Surprise! My husband and I will be welcoming our second baby in September. I am in my second trimester so there is a lot of baby talk about the nursery, baby gear and baby names taking place in our household right now. We also have a little toddler who is very excited about becoming a BIG sister!
from the editor This issue marks one year since my first as Editor of Henderson Family was published, and what a fun year it has been. I work with the most talented individuals, and I feel so blessed to be part of the Tanner Publishing team. With summer quickly approaching, I could not be more excited warm weather is finally here. I know my daughter is enjoying it. She loves being outside. Playing on her swing set, driving her cozy coupe and playing with her water table are only a few of the many things we like to do outside in the summer.
Everyone who knows me knows I LOVE pizza. It is one of my favorite foods, and Mr. B’s is one of my absolute favorite local restaurants to order just that. Luckily, I have never had heartburn in either pregnancy (so far) so I am still able to splurge on pizza every now and then and love that Henderson has some awesome pizza options when a craving strikes.
And these next few months are going to keep us busy as we prepare to bring home another sweet bundle of joy. Getting the nursery together, finishing the play room and transitioning Sadie’s room are only the inside projects. We have her birthday coming up, followed by holidays and weekends with family at the lake and hopefully a family trip to the beach. Sadie gets to enroll in soccer for the first time this summer, so we are all looking forward to watching her play. She loves kicking around a soccer ball, and she loves to run, so this sport might be a perfect fit for my active little toddler. During all the busyness though, we are going to soak up this entire summer and every moment in between.

Inside this issue, you will notice our magazine layout has been given a complete makeover. We are still bringing you inspiring, encouraging and informational content, but we have changed the look, tweaked some of the section titles and added some new content based around YOU. I am sure many who have toddlers can relate: “Paw Patrol is on a roll.” Literally. My life pretty much revolves around Paw Patrol right now. If we aren’t watching it, we are singing it, and if we aren’t singing it, we are playing it. We saw Paw Patrol Live earlier this year, and I am currently planning a Paw Patrol birthday party and a trip to the Children’s Museum of Indianapolis to visit their Paw Patrol exhibit. These pups are a favorite in our house, and I love seeing my daughter so excited about all things Marshall, Chase, Rocky, Zuma, Skye and Rubble. As they say, “You’re going to miss this,” so I am enjoying every minute of our Paw Patrol adventures.

Student Spotlight:
YMCA HEALTHY KIDS DAY On Saturday, April 6, Henderson County Family YMCA held its National Healthy Kids Day. This event takes place every year and brings community partners together with community members to provide a lot of great resources to families. Healthy snacks were provided by the Henderson County Co-op Extension Center and beverages from RC Cola, along with fun and educational
activities for kids to participate in. Each community partner gave out valuable information for the benefit of the participants. The children were given a passport to stop at each table, and at the end of filling that out, they received a prize. There were clowns, the Henderson Fire Dept. and Henderson Police Dept., the Library, American Red Cross, EMS, Henderson Nursing students (HCC), bounce houses, Girl Scouts, and more.
Holy Name School eighth grader, SHAURYA JADHAV is a member of the HNS Math Counts Team. Math Counts is a national program that provides students in grades 6-8 the opportunity to compete in live, in-person contests against and alongside their peers in mathematics. In the local or chapter division, Jadhav finished first overall and was awarded with a full, four-year tuition scholarship to the University of Kentucky. He advanced to the state level where Jadhav finished fourth overall and received a full, four year tuition scholarship to the University of Louisville. Jadhav will go on to represent Team Kentucky at the national level competition in May. “We are very proud of Shaurya and will be cheering him on to the next victory.” - Julie Eadens, HNS President
HOLY NAME SCHOOL COLOR RUN The Holy Name School PTO Color Run was held on Saturday, April 13. Many people played a role in making the goal of new playground equipment for the students become a reality. For over a decade, HNS families have worked towards new equipment, and with a final push this year, the PTO will meet their goal. This year’s fundraiser, the Color Run, along with donations from supporters and friends contributed to making this a reality. There were over 415 runners from as far as Louisville travel to Henderson to participate in an HNS event at Sandy Lee Watkins Park. Participants were able to enjoy the Color Run, Men’s Club concessions, balloon art, lemon shake ups, the playground, and a beautiful day with the family. The day was a huge success, and they want to thank everyone who played a part.
EAST HEIGHTS FAMILY PROM Who says prom is only for high school students? On Saturday, March 23, East Heights Elementary School held a “Ties & Tiaras Family Prom” with special guest Katie Bouchard, Miss Kentucky 2018. Dinner was served between 5-6pm with the guest speaker presenting at 6pm. Students enjoyed the company of their family members, along with their fellow classmates, as they danced the night away.
As a high achieving student-athlete, I would say one of LUKE FULKERSON’S most unique traits is his ability to achieve at high levels both in academics and sports. Not only does Luke’s work achieve at high levels in the classroom, as evidenced by his 4.25 GPA and his score of 36 on the ACT, but he also achieves at high levels on the basketball court. As his coach, Luke is one of the hardest working young men I’ve had the privilege to work with. He puts in extra hours on his shooting technique before school and spends many nights watching film on his own. My husband, Evan, and I have a daughter, Eliza, who was born in December. We also have three furry gal pals: Selma, Tripoli, and Sophie. Girls run the world in the Dixon household!

