2021 Special Bull Buyers Guide
In This
22 An old timer once told me, “Never say whoa when you’re in a hole, because your efforts will affect you and those around you.” We, in agriculture, are essential to the people of the world. I do not want to take away the accolades and thanks to the doctors, nurses, and caregivers in these times, but food is essential for healing. Throughout this turmoil our company has run full bore; from empty sale barn auctions during the spring season to summer pastures, getting ready for an exciting fall season. our purpose has not changed… we need to feed the people! during my summer tours, I have seen fabulous crops and an abundance of forage, which will surely reduce input costs in the cow herd. An impending bumper crop will ease feed grain prices, although some Alberta areas have been pummeled with rain and hail. Lush pastures should put an extra measure of pounds at weaning which should add an extra premium into your Levi’s … providing you are using quality sires.
and most importantly how to prepare different cuts of beef for the family table and when you add the component of growing gardens again, families have found that they can get along quite well without drive-thrus. Yes, consumers are learning the values of beef for both nutritional and taste qualities. With the closure and now partial closure of restaurants, one would surmise that we have a glut of product, but there is no indication of that in the marketplace, which tells me that cow herd inventories are low. This scenario is not of one that happens over night as it takes years for inventories to grow. Thus, opportunities become readily available for those who choose to “Never say whoa.”
Although this editorial is designed for our commercial sector, I must touch on the purebred component of the industry. In less than five months, purebred producers will be having bull sales. As most of you know, in prime season there are sales every day and, on some days, there are as Early reports of strong markets for grassers and many as ten and market share is tight. With the cancelation stockers indicate that our markets require more cattle. of the fall show season, breeders must find alternative Packing plants are back to running near full capacity ways to promote their product and their program. No without any talk of overage boxed product and I have doubt most would like to use the electronic highway but yet to see any supermarkets using beef as a “lost remember that social media is momentary, therefore paper leader”; as we are in prime barbeque season with advertising is still the best avenue to attract the masses, limited cuts on the shelves. There is no doubt that Mr. purebred and commercial… it has worked through many or Mrs. Consumer is getting tired of pork and chicken generations of cattlemen. But it is not a once in a year and so is the household they cook for. phenomenon… you need to start now; because if you Although Covid has limited some sectors of business, are reading this don’t you think that your customers are butchers and abattoirs are swamped with backlogs of reading it also? Think of the old-timer and what he would up to and over a six-month wait time to slaughter an do! animal. Farm gate sales of beef has become common place Thanks to all the dedicated producers that contribute to and families are back to purchasing quarters and halves, make our industry great. We are essential to every mouth which had become limited in the past decade by the new in the world, except for our mouths in the national capital. generation. Social Distancing
kids developed symptoms of the most contagious disease the world has seen in nearly one hundred years.
It was springtime on the ranch, the purebred herd had pretty much finished calving and the pressure was off Shorty. The commercial cows had started calving a week or so ago and Shorty was charged with matching newborns with their mothers, treating and tagging them and recording the results of his labour in a notebook. This spring was like countless others for Shorty, cooler than some, but other than the weather similar to all the rest. As Shorty worked his way through the herd on horseback, it occurred to him that he might be the only one in the world that felt that way. Shorty had seen the news on TV, how could you have missed it? Every day he watched Trudeau stand in front of his house and hand money out like he was giving candy to kids at some parade. Trudeau tried to look like he was suitably concerned, but Shorty figured that he had lied about his reason for “self-isolating”. It just seemed too much of a coincidence that his wife tested positive right at the start of the pandemic, forcing him into staying at home with
Shorty finally figured out why Justin had abandoned a career in education, a career that allowed him to shape the minds of Canada’s next... well actors. He went into politics because he was no damn good as an actor. He did his level best to feign concern about the health of the country, when really, he was doing his best to get re-elected. So... Trudeau and his health advisors decided to shut the country down, scare the population and then throw money at the problem... not the disease problem, the problem that he and the public health advisors had created by stopping the economy. It seemed strange to Shorty that the very people that Trudeau was listening to, the doctors and researchers, depended on the Government of Canada for funding. Talk about a make work project, create panic, feed that panic for as long as you possibly can, then ask for money to solve the problem.
Biography: the kids for months. Funny enough, he nor his Shorty shook his head and sighed out loud. Dr. Colin Palmer is an Associate Professor of Theriogenology (Animal Reproduction) at the Western College of Veterinary Medicine. Originally from Nova Scotia, Dr. Palmer worked in mixed practices in Ontario and British Columbia and has owned/operated a practice in Saskatchewan. Dr. Palmer along with his wife Kim and children Lauren, Emily and Carter run a herd of purebred Red Angus cattle under the KC Cattle Co. name.
Often the most significant changes that occur during the span of one’s career in an industry often go largely unnoticed. It is as if we forget what it used to be like, or we simply accept the new normal as the way it has always been. The number of beef cow-calf herds, both commercial and purebred, that can boast that they have a herd health program has been steadily increasing. Because of this, many disease outbreaks that used to be common seem like they are rarely heard of compared to forty and fifty years ago. Still, not all herds have a program leaving us all at risk of purchasing a problem, or particularly for seedstock producers, selling animals that will move into at-risk herds where your animals may not realize their full potential. A blog posted in March 2020 on the Beef Cattle Research Council (BCRC) website entitled: The Cost Benefit of Using Vaccines in Beef Cattle reports on survey research which showed that in Western Canada 10 percent of producers do not vaccinate for infectious bovine rhinotracheitis (IBR) and bovine viral diarrhea virus (BVDV) both of which can result in respiratory disease and devastating losses due to abortion. Worse still is that BVDV may result in the birth of generally poor performing persistently BVDV-infected (PI) calves that continue to shed the virus within the herd. The proportion of beef producers with an appropriate vaccination program decreases in Eastern Canada with a third of Ontario

producers not vaccinating against BVDV and over one quarter of Atlantic Canadian producers not utilizing vaccines at all. Bovine respiratory disease which includes everything from coughing calves, to shipping fever, and pneumonia has been and still is the costliest disease affecting the cattle industry. If they survive, affected cattle are never quite right. Those that experience severe, longstanding illness are prone to other conditions affecting the rumen because of damage to the vagus nerve as it passes through the chest. The BCRC blog provides data from a study which showed that calves that experienced respiratory disease could weigh up to 36 pounds less than their healthy herd mates. Most of these losses will go unnoticed since only the poor performers are recognized while others appear normal or develop seemingly unrelated conditions later in life. For example, most poor doing calves that are mild to moderate, repeat bloaters likely had a bout of calfhood pneumonia. There is no way to cure those calves or to regain the performance lost due to respiratory disease. Prevention in the form of an effective vaccination program is the best way to go yet herd vaccination programs have tended to be undervalued in the cattle industry. Supported by difficulties in verifying that purchased calves have been properly vaccinated and an almost steady stream of evermore effective antimicrobial and anti-inflammatory

