Already an industry favorite, Arcadian Harvest Classic® combines five varieties to create a striking mix of textures and colors, providing the perfect starring ingredient for any salad. Classic effectively replaces and upstages spring mix with its superior shelf life and more portions per pound.

Mann’s selected a rich, dark green variety and blended it with a contrasting lighter color leaf to produce the first new all-green blend in years. When you’re looking for year round consistent green color, with tender leaves and just the right amount of crunch, this unique and minimally processed blend is for you. Emerald easily replaces chopped romaine, offering an upscale presentation for a lower cost per serving.

Breaking with conventional thinking that salads should be more green than red, we crafted this “heirloom style” blend around our newest petite leaf, red butter variety. Broccolini brand baby broccoli is the beautiful fresh vegetable whose elegant appearance and delicate sweet flavor has inspired chefs across the country to create exciting new signature items. Grilled Chicken with Broccolini

4 SERVINGS

Ingredients ⁄ lb. ⁄ cup 4 3⁄4 lb. 2 3⁄4 cup 2 oz. 34 14

Broccolini (1½ bunches) Sweet-tart dressing (see directions below) Boned and skinned chicken half-breasts (1 lb.) Mixed lettuces (use part frisée if available) Pears (use red-skinned if available), cored and sliced Pecans or walnut halves, toasted, glazed Goat cheese, crumbled (1/2 cup)

Procedure Drop Broccolini into boiling water. After 3 minutes, drain and rinse with cold water to stop additional cooking. Toss 1/4 cup dressing with chicken breasts. Marinate 1 or 2 hours. Grill or broil chicken, basting with dressing. Slice crosswise. Line 4 plates with lettuces and arrange Broccolini, pear and chicken on top. Sprinkle with nuts and goat cheese. Drizzle with dressing. Sweet-Tart Dressing: Crush 1/2 teaspoon each majoram, basil, rosemary and ground black pepper in mortar to release flavors. Put seasonings in a container; add 1/2 cup olive oil, 1/3 cup red wine vinegar and 3 tablespoons sugar. Shake.

Broccolini with Seasoned Butter ®

Ingredients 1 lb. 1⁄4 cup 1⁄2 tsp. 1⁄2 tsp.

Broccolini (2 bunches) Butter Fresh ground black pepper Kosher salt

Procedure Blanch the Broccolini in boiling water to set color for about 15 seconds. Put in ice water to cool. Drain and pat dry. Meanwhile, in small sauté pan, melt butter over medium heat. Add salt and pepper. Add Broccolini to sauté pan and sauté until heated through. Or, drizzle seasoned butter over hot Broccolini and serve.


Filet Mignon & Broccolini with Balsamic Mushroom Sauce ®

4 SERVINGS

Ingredients 1 lb. 1⁄2 lb. 5 tbsp. 1⁄2 cup 1 1⁄2 cups 1 tsp. 1 tsp. 2 tbsp. 1⁄2 tsp. 4

Broccolini (2 bunches) Shiitake mushrooms sliced (use half crimini or white mushrooms if desired) Butter or margarine Dry white wine Beef broth Chopped fresh thyme Balsamic vinegar Flour Medium ground black pepper Filet mignon steaks (6 to 7 oz.)

Procedure For sauce, sauté mushrooms over high heat in 2 tablespoons of butter until limp. Add wine to pan and scrape up any pan drippings Add broth, thyme, vinegar, and pepper. Bring to boil. Melt remaining 3 tablespoons butter and blend with flour. Stir flour/butter mixture into sauce and cook, stirring until thickened. Keep warm. Grill or broil steaks as desired. Drop Broccolini into saucepan of boiling water for 3 minutes then remove and drain. Serve Broccolini and steak with sauce, accompanying with potatoes au gratin.


Prosciutto Broccolini

4 SERVINGS

Ingredients 8 oz. 1â „2 cup 1 tbsp. 3 oz.

Broccolini (1 bunch) Sour cream Honey mustard Prosciutto*, thinly sliced

Procedure In a small bowl, mix sour cream and honey mustard until well blended. Blanch Broccolini, pat dry with paper towels. Cut prosciutto slices lengthwise into 1-inch strips. Tightly wrap 1 or 2 proscuitto strips diagonally around each Broccolini stalk, leaving about 1-inch of stalk showing at the bottom. Arrange on a plater with dipping sauce. (This can be covered with plastic wrap and refrigerated up to 24 hours in advance.) Serve chilled or at room temperature. * Black forest ham or turkey may be substituted.