I’m the executive director of the Henderson Tourist Commission and have been for about two years now. I love what I do and am so proud to show off our town.
WHAT I S I T LI KE BE I N G A WOR KI N G MO M?
Wonderful and challenging all at the same time. Sometimes a little teary-eyed, tiring, and really hard, but also so fulfilling. I like to think I’m thriving in the chaos, but some days are easier than others!
HOW D O YO U F I N D BA L A N C E B ET WE E N WO RK A N D H O M E?
My job can’t always be contained between the hours of 9 to 5, so this can be tough. I’m so lucky to have a partner who probably does more around the house than I do—he cooks, cleans, and is the only reason why I take my vitamins! Eliza has already tagged along to a few afterhours meetings, and I’m excited to show her that it’s important to be involved in your community. Whatever “having it all” means to you, with a lot of gumption and a little creativity, you can do it without sacrificing career or family.

WH AT IS T H E H ARDEST PART OF B EIN G A WOR K ING MOM?
I worry a lot about what I’m missing in Eliza’s life when I’m at work. I’m an all-in kind of person, so I’m learning that you can be all-in on lots of different things. I can still be an all-in mom from my office down the road, but the fears of “what am I missing?” and “is my daughter getting enough of me?” still creep in from time to time.
FU N N IEST PARENTING MOMENT?
I attended a conference for work in Daytona Beach that Evan and Eliza tagged along for. Let me set the scene…we had one nice day for Eliza to put her toes in the sand for the first time, so we put her in an adorable pink swimsuit, totally posh sunglasses, completed the look with a flamingo-themed hat, and loaded her up for a picture-perfect family walk on the beach. Mom expectations are through the roof. Turns out the conference was planned for the same week as college spring break, and needless to say, we were total misfits on the beach. Eliza starts crying and the only thing that would cheer her up was a bottle. So there we are, in the middle of a beach full of college kids, trying to give our screaming baby (who looks like a child star in her shades and hat) a bottle. I absolutely lost it laughing and realized in that moment that we were the old people on the beach, completely ingrained in parenthood and our lives would never be the same. Poppin’ bottles has taken on a whole new meaning!
WH AT ADVICE WOULD YOU G IVE TO OT H ER NEW MOMS?
Be gentle with yourself—we’re so often our own worst critics. I’m still working on this one and probably always will be. I don’t think we really acknowledge enough how hard it is to have a newborn. Has it been the most special, magical time of my life? Yes! But you’re also So. Dang. Tired. Maybe your birth plan went nothing like you expected, and that can be tough to cope with. You’re healing from delivery and sometimes even major surgery. Hormones! Cluster feeding! So much poop! The idea that we would all survive this phase of life first popped into my head when Eliza was about six weeks old, but I don’t think I really believed it until eight or nine weeks. You’re a natural, but even naturals have to find their groove.

Summer Breakfast Tart C
all it a granola tart, a breakfast pizza, or a yogurt pie. Whatever you want to call it, this tasty recipe can be adjusted to fit any diet. If you're vegan or can't have dairy, just replace honey with pure maple syrup and use a dairy-free yogurt. If you're watching your carbs, replace the oats with more nuts and seeds and try a stevia nectar or another sticky sweetener that is lower on the Glycemic index.
WHAT YOU NEED: CRUST: ›› 1 1/2 cups rolled oats ›› 1/2 cup shredded coconut ›› 1/2 cup nuts ›› 1/2 cup seeds (use another 1/2 cup nuts if preferred) ›› 4 tbsp honey (or pure maple syrup) ›› 1/4 cup coconut oil, melted ›› 1 tsp vanilla extract ›› pinch of salt
The toppings and crust can both be matched to your preference. Any type of fruit or topping can be used with your yogurt, and you can switch out any type of nut or seed in the crust, as long as you keep the same amounts. I used chia seeds, hemp hearts, pecans, and almonds in mine.
TOPPINGS: ›› 1 1/2 cups Greek yogurt, plain ›› 1 tbsp honey ›› 1/2 tsp vanilla extract ›› Any extra add-ons (fruit, chocolate, etc)
This recipe can be made with small hands, as long as they get help from a guardian when it comes to the food processor and oven! That makes this a perfect breakfast that the kids are sure to enjoy as well.
DIRECTIONS: ›› Preheat oven to 350° ›› Add oats, coconut, nuts, and seeds to a food processor, and pulse until crumbled.