Keeping Up By Miranda Reiman
At the base of the Grand Tetons, mountains dramatically stretching up toward the blue Wyoming sky. Looking out across the Nebraska Sandhills, as the grass waves on for miles and miles. Seeing the sun set over my dad’s Minnesota cornfield in late October, the cool chill of fall and the smell of harvest in the air.
84 Some times and places just give me a feeling there is something really grand about this world. They have weight. They’re powerful. They are great.
Sometimes that feeling comes with people. If you’ve ever sat around after a funeral, recounting stories of selfless giving and the way a person’s servant leadership shaped a community, then you know what I mean. When I search my memory, these are the people who enter at pivotal moments: an inspiring teacher, a wise editor, a patient mentor or faithful friend who changed my life for the better. You probably have your own people who make you want to be more. They are great.
Kids come home with it scrawled on their spelling papers, “Great job!” The word is simple, and often thrown around causally. “Sounds great!” Or, “It would be great if you could help with this project.”
cattle business, the kind of producers others look up to and seek out for advice. I’ve asked about their goals and dreams and, in hindsight, when they’d felt like they’d “made it.”

Funny thing is, even at the twilight of their career, they have each given me their own version of a knowing chuckle and answer that no, they haven’t yet. They were just thankful for each day they had to keep improving. They live their lives as if being great is not a goal. It is a constant pursuit. I think that’s a worthy track, whether in life or applied to specific areas of business. “I just want to bring an average set of animals to town,” said no cattleman ever. (Or at least they’ve never said that to me). Selling “fancy” calves, reputation calves or those that top the market? That’s a mark of success, but often not the end all. Now that you’ve made your cow herd more uniform, better matched to your resources or producing calves that you’re sure fit the bill for the next in line, what’s next? I want you to be able to look at your cattle lined up at the feed bunk and get that feeling. They are great. Next time in Black Ink®, I’ll talk about building partnerships.
But if you peel it back to its basic definition of “markedly superior in character or quality” it really carries a lot of depth. Through the years, I’ve been lucky to interview legends in the

It has tested the patience of the people, relationships both in business and personally, marriages and the education of our youth. Daily the media puts forth stories of doom, gloom, and failure, frightening the masses. North American leaders with their “left-handed” pens are issuing billions of dollars with no idea where the money is coming from or how it will be replaced… spending it like lottery winners. The press, in all forms of media, have glorified rioting, civil unrest and illegal activities by public officials. Despite the daily news, agriculture and food processing sectors have moved forward and lead the nation in sales and growth, double that of the manufacturing sector. No doubt, being classified as an essential service, has been a positive because even our politicians and bureaucrats must eat. Except for a hiccup or two at processing plants, production of the meat industry is right on track. With restaurant restrictions in place, the consumer’s change in eating habits and meal planning has kept consumption on pace with that of a year ago, as a matter of fact, better. We must take our hats off to McDonald’s Canada… McDonald’s is the largest restaurant in the world. A founding member of the Canadian Roundtable Sustainable Beef, they are a strong supporter in developing Canadian standards for beef sustainability. In July 2018, McDonald’s Canada became the first company in Canada to serve Canadian Beef from certified farms and ranches, beginning with its Angus line-up. Since, they have sold millions and millions of Angus burgers… a true commitment to the Canadian livestock industry. Thanks McDonald’s!
The beef cattle market has been solid and steady. The fall run of female sales and dispersals were strong… in some cases establishing new records. Although, many of the purchases were online, high quality individuals demanded top dollars. It is always a good sign to see established programs seek and obtain new external genetics to diversify genetic bases and add new cow families into the mix. This bodes well for rancher bull selection in years to come. Each fall the marketplace shows us that there is no substitute for quality and uniformity, no matter what class they sell in. Bull sale season is upon us so now is the time to get your herd bull battery semen checked along with their production quality values. When selecting your sires, pay attention to the numbers and the bulls that are high in the traits you require for your program. Since half of a sire’s progeny are female with many going back into your herd as replacements, do not overlook their maternal values and see their mothers for udder quality. We are set to have a strong demand for breeding females as our national beef cow inventory is the lowest it has been for over two decades. Planning is never too early. Enjoy, this the 2021 Bull Buyers Guide… it’s fact not Facebook. This informative publication is used as a guideline in selecting high quality breeding stock from Canada’s leading registered producers. Do not hesitate to call or visit them. As regulations are added or deleted virtually daily, we urge you to visit and preview these operations prior the sale. The Angus breed and Angus influenced calves are the leaders in the livestock industry and are produced to add value to your bottom line!

What the Hell was That? My grandparents were all born over a hundred years ago. The youngest, my maternal grandparents, were born less than ten days apart in the year 1900, my paternal grandmother a couple years before that in the late 1890’s. Both sets of grandparents overcame some significant challenges during their lifetimes. My maternal grandparents raised thirteen children even though the ‘Dirty 30’s’ forced them to move their family three times in just a few years. They moved from Wood Mountain, SK to escape the drought with no vehicles, a few animals and a couple of kids. They landed on a rocky quarter near Pelly, SK and when the drought caught up with them, they loaded their now seven kids in a homemade trailer, hooked it to an old truck and moved to Penticton, BC.
My paternal grandmother had been sent to Canada by relatives at the age of 13, alone, after her parents passed away in England. She landed in Halifax, disembarked and took a train west to an Uncle and Aunt in Ontario. She bounced from relative to relative until she ended up in BC. My paternal grandfather died suddenly and left my grandmother with two kids, aged five and seven, and a bakery to run in Penticton, BC. My grandmother never re-married and ran that bakery until she was able to sell it and retire. My paternal grandmother passed away in the 1970’s, my maternal grandparents passed away a week apart in the early 1980’s. Their lives had not been easy. They had survived the last pandemic the world experienced in 1918, followed by two world wars, a

