For some golf is a passion, for another it is socialization and for others it is a holiday activity. Whichever it is, golf is a sport that gives you a lot of health benefits without tiring you. Golfing is a pleasant experience as it is mainly played in beautiful and green surroundings. If you are taking a golf holiday, whether within your region or in another country, you will come across some of the most scenic and pleasing golf courses that treat your mind to peace and relaxation. This will improve your mental health as it will reduce your stress levels and puts your mind at rest. You get to breathe fresh air and absorb some vitamin D from sunlight.
One of the main activities of golfing is walking. Skip the golf cart for a lovely walk on the greens and you will be walking three to five miles in an eighteen-hole golf game. Variations in the landscape will allow you to climb uphill and downhill. This is a low-impact cardiovascular activity 3
and it is highly beneficial to maintain the health of your entire body. Walking with your golf bags can result in weight loss and burn calories . Playing a round of golf can reduce your cholesterol levels thereby reducing risks of heart diseases. Swinging the clubs and putting can tone your arms, back and shoulder muscles, improving flexibility. The game can improve hand-eye coordination and balance. This kind of exercise helps you sleep better and give you a healthy appetite. Golf is one of the games that uses your concentration skills to greater levels and this means that playing golf increases your concentration and calculating skills. A golf holiday is an ideal way to make friends with other golf enthusiasts and golfing professionals. It makes your holiday more active and you make the best use of your leisure activities with your free time.

THE RISE OF FOOD TOURISM Food and travel have always gone hand-in-hand. For many tourists, food is the focus of their travels, as they are presented the exciting opportunity to try new cuisines native to the area. Recently, more and more people are intertwining the idea of food and travel by exploring their destination through their taste buds. Tourists who are starving for genuine connections with the world around them are seeking out more intimate ways to enjoy the food of a certain culture. This growing trend has become what is known as food tourism. Food tourism, also called culinary tourism, revolves around the shared human need to eat, which makes it unique from other forms of tourism. It is an experience which allows participants to immerse themselves in the culture, history, and production of the food they are enjoying. While many people travel to foreign destinations to try international cuisines, food tourists can also visit their local neighbourhood restaurants for an equally enlightening experience. Food tourism can take many forms, including cooking classes, food tours, wine or beer tastings, and even private cooking lessons in a home. The most important aspect is that tourists have the access to learn more about the food they are enjoying. This type of tourism celebrates the food story of a region, and allows participants to be a part of it. Culinary tourism has been gaining popularity recently, especially
among millennial travellers. One of the biggest draws to this type of tourism is the authenticity it provides travellers. Modern tourists are constantly seeking out new and genuine experiences that can’t be found elsewhere. Not only can travellers indulge in delectable food and drink, but they can also educate themselves and learn where the food came from, how it was made, and its impact on tourism. It is truly a fully immersive experience. Additionally, modern tourists crave shared experiences, which is what food tourism is all about. Aside from enjoying a meal with others or conversing with the chef or farmer about the food, technology and social media also allow tourists to connect with others around the world by allowing them to visually take part in their experience. Sharing photos and videos on social platforms is one of the best marketing efforts for this type of tourism and has been a driving force behind its popularity. In a society that favours familiarity, food tourism is challenging the norm. While most of the food and beverage industry is working towards globalizing food through large-scale chain restaurants, culinary tourist destinations highlight the unique culture and history their food comes from. This is important because of the positive impact food has on the local economy, as food and beverage can account for 15% to 35% of all tourism spending. Introduction to new foods also benefits travellers by broadening
their worldview to include aspects of the food industry which might have been previously unknown. When planning your next holiday vacation include an authentic culinary adventure or experience in those plans.

