When we think of Thanksgiving, we think of family, friends and FOOD! This is why we decided to do something a little different and put a parent and child on this month’s cover. Of course, with food in mind, the first parent to grace our cover is a giant of the Tampa Bay food scene (and far beyond) and an amazing dad.

Chad Johnson has collected many professional accolades in the kitchen as executive chef of Epicurean Hotel, Haven and Elevage Restaurants and was even named James Beard Semi-Finalist for Best Chef in the South in 2012 and 2014. But a much more important accolade is that he’s a pretty awesome dad of two little girls, 3-year-old Addyson and baby Harper.

On a typical Sunday night, Chef Chad says you’ll usually find him in the kitchen at home with his sous chef, Addyson prepping meals for the week. “She can pick the herbs and she likes to dump the spices in the pan and stir everything. Sometimes it ends up on the floor, but it’s fun," he says. Her favorite thing to cook with her dad? Pasta, of course! With a well-known chef as a father, Addyson has developed quite a palate, but don’t worry: She's just like most other kids her age. “There’s no rhyme or reason; some days her favorite thing is sweet potatoes and the next day she doesn’t want a sweet potato.”

my experience with my daughter, she eats what we eat. When we have sushi night, we let her try it. She still hasn’t developed a palate for raw fish, but she loves soy sauce. When we have Indian food, she sits down and eats tikka masala with us.” We asked Chef Chad what Thanksgiving is like in his house and if he has any Thanksgiving traditions. He says that Thanksgiving in the Johnson household is just like the rest of us - they divide and conquer helping with the kids and the food. And he has a great tradition to share. “Since I was a little kid, to get me and the other kids when we were younger to eat stuffing, my aunt would bake stuffing in cupcake molds. I still love them because when you bake them in those molds, you get the crispy edges and soft center.” Yum. Since we’re celebrating Thanksgiving, we asked several local chefs, including Chef Johnson, to share their Thanksgiving side dish recipes. In following pages, you’ll also learn more about local charities that allow the whole family to volunteer together and some helpful tips on babyproofing during the holidays. T
hanksgiving means many things to people. It can mean time with family, taking a moment to reflect on life and be thankful for what we have. It can mean football, travel, the start of the holidays or the beginning of the end of the year. And for most people, Thanksgiving means food! Since we all know how to make a turkey or, alternatively, we’ve accepted that we don’t know how to make a turkey, instead of a typical feature about turkey recipes, we’re highlighting another staple of the Thanksgiving table, an often unsung hero that helps make Thanksgiving dinner what it is – the Side Dish. In combination with our sponsor Florida Farm Bureau’s This Farm Cares, in partnership with Moasic, Tampa Bay Parenting is featuring the favorite side dish recipes of local Tampa Bay area chefs using, when possible, locally sourced Florida ingredients. Each of these side dishes tastes delightful and will wow and amaze your Thanksgiving dinner crowd. The added bonus is, although they’re the recipes of professional chefs, you don’t have to be a professional chef to make these tasty yet simple dishes yourself! Chef Chad Johnson, Executive Chef of the Epicurean Hotel, Haven and Élevage Restuarants, shares his Alpine Cauliflower Gratin, which is a great dish to get the kids involved in the kitchen (that’s his 3-year-old daughter Addyson on the cover – Chef Chad says she’s his favorite Sous Chef). Haven’s Chef de Cuisine Courtney Orwig’s Wild Mushroom & Green Bean Casserole looks mouthwateringly delicious and simple to make. If you’ve never visited Bianchi’s Enoteca in south Tampa and tried Chef Romeo Patron’s Roasted Cauliflower (with or without spicy Italian sausage), you’re seriously missing out, but thankfully Chef Romeo is happy to share it with us! And who said dessert can’t be a side dish? Certainly not Chef Eric Lackey of u-lë-le – he makes an amazing No Bake Pumpkin Cheesecake that’s so light and airy it must be calorie-free. Plus, Tom Kisthart of Craft & Curd has some tips on wines to serve on Thanksgiving – here’s a hint, no Cabernet Sauvignon! Finally, although she’s not local, the superb Ina Garten is appearing at An Evening with Ina Garten at the Straz Center’s Carol Morsani Hall on Nov. 2, so for that evening anyway, Ina is a local chef! Since so many members of the Tampa Bay Parenting family are big Ina fans, we reached out to Ina and she graciously agreed to share a side dish from her new cookbook, Cooking for Jeffrey! Ina’s tsimmes side dish looks delicious and its great orange colors will perfectly compliment a Thanksgiving spread.