Broccolini & Snap Pea Citrus Salad ®

Broccolini (4 bunches) Stringless Sugar Snap® Peas Red bell pepper, julienne cut Frisee Scallions, sliced

Citrus Vinaigrette - Yield: 2 1⁄2 Quarts 4 ea. Oranges, zest & juice 3 ea. Lemon, zest & juice 2 ea. Limes, zest & juice 1 tbsp. Minced garlic 1⁄2 tbsp. 1⁄4 bunch Chopped cilantro Minced ginger 1⁄4 cup Toasted sesame seeds 2 cups Seasoned rice wine vinegar 1 tsp. Sugar 6 cups Cottonseed oil or light flavored Kosher salt & cracked vegetable oil black pepper to taste

Procedure For vinaigrette, combine all ingredients in a medium bowl and adjust seasoning. Refrigerate for at least 2 hours before use to let flavors marry. Slice Broccolini stalks into two inch pieces. Drop Broccolini and Stringless Sugar Snap Peas into boiling water for 2 minutes until bright green. Remove and immediately place in ice water bath to cease cooking. Drain. Pat dry with paper towel and place in large bowl. Add red bell pepper and frisee. Refrigerate. Broccolini with Vanilla Butter Sauce ®

Ingredients 8 oz. 2 oz. 3 1⁄4 cup 3 tbsp. 1 qt. 4 oz.

Broccolini (1 bunch) Olive oil Shallots julienned Brown sugar Vanilla bean paste Heavy cream Butter Salt and pepper to taste

Procedure Blanch* Broccolini Heat sauce pot on medium; add olive oil. Add shallots when hot; sauté until lightly caramelized. Add brown sugar and vanilla paste; mix well. Add heavy cream; turn heat to low. Reduce by one third. Remove from heat; add butter a little at a time. Season to taste. Drizzle over Broccolini. *Instructions for blanching: Boil 2-6 cups of water in a large saucepan. Once at a boil, place Broccolini in the water for 1-2 minutes. Remove the Broccolini and strain in a colander. Rinse under cold water or immerse in ice water to stop from cooking further. Strain and pat dry with paper towels. Broccolini with Chili Flakes, Sultanas and Pine Nuts ®

Grilled Broccolini with Red Chili Vinaigrette ®

6 SERVINGS

Ingredients 1lb. Broccolini (2 bunches) ends trimmed As needed vegetable oil Red Chili Vinaigrette 1 cup Salad/vegetable oil 1⁄4 cup + 2 tbsp. Lime juice (fresh squeezed) 2 tbsp. Lemon juice (fresh squeezed) 2 tsp. Soy sauce 3 tbsp. Honey

As needed salt/ground pepper 11⁄2 cups Red chili vinaigrette (prepared cold, well mixed) 1 tbsp. ⁄ tsp. 1 tbsp. 1⁄4 cup 2 tbsp. 1⁄8 tsp. 2 tsp. 12

Chipotle chili puree Mexican oregano leaf Garlic, chopped fresh Cilantro, fresh Green onion, finely minced Ground black pepper Table Salt

Procedure After trimming the stalk ends of the Broccolini, remove rubber bands. Blanch the Broccolini for no more than 40 seconds. Allow to cool completely, then drain well and layer on paper lined tray. When completely dry, lightly brush each Broccolini stalks with vegetable oil. Place stalks on a very hot grill/char-broiler and very quickly mark 2 “sides” with the grids, being careful not to allow the Broccolini to overcook. After grilling, place on a clean, paper-lined sheet pan. Salt & pepper to taste. Cover and refrigerate to chill. In a small bowl, whisk vinaigrette ingredients. Refrigerate. To serve arrange Broccolini stalks on an appropriate service platter. Drizzle vinaigrette over Broccolini stalks evenly. Red chili vinaigrette may also be served on the side.


Linguine Broccolini

4 SERVINGS

Ingredients 1 lb. 1 1⁄2 3⁄4 cup 3 tbsp. 2 cups 1 1⁄2 cups 1 cup 2 1⁄2 cups 1 cup

Broccolini (2 bunches) cut into thirds Packages (9 oz. size) fresh linguine Vegetable oil Butter or margarine Flour Dry white wine Half-and-half Mini cherry tomatoes Fresh basil leaves (4 oz.) Coarsely grated Romano cheese

Procedure Blanch Broccolini for 3 minutes, drain. Rinse with cold water and set aside. Drop linguine into saucepan of boiling water. Return to boil and cook 1 minute. Drain and toss with a little vegetable oil. For sauce, melt butter. Whisk in flour and cook until bubbly. Whisk in wine and half-and-half and cook, stirring until thickened. This may be made ahead or use store bought Alfredo sauce. When ready to serve, heat sauce to a boil in large kettle. Add tomatoes and basil and cook 1 1/2 minutes or until limp. Add linguine and Broccolini and heat, stirring with large spoon until hot. Add cheese, heat through and season with salt and pepper to taste. Serve at once with additional cheese and/or ground black pepper on top.