depression, drought, stock market crash, not to mention smallpox, polio and a host of diseases that are no longer the threat they were then. It seems to me that COVID-19 might just be a warning shot that has been fired over our collective bow. I think we, as a society, need to have a look at ourselves and the direction our society is headed. We need to have a look at everything from defunding police, to our fascination with electronic devices, to the way we interact with each other. Those of you that think that defunding the police is a good idea... next time a bad guy breaks into your house and starts to injure your family, call a reporter. Then video the bad guy with your cell phone and post it to the internet to see how many “likes” it gets. I know from experience that there is not one policeman in any police agency that wants to work with a bad cop. There are bad apples in every profession, defunding is not the way to solve the problem. I think, instead of watching some twenty something girl dance half naked on TikTok, we need to encourage a twenty something girl that is working two jobs and trying to get through medical school. Maybe instead of watching three twenty something males jump from the roof of a house into a pool, maybe we should be
teaching them to build houses or install swimming pools. I would like to know how being a musician or a movie star qualifies one to be an expert in climate change or animal husbandry or, for that matter, anything that really matters. Instead of making pro athletes into multi-millionaires, we need to reward the guy in the stands at those games, who’s just spent a week’s salary to take his wife and two kids to the game so they can have the experience. Instead of sitting in the living room with the family and having everyone staring at their phones instead of each other, maybe we should put the phones down and talk to each other. That phone is capable of communicating with others, not only by text but also by talking to one another. It doesn’t really matter how many friends we have on Facebook, if we never communicate with the people in our day to day lives. So....what the hell was that? That was 2020. It was, a year we need to forget, but 2020 was a lesson we needed to learn. Life is not as easy as we had been led to believe. We have forgotten the lessons learned from those that come before us. They were faced with hard times and disaster, but they persevered. If they hadn’t, we would not be here. They were not distracted by useless videos, by being bombarded by news

twenty-four hours a day, and by politicians that lie to the very people they are supposed to govern. I don’t think we can spend our way out of the mess that 2020 has created, but I do think we can refocus and work our way out. Our forefathers worked their way out of the situations they found themselves in by working together on building physical, tangible things. A new computer program, social media or otherwise, is neither tangible nor especially useful at this point in history. We need farmers, ranchers, construction workers and physical labourers. We need people to produce food, housing, roads and the day-today necessities of life. We need young people that are not scared to work, to pull us out of the financial wreck that we are putting ourselves in. It will be a long, long time before we see the end
of the mess that 2020 has left, but our grandparents were able to get us out of the mess that was left to them, so the challenge has been handed to all of us, young and old, to pull in the same direction and get us out of here. It has been a long time since we, as a society, have faced a challenge like this. Take a few minutes and talk to those that mean the most to you. Take the time to teach your kids that hard work can be rewarding and if you know how to work, you will never go hungry. Encourage those that have been isolated for most of this past year, they must know that they are loved and missed. How hard can that be? Here’s to a different, safe, healthy and prosperous 2021.
Grant Rolston was born and raised in ranching country near Penticton, British Columbia. After graduating school, he worked on a purebred Hereford ranch, then assumed a position at Western Breeders Artificial Insemination Unit. In 1980, he left the livestock scene and joined the Edmonton Police Department, where he received his formal training in photography, working for the IDENT unit (crime scene investigation). After a decade, he returned to the industry, purchasing a herd of purebred Angus cattle but both Grant and his wife, Lauralee, worked off the ranch to make a living. He chose livestock photography and is now Canada’s premier livestock photographer of beef cattle. Grant and Lauralee travel throughout nine provinces in Canada for on farm photography, in addition to all major livestock shows, including the Royal Winter Fair in Toronto, the Canadian Western Agribition and all major National Junior shows in the summer months. Grant and Lauralee Rolston reside in Vulcan, Alberta. With four decades of experience, Grant shares things that are “Not Taken for Granted.”

TM
Some of the world’s finest Angus cattle are raised right here in Canada, under ideal conditions. The Canadian landscape, water and fresh air are a big part of what make them so great. It also takes a select group of hard working Canadian ranchers to bring those elements together. The result is Angus beef that is as delicious as it is nutritious.
Our ranchers are true stewards of their land. They raise cattle in a humane fashion not only because they know it’s best for the animals and their customers, but also because they know it’s best for future generations. Their beef is processed in federally or provincially inspected facilities. These businesses are subject to regular audits that ensure a high standard of food safety.
Canadian Angus Rancher Endorsed™ is a certification program that offers quality assurances and endorsements for Canadian Angus genetics. With the support of the Canadian Angus Association, Canadian Angus Rancher Endorsed offers confidence that the beef will exceed expectations.
Beef partners can qualify for the Canadian Angus Rancher Endorsed program by meeting the following requirements: • • • •
Apply through the Canadian Angus Association Animals must have a minimum of 50% Angus genetics; at least one of the parents must be registered Angus Cattle must use the Canadian Angus RFID indicator An audit process will be finalized in consultation with participants to ensure program integrity

The Value Of A Herd Health Program
Biography: Dr.
Still, not all herds have a program leaving us all at risk of purchasing a problem, or particularly for seedstock producers, selling animals that will move into atrisk herds where your animals may not realize their full potential.
Supported by difficulties in verifying that purchased calves have been properly vaccinated and an almost steady stream of evermore effective