CHEF CHAD JOHNSON,
EXECUTIVE CHEF OF THE EPICUREAN HOTEL, HAVEN AND ÉLEVAGE RESTAURANTS
Chef Chad Johnson's Alpine Cauliflower Gratin fresh out of the oven makes a great Thanksgiving side dish. It’s easy to prepare and a great way to introduce cauliflower into a child’s diet. Pictured top center is Addyson, 3, and her dad, Executive Chef Chad Johnson of Epicurean, Haven and Elevage.
ALPINE CAULIFLOWER GRATIN This is a simple dish that is great for the holidays because you can prepare all the ingredients ahead of time and just bake when ready. It’s great to get the kids involved breaking apart the cauliflower, picking the herbs or peeling the apples depending on their age. It’s a delicious way to introduce cauliflower into a little one’s diet. For a kid-friendly approach, substitute crushed Goldfish crackers for the breadcrumbs.
STArT To FINISH: 65 to 80 minutes (20 minutes active) Serves 6-8 as a side dish.
2 heads cauliflower, broken into 1 inch florets 1 Granny Smith apple, peeled and grated 1 Spanish onion, sliced thin 1 tablespoon butter 1 tablespoon flour 1 tablespoon chopped sage 1 tablespoon chopped thyme

WILD MUSHROOM & GREEN BEAN CASSEROLE I enjoy making this recipe any time of the year but mostly during the holidays when my daughters are helping in the kitchen while some holiday music plays in the background. It is a simple dish but one you can put your own touch on. I swapped out the green beans with long beans and used crispy shallots once after shopping at the local Asian market. I love using golden chanterelles when they are in season.
Start to finish: 40 minutes (20 minutes active)
Makes 6-8 servings
2 pounds fresh green beans or long beans 3 cups torn or diced wild mushroom mix (such as chanterelles, oyster or crimini) ½ onion, diced 4 tablespoons butter 4 tablespoons flour 2 cups milk 1 cup half and half Salt and pepper to taste 2 cups of a mild cheese - cheddar (Beechers) or a young Gouda, shredded 2 cups crispy shallots or canned fried onions Trim the ends off of the green beans and blanch in salted boiling water, for about 3 minutes until the beans turn bright green. Transfer to a bowl of ice water to shock them and stop the cooking. Trim and clean the mushrooms if necessary. SautÊ in a hot pan with a touch of oil and cook for about 8-10 minutes until the mushrooms have released their water and are fairly dry in the pan. Transfer to a separate dish to cool. Heat oven to 350 F. To start the cheese sauce, in a medium pot over medium heat, add butter and let it bubble for a minute or so. To make the roux, add the flour mixture, stir and cook out the flour for about 4 minutes. Slowly add milk and heavy cream, stirring the whole time. After about 5 minutes or so the mixture will start to thicken. Slowly add the cheese into the pot still stirring so not to burn the cheese. Season with salt and pepper and remove from the heat.
Wild Mushroom & Green Bean Casserole is a favorite side dish of Haven Chef de Cuisine Courtney Orwig. It is an easy and fun dish to make, and it is easy to customize and make your own.
To assemble, take the blanched beans and add the mushroom mixture in a medium sized bowl. Take the cheese mixture and add to the bowl. Lightly toss all together and add to a oven safe crock or pan. Sprinkle the crispy shallots or onions all over the top and bake for 10 minutes at 350 F. Remove from the oven and enjoy!

NO BAKE PUMPKIN CHEESECAKE When we think of Thanksgiving meals, we usually think of big, heavy desserts. This isn’t! This is a very light, low-sugar, and creamy treat that’s easy to make, and fun for kids to help with too! Making it in a mason jar or a jar with a lid even makes the dish portable.
Start to finish: 4 hours (20 minutes active) Makes 4-8 servings Jars: 4-8 glasses or jars (such as Ikea jars with a lid or Mason jars) Crust: 20 ginger snap cookies 4 tablespoons melted butter 1 1/2 tablespoons sugar Filling: 8 ounces softened cream cheese 1/4 cup sugar 1/4 cup brown sugar 10 ounces pumpkin puree (not pumpkin pie filling) 1 teaspoon bourbon vanilla paste (different than extract, but sold at most grocery stores) 1 tablespoon pumpkin pie spice (recipe below, or use store-bought) 16 ounces heavy whipping cream Homemade pumpkin pie spice: 1/3 cup cinnamon 1 tablespoon ginger 1 tablespoon nutmeg 1 1/2 teaspoon allspice 1 1/3 teaspoon cloves Use a food processor to crush the ginger snap cookies. Add melted butter and sugar and pulse to incorporate. Press 2 tablespoons of mixture into bottom of each jar or glass. Refrigerate jars for at least 30 minutes to firm the mixture. Using a stand mixer with a paddle attachment, beat cream cheese, brown sugar and sugar until creamy. Add in pumpkin, vanilla paste, and pumpkin spice (homemade is always best, but storebought works too). Beat until fully blended, about 3-5 minutes. Using a stand or handheld mixer, whip heavy cream until stiff peaks form, about 3-5 minutes. Transfer half of whipped cream to piping bag and refrigerate. (If you don’t have a piping bag, a locking freezer bag works too – put whipped cream in

bag, seal, and cut one of the corners off the bag). Fold pumpkin mixture into remaining whipped cream. Transfer mixture into another piping bag. Pipe pumpkin mixture into each jar and place in freezer for 30 minutes. Pipe whipped cream on top of the piped pumpkin mixture in each jar, and then dust the whipped cream with the homemade or storebought pumpkin spice. Refrigerate at least 2-3 hours before serving. If the cheesecake is not firming up after a couple hours, placing the cheesecake in the freezer for an hour should firm it right up. Serve and enjoy! Or put a lid or plastic wrap in the jar and take it with you to Grandma’s house!