GOATS! I spot them! “Stop the car!” I shout, launching myself out the door. I stand there, gaping in wonder at the sight. Perhaps a dozen goats are up in the branches of a large argan tree, munching away on the nuts. So it’s really true: the goats (and their digestive systems) are critical to argan oil production. It’s only after the nuts come out the other end (ahem) that the hard outer shell can be broken, and the precious kernel within removed for processing. The goatherd accepts a few coins from my driver for the photos I’m shooting. Then he scoops up a little kid who’s wandered over, and thrusts him into my arms. More photos! 7

This is the authentic Morocco. This is a country just made for road trips! Around every bend, there’s another jaw-dropping vista, a little roadside stand of some kind, or a cafe. Always at just the right moment, there’s a cafe.

Travel in Morocco is truly about the journey and the destination. Buses and trains will take you from A to B, but the real adventures, the life-enriching experiences, are found in the little beauty spots you only discover when you travel by car. From Marrakech to the desert, cross the High Atlas Mountains over the Tichka Pass – breathtaking! From Skoura, follow the Route des Kasbahs: this old trade route is strewn with the ruins of dozens of kasbahs. In late spring, the Valley of Roses is perfumed with the blooms of the commercially-cultivated Damask Rose. Children dart from the roadside, selling strings of roses to passing cars. Before turning east to the desert, wonder at the towering red cliffs of the Todra Gorge. Climb them if you dare!
Imperial Cities:
Much of Morocco’s exotic allure attaches to its great cities. Rabat, Meknes, Fes, and Marrakech are, or have been national capitals. SINGAPORE AIRLINES BEGINS U.S. EXPANSION WITH LAUNCH OF NEWARK-SINGAPORE NONSTOP SERVICE, RETAKES INDUSTRY RECORD AS THE WORLD’S LONGEST FLIGHT SIA Debuts New Airbus Aircraft on Estimated 18:45 Hour Nonstop Flight Covering 9,000 Nautical Miles, Additional Launches Slated for Los Angeles, San Francisco in 2018. NEW YORK, October 12, 2018 – Signaling a significant expansion of its U.S. operations, Singapore Airlines today re-launched its signature New York (EWR)-Singapore nonstop service, reclaiming the record for the world’s longest commercial nonstop flight at a scheduled 18:45 minutes duration. The carrier is the launch customer of the A350-900ULR (ultra-longrange) aircraft used in today’s flight, with seven new aircraft slated for delivery in support of additional nonstop service debuts from Los Angeles and San Francisco to Singapore later this year. The inaugural flight, configured with 161 seats in Business and Premium Economy classes, departed Newark Liberty International Airport today at 10:48 a.m., with an estimated scheduled arrival time in Singapore at 5:30 p.m. (all times local). “This is an historic day in aviation not only for SIA, but for travelers who are interested in time savings, enhanced comfort, and the fastest means of travel between New York and Singapore,” said Mr. Sek Eng Lee, Regional Vice President – Americas. “By the end of 2018, new ultra-long-range nonstop flights will help us grow our flight frequency by 32 percent, giving travelers more options and marking one of the most significant expansions in our U.S. history.” 11
It’s About Time: Fastest Way To Singapore A key benefit of the relaunched flight is the 4-6 hours of total travel time savings it provides over one-stop services. It is designed to appeal mainly to time-stressed business travelers, as well as the premium leisure market. SIA’s new nonstop flight will operate three-times-weekly from October 12, with daily departures from Newark beginning on October 19, 2018. The aircraft is configured in two classes of service, with 67 Business Class seats in a 1-2-1 layout, and room for 94 Premium Economy passengers (2-4-2). SIA will launch nonstop flights from Los Angeles to Singapore on 02 November, and will add three additional nonstop flights from San Francisco to Singapore on 28 November.
New, Wellness-Focused Inflight Experience Building on 10 years’ experience operating record-breaking nonstop services, SIA’s new “world’s longest” flight includes a balance of technology and passenger comfort innovations, all designed to provide passengers an enhanced travel experience. Technology improvements over previous ultralong-haul aircraft operated by SIA include air filtration with cabin air replaced every two minutes; reduced cabin pressurization (6,000 ft. altitude instead of 8,000 ft.); and 16 million LED-based lighting combinations allowing flight attendants to simulate sunrise, sunset and other time periods. The aircraft also feature higher ceilings and larger windows to create a more spacious interior.

