Boston Pea Sprout Citrus Salad • Combine juice from the lemon and orange, olive oil and chopped basil to make the citrus vinaigrette dressing. • Slice shallot and deep fry until crispy. • Toss carrots, pecans and sprouts in enough vinaigrette to coat. • Assemble salad by plating lettuce, top with sprout mixture, beets, grapefruit sections, shredded cheese and fried shallots. Drizzle salad with remaining vinaigrette and serve.

• Combine vegetable base and champagne, then marinate chicken breast in mixture overnight. Pat dry and cook to desired doneness. • Cook asparagus until crisp tender, tossing with liquid butter before serving with heated potatoes and rolls.


Prosciutto Mango Panini • Brush one side of one slice of flat bread with olive oil. • Place oil side down and top one half of the bread with 1⁄2 oz. of the cheese, arugula, prosciutto, mango slices and remaining cheese. • Fold in half and grill in sandwich press or on a flat top. • Chop garlic and parsley. Combine with remaining olive oil and cook over medium heat for a few minutes to infuse the oil. • Cook french fries until golden brown, drain. Toss cooked fries in olive oil mixture until coated. Add salt and pepper and serve with panini.