ROASTED CAULIFLOWER This is a crowd favorite that can be made veganfriendly or meat-lover style! Despite its creamy and luxurious texture, this simple dish is dairy-free.
STArT To FINISH: 50 minutes (20 minutes active) Serves 6-8 as a side dish.
1 head of cauliflower, broken into 1-inch florets 1 fennel bulb sliced very thinly 1 link of spicy Italian sausage (omit if vegan) 4 cloves of garlic 1 teaspoon of chopped garlic 2 teaspoons of fennel seeds 1 teaspoon of red pepper flakes 4 tablespoons of olive oil 2 tablespoons of panko breadcrumbs ½ cup water
For the puree: Heat
oven to 350 F. While the oven is heating, cut cauliflower head in half, and then cut around the stem on each half to assist in pulling apart individual florets of cauliflower. Place ¼ of the florets and 4 garlic cloves on an oven tray, coat with 3 tablespoons of olive oil and a teaspoon of salt. Roast in oven for 30 minutes at 350 F. Remove from oven and place into blender. Blend at low to medium speeds, slowly
pouring water into blender, until a thick paste forms that has the consistency of yogurt. Set aside.
For the Italian Sausage: (Omit this step for the vegan dish). Heat a frying pan with medium heat. With a sharp knife, cut lengthwise down the Italian sausage link and remove the skin from the sausage. Break apart the sausage and place into the frying pan. Cook until browned, about 5 minutes. Remove from heat and drain on paper towel.
In a cold frying pan, add 1 tablespoon of olive oil, the remaining ¾ of the cauliflower, fennel seeds, 1 teaspoon of salt, and red pepper flakes. Heat on medium. When the oil is hot, add chopped garlic and sauté until you smell the garlic and aromatics (1 to 2 minutes). Pour ½ cup of water into the frying pan, and allow the water to boil and braise for about 10 minutes on medium heat, until the water has evaporated. Pour in the puree and toss for 2 minutes. Transfer to a serving bowl and finish with panko breadcrumbs.

TSIMMES serves 6 to 8 This traditional vegetable stew is often served on Jewish holidays. It has lots of orange vegetables— carrots, sweet potatoes and butternut squash— slow-cooked with orange juice, brown sugar, cinnamon and dried prunes. It’s such a comforting side dish to serve with a brisket or roast chicken. And it doesn’t need to be a holiday to make it! Good olive oil 3 cups chopped yellow onions (2 large) 1 pound carrots, unpeeled and cut into 2-inch chunks 2 pounds sweet potatoes, peeled and cut into 1½ -inch chunks 2 pounds butternut squash, peeled and cut into 1½ -inch chunks 1 cup chicken stock, preferably homemade 1 teaspoon grated orange zest 1⁄2 cup freshly squeezed orange juice (2 large oranges) 1⁄4 cup light brown sugar, lightly packed 2 tablespoons unsalted butter, diced 1⁄2 teaspoon ground cinnamon Kosher salt and freshly ground black pepper 2 cups pitted prunes Preheat the oven to 325 degrees. In a large (10- to 11-inch) ovenproof pot or Dutch oven, such as Le Creuset, heat 2 tablespoons of olive oil, add the onions, and sauté over medium to medium-low heat for 15 minutes, stirring occasionally, until tender. Add the carrots, sweet potatoes, butternut squash, chicken stock, orange zest, orange juice, brown sugar, butter, cinnamon, 1 tablespoon salt, and 1½ teaspoons pepper and combine. Sprinkle the prunes on top and bring the liquid to a simmer on top of the stove. Cover the pot and bake for 40 to 45 minutes, until all the vegetables are tender. Stir carefully, taste for seasonings, and serve hot or warm.

Let me get this out of the way early. No Cabernet Sauvignon. Drink all the Cabernet you want after the meal. You'll be rewarded by selecting a more balanced wine to pair perfectly with everything on your plate. Harmony is what we're seeking both on and around the Thanksgiving table.
Balance
You want to select wines that are not too far in any one extreme. Forgive me for picking on Cabernet again, but the tannins in your typical Cabernet will be too firm and the acidity will be relatively too low. Think of tannins as that scratchy, drying sensation on your tongue. A bold juicy ribeye can handle them but that lovely bird that you spent hours preparing will not fare so well. Think of acidity as that mouth-watering sensation that helps you cut through the food and makes your mouth refreshed and ready for more after each sip.
unoaked Chardonnay
Chardonnays have come under fire in recent years for impersonating drinking a two-by-four. There are many different styles of Chardonnay and one type that is gaining in popularity is what is called unoaked Chardonnay. Instead of letting the wine age in oak barrels, wineries are finishing their wines in stainless steel tanks or neutral barrels. This leads to a leaner, more crisp style of Chardonnay, which leads us to our first recommendation.
Sandhi Sta. rita Hills Chardonnay, California 2012
Sandhi is a winery established by one of the most famous sommeliers in the country, Raj Parr. His goal with the wines is to let the place where they come from shine through, this is referred to as terroir. This Chardonnay only sees neutral oak, has brisk acidity and is very conveniently under 13% alcohol. Sandhi comes alive with food. I can attest that this wine pairs brilliantly with crispy bacon brussel sprouts and roasted poultry.
Berselli & olivieri 'Signature Collection' pinot Grigio, Italy 2014
Many people don't realize it but Pinot Grigio is actually a semi-aromatic grape. The typical entry-level Pinot Grigio comes from vines that are over-worked so hard that the resulting wine is bland. Makers of Pinot Grigio often leave
a dollop of residual sugar in the wine which I'd rather save for dessert. This one is dry and has a lovely, subtle perfume that will harmonize with any soft spices used in the food.
Sheldon Graciano 'ripkin vineyard' Lodi, California 2013
Graciano is a Spanish grape that you normally would not come across on a label. This microwinery made the amazing discovery of this vineyard in Lodi which is Zinfandel country. This unique wine drinks somewhere between a Pinot Noir and a great bottle of Cru Beaujolais (two other excellent alternative options). The acidity is vibrant, almost electric. It's a gentle enough red that it will pair with anything you throw at it. Smoked salmon would make for an incredible pairing if you're looking for poultry alternatives. Again, the hints of soft spice in the wine will elevate the seasonings in the food. Only eight barrels were produced of this labour of love. You are now free to open that bottle of Cabernet.
ToM KISTHArT is a certified sommelier and owner of Craft & Curd, a wine shop at 2908 W Gandy Blvd. in Tampa where the mentioned wines can be found.