Looking to unwind on a tropical island somewhere in Southeast Asia? Then head to the island of Langkawi, Malaysia’s ultimate escape in Southeast Asia.
Visually stunning and begging to be explored, Langkawi sits majestically in the Andaman Sea, about 30 kilometres off the coast of mainland Malaysia. When it comes to natural beauty, Langkawi has it all - dense rainforests, rugged mountains, white sand beaches and glistening azure water. Grab a cold limau ais and choose your adventure. Almost as alluring as Langkawi’s breathtaking scenery is its duty-free shopping. Pulau Langkawi, is an archipelago of 99 islands (or 104 when the tide drops) off the western coast of Malaysia. Once a sanctuary for pirates worn out from pillaging and plundering the Andaman Sea, Pulau Langkawi is now a refuge for slightly less exotic -- but equally as exhausted -- vacationers seeking respite from Southeast Asia’s major cities. The area of Pantai Cenang, near the island’s southwestern tip, has emerged as a vibrant tourist hub due to its proximity to Langkawi International airport, and is consequently the most popular destination for weekenders from Kuala Lumpur and Singapore. This makes for a fun atmosphere, with a buzzing beach side stretch of craft shops that are pleasant enough to browse.
Explore the island and take a boat ride inside the Kilim Karst Geoforest Park. This 100 square kilometre nature reserve in Langkawi is a treasure trove that is full of indigenous flora & fauna, and stunning geological formations like rocks, caves, lagoons, and beaches. To come to this park, you will have to take a boat ride along the Kilim River. Along the way, you will have dense green mangroves on one side and gigantic limestone rocks on the other, making this one of the top things to do in Langkawi. Also, it is here that you can see many rare animals, birds, reptiles, and of course, plant species. We experienced a sunset cruise as a relaxing way to end a busy day of sight seeing. way to relax by kicking off your shoes and wiggle your toes in the water and enjoying the evening beauty of Langkawi’s exotic tropical blue waters. Included was an on board BBQ dinner of local sea foods, chicken satay, calamari and vegetables all complemented with a scrumptious peanut sauce. No list of things to do in Langkawi would be complete without a mention of the Cable Car. Yes it is one of Langkawi’s most touristy attractions, but you can’t leave the island without experiencing the world’s highest cable car ride can you? The “Skycab” is the steepest ride on earth due to the gradient of the slope between the base station and the mobile station at 42 degrees. You will be rewarded at the top with a magnificent view of lush tropical forests, turquoise water, and many of Langkawi’s 104 islands. Finally, when visiting any international destination they say “eat like a local” and I had that opportunity when I was 13
invited to the home of Nor Aznan Sulaiman my long time friend who was the Director of Malaysia Tourism in Canada and is now living in Langkawi. While in Vancouver he hosted many travel industry events at his home where he became famous for his special fish/chicken curry dishes and experiencing his home cooking again brought back many fond memories of his time in Canada. With the new hotel developments such as the Adya Hotel with an impressive Moroccan inspired architecture and elegant glass exterior, Langkawi is fast making its mark and is well positioned to stand shoulder to shoulder with other resort destinations such as those found in Phuket and Pattaya, Thailand and Indonesia’s Bali to name a few. Adya Hotel features 207 well appointed rooms,
each with a balcony and a panoramic view of the seascape or of bustling Kuah town. The breakfast buffet is a sight to see. It resembles a market place as it is so colourful, especially with the array of fruit and bakery products. PATA Travel Mart Welcomes over 1,400 Delegates to Langkawi, Malaysia (PTM 2018)
By: Gina Hansen PTM 2018 officially opened in Langkawi, Malaysia on Wednesday, September 12th with a Welcome Reception, presided by the Right Honourable Data Seri Dr. Wan Azizah Wan Ismail, Deputy Prime Minister of Malaysia at the Langkawi International Convention Centre. The Pacific Asia Travel Association (PATA) was also pleased to welcome 210 local and international young tourism professionals including PATA Student Chapter members from Canada - Vancouver Capilano University. The students were part of the PATA Youth Symposium. Participants in the Travel Mart included 389 sellers from 208 organizations and 33 destinations, along with 252 buyers from 241 travel organizations from around the world representing 53 markets. During the Welcome Reception, the Minister of Tourism, Arts and Culture, Malaysia, the Honourable YB Tuan Mohamaddin Ketap, stated that, “For many, PTM is considered
the biggest tourism trade platform in Asia Pacific. As the host country of PTM, it is an opportunity for us to promote Malaysia as the ideal leisure and business destination. With an overwhelming 67 Malaysian sellers on board this year, we are really leveraging hard on this opportunity to meet international buyers. The Malaysian sellers included the private sector and state government/ agencies such as Sabah, Sarawak, Selangor, Penang, Labuan, Keah and Johor.” Malaysia previously hosted PTM in 1986 and 2005.
The success factors for tourism in Malaysia can be attributed to Malaysia’s political stability, world class facilities, favourable currency exchange

