large baking potatoes, peeled eggs cups all-purpose flour teaspoon nutmeg, ground tablespoon salt teaspoon pepper cups (12 ounces) Parmesan Cheese, grated

Put potatoes into saucepan, cover with water, heat to boiling, cook 15 to 18 minutes until potatoes can be pierced with a wooden skewer. Drain; cool, and press through a ricer into a bowl. Add eggs, flour, nutmeg, salt, pepper and cheese and mix well. Roll dough into ½ inch logs using flour to prevent sticking. Cut into 1-inch pieces. Crease with a fork to leave an impression across the center of each piece to hold sauce. Bring pot of water to a boil and add the gnocchi; boil until gnocchi float to top, about 2 minutes. Remove and drain well. Keep warm.

Sauce: 6 tablespoons butter 3 tablespoons garlic, chopped 1 ½ pounds wild mushrooms,chopped 1 ½ cups Madeira 3 Tablespoons rosemary, chopped 4 ½ cups heavy cream 18 ounces Blue Cheese Over medium heat, melt butter in large sauté pan and add garlic and mushrooms. Cook 5 to 8 minutes until soft. Add Madeira and cook about 2 minutes. Add rosemary and cream and simmer for another two minutes. Add ¾ of the Blue Cheese. Add cooked gnocchi to sauce. Serve and garnish with remaining blue cheese and sprig of rosemary.

Cover the crust completely and slack in the refrigerator between 32° and 36°F prior to use. Cover the ham, Italian sausage, beef crumble, pepperoni, bacon, and pork topping separately and slack in the refrigerator between 32° and 36°F prior to use. Dice the thawed bacon; cover completely and hold refrigerated at or below 40°F. Prepare Meaty Pizza Sauce. Combine the pizza sauce with the thawed breakfast sausage topping and stir to blend; cover completely. Hold refrigerated at or below 40°F. To assemble each pizza: Brush the outer edge of 1 thawed crust with 1 teaspoon oil. Spread 30 ounces of meaty pizza sauce evenly over the pizza crust. Top evenly with 36 quartered ham slices, 24 slices of Italian sausage, 2 ounces of beef crumble, 3 ounces of bacon, 3 ounces of Italian cheese blend, 28 slices of pepperoni, and 1 ounce of additional Italian cheese blend. Bake on a parchment-lined sheet pan or mesh pizza screen in a 375°F preheated convection oven for 10 to 12 minutes or until golden and bubbly. Remove from the oven and cut into 8 slices. Makes one 14” pizza.

Deep fry chicken at 350°F for 3 to 5 minutes or until internal temperature reaches 165°F for 15 seconds. Keep warm above 140°F.

pork is juicy and tender, perfect for any holiday event with a carving station, or slice and serve in a chafing dish buffet style. Serve with a variety of sauces, gravies or fruit chutney to compliment the rich flavor and texture of this meat. Extremely versatile and flavorful, your next catering event is sure to be a success!

Cooking Instructions: *Thaw meat completely, then allow it to sit at room temperature for

45 minutes to take the chill off. Preheat a convention oven to 300°F or a conventional oven to 325°F. Season the meat with favorite seasoning and place in the oven for approx. 3 hours or until an internal temperature of 130°F is reached. (The temperature of the meat will rise about 15 more degrees while it is resting.) Remove from oven and let the meat rest for 15-20 minutes, then carve.

Carving Instructions:

Due to muscle configuration, the grain of the roast runs in multiple directions. Begin to carve parallel to the bone for maximum yield. It is important to carve across the meat grain. As the meat near the bone is reached, turn the knife horizontally, as the bone has a 90° angle. Roast may be turned ¼ turn to remove meat slices from either side of the bone. Chef’s Tip: The bottom of the roast can be placed on a foil-wrapped plate cover for hands-free carving.

Fettuccine alla Carbonara 6 slices Arrezzio Pancetta, cut in long thin strips 2 tbsp. minced shallots 1/2 cup dry white wine

8 oz. fettuccini

2 tbsp. pesto sauce

2 slices Provolone cheese

1/2 cup green peas

Italian bread

1/3 cup grated Parmesan cheese

4 slices Arrezzio Sandwich Pepperoni

1 large piece roasted red pepper, drained

1 cup heavy cream Sauté pancetta until crisp. Remove and keep warm; reserve cooking juices in pan. Cook and drain pasta. In the reserved juices, sauté shallots; add wine and reduce until almost evaporated. Stir in heavy cream and reduce; add peas and cook until tender. Pour sauce over pasta and toss. Add pancetta and Parmesan cheese. Season to taste. Makes 3-4 servings.

Prosciutto with Melon 6 thin slices Arrezzio Prosciutto

2 ripe kiwis, peeled and thinly sliced (optional)

1 ripe cantaloupe melon

Lime wedges

Cut cantaloupe into thin slices and trim rind. (You will have some melon left over.) Slice kiwi, if using. Arrange melon, prosciutto and kiwi decoratively on platter. Garnish with lime wedges, if desired.

4 slices Arrezzio Genoa Salami

1/2 cup lettuce spring mix Extra virgin olive oil

Slice bread diagonally. Spread thin layer of pesto on one side of each bread slice. On one slice of bread, top pesto layer with pepperoni, salami, cheese, red pepper and spring mix. Top with remaining bread slice, pesto side down. Brush outside of bread slices with olive oil and grill. Makes 1 sandwich.
