Introduction The Independent Brighton & Hove Coffee Guide is designed with many people in mind; the tourists visiting each summer, new students unfamiliar with the city, as well as local residents unable to keep up with the changes to their many lanes, deans, and dials. We hope to promote community over competition, as such their aren’t scores or ratings, just an overview of what each place offers and, of course, the coffee itself. While putting together this guide, we had a hard time deciding which establishments to include. We visited every location inside the guide and many more that didn’t quite make the cut, not because they were necessarily bad but because they didn’t meet our criteria. We have also tried to judge each establishment on what they themselves are attempting to do, whether that is creating the highest quality, artisan espresso, placing an emphasis on more direct trade, a greater effort to make the industry sustainable or focusing more on atmosphere, aesthetics, or experience. East Brighton The eastern side of Brighton is densely populated with excellent coffee houses, cafes, and espresso bars. The establishments offer something of worth to its visitors, and to Brightonâ&#x20AC;&#x2122;s coffee scene in general. Some may simply serve incredible coffee, others may offer peaceful respite or a corner where you can squirrel yourself away on a rainy afternoon. A few even go above and beyond, aware of their environmental and cultural impact on the city and surrounding area. When wandering the many lanes, squares, and dials there are plenty of options for a caffeine fix. Whether searching for a rich body, subtle flavours, a quick take-away, some lunch, or maybe just a relaxing couple of hours with a book, we hope we can point you in the right direction.

The coffee itself was light and delicate. We tried a long black which had an elegant floral flavour, and a pour-over that was excellently paired with a dark chocolate and raspberry tart. The beans we sampled were from the always excellent Has Been Coffee. Lost in the Lanes updates and rotates their coffee on a regular basis, given their high standard, however, this is an exciting prospect indeed.

This can be attributed to acombination of artisan coffee shops experimenting with the format, a shift to more vegan based lifestyles and the rise in popularity of Scandinavian culture in the United Kingdom. So what are the benefits of filtered coffee?

Filter coffee offers a completely different taste to espresso based coffee. The obvious difference is that the liquid is passed through a paper filter opposed to a metal one; this results in almost all the oils being removed from the final product, as well as any micro grinds. Filter coffee, therefore, has a much cleaner, lighter taste and appearance. Studies have shown that drinking filter coffee, compared against other methods, indirectly lowers cholesterol levels, the negative effects of which are well known.

In comparison to capsule machines, the benefits for the environment are in favour of filter coffee due to less energy for production and less waste produced. Filter coffee is easy to experiment with at home and doesnâ&#x20AC;&#x2122;t require an expensive espresso machine. You can range from a simple V60 pourover all the way up to a handmade Moccamaster filter machine.

BEN SZOBODY He’s covered presidential campaigns in America, helped create the World Atlas of Coffee, and now he is developing the next generation of highly-skilled baristas in Brighton, meet Ben Szobody...

Who is Ben Szobody? I’m a former journalist with a drawl - an American who jumped the pond and found a way to turn some of my favourite things, like coffee, into a job that helps people. I used to cover presidential campaigns in the “Dirty South” but now I develop social projects for One Church Brighton. Kind of strange! What are the Pro Barista Courses? Well, Pro Baristas fundamentally exists to solve two major problems. On the one hand, the speciality coffee sector faces a real shortage of skilled staff, and it’s only getting worse. On the other hand, there are tons of unemployed young people

in particular who would kill for one of these jobs. So we offer everything from very lightweight drop-in sessions where you can literally play and develop confidence on our range of coffee machines, all the way up to year-long apprenticeships that come with five certificates from the Specialty Coffee Association. Our most popular course is ‘Barista Foundations Plus’ - it’s the standard Foundations certificate course spread over four sessions, with lots of practice time, mentorship and live bar experience added on. What do you see as the future for the Pro Baristas courses? Wow, the potential for this thing is a bit breathtaking. The goal is to nurture well-rounded brightoncoffeeguide.co.uk 65

people so they can find satisfying careers in coffee. We’ve worked with more than 200 people in the past year. But we still have more cafes asking for baristas than we have baristas. The potential is huge to (a) really change the way coffee companies employ people, (b) substantially alleviate youth unemployment across the city, and (c) improve the quality of coffee across the board, simply by adding trained talent to the labour pool. ‘Cause we all know there are plenty of shops with sweet machines and good beans serving dodgy drinks, right?

Why hold the courses at the One Church? One Church Brighton is the umbrella charity over this project. It’s a real church (there’s a spiritual community that meets together) but it’s also a charity that operates a range of social projects aimed at marginalised people in Brighton, from night shelters for the homeless to meals for low-income families. I’ve never worked in a more inclusive, energetic place - there’s no sneaky religious thing under the surface, and not everyone here is religious. We have this building that I manage in central Brighton where tons of this stuff happens. When I took it on

several years ago, I was just looking up into the vaulted ceilings thinking, “Whoa, what a place to drink coffee.” So I invited my friend Andrew Tolley, who owns Taylor St Baristas, to see it and we hatched a plan to start Pro Baristas. It’s an amazing space in which to do any kind of learning, but especially coffee stuff. Al and Laura from Small Batch have also been crucial in helping us get it off the ground, and all our collaborators are doing it for the broader health of the industry. What are your opinions of the current Brighton coffee scene? Is this where I walk on eggshells

