onion and corn chips.
