And what seemed like an improvement of the monster in the summer is returning, as predicted, to torture us again as we face the cold weather of late fall and winter. Take heart. We may not be able to hug our loved ones and dear friends this season of joy and light, but we can send them cards and perhaps gifts, as we always have, to carry our affection and let them know they are a presence in our lives. INGREDIENTS:
• 1 1/2 cups heavy cream
• 1/2 teaspoon salt
• 1/2 teaspoon black pepper
• 2 cloves garlic, smashed
• 3 sprigs fresh thyme
• 2 tablespoons butter
• 3 cloves shallots, diced
• 4 large kale leaves, finely chopped (discard stems)
• 2 pounds red potatoes, sliced 1/8 inch
• 2 ounces gruyere cheese, grated
• 1 ounce Parmesan cheese, grated
DIRECTIONS:
Heat oven to 325 F. In small saucepan over medium heat, combine cream, salt, black pepper, garlic and thyme; stir constantly, until cream starts to bubble, 4-6 minutes. When bubbling, remove from heat and stir until slightly cooled. Let cream sit. Heat large (12inch) oven-safe skillet over medium-high heat. Add butter. When butter melts, add shallots and kale leaves. Saute until kale is tender and bright green, about 4 minutes. Turn off burner. Add sliced potatoes to skillet, fanning over top of kale. Use slotted spoon to remove garlic and thyme from heavy cream. Pour heavy cream over potatoes. Cover skillet tightly with foil and bake until potatoes are tender, 75-85 minutes. Remove skillet from oven and turn on broiler. Discard foil. Sprinkle gruyere and Parmesan cheeses over potatoes, tucking some cheese between potato slices. Return skillet to oven and broil until top is golden brown, 5-6 minutes.
YIELD: Serves 4
INGREDIENTS:
• 1 4-pound chicken
• Kosher salt
• 2 lemons, one pierced several times with the tines of a fork and one halved
• Few sprigs each of thyme and rosemary
• 4 large bulbs garlic, 1 per person or portion, ends cut to expose the cloves (keep the hairy root end intact)
• EVOO (extra-virgin olive oil) for drizzling
• Freshly ground black pepper
• 3 tablespoons butter
• 1 cup white wine
• Warm, crusty bread
DIRECTIONS:
Place the chicken in a shallow baking dish. Salt the chicken inside and out and place uncovered in the fridge overnight.
Preheat the oven to 450 F. Pat the chicken dry and fill with the pierced whole lemon, thyme and rosemary. Tie the legs up. Dress the bulbs of garlic with EVOO; season with salt and pepper. Arrange the garlic in the baking dish around the chicken. Rub the skin of the chicken with butter and season with pepper. Pour the wine into the bottom of the dish.
Roast the chicken for 1 hour or until an instantread thermometer inserted into the thickest part of the dark meat reads 165 F. Let the chicken stand for a few minutes on a carving board until just cool enough to handle. Carve the chicken, dividing the white and dark parts and slicing the breast meat on the bias. Arrange the chicken on plates or a platter and top with drippings, juices and the juice from the remaining halved lemon.
YIELD: Serves 4
INGREDIENTS:
• 6 tablespoons butter
• 1 small onion, diced
• 3 medium zucchini, peeled, cut into 1/4-inch slices
• 2 medium peeled carrots, shredded
• 1 can cream of chicken soup (10 3/4 ounces)
• 1/2 cup sour cream
• 1 bag (8 ounces) herb seasoned stuffing mix, coarsely crushed
DIRECTIONS:
In a large skillet, melt the butter. Add the onion, cook until tender. Add zucchini and carrots and cook until tender, about 8 minutes. Remove skillet from heat. Stir in cream of chicken soup and sour cream, mix well. Sprinkle half of stuffing into a 13by 9-inch greased glass baking dish. Spoon zucchini mixture on top, then remaining stuffing. Bake at 350 F for 25 to 30 minutes, until hot and bubbly.
YIELD: Makes 22 cookies
INGREDIENTS:
• 1 1⁄2 cups all-purpose flour, spooned and leveled
• 1 teaspoon baking powder
• 1⁄4 teaspoon salt
• 1⁄2 cup (1 stick) unsalted butter, softened
• 3⁄4 cup granulated sugar
• 1 large egg, at room tempera ture
• 11⁄2 teaspoons pure vanilla extract
• 1⁄2 cup sour cream, at room temperature
Vanilla Buttercream Frosting
• 1⁄2 cup (1 stick) unsalted butter, softened
• 1 1⁄2 cups powdered sugar
• 1 tablespoon heavy whipping cream or milk
• 1 teaspoon pure vanilla extract
• Gel food coloring (optional)
INGREDIENTS:
Cranberry Compote:
• 2 cups fresh cranberries
• 1 cup light brown sugar
To make the cookies: Preheat the oven to 350 F. Line two large baking sheets with parchment paper or silicone baking mats and set aside. In a large mixing bowl, whisk together the flour, baking powder and salt until well com bined. Set aside.