with a demi in my hand? I hope not. Surely we can appraise coffee honestly! (I’d welcome criticism at my usual espresso cart at Florence Road Market on Saturdays.) In general: Brighton coffee is easygoing and chilled, but companies don’t collaborate like London companies do. There’s a lot of mistrust and weird, isolated thinking. As for the roasting, I feel like there’s a big divide - either you’re on the darker side of things (tasty but roasty!) or trying to roast light because it’s trendy but really ending up with grassy, herbaceous results. Sweetness and solubility remain somewhat elusive, for me anyway. As for cafes, there’s just a staggering brightoncoffeeguide.co.uk 67

range there. It’s hard to summarise. But I think that we still have lots of room for a company that can nail killer food, great coffee at high speeds AND brilliant customer service, all three. Do you think the Brighton coffee industry has a social responsibility and are they living up to it? I obviously think that yes, they have a social responsibility, but this isn’t always an obvious point to make. Look, cafes are blamed for gentrification, for the hipsterisation of everything, for stratifying consumers into elite tiers, for being pretty bad at racial and gender sensitivity, etc. So what’s a quality-focussed business to do? I’d argue we need to look out our front doors at the people needing work, and do things differently. It makes no sense to hire your customers - middle-class coffee drink-

ers tend to view these jobs as placeholders, and they top out quickly. But if you hire someone who wouldn’t normally get the chance, then what you tend to get is a motivated, long-lasting, satisfied, durable employee who sees coffee work as a career. It’s worth some up-front investment, it makes business sense AND it meets a need in the city. With a social project like Pro Baristas kicking around, it’s crazy not to think about this. HOT MILK The topic of milk temperature is a surprisingly controversial one, where things can get rather heated (excuse the pun) between customer and barista... 70 brightoncoffeeguide.co.uk

On one side is the office worker who wants that extra heat for the walk back to the office, or the labourer working outdoors on a cold afternoon. On the other is the barista who refuses to “burn” the milk as it’ll ruin the flavour of their carefully crafted coffee. As with most things in life, communication is key. Most artisan coffee establishments will aim to heat their milk to about 65°C which is obviously a lot less than adding milk to a coffee just after the kettle has boiled at home. Around 65°C is where the milk is at its sweetest as the sugars in the milk react with the heat. Going over 70°C tends to burn those sugars, as well as denaturing the enzymes within the milk, giving it a bitter edge and ruining the texture. This isn’t to say that a customer is somehow wrong for wanting an “extra hot” coffee, many don’t know the reaction milk has with the heat, some may not even know entirely what their drink is composed of. There may be better alternatives to a milk based latte or flat white; an americano with hot milk, for example, could suffice if someone just wants a hot, milky coffee and sees that a latte is the closest matching item on the menu. brightoncoffeeguide.co.uk 71

BREW GUIDE Home brewing can be duanting for the beginner but with just a few easy steps you can create filter coffee just as good as a pro barista, here’s how... The specialty coffee scene in Brighton has been going from strength to strength in the past few years with new cafes and roasters popping up on the regular. This has led to a real upsurge in consumer interest and knowledge - coffee is no longer just ‘coffee’. Quality and flavour are what it’s all about. When brewing a V60, there are

three important things to keep in mind: weight, time and temperature. At Twin Pines we generally stick to a 16 gram dry dose of coffee and a 240g yield which will be brewed at 90 degrees, taking 2 - 3 minutes for the full extraction. These numbers are by no means to be taken as gospel. Coffee is all about ratios and the most important thing to keep in mind at this stage is that a V60 will nearly always be 1 part coffee to 15 parts water. Different origins and varietals of bean will require different approaches and brewing techniques. Stage 1: Weigh out 16g coffee, grind it accordingly - somewhere in between espresso and cafetiere (it should feel like fine sand).

Stage 2: Fill your pouring kettle with hot water (90 degrees) and pre-wet your paper filter so it adheres to the cone-drip. This will ensure an even extraction and alleviate the risk of a papery aftertaste. Stage 3: Place the ground coffee on the wet filter and give it a little shake to flatten out the surface. Put it on your scales, zero them and start a timer. Start pouring immediately. Stage 4: Pour 50g water on the dry coffee and wait for 30 seconds. This is called the

â&#x20AC;&#x153;bloomâ&#x20AC;? and releases all the natural oils in the coffee. Stage 5: Pour the remaining 190g of water and wait for the brew to finish. You can either do this pour in stages or continuously - just experiment until you get the results you want. Stage 6: Let your coffee cool down slightly, sip it and enjoy it. AEROPRESS BREW GUIDE

It’s very easy to get swept up in Aeropress competitions and start over complicating the coffee you drink at home. Yet, the key to any home brew is keeping it simple and repeatable. There are a few very basic things that will make your coffee taste better. Use coffee within a month of roast date, use filtered water and grind your coffee to order. However, anything out of these parameters won’t make disgusting coffee, it just won’t be as nice as it once was. I prefer an inverted Aeropress method. Mainly because you don’t get any drips start coming through the paper but, also, as you flip it over you agitate the brew again. With the Aeropress there is no need for a pre-wet and bloom. Just throw all your water on as quickly as you can using the water flow to agitate your brew. 74 brightoncoffeeguide.co.uk

Before you start make sure your kettle is boiled, your Aeropress has your ground dose weighed in and you have wet your filter in the Aeropress cap and you have a timer ready. My go to recipe is: - 13g Coffee - 220g Water - 97° Water Start a timer as you start pouring and fill it all the way up as fast as you can. Put the filter cap on and flip the Aeropress onto your mug at 0:30 giving it a shake to agitate. Then at 1:00 start plunging, aiming to finish at 1:30.