antimicrobial and anti-inflammatory products the significance of major improvements in vaccines and vaccine strategies has largely been overshadowed. The BCRC has provided a useful tool designed to help producers calculate the financial premium that could be assigned to a vaccinated calf: CostBenefit of Feeding BRD (Bovine Respiratory Disease) Vaccinated Calves tool. Check it out! Assigning dollar values to the benefit of management inputs is significant for any industry. What is the difference between a herd health program and a vaccination program? Although, answers may vary, I will define a vaccination program as simply administering a standard set of vaccines to part, or all the herd at specific times. The vaccine program may provide suitable protection against major diseases, but the key is that the producer generally has limited communication with a veterinarian regarding what is best for the herd. For many, this may be all that they want; it works for them! A herd health program is developed in consultation with your veterinarian and includes more than just a vaccine program. A solid vaccination program will be the core of any beef herd health program, but a proper herd health program should never be a no questions asked, drug dispensing relationship with a vet. Although convenient pickup is handy, there should be communication with your veterinarian about what you should be vaccinating against, when you should be vaccinating, and which products/product combinations are best for your operation. Modified live vaccines, containing attenuated live virus are generally recommended over killed virus vaccines because of better, longer lasting immune protection. Often modified live vaccines can not be used in pregnant animals apart from a limited group of products that require initial vaccination to have occurred when the animal was not pregnant. Vaccine programs to prevent calf scours, foot rot,
clostridial diseases (e.g., blackleg), Leptospira infections, pinkeye, respiratory diseases in calves, and venereal disease are available. For most herds, vaccinating against every infectious agent possible will be overkill unless the bottom line is of little concern. Other components of herd health programs involve development of biosecurity plans for your herd, antiparasitic use, necropsies of deadstock, nutrition consultation, pregnancy checking, record keeping and assessment of herd performance. New products and services are being developed all the time. Because we operate in an industry with tight margins it is important to be able to realize a tangible return on investment. The most important component of an effective herd health program is good communication. You and your vet need to have regular, scheduled meetings to review the program. Once a year is likely suitable in most situations and is appropriate to maintaining a valid vet client patient relationship (VCPR). Specifically discuss disease risks, vaccines, goals, and cost to benefit. The names of products and protocols should be provided in writing. Standard Operating Procedures (SOPs) are very useful even for owner/managers because we can all be forgetful. Many seedstock producers have sound herd health programs established and can play a role in promoting the benefits of these programs to others. The commercial cattle industry often views seedstock producers as industry leaders so it should not be surprising that one of the most common reasons a commercial buyer will give for purchasing at your sale is because of your reputation as a producer. If you have a herd health program be proud of it and describe it in your sale catalogue or at your sale. Don’t be afraid to ask your vet for input … they might even right up a camera-ready letter that can be included in your catalogue. Herd health programs bring tremendous value to operation and to your reputation.

Some times and places just give me a feeling there is something really grand about this world.
I’ve asked about their goals and dreams and, in hindsight, when they’d felt like they’d “made it.” Funny thing is, even at the twilight of their career, they have each given me their own version of a knowing chuckle and answer that no, they haven’t yet.

BEHIND THE BRAND WHAT MAKES THE CERTIFIED ANGUS BEEF BRAND TICK? By Abbie Burnett n the outside, clocks look simple. But the plain cover hides the O famously complex yet dependable system of gears and circuitry
known as clockwork. It’s a lot of production for an effective tool. The Certified Angus Beef ® (CAB®) brand can look like that. A company working for cattlemen and women, driving demand for high-quality cattle through great eating experiences. But what complex system behind the scenes makes it work? Kara Lee, assistant director of producer engagement for the brand, answered such questions at the November webinar, “Getting to know the Certified Angus Beef brand.”
She began with the roots, established more than 42 years ago by Angus breeders who believed they had to do better: “Better in terms of raising high-quality cattle that meet consumer expectations, and better in terms of offering the consumer a higher level of confidence that they can receive something that meets their consistent quality expectations every single time.” The only beef brand owned and operated by the American Angus Association, Lee said all funding for the extensive global program comes from packer commissions, paid because they can sell the branded products for more. “The way that we build demand is by ultimately meeting our brand promise to consumers—and our licensees who serve them—by having a consistent premium product every single time,” she said. The brand is unique, Lee added, because it owns neither beef nor cattle. It can’t buy cattle or have any involvement in the price structure or determining who cattlemen sell to. Demand, then, is built by the created, pull-through model by which consumers seek the brand by name and consistently have the same great eating experience. Which makes brand integrity the key to the clock. Lee said the brand is also unique in tracking every pound from packing plant to those who sell to consumers. “We make sure that at no point along the way is any distributor, processor, retailer or restaurant selling more product than they’re buying.” Surveys show 95% of consumers recognize the logo and associate it with quality, she said. By licensing and auditing packing plants, retailers, distributors and restaurants, the brand makes sure that perception stays true. Research even shows a willingness to drive a little farther for a grocery store or restaurant where they can buy beef with the CAB brand. “When the consumer recognizes our logo and affiliates it with quality, we are able to achieve our overall mission statement, which is all about increasing that demand for registered Angus cattle through the specification-based program,” Lee said. “While many pieces in this beef supply chain can feel very segmented,
we know they’re all very directly tied together in achieving that overall mission.” Despite 2020’s struggles, the brand surpassed sales of a billion pounds for the fifth year in a row. Demand, indeed But how do cattle make it into the brand? With Rolex level precision. First, Lee noted “Angus” in-and-of-itself it not a guaranteed quality level. More than 70 other brands of USDA-certified programs use the Angus word, all of which run the spectrum of quality from lowest to highest. Only about 3 in 10 Angus-influenced cattle meet all of CAB’s science-based standards. That’s why, Lee said, the brand vigilantly protects its three-word name. “Just talking about Angus beef isn’t good enough for the customer today, so it can’t be good enough for us as a program,” Lee said. The initial threshold to qualification is simply Angus influence with black hide behind the shoulder, above the flank and in front of the tail head. But no cattle earn the brand before that hide comes off, she said, and each one is evaluated by that USDA grader for all 10 carcass specifications. Of all the Angus-identified cattle, only about 35% make the cut. The four biggest disqualifiers are not enough marbling, out-ofrange ribeye size or carcass weight, and back fat thickness of more than an inch. Of those four, 92% fail for lack of marbling. If that term seems like a consistent talking point, Lee said that’s why. “It’s not because we believe in single-trait selection. We know that you have a lot of different traits that are very important to both a registered or commercial cow herd,” she said. “The reason we talk about marbling so much is because it’s the number one place where there’s money left on the table because a producer missed out on their Certified Angus Beef premiums from not having enough.” The good news is, about 40% of what influences marbling is based on genetics, Lee said. Beyond that, what happens on the ranch and at the feedlot greatly influences how consumers respond to it. “What all of this ultimately boils down to is, quality pays,” Lee said. “There is a message that has been clearly sent from consumers to producers today, that high-quality beef is worth more to them and they’re willing to pay more for it.” Premium genetics and management need premium marketing. That’s why the brand will host a second webinar on January 21 tackling grid marketing, retained ownership and how to use information to make better decisions. To learn more and register for that virtual program, visit cabcattle.com/webinar.

