5 lbs white flesh potatoes, peeled

3 lbs local salt cod

1 lb white onions, diced

6 oz salt pork fatback, skin off, diced

1/2 cup parsley, finely chopped

500 ml milk

Flour, for dusting

Canola oil, for frying

D I r ECTIONS

1. Soak salt cod in 4 litres of cold water for 6 hours, changing water twice. Once done, rinse, pat dry, and set aside.

2. Boil potatoes in salted water until soft.

3. Sauté pork fatback until crispy.

4. Add diced onions; sauté until translucent.

5. Poach salt cod in milk until tender and the cod flakes. Remove from milk and let cool.

6. Combine potatoes, onion, and pork fatback in large bowl and mash together.

7. Once mashed, gently fold the poached cod into the potato mixture, trying to keep the fish pieces whole.

8. Add parsley and allow mixture to cool.

9. Divide mixture into 5 oz portions and form into patties.

10. Dust patties with flour and fry in canola oil over medium high heat until golden brown on each side. DE

6 oz local ground beef, separated into two 3 oz balls

1 tbsp onion, diced

2 lettuce leaves

2 tomato slices

3 pickle slices

2 slices cheddar cheese

1 tbsp burger sauce

1 tsp ketchup

1 tsp mustard

1. Heat a cast iron frying pan to medium heat and add the canola oil.

2. Once pan is hot, place both beef balls in pan, about 3 inches apart. Press down on them with a spatula or burger press.

3. Allow to develop a crust, approximately 2 minutes.

4. Flip burgers and let cook for another 2 minutes; add cheese at this point.

340 g Comeau’s Bacon-wrapped Scallops

12 brioche slider buns

142 g arugula

170 g crispy fried onions

1/2 cup mayonnaise

1 garlic clove, minced

2 tsp lemon zest

2 tbsp lemon juice

1/2 tsp fresh dill, chopped

1 tsp smoked paprika

1 tsp local honey

1/2 tsp dijon mustard

Salt, to taste

Pepper, to taste

DIrECTIONS

1. Preheat BBQ or oven to 425F and cook Comeau’s Bacon-Wrapped Scallops per instructions on retail box. Instructions will vary based on chosen cooking method.

2. While the scallops cook, slice the slider buns in half and lightly toast.

3. Prepare Comeau’s Tide Sauce by mixing mayonnaise, minced garlic, lemon zest, lemon juice, chopped dill, smoked paprika, local honey and Dijon mustard, adding salt and pepper to taste.

4. Spread a generous amount of Comeau’s Tide Sauce on the bottom halves of the slider buns. Sprinkle with crispy fried onions.

5. Remove toothpicks from the cooked baconwrapped scallops and place two or three scallops on each bottom slider bun. Top with arugula mix and additional Comeau’s Tide Sauce, if desired.

6. Cover sliders with top bun, secure with a toothpick and serve immediately.

For a bit of heat, add a dash of your favourite local hot sauce to the sliders!

Serves 4

1 lb linguine noodles

1/2 lb fresh local scallops

1/2 lb coldwater shrimp

6 tbsp unsalted butter

4 tbsp olive oil

1 tsp salt

1/4 tsp black pepper

4 garlic cloves, minced

2 – 3 lemon wedges

1/2 tsp red pepper flakes

1/4 cup Parmesan cheese, freshly grated

2 tbsp parsley, finely chopped

DIrECTIONS

1. Dry the scallops. Place on paper towel and let sit for 10 minutes.

2. Bring a large pot of water to a boil & season with salt. Add the linguine noodles and stir occasionally, cooking until al dente. Reserve 1/2 cup of pasta water, then drain cooked noodles.

3. Season scallops and shrimp with salt and pepper; make sure to season both sides of the scallops.

4. Heat 4 tablespoons of butter and 2 tablespoons of olive oil over high heat. When hot, add scallops to the pan and cook for 1-2 minutes. Flip scallops, then cook for an additional minute.

5. Turn the heat down to medium-high and add shrimp. Cook about 2-3 minutes and remove from pan.

6. Char the lemon by adding lemon wedges to the pan and cooking until charred. Remove from pan.

7. To make the sauce, add 2 tablespoons each of olive oil and butter, then add minced garlic, lemon zest, and red pepper flakes.