Tempura Broccolini

4-6 SERVINGS

Ingredients 8 oz. 1⁄4 cup 3 tbs. 1 1 cup

Broccolini (1 bunch) Iced water Teriyaki sauce or soy sauce Egg Flour, sifted Lemon wedges Vegetable oil

Procedure Preheat 2 inches of oil to 375 degrees on a deep-fat thermometer. Preheat oven to 300 degrees. In a large bowl, mix together water, teriyaki sauce and egg. Add flour and mix lightly until batter just blended. (It’s okay if there are some lumps.) Working in small batches, dip Broccolini in batter and deep-fry until very lightly browned, about 30 seconds. Drain on paper towels. Keep warm in the oven while you fry the remaining Broccolin. Serve warm, with lemon wedges on the side.

Balsamic Broccolini

4-6 SERVINGS

Ingredients 1 lb. 2 cups 1 tbsp. 2 tbsp. 1⁄2 cup 1⁄2 cup 1 tsp. ea.

Broccolini (2 bunches) Canola oil Olive oil Chopped garlic Balsamic glaze Balsamic vinegar Cornstarch mixed with water

Procedure Bring vinegar to a boil and add corn starch, stir until thickened and refrigerate. In a large sauté pan, heat Canola Oil until hot. Place another sauté pan on a separate burner. Drop Broccolini into hot oil and quickly blanch for 30-40 seconds. Transfer Broccolini to other sauté pan & add Olive Oil, Chopped Garlic, Broccolini & Balsamic Glaze. Add Salt & Pepper to taste. Serve immediately!

Broccolini & Beef Samurai Sticks ÂŽ

6 SERVINGS

Ingredients 1 lb. Broccolini (2 bunches) 12 oz. Prime top sirloin 1â „4 cup Sesame seeds Salt & pepper Marinade 6 tbsp. Soy sauce 4 tbsp. Rice wine or sake 2 tbsp. Minced garlic 2 tsp. Dried chili flakes or hot chili paste 2 tbsp. Virgin olive oil

Procedure Mix marinade ingredients in bowl. Set aside. Thinly slice the top sirloin into 1/8 inch thin filets (to wrap around two - four stalks of Broccolini). Pound out to tenderize. Add top sirloin strips to marinade and refrigerate for 1 hour. Trim stalk ends of the Broccolini, and blanch in slightly salted water to set color for about 15 seconds. Do not overcook. Drop in ice water, cool completely, then drain well. Arrange in one layer on a tray lined with paper towels. Place four stalks of Broccolini together, flowering on opposite ends. Wrap stalks with top sirloin slices, leaving the floret ends exposed. Set aside. Continue until all are wrapped. Sprinkle with salt and pepper. Place on a medium hot grill/char-broiler and cook both sides until top sirloin is medium rare. Then place on cutting board and slice in half. Sprinkle with sesame seeds. Procedure per sandwich 1. Spread 1 tablespoon herb cheese evenly on each slice of challah bread. 2. Top 1 slice of challah bread with pulled pork, pickled sour cherry slaw, and top with second slice challah bread – press together. 3. Heat medium sauté pan or flattop grill to medium heat. 4. Place 1/2 tablespoon butter in pan, let melt and coat bottom of pan. 5. Place sandwich in pan and let sandwich brown on one side for 2 minutes. With a spatula, apply light pressure on sandwich. Remove from pan. 6. Add in the other 1/2 tablespoon of butter to pan, let melt. Repeat browning sandwich on the second side. 7. Remove from pan, serve sliced in half.

Procedure 3 quarts of pickled slaw 1. In a 1 gallon work bowl; combine champagne vinegar, salt, black pepper, garlic and cherry juice. Mix thoroughly to combine. 2. Add Mann’s Power Veggie Slaw, let sit in brine liquid for 2 hours. 3. After 2 hours, drain off excess liquid. Add in dry sour cherries. 4. Hold refrigerated for up to 24 hours.


Pineapple Pesto Chicken Wrap

Bacon Veggie Skillet

Procedure per skillet 1. Warm a 9-inch non-stick skillet (or cast-iron skillet) over medium-heat then add chili oil to coat the pan. 2. In a bowl whisk together eggs, water, and flour until smooth. 3. Add Mann’s Power Veggie Slaw, bacon and salt; toss until ingredients are combined. 4. Pour vegetable-egg mixture into skillet and spread out to fit skillet. Cook on one side for 5-6 minutes or until lightly golden brown. 5. Once skillet is golden brown on one side, use a rubber spatula to lightly pull away the contents of pan from the sides of the pan, flip contents and transfer pan to oven for 5-8 minutes or until eggs are firm set. 6. When finished cooking transfer to plate (if using a cast-iron skillet leave in pan for added visual). 7. Drizzle with spicy crema and sprinkle with green onion. Serving options:  

For a breakfast application serve topped with a fried egg in a cast iron skillet. For a side application, serve topped with a grilled protein (i.e. chicken, steak, shrimp, etc.)