There are a lot of breeding wheels available and I believe every producer should have one posted in their barn, shop or processing area as they serve a very good purpose in many ways. All the wheels I have seen used in veterinary practice or in the pharmaceutical industry base every thing on the 365day year. The beauty is what ever you do today like breed a cow, vaccinate a calf implant a calf has a bearing on what to do or what may happen in the future. I would always carry these wheels with me in the practice vehicle as well. If you have breeding dates you can get expected calving dates. As examples if one looks at this often enough it may help with current decisions at calving time. If one is straining with no progress and is actually 7 days early based on the average date for that breed it may mean twins are coming and we have a malpresentation. If over 10 days to two weeks are we talking a very large bull calf is coming or is the cow a week early from the next cycle? We all know very well the variation is gestation between individual animals but also the breeds. If we use the breeding wheels you start to recognize those bulls that have shorter gestations on their calves that can be very desirable. On the flip side if one knows when you want to start calving go backwards to the breeding date. If really fine-tuning remember leap year is every four years and needs to be adjusted for but was last year so have three more years to wait! Breeders with two breeds that fine tune will breed for instance their Angus starting a few days later knowing they have a shorter gestation 283 days versus 286-287 for some continental breeds such as Simmental. If a real small calf is born check the breeding wheel. If gestation was within normal limits this calf was dysmature meaning a retarded level of growth potentially due to placental insufficiency or some other cause. I would use the breeding calendar for many things I treat. Treatments or surgical procedures, anesthetics may have some contra indications on pregnancy or the stage of pregnancy so a breeding wheel if you have an AI date can help give you an odds or prognosis of something going wrong. Can the procedure wait until calving or do we need to give it now because we can’t wait that long. Products like sodium iodide for lumpy jaw or wooden tongue have a contraindication on the label that it may cause abortions. Certain products such as naquasone for udder edema have a steroid in it so can induce calving on a heavily pregnant cow. You may or may not want that to happen so always consult with your veterinarian if any concern over pregnancy. Other minor
procedures we find pregnant cows are pretty resilient but high levels of cortisol release could cause induction of labor if far along or early embryonic death if cows are not very far along. The middle third of pregnancy is probably overall the safest. Some breeding wheels have the three trimesters identified on them. If needing to induce a cow to calve because of being down or very thin with twins or any other medical reason it is critical you look at a gestation wheel or table to see if the induction will potentially result in a live calf. Too early and the calf will not be viable or have difficulty breathing. I would like to see a breeding wheel also having a synchronization wheel super imposed. That way if setting up timed AI one could see how many days since calving and it would give you the dates to remove the CIDR and give the GNRH and prostaglandin. The dates and timing are so critical on these things that the wheel is the maybe old style way of determining when a cow is ready to breed. Generally it takes minimum of thirty days for that cows uterus to clean up so I wouldn’t breed before that. I realize if not now surely in the near future well have an app to do this sort of thing. In the meantime the wheel or gestation table is valuable and helping with individual and herd decisions. Everything we do on a year round basis really revolves around the calving date from when we breed to giving vaccinations to parasite treatment to revaccinating both for the cow plus calf. For the commercial producer-implanting steer calves or re-implanting are based on time or age. Wheels are available for the scours vaccine and application and as we often say timing is everything. But timing for you versus you is generally based on when the calving period is. Everyone is adjusted forward or backwards using the wheel. I believe the Simmental one was based on a Holstein wheel which is why the gestation period calendar is only 280 days there is a dry down date which is when dairy cows are stopped being milked (60 days prior to calving) and there is a preg check at 42 days gestation which is commonly when dairy cows are preg checked. Those items simply can be ignored and tack on about an average gestation of 285 days but if you want to be 287 simply add the extra time to the projected calving date and it will work. This was a great idea and if one fine tunes it and adds on some suggestions of a vaccination wheel together with synchronization you would have a very good tool to help with your management on a year round basis as well as help with decisions on the treatment, or calving out of individual cows.

The Tag with Benefits
I have used the Canadian Angus tags with good success for years and I recommend all my clients use the tag. The tag is recognizable, stands out, and indicates the animal is of genetics of the greatest beef breed worldwide. The longevity and visibility of the tag is of great economic value. Victor Fischer, FISCHER ANGUS QUARTER HORSES
We’ve been using the Canadian Angus branded tags for at least 10 years. We have a purebred herd, so it was a no-brainer to switch to all “green” Angus indicators and management tags to promote with. We have to stick a tag in them regardless - so it may as well be a branded tag. Bob Higgins

Valued Partners By Miranda Reiman
My sister and I had a name, a self-created logo, an inkjet printer and a handful of steers we fed and sold as freezer beef. We had a business that kept us occupied most of the year and eventually earned enough money to buy our first vehicles. Over the long haul, we had something that inspired both of us to take a keen interest in animal science. We also had our first partnership. There were easy advantages to doing it as a team. We’d often trade off morning and afternoon chores. Yet if the automatic waterer froze—as it often did in the dead of a Minnesota winter—then it was all hands on deck to get it taken care of before the school bus came. Perhaps your first partnership was also with family. Maybe it was a business arrangement. Maybe it was a little of both, like ours. (Signing our names next to each other on the operating note made it extra official.) If you’ve ever wanted to dip your toe into feeding an undivided share of your calves after weaning without assuming all the risk, you might have partnered with a cattle feeder. Maybe you were once the younger generation, getting a start by keeping some cows in a herd with an established producer. Maybe you’re currently giving somebody a foray into the business yourself.
There are partnerships all across the beef business, but they’re not always as clean as who will bale the hay and who is going to feed it. Some are less direct, but equally as important. It’s the person who helps you decide on a grazing strategy or the vet who gets that weaning program tweaked just right. It’s the video rep who gives you pointers or the bull customer who comes back year after year. They’re partners. They’re wholly interested in your success, just as you are in theirs. You have shared goals. And in the end, it’s the consumer who buys beef by the grade or brand, knowing they’ll get exactly what they expect every single time. It’s a trust. A partnership. Do you focus what you can do to make life better for those at the next link in the beef chain? Are your cattle profitable for you and your buyer and your buyer’s buyer, too? What are you doing to hold up your end of the bargain? Next time in Black Ink®, I’ll write about the next step.