Malaysia’s additional uniqueness is the multicultural society if offers as well as ecotourism and cultural tourism, local lifestyles, British history, their art and architecture. Malaysia in 2018 bagged four PATA Gold Awards in praise of the branding and marketing efforts of the country as a premier tourist destination. The PATA Gold Awards are in recognition of excellence, innovation with the best tourism standards in the Asia Pacific’s travel and tourism industry. Langkawi Development Authority (LADA) also received an award for its marketing efforts in adventure travel through its reality show entitled “Difference Aside”. The show features some of Langkawi’s best tourist attractions. Frangipani Langkawi Resort & Spa won a Gold Award for its initiative of implementing 300 ways to save the earth through green practices. The resort is well known for its environmentally friendly operations and has won other similar awards in the past. PATA and PTM 2018 marked Langkawi as a major player in the Asia Pacific. It gives the world market another choice to do business other than Thailand or Indonesia. With its British colonial heritage and its English education system, all Malaysians are fluent in the English language which allows the country to compete better with other English speaking/Western countries in Europe, USA, Canada, Australia and New Zealand. 17

MORITZBURG CASTLE In the midst of the political intrigue and the battles over religious reformation that were common in the time, 21 year old Moritz (aka Maurice), Duke of Saxony, commissioned the construction of a hunting lodge. What began as a modest hunting lodge / summer palace would become Moritzburg Castle. It was built where an abundance of game ran freely in the Friedewald forest, 13 km northwest of the Saxon capital of Dresdin. The lodge soon became the favorite hunting spot for Wettin Dynasty nobility and it

remained so as it was rebuilt and added to over the centuries.
Sadly, the castle’s namesake had little opportunity to enjoy the lodge. Just 7 years after its original completion, Moritz was mortally wounded in the Battle of Sievershausen. Each of his successors renovated or added to the castle. In the mid 17th century a hunting ground was added nearby. The large field, fenced and surrounded by forest and game reserve, ensured a successful hunt as deer were herded into the enclosure. Today
in the same general area there is an animal park featuring more than 200 animals. The largest renovation came at the hands of Augustus the Strong in 1723. His grand plan included exotic animal enclosures, massive French style gardens, a pheasant breeding area, and castle additions which would increase the size to more than 200 rooms. While much of the plan was never completed, Moritzburg Castle served Augustus the Strong as both a hunting lodge and a party house, hosting many a feast and festival.
The last Wettin Prince, Ernst Heinrich of Saxony, lived in Moritzburg Castle until 1945 when he was evicted by the post World War Two Soviet administration. Near the end of the war many of the castle’s treasures were buried on the castle grounds, only to be found and confiscated by the Russians. In 1996 amateur archeologists discovered several gold and jewel ornamented boxes on the site but no more treasure is believed to remain. Moritzburg Castle is built on a symmetrical, artificial island, on an artificial lake. Streams were dammed to turn ponds into a lake. The castle sits in the centre of an island, connected to shore by a walkway. At the rear of the castle another walkway connects to the opposite shore and the gardens which were not completed until the 19th century. After the last war the gardens fell into ruin and it was only after reunification that rebuilding began. They are still a work in progress.
The renovation carried out by Augustus the Strong is still evident today. The baroque décor throughout the interior dates back to the 18th century. 11 of the rooms still feature painted and gilded leather wallpaper, one of the world’s largest collections of its kind. The Feather Room features Augustus’ 4 poster bed from which he had the curtains converted into wall hangings. The canopy and the wall hangings are made from more than a million pheasant, peacock, duck and guinea hen feathers woven into a canvas backing. A nearly 20 year restoration project to bring the Feather Room back to its original splendor was completed in 2003.