Tips to keep baby safe in hotel rooms and Grandma’s house this Thanksgiving •
I
t’s November! Time for turkeys, pumpkin pies and snuggling up around grandma’s table. Traveling for the holidays outside their familiar, babyproofed environment can be exciting for toddlers and babies, but it can also pose dangers: flickering gas flames on the range, little sockets to stuff chubby fingers into and all sorts of fun candy-like pills and medicines in unfamiliar bathrooms.
By Anu Varma Panchal
“Unintentional injuries are the number one cause of death in kids 1-14,” says Rebecca Layton, a pediatric wellness and safety expert at St. Joseph Children’s Hospital. “The good news is that 90 percent of injuries are preventable.” To keep babies safe while staying in a relative’s home or hotel this Thanksgiving, Layton has one big tip: Crawl. Literally. Layton suggests parents actually get down on their hands and knees and see the room through their little one’s perspective. You’d be surprised at all the coins, Barbie shoes, batteries, Lego pieces and other choking hazards that often lie hidden way down there that a baby’s sharp gaze would pick out. “If it fits in a toilet paper roll—about 1.5 inches wide—it’s a choking hazard and shouldn’t be within a child’s reach,” says Layton. However, suggesting babyproofing measures to hotel staff might be easier than trying to convince the relative in whose house you are staying. Grandparents, for example, might balk and state that they raised plenty of children without door knob covers and did just fine. Layton suggests gently but firmly pointing out that over the past 30 years, safety products such as seatbelts, car seats, smoke alarms and baby proofing tools have decreased unintentional injury deaths in kids of all ages by 60 percent. “It’s a small step to take in order to keep children safe,” she says. Here’s our guide for baby proofing your little one’s environment this holiday. For more ideas (or safety tools that can also double as perfect Christmas presents for the new parents in your life), visit The Safety Store at St. Joseph’s Children’s Hospital. Check out https://baycare. org/sjch/for-patientsvisitors/the-safety-store for more information.

Gossiping while stirring gravy is fun, but can be dangerous. Never carry baby while cooking on the stove. Consider placing a high chair within your range of vision where you can watch him or her while you make your favorite Thanksgiving treats.
• NOV. 2016 • TBParenting.com
Lock away all medicines and makeup. Those pill boxes in which people keep multiple medications can look very much like a fun toy. Set the hot water thermometer to 120 degrees or lower to prevent scalding in the bath tub. Never leave young children unattended in the bath, even for the few seconds it takes to go grab a towel. Give your children undivided attention while they are around water. Avoid bringing your phone or tablet in the bathroom during bath time to prevent distractions. Small children are top heavy and can drown in an inch of water. Consider buying a toilet lock so you can lock the toilet lid.
In the Bedroom •

A room-by-room guide on how to baby proofing your Thanksgiving pad:
In the Kitchen
Use back burners to minimize scalding spills and install knob covers on the stove top to prevent little hands from fiddling. You can buy oven locks too, so if baby decides to heave herself up holding the handlebar, the door will stay locked. Go through cabinets for potentially toxic items— mothballs, cleaners, sharp knives—and make sure they’re secured in a cabinet with child locks. Check to see if the house or hotel has a fire extinguisher, working fire alarms and carbon monoxide detectors in place. Save the Poison Control hotline in your phone contacts: 800-222-1222. That way, if your little one gets into a potentially toxic substance, you’ll be able to access the hotline quickly.
It can be difficult to get baby to sleep in a strange room or house, but Layton urges parents to never allow an infant to sleep in an adult bed. Layton says to keep the ABCs of safe sleep in mind. A stands for alone: always be sure your infant is sleeping alone, as bed sharing can dramatically increase risk of suffocation. B is for on their backs: place your baby on his back every time you put him down to sleep. Finally, C stands for in a crib: always place the baby to sleep in a safety approved crib with only a firm mattress and fitted sheet. Never place the baby to sleep in your bed, on the couch, chair or in their car seat. As tempting as it might have been for grandma to tuck baby under her handmade blanket or decorate the guest room with cute bedding, all baby needs is a tightly fitted crib sheet and sleep sack for warmth. Loose bedding, pillows, crib bumpers and stuffed toys are suffocation hazards. For kids who have recently outgrown their crib, bring a bedrail to avoid falls. Keep an eye out for heavy bookcases or dressers that may not be attached to the wall; they could tip over if a toddler uses the shelves or drawers as steps to climb and explore.