Genetics Matter in Beef:
Driving Profit through Genetics on the Ranch It has been said that it is getting harder and harder to make money in the cattle business – expenses too often outweigh revenue resulting in limited profit potential. Whether you agree or not, consequently many ranchers are very cautious about making additional investments to their management systems. To many it feels as though mounting demands on how beef is being produced are becoming increasingly burdensome while at the same time technology advancements through innovation are occurring at an increasing pace with return on investment not always well-defined making implementation decisions at the ranch level challenging.
overwhelming as variations and shifts in the tools continue to evolve faster than we can adapt in some cases. This has added to the uncertainty and skepticism of the tools and information. As animal breeders you undoubtedly know that the observable physical properties of an animal (phenotype) are determined by its genetic potential (genotype) and how that animal is managed (environment), or as geneticists say phenotype equals genotype plus environment. This is the key concept to understand when considering genetic decisions within your herd. While an animal may have the genetic potential, whether that potential is fully realized will depend on the environment and management strategies that is experienced by the animal. Therefore, while the genetics you choose are important; optimizing those genetic choices is heavily influenced by your management. Evaluating those decisions must be done through individual animal record keeping and benchmarking or comparing the data over time. Only then can genetic decisions be monetized or translated into profit.
Though cattle production is steeped in tradition it has also seen remarkable advancements in production and management practices in recent decades. Some of these advancement benefits have been clear-cut and have been readily adopted with immediate and direct impacts on the bottom line, others have been questioned about their value and impact so have therefore been a point of debate. Progressions in genetic information and selection tools is one of the areas where many have been skeptical. As a result, considerable opportunities and profit potential are All beef breeds capture individual data on being left on the table. economically important traits for beef production and conduct genetic evaluations in order to estimate As a beef cattle producer you are continually the genetic breeding potential of animals within the making genetic selection decisions in your breeding breed which are then reported in the form of EPDs. programs. Some may find these decisions challenging As data is captured on the animal and its offspring and difficult, some may find them quite easy but all the accuracy of the estimate of its performance know the significant implications that poor genetic (EPDs) increases. In other words, the EPD will be selection decisions can have on their business. Some more accurate in predicting the resulting expression may use all the tools available and some may not. of traits. Genetic evaluations and resulting EPDs for Some may feel confident in their decisions, some the various breeds have evolved as the economically may not. For decades, there has been increasing important traits for the specific breeds and the amounts of genetic information made available to entire beef industry have shifted. The days of those trying to make breeding decisions – fertility, pushing for maximum performance are past and growth, feed efficiency, disposition, calving ease we now understand that optimum and balance is a and carcass measures to name a few. Utilization more desirable goal. Thus, the breed associations’ and interpretation of this information can feel genetic evaluations have shifted over time. Most of Today’s Angus Advantag e 108

the beef breeds report EPDs on very similar traits (birth weight, calving ease, weaning weight, yearling weight, etc.) however because these tools were developed to compare and advance the trait within the breed, the EPDs are not necessarily comparable across all breeds. While genetic evaluations and the EPD model are one of the available tools that can assist in genetic decisions, it is critical to remember that EPDs, while adding valuable information, are an estimate calculated using large amounts of data across many herds. As the science and calculations improve so too do the models change and evolve to more accurately estimate genetic potential. It is not an exact science but it is extremely helpful in choosing genetics that will help you reach your business’s production and profit goals. The advancement of genomic technology to interpret genotypes from DNA within beef cattle has further improved the accuracy of genetic evaluations, particularly on young animals with limited or no data available on offspring. The genotypic data is commonly integrated into the genetic evaluation to increase the accuracy of the prediction or the EPD. Therefore, an animal’s DNA or genotype helps to further predict the potential of the animal and the resulting offspring. Another necessary tool to help you reach your business’s production and profit goals. The genetic selection tools available to ranchers today are all cumulative and help to make better breeding decisions. No one tool is a silver bullet and none should be used in isolation. Used correctly and collectively they will move you closer to your business’s goals and help drive profit on the ranch. Continuous improvement and advancements in beef cattle genetics is a reality at both the ranch level and the industry level and so tools will continue to improve and evolve and so too will our breeding strategies. Therefore, change is a constant we must get comfortable with and we will never complete our
job of genetic selection as continuous improvement drives our success. So what does this all mean for your business? It is clear that genetic selection decisions have significant implications on your production and the resulting profit of your business. Every operation has specific areas for improvement and goals – the genetics you choose is the foundation required to achieve these goals combined with optimum management. Thus, considerable gains (or losses) in profit can be realized through your genetic decisions and so it is worth your time and investment to: 1) define the goals within your operation that will increase profit potential and the impact breeding decisions have on those goals (i.e. improved fertility, increased weaning rate, increased weaning weight, etc.) 2) understand the tools available and how to accurately interpret and utilize them in your operation, and 3) measure the traits of importance to achieving your goals within your herd and compare them over time (benchmark) to ensure advancements are in the direction you desire. There is no doubt that genetic improvements have improved production and added value to the Canadian beef industry. There is also no doubt that further genetic improvements can be made and that access to premium genetics is not the limiting factor. The question is: Are you utilizing the optimal genetics within your business to drive increased profit? Implementation, application and continuous progress of innovative genetic improvement tools can achieve our production and profit goals, whether at the individual business level or across the entire industry. We have the resources; we need to translate them into value. If you would like to better understand genetic selection tools or have questions please contact one of the beef breed associations, we would be happy to discuss how you can drive profit through genetics on your ranch.