The final addition to the Isibindi family in 2015 was Rhino Ridge Safari Lodge, an eclectic 18 bedroom lodge with commanding views over the entire Hluhluwe iMfolozi Park. Isibindi Africa Lodges has achieved significant poverty alleviation in KwaZulu-Natal by establishing the lodges through joint ventures with local communities in remote, rural and previously impoverished areas where little to no employment opportunities existed before. The ownership structures of these businesses vary from community to community but the goals remain consistent: maximizing employment opportunities and skills development, and training community members. Isibindi launched ITHUBA (“opportunity”) to establish greater partnerships with communities and to replace individual lodge efforts with a structure that allows resource sharing. ITHUBA aims to create micro-economies beginning with the Mpembeni community (Rhino Ridge Safari Lodge) and eventually at all Isibindi Lodges. The lodge provides an initial market for goods and services produced by communities, including food from homestead gardens, homestay hosting of lodge guests, laundry, garbage and recycling services, and craft manufacturing. Isibindi recently received approval to acquire adjacent land where a training facility focusing on lodge hospitality will be established. Short internships at Isibindi lodges will form the practical 25
training and successful graduates can go on to work in the lodges. Isibindi is in the final stages of having all lodges accredited by Fair Trade Tourism (FTT). All Isibindi lodges offer guided tours of the communities by local guides employed at the lodges. Guests are encouraged to experience these tours to get a better understanding of locals’ lifestyles and challenges. Information brochures are provided which explain how the partnerships between that lodge and the local community are structured. Guests are also encouraged to participate in various initiatives which benefit the communities like “Pack for a Purpose” whereby guests are advised before arriving at the lodge of what the community most needs e.g. school stationery, clothing, etc. and they can pack this and distribute among the locals during their stay. ventures work at the various lodges as well as detailing the various community-based initiatives that lodges are involved in. Information is regularly posted on various social media platforms regarding Isibindi’s work in the local communities to highlight their needs and the successes. VIT EXPO KICK STARTS TRAVEL PLANS The 3rd annual Vancouver International Travel Expo took place recently at the Vancouver Convention Centre. More than 150 exhibitors showcased their destinations and products to just over 6100 people who attended the show. The show’s main stage featured live entertainment, including Taiwanese drum performances, a steel pan player, and Indonesian dance performances. The Main Stage and the SunClub Theatre also featured travel videos
and presentations. Renowned photo journalist Peter Langer’s photo presentations on behalf of Bestway Tours and Safaris featured India, Nepal, Sri Lanka and African Safaris.
For those people interested in a career in the travel industry, Flight Centre and Royal Roads University were both there to present some options.
South Pacific small ship cruising was featured by Paul Gauguin Cruises and Far and Away Adventures. Cruising the Northwest Passage was presented by Adventure Canada Expeditions. Korea National Tourist Organization showcased Korea and Beijing Capital Airlines presented Quingdao China and Beyond.
A third stage, sponsored by London Drugs, featured an ongoing line-up of seminars on travel photography, travel medicine, and travel accessories. Exhibitors at this year’s Expo represented every travel category and every part of the world. Regional opportunities were showcased by Butchart Gardens, JAG Adventures, Shasta Cascade, V2V, Black Rock Oceanfront Resort, Seattle NorthCountry, The Royal BC Museum, West Edmonton Mall, and many others. Destinations on hand included Cuba, Indonesia, China, Malaysia, Thailand, Korea, Turkey, India, Grenada, Taiwan, Australia, and tour operators on hand featured destinations on every continent. 26
Exhibitors at the expo came from as far away as Uganda, Nepal and Bhutan (roughly half way around the world). Close to a dozen travel agencies were exhibiting (Downunder Travel, Stenner Travel, SunClub Vacations, Flight Centre, Expedia CruiseshipCentres, Flight Express, and more), many offering show specials. 10 Airlines, 7 cruise companies, hotel and resort companies from around the world, travel finance, medicine and accessories companies, and several RV companies rounded out the show floor. Feedback from visitors and exhibitors indicates that the expo was a great success. Visitors’ comments included: “We thought we knew what we were looking for when we came to the show, but all of a sudden we have so many new options to consider!”, “Loved the dancers, we’ve already started planning our trip to Indonesia!”, “Very informative presentation… Tahiti here I come!”, “That tent on the roof thing (Editor’s note: JUCY RV Rentals) was neat, can’t wait for next summer!”. 27
Exhibitors were impressed by the quality of the crowd. “Everyone who came by our booth had a genuine interest in travel. They were open to hearing about a destination they might never have considered before” commented Elaine Dixson of Sahara Adventures. Exit survey results confirmed this. 84% of visitors surveyed said they were planning a trip of 7 days or more in the next 12 months. According to show producers, plans are already well underway for the 4th annual Vancouver International