In the bowl of a stand mixer fitted with the paddle attachment or in a large mixing bowl using a handheld mixer, beat the butter and granulated sugar together for 1 to 2 minutes, or until well com bined. Mix in the egg and vanilla extract until fully combined, mak ing sure to stop and scrape down the sides of the bowl as needed.
Mix in the dry ingredients in two additions, alternating with the sour cream. Make sure to mix in each addition until just combined,
and be careful not to overmix the batter. Using a 1 1⁄2-tablespoon cookie scoop, scoop the cookie dough onto the prepared baking sheets, making sure to leave a little room between each one.
Bake for 14 to 16 minutes, or until the tops of the cookies are set and spring back when touched lightly. Remove from the oven, and allow to cool on the baking sheets for 10 minutes, then care fully transfer the cookies to a wire rack to cool completely.
To make the vanilla butter cream frosting: In the bowl of a stand mixer fitted with the whisk attachment or in a large mixing bowl using a handheld mixer, beat the butter for 1 to 2 minutes, or until smooth. Add the powdered sugar, 1⁄2 cup at a time, mixing in each addition until well combined.
Add the heavy whipping cream, vanilla extract, and gel food color ing (if using), and continue mix ing until fully combined.
Once the cookies have cooled completely, spread the frosting on top of the cookies. Store the cook ies in an airtight container at room temperature or in the refrigerator for up to 4 days.
YIELD: Makes 32 cookies
INGREDIENTS:
• 3 cups all-purpose flour
• 1 teaspoon baking powder
• 1⁄4 teaspoon salt
• 1 cup sugar
• 1 cup cold butter, cut into chunks
• 1 large egg
• 1 1⁄2 teaspoons vanilla extract
• 1⁄2 teaspoon almond extract
• 1/4 cup freshly squeezed orange juice
• 1 teaspoon freshly grated orange zest
Crust:
• 2 cups graham cracker crumbs
• 6 tablespoons unsalted butter, melted
• 3 tablespoons light brown sugar
• 1/4 teaspoon salt
Cheesecake:
• 3 packages (8 ounces each) cream cheese, at room temperature
• 1 1/4 cups sugar
• 3 tablespoons all-purpose flour
• 2 teaspoons pure vanilla extract
• 1/4 teaspoon salt
• 4 large eggs, at room temperature
• 1/2 cup sour cream, at room temperature
• 1/2 cup cranberry compote
For topping:
• fresh cranberries
• sugared cranberries
• rosemary sprigs
• whipped cream
DIRECTIONS:
To make cranberry compote: In medium saucepan, bring cranberries, brown sugar, orange juice and orange zest to boil. Lower heat and simmer 10-15 minutes, or until most cranberries burst. Remove from heat. Cool completely at room temperature then transfer to bowl; refrigerate.
To make crust: Preheat oven to 350 F. Butter 8-inch springform pan and line
bottom with parchment paper. Set aside.
In medium bowl, mix cracker crumbs, butter, brown sugar and salt. Press crumb mixture into bottom of prepared pan. Bake 15 minutes. Remove from oven and set aside. Reduce oven temperature to 325 F.
To make cheesecake: In bowl of electric mixer fitted with paddle attachment, beat cream cheese at medium speed until smooth. Add cane sugar and beat 2-3 minutes. Scrape sides of bowl as needed. Add flour, vanilla and salt. Beat 1 minute until incorporated.
Add one egg at a time, mixing until incorporated. Add sour cream and mix 1
minute. Scrape sides of bowl as needed. In medium bowl, mix half of cheesecake batter with 1/2 cup cranberry compote.
Wrap springform pan with aluminum foil and place in large roasting pan. Pour cream cheese and cranberry mixture into prepared pan. Top with remaining cream cheese batter. Place roasting pan in oven and add hot water to 1-inch of springform pan.
Bake 1 hour, 15 minutes, or until cake looks set in center. Remove from oven and rest 1 hour. Refrigerate in pan overnight.
Decorate cake with fresh and sugared cranberries, rosemary springs and/or whipped cream before serving.
DIRECTIONS:
1. Heat oven to 350 F. Line cookie sheets with parchment paper; set aside.
2. Combine flour, baking powder and salt in small bowl; set aside.
3. Place sugar and butter into bowl of heavy-duty stand mixer fitted with paddle attachment. Beat at medium speed until well combined. Add egg, vanilla and almond extract; beat until well mixed. Gradually add flour mixture, beating at low speed until just combined.
4. While removing dough from bowl, knead to incorporate crumbs and form smooth dough. Roll out dough on lightly floured surface to 1⁄8-inch thickness.
5. Cut into shapes with 21⁄2-inch cookie cutter. Place onto prepared cookie sheets. Bake 8 to 10 minutes or until just beginning to brown around edges. Cool on cookie sheet 2 minutes; remove to cooling rack. Cool completely.
Tip: If planning to cut with intricate cutters, chill dough 30 minutes before rolling and cutting. This ensures the cookies will hold their detailed shape.