Brand specifications evolve
By Kylee Kohls
“The expanded product specification is voluntary for packers, and may be incorporated when timing is right to satisfy customer demand on a plant-byplant basis,” Walenciak says.
“Meat heads” by education and experience, scientists and number crunchers gather to analyze the latest scatter plot. Coffee fuels the banter as they discuss where the figures point toward progress.
Until a packer implements this change, its impact on premiums and discounts is uncertain. Cattlemen should not take their eye off of ribeye size, Walenciak says. While this innovation creates potential access to additional high-quality cattle, demand pressure for 10 to 16 square-inch ribeyes remains.
It’s Friday morning: analysis day for the Certified Angus Beef ® (CAB®) brand packing team. Meat scientist Daniel Clark brings a new scatter plot each week, along with a fresh perspective to answer last week’s questions. More than 2.6 million points fill the screen, each dot measuring how carcasses meet the 10 brand quality specifications — providing insight for possible improvement. How could adjustments help a premium supply meet the growing demand? Changes don’t happen overnight. The brand’s integrity is tied to these specifications, so they don’t evolve without careful consideration. “The first question we ask,” Clark says, “is how it will affect our partners up and down the supply chain.”
Beyond The Grading Stand
Next Friday, the packing team will evaluate data again, searching for new clues on how to make the best even better. It’s a team effort to crunch the numbers, balance the science and calculate the scope of possible adjustments. Never sacrificing quality, the ongoing process can evolve the specifications if that raises the standard, says Bruce Cobb, CAB executive vice president of production. “Making those cattle more valuable, these specification expansions help the brand gain strength and footprint on the market path to two billion pounds of supply annually,” he says. The focus remains on fulfilling demand and creating economic incentives for cattlemen and all supply chain partners. “We are working toward a vision where this brand supplies more of the best that Angus cattlemen create,” Cobb says. “This is one small step forward to creating an ever-better beef production system.” Progress is a process that happens one data set, conversation and cup of coffee at a time.
On September 9, 2020, CAB will implement two changes to its “G1 schedule” specifications.
The 10 Science-Based Specifications: To earn the Certified Angus Beef ® logo, Angus-influenced cattle with a predominantly solid black coat must pass its 10 quality standards:
The first, a subtle rewording, adjusts the fat thickness limit from “less than 1 inch” to read “1 inch or less.” It might sound the same, but that precise language allows USDA graders more accurate measurements. Camera grading calculates fat thickness to several decimal places and that provides consistency and clarity when dealing with fractions of an inch.
Marbling 1. Modest or higher marbling – the single largest barrier to CAB acceptance, this ensures superior flavor and juiciness 2. Medium or fine marbling texture – many small flecks of fat as opposed to larger, coarser characteristics. Creates consistency in every bite Maturity
The second change allows packers with an “extended licensing agreement” to box beef from some primals that met all quality specifications, but exceed the ribeye area, up to 19 square inches.
3. 30 months of age or younger – ensures superior color, texture and tenderness Consistent Sizing Three specifications ensure thicker steaks and consistent plate presentations:
Ribs, ribeyes, strip loins and short loins from these carcasses will be excluded from the brand.
4. 10 to 16 square-inch ribeye area* 5. 1,050 pound or less hot carcass weight
“This is not an expansion of the ribeye area to 19 square inches, but rather capitalizing on other parts of the carcass that are practically unaffected by that limit,” says Clint Walenciak, CAB director of packing. The move allows food service and retail partners to access CAB briskets, tenderloins, short ribs and end meats for roasts and ground beef from those carcasses that fall in the 16 to 19 square include ribeye. The exclusion of larger ribeyes, ribs, strip and short loins, maintains brand-quality plate presentations and thicker cuts for the key middle-meat items. Box quality, consistency and center-of-the-plate steak presentation standards remain the same. “I don’t want to overstate the magnitude of the expanded specification, but it is one small step in one big direction,” Clark says. “This is exciting for the future of the brand and for our partners on all fronts.” Their research shows the size differentiation of cuts entering the box from the carcasses with a larger ribeye will have little to no impact on the size or weight of the box.
6. 1 inch or less fat thickness Plate Presentation 7. Superior muscling limits light-muscled cattle – reduces influence of dairytype cattle with inconsistent yields and plate presentation Sorting pairs doesn’t take but two people. It helps ensure a quiet process that’s also efficient. Quality, Appearance and Tenderness 8. Practically free of capillary rupture – ensures quality appearance 9. No dark cutters – ensures consistent appearance and flavor 10. No neck hump exceeding 2 inches – safeguards against Brahmaninfluence cattle, which have more variation in tenderness *Up to 19 square inches for ribeye area is acceptable for tenderloin, brisket, thin meat, chuck and round cuts at approved plants. Rib, ribeye, strip loin and short loin are excluded from this option.

Flavor’s Secret Ingredient Many factors create a good eating experience, but delivery is key
By Abbie Burnett A thunderstorm rolls in above the parched Great Plains with all the usual effects, but no rain. Disappointment, like a tender steak without flavor. Just as it takes certain factors to produce a great rainfall, so it goes with flavor. To quell a drought, you need rain. To satisfy consumers, you need flavor. Hint: it’s in the marbling. Texas Tech University meat scientist Jerrad Legako spoke to that point during the American Society of Animal Science conference earlier this year. “No question, flavor is at least equivalent to tenderness in importance to the overall eating experience, if not a little more,” he said. That’s partly due to improved beef tenderness since the late 1980s. But what is flavor and how do we experience it? It’s a complex combination, said Legako. More than taste on the tongue, flavor takes in perceptions of texture and mouth feel. It’s “olfaction,” as the scientist evokes the world of smell and chemical reactions on the tongue that perceive spiciness. Ambiance and prior experiences complete the impression. All of these affect perceptions of flavor, but Legako’s team looks for a nuanced key to the best beef-eating experiences. “With the sensitivity of the olfaction system, volatile compounds are incredibly important for our perceptions of flavor,” he said. Volatile because they evaporate at room temperature, the organic compounds start as sugars, amino acids, lipids and thiamines, breaking down in beef ’s aging, storage and cooking processes.
All but the fats are water soluble and provide basic tastes like sweet, sour, salty and bitter. Then cookery enters with its Maillard reaction that reduces sugars and proteins to the volatile compounds like aldehydes we enjoy as a robust flavor profile. It’s how such flavors as nutty, roasted, garlicky, whiskey and honey get into browned foods like dumplings, cookies, biscuits, marshmallows—and steaks, of course. “With time and temperature, you can kind of start to think about this as a chemistry equation,” Legako said. “You’re driving that reaction at different rates just depending on exposure time and the level of heat.” Lipids, the top contributor, produce flavor through oxidation, he said, citing Australian studies: “Fat is the delivery system.” Among beef cuts with varying fat levels, those with the most would always deliver more of the same volatile compounds. To be clear, the flavor components fat delivers come not from the fat but from the effects of cookery on amino acids and sugars, Legako said. “Yet they’re dissolving in that fat, retained in that highfat sample and being delivered,” he said, “an increased sensory response or a more intense beef flavor through the greater delivery of those volatile compounds.” Basically, fat serves as a reservoir to deliver flavor. Legako and team tested this reaction across different cookery types, higher degrees of doneness and different grades of beef. The consistent find? The higher the grade, the better the flavor, increasing linearly from Standard to Prime. “This is at least some support for marbling content in a way influencing volatile compound delivery,” Legako said. For a good thunderstorm, you need moisture, instability and a lifting mechanism. For good flavor, you need aging and heat, but it takes ample marbling to really deliver. That starts on the ranch.

