There is a new restaurant in town — Medley. — located where the Old Blinking Light restaurant used to be, but the owners, Chefs Wilks and Colleen Medley, want people to know one thing: “This isn’t the renovated Old Blinking Light,” Wilks Medley said. “While we are happy and honored to own a place that so many people have great memories of, we are also a totally different restaurant.”

“I don’t have the patience you need for pastry,” Wilks admits.

After discovering their vocation for food, they changed paths. Wilks studied at the Culinary Institute of America in New York. Colleen went to the pastry school at Johnson & Wales University in Rhode Island. They met while working in Washington, D.C.

“I bake whatever I like to eat,” Colleen said. “I love French pastry, custards, cream caramel, pudding and cakes.”

From Washington, D.C., they moved to Los Angeles and spent three years there. She worked for Wolfgang Puck at Hotel Bel-Air as a pastry chef. He ran Vibrato Grill & Jazz and resurrected a French restaurant in downtown L.A., among other jobs. “These were three exciting years,” he said. “We learned a lot, but there came a moment when we got tired of seeing concrete and cars all the time. We needed to be closer to the earth, to see dirt…”

As luck had it, when they were considering where to go next, Wilks Medley happened to have one day off in Christmas and came to Taos to ski. That was in 2013. “Actually, I had been coming here since I was a kid,” Wilks said. “My family now lives right around the corner and I’ve always loved the town, but never thought we would move here until I found out that the Old Blinking Light was for sale. I came back to L.A. so excited … At first we just joked about it, but then Colleen came and saw it, and we realized we wanted to buy it.” The couple placed a bid on the business and got it Sept. 15, 2014.

As for Wilks, he just “likes to have fun while cooking.” “I don’t follow these preconceived notions of what you can or can’t cook,” he said. “I take it to a level where it is really good and then I make it a little crazy and a little better than usual. I can cook anything but I prefer seafood. We have as much as we can reliably source in New Mexico.” Her favorite dish is a Mexican chocolate pudding cake made with cinnamon Anglaise and spiced pepita brittle chocolate. “It’s our biggest seller,” she said. “It has a bit of spice and it’s delicious.” For him, it is steamed PEI mussels, made with tomatoes, chile flake, garlic, lemon, and parsley, and served with a baguette. “This is my own spin on a dish that we both know quite well,” he said. Medley has been opened for some time, and both chefs feel they have been “totally embraced by Taos.” “We are so thankful for their warm welcoming,” she said. “We have heard so many stories about people getting married and celebrating their anniversaries here, year after year. It really gets us into the fabric of the community. The restaurant has a lot of history and goodwill, and we are happy to be part of it.”

“That was just the beginning,” he said. “We have been working really hard and bringing everything up to code. And here we are.” “We both love to cook, eat and dine,” Colleen said. “Food is our passion and we like to share it.” Her specialty is pastry. His is “everything else.”

JENNIFER PETERSON’S GRANDMA’S BLUEBERRY CRUMB CAKE

Preparing a meal has often been compared to performing a symphony — not a note, or a flavor, should be out of place. Instruments are the ingredients that chefs expertly use to offer their best performance, one that pleases everyone’s taste buds. Gutiz pastry chefs Jennifer Peterson and Randy Morris are both bakers and musicians who show off their skills in the kitchen and on stage. Peterson, a singer and songwriter, performs regularly in Taos. She has also performed nationally at the Chicago Cultural Center and some of the largest country music festivals like Country USA and Countryfest. She has opened for Gretchen Wilson and Kenny Rogers as well. Morris, an accomplished left-handed drummer, was a member of the Chicago band Verbow that toured with Counting

Crows and Live at some of the country’s largest arenas. He currently performs in Taos with the Damn Band, Last to Know and Peterson. He is also adept on guitar and banjo. “Baking and playing music are similar in many ways,” Peterson said. “Both are creative outlets and allow you to share your work with many people. This is something I love — connection with others, either writing a new song or baking a cake.” In July, Gutiz reopened its doors after going through an extensive renovation. It has practically doubled its dining room and has 20 more seats. It also has bigger storage and kitchen areas, and a second restroom. “We still have the same menu,” Peterson said. “We may add a few more desserts, but it is basically what our loyal patrons dining out winter/spring 2016 |

love to eat. From chocolate croissants to our Eggs Benedict with homemade Hollandaise sauce, and a big selection of sandwiches, we welcome everyone to a renovated Gutiz that has kept its old flavorful charm.”

Peterson and Morris left Chicago for Taos in 2008. “I had had a variety of jobs in Chicago — graphic designer, interior designer, and bookkeeper, besides being a musician all along,” she said. “When we came here, Randy and I worked for Eduardo Gutierrez, the original owner of Gutiz.” In 2010, Gutierrez was ready to sell Gutiz, but he wanted to keep his business “in the family.” He was happy to sell it to Morris and Peterson, knowing they would preserve his Latin-French fusion style.