Moroccan Roasted Chicken with Preserved Lemons Recipe Total: 3 hrs 20 mins Prep: 20 mins Cook: 3 hrs Yield: Serves 4
Chicken with Preserved Lemon and Olives is a classic Moroccan dish. The roasting method calls for marinating whole chickens with a Moroccan spice rub and then slowroasting the chickens the next day. A savory onion, lemon, and saffron sauce is prepared stove top. This method is particularly useful for feeding a crowd, as most of the preparation can be done the previous day. Moroccan etiquette is to serve one chicken for every three adults. Increase the recipe proportionally for the number of chickens you plan to make.

For the Sauce:
1 whole chicken 1/2 teaspoon salt 1/2 teaspoon pepper 1/2 teaspoon ginger 1/2 teaspoon turmeric 1/4 teaspoon saffron threads (crumbled) 1 small clove garlic (finely chopped or pressed) 1 tablespoon cilantro (chopped, fresh) 1 tablespoon olive oil 1 tablespoon lemon juice
2 large onions (yellow or white) 2 cloves garlic 1 teaspoon ginger 1/2 teaspoon black pepper 1/4 teaspoon white pepper 1/4 teaspoon salt 1/2 teaspoon turmeric 2 tablespoons chopped fresh cilantro 1 cinnamon stick (optional) 1 teaspoon smen (Moroccan preserved butter - optional) 3 to 4 tablespoons vegetable oil 1/4 teaspoon saffron threads (crumbled) 1 preserved lemon (quartered and seeds removed) Handful of olives (red or green)
STEPS TO MAKE IT:
pend on how moist the onions were, how thinly you sliced them, and how wide your pot is.
Make a spice rub for the chicken from the ginger, turmeric, garlic, cilantro, olive oil and lemon juice.
When the onions are a unified mass, stir in the saffron and remove the onions from the heat. At this point, the sauce can be cooled and refrigerated overnight.
• Season the Chicken
Gently lift and loosen the skin of the chicken from the breast and leg meat, leaving the skin intact. Spoon most of the spice mixture under the skin, and rub the spices over the meat, taking care to reach the leg. Turn the chicken over, and loosen the skin from the back of the chicken. Add the remaining spice rub to the back meat, reaching to the legs if possible. Salt and pepper the cavity of the chicken, truss the legs and rub a little olive oil on the outside of the chicken. Transfer the chicken to a glass or plastic bowl, cover tightly, and refrigerate overnight.
• Cook the Onion Sauce
Set aside the saffron. Slice the onions as thinly as possible. Place the onions, garlic, remaining spices, cilantro, oil and smen in a heavy-bottomed shallow stock pot or Dutch oven. Cover and cook over medium heat, stirring occasionally for an hour or until the onions are soft and can easily be mashed with a spoon or vegetable masher. Avoid burning the onions, and add a little oil or water if necessary to prevent the onions from sticking. Mash the onions and continue cooking, uncovered, until the onions are reduced to a thick blended mass sitting in the oil. How long this takes will de-