Don’t Wince
Scientific evidence, economic incentive for sustainability By Abbie Burnett
Protein sources’ capacity to meet nutritional needs are ranked by digestible indispensable amino acid scores (DIASS). Animal proteins tally more than 100 DIASS versus corn at 36.8, so you need much less from animal sources to meet requirements, he said. But at what cost? Are the resources consumed worth what those animals deliver? No question, really. Wickersham calculated that a 1,000-head cow herd is fed just 24 pounds (lbs.) of HEP during an entire year while producing more than 62,000 lb. of HEP. William Shakespeare wrote about every plot line ever told—betrayal, love, mystery, drama, tragedy, comedy—but he didn’t invent them. Humanity has been telling the same stories for ages. But as each new generation walks the earth, they find new twists on the same basic tales. And we don’t grow tired of them. Sustainability is an old story to cattle producers all over the world, but they’re finding new ways to talk about it. Protein upcycling is a recent term that adds science to “For every pound of HEP we put into the system, we get 2,600 lbs. out,” he said. Fueling Your Cows It takes grass to grow grass on the foundation
By Morgan Marley If you’ve built a powerhouse cowherd, its best fueled with robust grass. “We all understand that a ranch has to be economically viable in the short term to have any opportunity to be economically viable in the long term,” says Hugh Aljoe, director of producer relations for Noble Research Institute. That’s why management needs to adapt quickly to uncontrollable changes like drought. Record keeping and monitoring are key. Understanding the Basics In planning for available forage, Aljoe contrasts carrying capacity versus stocking rate: “There’s a difference.” Capacity is a measure of the forage supply or how much grass is being produced.Stocking rate is a measure of forage demand, or how much grass is being grazed. “Carrying capacity changes from year to year or season to season based on moisture and our pasture management,” he says. “The better we manage, the more opportunity we have for production.” Monitoring carrying capacity throughout the year helps determine where adjustments should be made to stocking rate. It’s a supply-and-demand relationship based on what the pasture produces and what the cattle need. Rain Gauge Across the country, rainfall varies in amount and timing, which affects growing patterns and pasture management.
The first thing Aljoe looks at is historical annual precipitation. Start by studying rain at the end of the growing season in October“when the water begins to recharge the soils,” Aljoe advises. By the end of March, there should already be 40% of the annual rainfall, he says. The amount of precipitation accumulated in the soil will determine whether it’s going to be an early or delayed spring. “Did we receive abundant rainfall and can add more numbers?” he asks. “Or did we receive less rainfall and need to de-stock in order to preserve our pastures?” Regardless of where a ranch is located, 30% to 35% of annual forage production should occur by the end of May. That increases to 65% by the end of June when yearly rainfall should reach 65% to 75%, Aljoesays, referring to water-table records.

“If we’re not there in the spring, we’re probably never going to catch up,” he says. Livestock can have compensatory gain, “but unfortunately pastures cannot.”
“We never want to take more than half,” he says. “And in the early growing seasons, we don’t want to take but the top third in a good grazing program.”
Another important component is variance, or how much rainfall is normal, positive or negative? Small differences are less critical than those above 10 to 15 percentage points.
Some cattlemen like to make cattle “hustle,” eatingwhat’s probably better left as residual ground cover, Aljoesays. Forced “cleanup” grazing may damage theforage’s ability to come back and leave soil unprotected. It can take years to recover.
Aljoe shares one example when forward-looking management saved the ranch. Charting a major drought as it developed in the spring, management at thetypically 1,000-cow ranch soldmore than 700 head before major downward price pressure. By September, those pastures stood out for not showing much drought stress. “The land resource was maintained,” Aljoesays. “That’s what is possible when you use the water table.” Look Down “Take half, leave half ” is a good starting rule, but grass growth rate and forage type help set rotation plans and grazing-pressure thresholds. “In the South there’s Bermudagrass or fescue in the North,” Aljoesays. “Those we can take as much as 50% to 65% of the production every time we graze, because they’ll recover rapidly. On the other hand, on native range pastures we only want to take 25% at best.” How often do you walk across your pasture and look down? Is the ground cover highly unfavorable, unfavorable, favorable or highly favorable? “You want to rate it on a system where there is no middle ground,” Aljoesays. Even numbers make it easier to see if land needs improvement or maintaining. Building small exclusion plots with wire panels and T-posts is another way to monitor the amount of forage grazed.
Photo Points Sometimes it’s hard to see the changes, so Aljoe suggests visual evidence from the same “photo points” each year. Take pictures at the peak and end of growing seasons, marking locations with a simple T-post or through a downloaded global positioning system (GPS) app. “We had a producer that bought a degraded resource and through management planning he took it from poor condition to what we would consider excellent condition in just five years,” he says, noting the photos played a key role. Aljoe shares those pictures with others, “to help them see what their future could look like.” Doing something is better than doing nothing. Be consistent and only make it as complicated as you’re willing to stand, he says. It can be as simple as these examples, or customized with free consultation from resources like the Oklahoma-based Noble Research Institute or the government’s Natural Resources Conservation Service. A powerhouse cow can’t grow a calf of the same caliber without the grass to match. Aljoe shared these tips for cattlemen at the 2020 Cattle Industry Convention in San Antonio.