8. Pour the drained, cooked pasta, along with 1/2 cup reserved pasta water, into the sauce. Stir sauce and noodles together until noodles are thoroughly coated. Add seafood and cooked lemon slices back to the pan, then stir in fresh parmesan. Garnish with fresh parsley.

8 – 10 beets, small to medium in size

1/2 cup water

1/2 red onion, thinly sliced vertically

142 g baby spinach

2 cups walnuts, chopped

1/2 cup local soft cheese, crumbled

Honey Balsamic dressing

1/4 cup balsamic vinegar

1/4 cup olive oil

2 tbsp local honey

1 tbsp dijon mustard

1 garlic clove, minced

Salt, to taste

Pepper, to taste

D I r ECTIONS

1. Preheat the oven to 375F. While oven is heating, wash the beets and trim the stems and bottoms of them.

2. Drizzle olive oil on beets, then place in a 8x8 baking dish. Add water to the baking dish and cover with foil. Roast beets for 45 minutes or until they can easily be pierced with a fork. Let cool; peel and slice.

3. While beets are roasting, prepare the Honey Balsamic Dressing by whisking together all ingredients for the dressing.

4. In a bowl, add sliced, cooled beets and red onion. Drizzle with 1/2 cup of dressing and toss to coat. Let stand at room temperature for 15-20 minutes so the beets absorb some of the dressing and the onions soften slightly.

5. Place spinach on a serving plate with beet and onions, then sprinkle walnuts and crumbled soft cheese over the top. Add additional dressing if desired.

2 tsp smoked paprika or 1 tsp ancho chile powder

Salt, to taste

Pepper, to taste

1. Pierce sweet potatoes with paring knife and bake in 350F oven for 45 minutes or until soft.

2. Peel apples and grate with large box grater; place in bowl.

3. Peel and thinly slice red onion and add to apples.

4. Coarsely chop hazelnuts and add to apple and onion.

5. In a small bowl, whisk together cider vinegar, honey and oil; season with salt and pepper to taste.

6. Dress apple mixture with vinaigrette.

7. Scoop sweet potato into bowl while hot and mash in paprika or ancho and butter. Season with salt and pepper.

8. Preheat a large saute pan or skillet on medium high heat. Working quickly, add 2 tbsp canola to the pan, then place scallops evenly around the pan and season with salt and pepper.

9. Check scallops to ensure they are browning. After 1 minute, turn over scallops and season again.

10. Remove scallops after an additional minute; keep warm.

11. Place 2 spoonfuls of sweet potato on the center of the plate, pile up some apple salad on top, then place 3 scallops around the salad. Enjoy!

2 cups lobster meat, cooked and finely chopped

1/3 cup mayonnaise

1 celery stalk, minced

1 tbsp local pickles, diced

1 tbsp parsley, diced

1/2 tsp lemon zest

3 tbsp butter

Salt, to taste

Pepper, to taste

local microgreens, to garnish

Soft bread rolls

D I r ECTIONS

1. Slice buns down the center and butter the outsides of the rolls, using 1 tablespoon of butter. Toast in a large, non-stick skillet on medium-low heat until golden brown, about 3 minutes per side. Set aside.

2. Melt remaining butter in the same skillet on medium heat. Add celery to pan; cook and stir for 3 minutes or until softened. Remove from pan.

3. In a bowl, combine lobster meat, mayonnaise, celery, pickles, parsley and lemon zest. Add salt and pepper to taste.

4. Divide lobster meat among toasted buns. Drizzle with any remaining butter from the pan and top with local microgreens.

Margaret Cornect is passionate about bees and has been keeping bees now for over 30 years. What began with two hives placed on the family farm to pollinate their blueberry fields resulted in a successful pollination and a delicious by-product: honey – minimally processed from the hive to your table.

Today, youngest son Benjamin looks after the 500 some beehives while Margaret continues to produce and market their honey products, including liquid and creamed honey, honeycomb (seasonal), honey butters, cranberry chutney, and gluten-free Bee Sting BBQ Sauce and Honey Mustard, all sweetened only with honey. along with flavoured honey, they also now make Salted Honey and Sweet Heat.

Margaret can be found weekly at the antigonish Farmers’ Market, and products can be found at various retailers throughout Nova Scotia.