• Roast the Chicken
Transfer the chicken to an oiled shallow roasting pan, allow the chicken to sit at room temperature for 30 minutes. Preheat the oven 325 F (160 C). Roast the chicken uncovered, basting occasionally and rotating the pan halfway through cooking, for 2 to 3 hours, or until the skin is golden brown and the leg can be moved easily in its joint. Transfer the cooked chicken to a serving plate, or hold warm in the turned off oven.
• Finish Making the Sauce
Pour the juices from the roasting pan into the onion sauce mixture, stirring to blend. Add the preserved lemon and olives, 2 or 3 tablespoons of water as needed and simmer the sauce over medium heat for about 10 minutes, or until wellblended and the sauce is thick. Pour the sauce onto the serving platter, spooning a little sauce and olives over the chicken. Garnish the chicken with some of the preserved lemons, and serve immediately with Moroccan bread (khobz) for scooping up the chicken and sauce.

Wine History in Morocco
While many travelers to Morocco return home with treasures from the souk (marketplaces) and stories of stays in luxurious riads (palaces) in Marrakech or tent camps in the Sahara, few bring back tales of local wine. Most meals there, especially those eaten outside hotels or high-end restaurants, are accompanied solely by Maghrebi mint tea. Winemaking in this North African nation dates back to Phoenician times, and the tradition continued through the Roman era. The art of enology was lost here in the 7th century due to Islamic bans on alcohol, but French colonization in the 19th and early 20th centuries heralded the return of both winemaking and social drinking. By the 1950s, Morocco was one of the largest wine exporting countries in the world, but after the country gained independence in 1956, many vineyards were abandoned or plowed over. In the 1990s, King Hassan II appealed to French investors and wine experts to return the industry to its former glory. Today, the country produces about 40 million bottles of wine annually, but only about 5 percent is exported. There are seven wine regions containing a total of 14 AOGs (guaranteed appellation of origin) and 2 AOCs (controlled appellation of origin). Six of the seven regions are clustered on or near the Atlantic coast, to the southwest of Spain and Gibraltar, near Meknes, Rabat and Casablanca. The remaining region is farther east, bordering Algeria and the Mediterranean Sea. Despite the notion of Morocco as a hot country with a desert climate, most vineyards are in the foothills of the coastal Atlas Mountains. The relatively high altitudes and the cooling effect of the nearby ocean preserve acidity in grapes and help create balanced wines. About 75 percent of wines made here are red, predominantly Rhône varieties like Syrah, Grenache and Carignan, as well as Cabernet Sauvignon and Merlot. Rosé and Vin Gris—a style of greyish-pink blush wine—are produced, as are austere whites made from Chenin Blanc, Sauvignon Blanc, Sémillon and more full-bodied Chardonnay. While most wineries are owned by French companies and employ French winemakers and viticulturists, one notable exception is Spanish winemaker Albert Costa of Priorat’s Vall Llach. 30
