Cheese Fries with oven roasted kale and dip 10 PERSONS
Ingredients -
Start with making the dressing: Take anchovies, 2 tablespoons of oil and sambal oelek in a blender and blend. Add the egg yolks and blend while the oil is slowly added. Add the juice and zest from the lemon. Deep fry the Cheese Fries directly from the freezer in 3-4 minutes. Rinse and strip of the kale dab it dry and spread on a baking sheet. Add a little olive oil. Place the seeds on a dry pan and roast until they pop and are lightly browned.
400 grams of kale 200 grams of Taverna Cheese Fries 2 tablespoons of pumpkin seeds 2 tablespoons of sesame seeds 2 tablespoons of sunflower seeds
Dip -
4 pasteurized egg yolks 0.5 liter of sunflower oil 2 tablespoons of white wine vinegar ½ tablespoons of sambal oelek 5 anchovies 1 lemon, juice and zest

Tartare Sauce for Cheese Fries Dipping those crisp and savoury cheese fries in a great homemade sauce or ketchup will make every customer smile! Ad them to your tapas menus, buffets, burger-nights or whenever a meal just needs a quick, crisp and salty upgrade.
Tip! Suggested serving per person 80-120 grams
10 PERSONS 1 portion/1 glass Tartare Sauce - 3 dl Taverna greek yogurt natural 10 % - 1,5 dl mayonnaise, potentially homemade - 0,5 dl pickles, finely cut - 0,5 dl coarse-grain mustard - 1 lemon, juice and zest hereof - 2 shallots, finely cut - 1 bundle of parsley, finely cut - 1 bundle of dill, finely cut - Salt and pepper
Ketchup for Cheese fries -
1 kg of ripe tomatoes, chopped 1 can of skinned tomatoes 1 big red onion, finely chopped 1 clove of garlic, finely chopped 1 tablespoon of Tabasco or as you like 1 large apple, cut into cubes 1 star anise 0,5 teaspoon of salt 1 cinnamon stick 0,5 dl cane sugar 2 dl apple vinegar
Ketchup for Cheese Fries Place all the ingredients in a pot, but only half of the vinegar. Cook slowly and let it simmer for 30-35 minutes. Add more vinegar if needed. Season with salt and pepper. Remove the cinnamon stick and star anis from the pot and blend the ingredients with a hand blender. Bring to boil again and let it simmer a little, remove from heat and allow to set. Serve when cooled.
Tartare Sauce Mix all the ingredients in a bowl, whisk thoroughly. Serve with the cheese fries.

Cheese fries salad with beans Cheese fries makes your salads more filling, ads protein and crispness to any greens in season. Remember to add a light yoghurt dip for both cheese fries and salad!
10 PERSONS Ingredients - 500 grams of Taverna Cheese Fries - 500 grams of green beans, possibly thawed from frozen - 100 grams of corn/field salad, rinsed - 1 glass of olives to taste - 5 stems of celery, finely cut - 1 bundle of broadly mixed parsley, finely chopped - 3 tablespoons of olive oil
Yoghurt dip - 3 dl yoghurt - 1 lemon, zest and juice thereof - 1 tablespoon of sesame seeds and chili flakes

Deep fry the Cheese Fries directly from the freezer in approximately 4,5-5 minutes until they are golden. Put the corn/field salad and beans in a big dish, add olives and celery and spread the fried Cheese Fries on the salad. Drizzle with olive oil and a sprinkle of salt. Mix the yoghurt with parsley, lemon juice, lemon zest and salt, put it in a bowl and top up with olive oil, toasted sesame seeds and chili flakes and serve with the salad.