Expressing Gratitude in Big Ways & Small Why regular thanks can make us healthier, and tips to start gratitude traditions in your home By Courtney Cairns Pastor

M
y 7-year-old son’s gratitude journal provided a peek into the priorities and values of a second grader. His teachers Corbett Prep slid the booklet across the table for his father and me to check out during our fall parent-teacher conference. We smiled at the fact that his cat got top billing (“because she is funny,” he wrote). Dad appeared in the next entry for the time he spends playing with him. Then there was some appreciation for mom for helping him with his homework. The next several pages returned to the same theme—video games; the ones he liked, the ones he excelled at, the ones he played with his friends. Not exactly what I would have named in my gratitude journal, but what goes on the list is less important than the act of making the list. Regular gratitude practice can make both adults and kids happier and healthier, studies show. Robert Emmons, a psychology professor at University of California, Davis, has done extensive research on gratitude and found that people who kept gratitude journals exercised more regularly, were more optimistic and felt less stress. They made more progress toward their goals and were seen as more generous and helpful. The benefits extend to kids, too. Kids who practice grateful thinking hold more positive attitudes about school and their families, research says. Or, as my son explained, his class keeps gratitude journals because their teachers said it “helps your mind feel good.” That’s a pretty great goal. A gratitude journal is just one way to get into a habit of thankfulness. Here are five tips for practicing gratitude that your family can feel good about. Be specific: Most of us could come up with a quick gratitude list — health, home and family would top mine. But how much thought really went into that? Take a few more moments to ask yourself why you would have made certain choices, and you’ll have a more meaningful experience. Corbett Prep teachers prompt students to go beyond their initial responses and explore the “because.” “I have gratitude for my family,” one second grader wrote, “because they keep me company when I am at home, and when I am sick and go to the doctor, they are there for me.” Give back: Shift the focus from yourself to others. It’s natural for kids to dwell on what they want (and what they don’t have). Move the conversation to giving by asking them to make a list of gifts they could give others. Creating a special picture for a favorite aunt, baking cookies for the local fire station or drawing a card for a teacher are practical ideas for young children that can get them ex-

cited about giving rather than getting. Helping around the house can make an impression, too. Kids may appreciate dinner more once they have put in the hard work to help make it, for example. Tell others: Writing thank you notes is about more than etiquette. You’re drawing attention to an act of kindness and showing appreciation. You’ll feel good and so will others when you say something nice to them. Corbett Prep’s PreK4 teachers made it part of the “share time” routine. After classmates presented their show-and-tell items, the rest of the class took turns expressing gratitude or complimenting them. You can model this at home by pointing out the good during daily life. offer prompts: Are you having trouble getting the conversation started? Try some prompts to encourage kids to describe their favorite place, a talent they have or a challenge they overcame. There are even scavenger hunts on Pinterest, where you can print out tasks for the family to complete, such as finding something that tastes amazing or keeps you healthy. My son likes ranking items so I will ask him for the three best/funniest/silliest things from his school day to get a sense of what is important to him. Have some fun: Maybe a gratitude journal feels like a chore to you. Try a Happiness Jar and have your family write (short) messages on scrap paper about something good that happened or a quality you love about a child or spouse. You might not need to write at all — throw in a ticket stub from a fun outing or a shell that reminds you of vacation. You can plan to open it and read it together on Thanksgiving, New Year’s Eve or whenever you like. Crafty types may choose to paint stones with one word that appeals to you, decorate a faux pumpkin with positive messages or write on leaves for thoughtful fall decor. Or skip writing entirely and take photos on your smartphone of surprises during the day that make you feel gratitude. Regardless of how you do it or what you put on your list, gratitude is a worthwhile pursuit. So go ahead and fill your gratitude journal or Happiness Jar with observations about your favorite video games, bingeworthy Netflix series or stunning sunset. You’re making your mind happier.

a tampa tradition Shop till you drop with the Junior League—all for a good cause! By Laura Byrne
T
he Junior League of Tampa’s Holiday Gift Market has become a wildly popular shopping tradition for families in Tampa Bay with deep roots in Tampa history. The annual fundraising event started in 1931 as a salvage shop that helped employ jobless women in our community. It then evolved into a thrift store located on Franklin Street downtown and later became the Trinkets and Treasures Thrift Sale which delighted for four decades. In 2004 the event was officially named Holiday Gift Market. This year, the event celebrated its 13th anniversary as The Junior League of Tampa celebrates its own milestone anniversary of 90 years of giving back to the community.