And she loves it so much that in 2011 she began making her own chocolate truffles. In 2013 she launched her own line of truffles with that very name. “I started experimenting with flavors,” she said. “The first one was made with red chile.

“When we took over the restaurant, I started baking the desserts,” Peterson said. “It was only going to be a temporary move, though, until we found someone else,”

I was always frustrated when I would buy chocolate with red chile, because there would be only a hint of red chile and I wanted a good solid kick of it.”

She was already known for her scrumptious Christmas cookies among family and friends.

Today her line has an assortment of flavors that include bourbon vanilla, raspberry, rose, espresso, cardamom, coconut, lavender and many others.

“I would bake eight different kinds of them and give everyone tins of cookies at the holidays,” Peterson said. “I also grew up on my grandma’s blueberry crumb cake, which we now serve regularly at Gutiz.”

The truffles are made by hand, with 67 percent dark Guittard chocolate, cream and flavors that come from spices, real fruit and spirits.

Morris also became interested in baking and learned to make some of the signature recipes.

They are available at Gutiz, Garden and Soul off Taos Plaza, and on her website jenniferloveschocolate.com.

Five years later, Peterson and Morris are still the restaurant’s pastry chefs.

Not surprisingly, one of Peterson’s favorite utensils is her truffle fork.

“The flourless chocolate cake is probably our most popular dessert,” she said. “It is gluten-free. I know that many gluten-free cakes don’t taste that good, but this one is chocolate molten gooey goodness. We also serve a great lemon coconut cake filled with vanilla custard that is Randy’s specialty.”

“It has two prongs and is specially designed for dipping truffles in the chocolate,” she said. “I couldn’t make them without it.”

All grapes are not created equal. Some have thin skins, some have thick. Some naturally develop more sugar than others. Some mature early, some late. Some like a warm climate, some like it cool. And some are more prolific, producing leaves and grapes in far greater abundance than others. Such vigor can often result in sub-par grape quality. As I’ve said in previous columns, a grape vine has a relatively finite amount of resources to allocate to its grapes; thus, the more grapes the plant has, the fewer resources go to each grape. The excess foliage also shades the grapes

from the sun, which inhibits ripening and development of flavor. Left to themselves, the grapes of vigorous vines will lack taste, texture, and sweetness, which makes for very bland wine. Happily, grape growers can combat vigor by pruning excess leaves to enhance sun exposure and removing unripe grape bunches to divert resources to the remaining grapes. With management in the vineyard,naturally vigorous vines can make respectable, even delicious, wines. And since these grapes tend not to have the best reputations on dining out winter/spring 2016 |

the international wine stage, the wines tend to be quite inexpensive.

Ugni Blanc juice is distilled into Cognac and Armagnac, as its naturally high acidity makes it a good choice for high quality brandy.

Two such grapes are found in abundance in southwest France, an area of sunny skies and rolling hills, perfect for growing grapes. As a result, the region makes a generous contribution to Europe’s “wine lake,� where over-exuberant wine production results in far more being produced than can be sold. Much of this surplus is distilled, either into brandy or into industrial alcohol.

Same with Colombard, another contributor to Cognac and Armagnac. Unlike Ugni Blanc, Colombard has also made its way to the United States where it composes a great deal of jug and box wines coming from California. It also has naturally high acid content, which can lend structure to inexpensive white blends.

Ugni Blanc, is the most widely-planted grape in all of France. This, combined with its prolific nature means that there is far more of it, most of it not so good, than needs to be made into wine. Thus, the majority of

attention in the vineyard and in the winery, they are capable of making really good wine. The region of Gascony in southwest France, where Armagnac is made, has a wealth of Ugni Blanc and Colombard to play with. And I find that I am almost never disappointed by white wine carrying the Côtes de Gascogne appellation. The wines are nearly always simple, crisp, refreshing, and evocative of summer. 2014 Domaine de Pellehaut Côtes de Gascogne Blanc “Harmonie de Gascogne” ($12) is predominantly Ugni Blanc and Colombard, but also contains some other indigenous varieties, as well as a dose of Chardonnay. Its aromas are tropical and citrusy, with peach, papaya, grapefruit, lemon, and lime in abundance. There is also a chalky minerality on the nose, which carries over to the palate, along with some creamy yellow melon and more tart citrus.

2013 Montgravet Côtes de Gascogne Blanc ($9), made entirely of Colombard, is an eminent bargain, with briny aromas wafting from the glass along with velvety peach and a lift of white flowers. On the palate, the citrus and minerality sing, as they do in 2012 Château du Cèdre Côtes de Gascogne “Cedrus Le Blanc” ($16). The nose of the latter is quite tropical, with mango and papaya, but also carries a floral hint of sweet clover. You’ll notice that the tasting notes on these wines are all relatively similar: lots of citrus, tropical fruit, and minerality. As I said, these are simple wines. But what they lack in complexity and diversity, they make up for in value and enjoyment. Seek them out for your table; whether you’re grilling up some chicken or going with gusto for traditional Gascon foie gras, you won’t be disappointed.