›› Add in honey, coconut oil, vanilla extract, and salt, and pulse again until combined. ›› Press your crust mixture into tart tins (I used mini-tart tins, but you can also just use one large one. If you don't have the type of tins that have removable bottoms, make sure to lightly grease the tins first to make it easy to remove). Make sure you've tightly pressed the crust into each tin - about 1/2 inch thick. ›› Bake for 15-20 minutes. You want your crust to be golden brown, but not burnt. ›› Remove and let cool. ›› Mix your Greek yogurt, honey, and vanilla before topping the mixture onto the cooled crusts. ›› Add any "extras" that you'd like! raduation is an exciting milestone for every senior. And for some students, the anticipation to say, “I did it,” is more than others could ever imagine. The countdown until you finally walk across the stage to receive your diploma is a feeling like no other. A new chapter awaits. For some, obstacles and hurdles came their way throughout the years leading up to this moment, yet they have overcome and here they are. Hayley Galloway and Cameron Staples are two Henderson County High School seniors who are graduating after taking part in the Special Education Program during their time with Henderson County Schools. Their roads weren’t always easy, but their success stories are inspiring. They are showing so many students who may be walking through similar situations they can accomplish anything they set their minds to, and with the help of amazing programs such as this, they will succeed. They fought to get where they are today, and they are on their way to accomplishing so much.
Hayley’s Success Story Hayley was born with 22q.11 Duplication Syndrome, a rare chromosome disorder. Only 16 in the entire US have this disorder, and she is number 11. It affects all her organs and kidneys. Because of this syndrome, she has suffered from a variety of conditions including a form of spina bifida, a heart condition, a neurogenic bladder and she has three kidneys. People with this form of spina bifida aren’t supposed to be able to walk, but she beat the odds and walked. She underwent back surgery to fix her spina bifida after she was diagnosed, but 22 HENDERSON FAMILY

was unable to walk long distances. Her legs would give out, and she would fall so she had to get a wheelchair. In 8th grade, she had bladder surgery and developed an infection that put her in the hospital for 36 days, and they didn’t think she would live to graduate. Hayley still had trouble walking long distances after her bladder surgery, and after she entered her freshman year it only got worse. By her sophomore year, she couldn’t walk at all, so she started going to physical therapy. This helped her tremendously. She was then able to walk short distances and now she can walk long distances again. She always has her wheelchair with her in case she needs it, but she has been having a lot of good days, so she is able to push it around at school all day.
Cameron’s Success Story At age 3, Cameron was diagnosed with ADHD. This has been difficult for him at times over the years in school, but he has overcome the obstacles he has faced due to this diagnosis. He underwent eye surgery to correct astigmatism in both eyes when he was only 3-years-old. He now wears corrective lenses in both eyes. Cameron also has asthma. In 1st through 5th grade, he had to carry a very heavy breathing machine with him to and from school.
Looking Ahead Hayley and Cameron are both very excited about graduation and what the future holds. Hayley has been part of the HOSA program and was able to co-op at
the hospital this year. She said, “I made it and fought hard to get there.” She wants to be a NICU nurse and plans to attend Henderson Community College for two years with the possibility of transferring after that. What she enjoyed most about high school was taking part in the Health Science Program. When she isn’t in school, she enjoys hanging out with friends and going to bonfires. She participated in archery since 3rd grade, but stopped when she started high school. Although Hayley is excited about this new chapter, she is going to miss being with her friends because they will all be going down different paths when they graduate. In five years, she hopes to be graduating nursing school. Cameron has been hired by the Henderson County Board of Education as a custodian and will be starting work once he graduates, but his dream job would be to be a pro-gamer. When he isn’t in school, he enjoys playing video games, listening to music, and singing and dancing. His favorite classes were P.E. and dance, but what he enjoyed most about high school was hanging out with friends. In five years, Cameron would like to be the best Fortnite gamer. Hayley’s advice to younger students who may be facing similar obstacles is,
“Keep pushing and don’t give up. If you really want it, you can fight for it and get there.” Cameron agreed. He said, “Try your best. Try your hardest and stay out of trouble.” Being part of the special education program has been a blessing to them both. “I feel like it helped me push myself to become a better person and not give up easily and to be able to fight through all my complications to get where I am today,” Hayley explained. The program offers them support to help them push through those challenges. Cameron added, “You have people to help you on that, too.” There have been so many people
over the years who have been there and helped them in so many ways but when asked who they would like to thank Hayley said, “My mom. She never once left my side in the hospital. In all my surgeries, she hasn’t missed one at all. She has always been there for me.” Cameron said he would like to thank Mr. Holstein. “He helped me get to where I am now,” he said. “The mission of Henderson County Schools is to provide extraordinary educational opportunities for every student. Our exceptional graduating seniors are a reflection of that mission. I am very proud of these seniors and their grit and tenacity to succeed,” said Kris Mayes, Director of Special Education for Henderson County Schools. Henderson County High School’s graduation is scheduled for Friday, May 17, 2019. Hayley and Cameron have a bright future ahead, and we wish them and the entire graduating class of 2019 the best of luck as they turn the page and begin this new chapter! HF