r. Dani McVety recently received University of Florida College of Veterinary Medicine’s Distinguished Young Alumni Award, but her career at the school did not start off on a high note. “You see, I failed a class in veterinary school, resulting in repeating my first year (which, at the age of 22, is about the worst thing that can happen to a vet student), then graduating in the part of the class that makes the top 90 percent possible,” says McVety wryly. She had her first child in veterinary school, her second while growing a business just months after graduating, and her marriage of 10 years to local attorney (and Jackson’s Bistro managing partner) Chris McVety, came to an end. And yet, the pair remains good friends and live within a half mile of each other. McVety, 34, not only went on to receive three major industry awards, she is also the founder of Lap of Love, a familycentered veterinary hospice and in-home euthanasia service—a first of its kind. “Each of these missteps / failures / challenges / areas of growth (whatever we call them) have taught me so much about fulfillment and happiness, lessons I am so thankful to have learned,” she says. She’s not the only one who’s learning: Today, she attracts crowds to her inspirational speeches. Growing up on a farm in Tampa Bay, becoming a vet was always McVety’s top career choice. Though she went away to South Carolina (Furman University) and then Colorado State University for part of college, she transferred back to the University of Florida to complete her bachelor’s degree in Microbiology and then her veterinary degree. She moved back here so her children, 8-year-old Baron and 5-year-old Collins, could grow up near family. McVety’s brother works with her as Senior Mentor on her Support Team and her parents work with her ex-husband at Jacksons. “Practicing emergency medicine as a new graduate, I gravitated towards the severely terminal cases; I felt like I was very good at helping pet parents make tough decisions,” says McVety. “And for some reason I loved it. During my undergraduate studies I volunteered for human hospice, which is certainly where my acceptance and comfort with end of life discussions came from, and that experience poured into my work in the ER. I started using the word “hospice” for those really tough cases (something that hasn’t been historically widely used in veterinary medicine) and saw how families positively responded to it.” She started Lap of Love just three months out of school as a “side thing” to help her pay back student loans. Today, Lap of Love has a network of 70 veterinarians. The name came to her after the euthanasia of a Chihuahua in which the dog lay on his mom’s lap, enveloped in her sweater. “She asked me if he could stay on her lap the whole time,” McVety says. “‘Of course,’ I said, ‘there’s nowhere else he wants to be.’ I felt the beauty of that small detail and knew I wanted the same for my own little dog, on my lap where our pets feel the most loved.”
What is your proudest moment?
As a mother, my proudest moments come when I see my children interacting with the world in a positive way. My son, at the age of 5, told me that he didn’t want to sit next to me on a plane because he “wants to talk to someone new and meet more friends.” He chatted with a woman for two hours straight before curling up on
30
Professionally, my proudest moments are when I realize how far our company has reached. I forget that Lap of Love has now entered over 50,000 homes across the country in the past few years. This summer I was giving a keynote speech for PawTree, a company whose veterinary advisory board I’m on, and a woman raised her hand in the back. With tears in her eyes, she thanked Lap of Love for helping make her dog’s passing so peaceful. She lives in another state, across the country, and was still helped by something I started years ago. That realization is pretty amazing!
What is your biggest achievement?
In 2013, I was privileged to be the youngest recipient of the University of Florida College of Veterinary Medicine’s Distinguished Young Alumni Award, then the Florida Veterinary Medical Association’s President’s Award in 2014, and, just this year, I was named Pet Industry Woman of the Year. These are my greatest honors thus far second only to the thank you cards I receive from families I’ve helped and veterinary students who tell me I’ve inspired them to keep going. In the years to come, I hope to say that my greatest professional achievements are having a TED talk titled “Why veterinarians will change the face of human death” and aiding in the lobbying efforts on a federal level for improved end of life care for humans. Lofty goals, yes, but that’s what life is about. On a personal level, my greatest achievement will be raising kind and generous adults that contribute to society’s growth. My life will be complete the day my children say to me, “We have always felt loved.”
Describe Thanksgiving at your house.
Thanksgiving is absolutely one of my favorite holidays! As a true Florida girl, our vacations during this time have generally been to snow instead of away from it. Most Thanksgivings, even now, are spent in the mountains of Colorado, hopefully during a good snow storm! Years ago we hired a cook to prepare our Thanksgiving feast (and honestly, we had just embraced vegan food and needed to learn some new cooking ideas!) and it’s been a tradition ever since. Everyone chips in a bit, and we get to relax, learn some new tips, and we’re still guaranteed a tasty meal! It’s so much more affordable than you might think, and the decrease in stress (along with increase in family time, especially with small children) is well-worth it. When the meal is ready and we gather around the table, the first thing we do is say something we are thankful for. This is one of my favorite times and really sets the mood for a true “Thanks-giving” meal!
What is your memory?
happiest
Thanksgiving
My happiest Thanksgiving memory was probably the year after graduate school when we finally owned our own home. We invited about 25 of our closest family and friends over; it truly felt amazing to host everyone together, laughing and sharing stories. It was the most love I’ve ever felt in one room!
Do you have a favorite Thanksgiving dish? If so, who taught you how to make it? (Can you share the recipe as well?)
Although my son would remind me that I’m not the best cook, occasionally I surprise myself! My absolute favorite dish is green bean casserole, my grandmother’s recipe, but every year I have to look it up! story continued on page 52

Healthy veins in planes, Trains and Automobiles 3 tips to reduce the risk of blood clots during holiday travel For many people, holidays mean travel, whether by car, airplane or train. And this usually means lots of sitting. To learn about ways to reduce the chances of blood clots during the holidays, we talked with Dr. Chris Pittman and his wife Karen of Vein911 about ways to keep our veins healthy during all the traveling and sitting. Here are some answers to some common questions. 1) If I'm traveling for the holidays, do I really need to worry about my veins? By Dr. Chris and Karen Pittman
If you’re going to be sitting for a long period of time, the circulation in your legs will be limited and this increases your risk of a blood clot known as deep vein thrombosis (DVT). Symptoms of a DVT include leg pain or tenderness, swelling, redness and increased warmth in the leg. DVT starts in the leg, and the clot can break off and travel through the blood stream and lodge in the lungs. This is called pulmonary embolism (PE) and can cause chest pain, shortness of breath and death. Nearly 1 million Americans are affected by DVT/PE each year and nearly 100,000 die of DVT/PE. Your level of risk depends on the duration of travel as well as on whether you have any other risks for blood clots. Most people who develop travel-associated blood clots have one or more other risks for blood clots, such as: • Older age • Obesity • Varicose veins • Limited mobility • Recent surgery or injury • Pregnancy and the postpartum period • Use of estrogen-containing contraceptives • Hormone replacement therapy • Active cancer or recent cancer treatment • Previous blood clot or a family history of blood clots
2) What are your top tips for healthy legs as we head into the holiday season?
If you are traveling and sitting for many hours in a car or airplane here are a few things you can do: • Walk around every 2-3 hours. • Try not to sleep more than four hours at a time. • Drink plenty of water. • Wear loose-fitting clothing. Exercise your legs while you’re sitting by: • Raising and lowering your heels while keeping your toes on the floor. • Raising and lowering your toes while keeping your heels on the floor. • Tightening and releasing your leg muscles. Wearing a good quality pair of graduated compression hose are an excellent prevention measure! Compression hose help prevent clots from forming by accelerating blood flow in your deep veins. All compression hose are not equal. There are many compression hose on the market but most are not high quality graduated compression hose. Quality, graduated compression hose should be measured and fitted to your legs. Graduated compression hose will make your legs feel terrific and also help you when you expect to be on your feet all day.
3) I know compression hose can help, but they are just not attractive.
Compression hose have come a long way from the thick, ugly beige hose that most of us think of when we hear the words “compression hose.” There are several companies that make very attractive hose that are sheer or come in a variety of colors and patterns. Medical grade graduated compression hose come in panty hose, thigh-high and knee high styles.

ridgecrest Center Gifted program to Showcase Nationally Teachers and administrators from the Ridgecrest Center for Gifted Studies of Largo will be representing Pinellas County Schools at the 2016 National Association for Gifted Children (NAGC) Conference. The NAGC conference, which takes place Nov. 2-6 at the Disney Coronado Springs Resort, provides schools an opportunity to collaborate and celebrate creativity and features presenters from around the world as over 2,500 dedicated educators, parents, researchers, policymakers, administrators and advocates gather. Seven different proposed presentations from the Ridgecrest Center for Gifted Studies were accepted for the conference including such topics as student-led action research, creativity in the classroom, early childhood research strategies and student enrichment. Ridgecrest Elementary Principal Dr. Michael Moss said he is proud seeing his staff share innovative practices in gifted education to an international audience. “When teachers present their work at a prestigious conference, it validates their professional practice and empowers them as teacher leaders,” he says. Ridgecrest Teacher Katherine Martin says she is not surprised that Ridgecrest Elementary is presenting on a national stage at NAGC 2016. “I love teaching in an environment where administration supports and encourages taking risks, having a growth mindset, looking at global research, setting high goals and listening to each other while pursuing educational excellence,” she says.
First Annual Cardboard Box Derby races with a purpose The Family Promise of Pinellas County Cardboard Box Derby is gearing up for its debut Saturday, Nov. 12. Vehicles with 100 percent cardboard exteriors will take over the track and adjoining field at Boca Ciega High School in Gulfport for this event to benefit Family Promise of Pinellas County (FPPC), a nonprofit organization focused on helping homeless families move toward achieving sustainable independence. This year’s Derby is a natural progression after the organization’s successful 2015 Cardboard Box City fundraiser. “Everyone interested in making a difference in the lives of homeless families in Pinellas County is invited,” says FPPC Executive Director Jennifer Sunshine. To participate, individuals and groups can register online at familypromisepinellas.org or call 727-201-9571. To take part, participants will need to raise the sponsorship entry fee through their connections with local businesses, friends and family, build a vehicle to be raced Flintstone-style – no motors allowed – and get ready for race sprints, obstacles courses and more. Races are arranged by age group and vehicle style. “More than 3,000 students in our county are homeless,” Sunshine says. “This Cardboard Derby addresses a specific need in our community – homeless families – and what’s more, it’s going to be a blast.” FPPC involves a coalition of interfaith congregations that house homeless families. Its day center features social workers assigned to each program family, offers resume help and more. For more information or to register, go to familypromisepinellas.org.

Gulf High Student receives prestigious Award Gulf High School International Baccalaureate senior Allison Segard was presented with the Legion of Valor Bronze Cross for Achievement Award Wednesday, Sept. 28, at a ceremony held at the New Port Richey school’s media center. Allison is an IB transfer student from Franklin High School in Franklin, Tenn. The award had been sent to her previous school where its ROTC instructor asked the Gulf High Reserve Officers Training Corp (ROTC) program to present it to her. Only 60 of the awards are given nationally each year. The Legion of Valor Bronze Cross for Achievement Award can only be presented by a military veteran who earned a Medal of Valor during their service. Allison received her award from Michael Perry from Zephyrhills, who is a Distinguished Service Cross recipient from the Vietnam War. Allison’s family, Superintendent Kurt Browning, school administrators, GHS Navy JROTC Commander John McGuire, and the GHS NJROTC cadets were present for the ceremony. The Bronze Cross for Achievement Award was established in 1951 as a way of rewarding cadets from the ROTC who demonstrate “excellence in military, scholastic and civic affairs.” For more information about this and other awards, visit legionofvalor.org.

What makes you happy during the holidays, and how do you avoid holiday stress?
Stress is overrated. I simply don’t have time to be stressed out. Almost anything that I don’t enjoy doing can be outsourced in order to maximize my time with my family, which is the single most important component to my personal happiness. Christmas lights, cooking, organizing parties, decorating—all these things can be done by someone that does them better and faster than me. The important details like ornaments, baking cookies and family traditions will always be done with my immediate family, but I would gladly reduce all other “stresses” to be very present with my kids. Thanks to many years in college, I am quite frugal when it comes to most things in life; I still shop at TJ Maxx, buy high-mileage used cars, got most of my furniture from Craigslist or Ikea and limit myself to one Starbucks latte a week. But my time at home with family is invaluable, and I will gladly ask for help when and where I need it!
What kind of message would you like to give women in the area or in this community?
I hope that every woman (and man) understands the value they bring this world. We all have gifts, every single one of us, and we must not only cultivate and perfect those gifts, but also share them with the world. Picasso said it best: “The meaning of life is to find your gift. The purpose of life is to give it away.”

Get to know the Mother of the Mother of All Baby Showers
A Amy Lundy, Mother of All Baby Showers Creator
my Lundy is a Tampa mom of 2 who launched The Mother of All Baby Showers (MOABS) five years ago in 2012. It is now held in 5 cities throughout the country (with plans to grow even more next year!) and gathers top-notch pregnancy, baby and toddler brands and experts all in one place. Why? To give you the opportunity to learn about the latest products, services and trends for your growing family, whether you are planning to become pregnant, pregnant or have a newborn through preschooler.
This year’s event is presented by Florida Hospital and features Parent Hacks' author Asha Dornfest.
TBpM: Can I bring my husband? Amy: Absolutely! MOABS is the perfect opportunity to
have a date night. We have lots of useful info for dads too. It's also a really fun girls' night out. Moms and moms-tobe bring friends, significant others, grandparents, or come on their own to take it all on! We invite everyone to be educated and celebrated!
TBpM: How much will it cost for me to attend? Amy: MOABS only costs $15 for general admission ($25 for couples) or $60 for VIP admission ($70 for couples). VIPs enter early at 5:30pm, get a Baby K'tan diaper bag, 3-month membership to Glazer Children's Museum and an amazing swag bag (valued at over $300). You can't go wrong with either ticket as they all include access to the Try It Before You Buy It Area, educational sessions, tasty treats from amazing local eateries and national brands like PDQ, Bonefish Grill and La Croix, mini spa treatments and of course the giveaways! For less than a movie, or movie and dinner (VIPs) you're going to have a truly unforgettable night out! A portion of ticket sales will benefit Glazer Children’s Museum.
TBpM: Tell me about the giveaways! Amy: Oh yes, that's one of the best parts! Everyone who
attends at least one educational session is entered to win. Examples include Britax strollers, Diono and Chicco car seats, Dutailier gliders for your nursery, Ubbi diaper pails, retailer gift cards, spa and restaurant gift certificates, and so much more. $20K in giveaways, something for everyone whether you're planning to get pregnant, currently pregnant, or have a newborn through preschooler.
TBPM: Which products are you most excited to try out this year? AMY: Dutailier has amazing gliders that are comfortable and functional; Diono, Chicco and Britax are my go-to safest options for car seats and strollers and accessories; Mother Nurture is a new brand featuring enhanced

Staples like Florida Hospital and Pediatric Health Care Alliance are so important to our event because they can answer the difficult questions for attendees about such current topics as vaccinations, Zika virus, and food allergies, for instance.
TBpM: I see that Asha Dornfest of parenthacks.com is your featured speaker. Which of her hacks do you love most? AMY: Asha is a truly lovely person and mom of two.
She was literally one of the first ever mom bloggers! Her hacks are practical and all about making parenting easier. Asha will be demoing so many fantastic hacks at our event. I especially like these hacks: Expand the waistband of your pre-pregnancy jeans with a ponytail holder, make baby leg warmers out of the arms of outgrown sweaters or cut-off socks, replace shoelaces with elastic to turn lace-up shoes into slip-ons, clean up glitter with play dough, use glow sticks as travel night lights, use a can opener and nail clippers to open toy packaging and cover toilet autoflush sensors with sticky notes for kids who don't like those automatic flushers. These hacks really work!
