INTRODUCTION What a year it has been in the world of Brighton coffee. Not only have we seen an explosion of artisan coffee shops opening across Brighton and Hove but we’ve also seen many local shops pushing into roasting territory to great effect. In last year’s guide we featured what we considered to be the very best speciality coffee shops in the city, amounting to 27 in total. However, the eruption of coffee houses over the last 12 months now sees us feature an incredible 52 shops, with many also just missing out. While we’ve seen a fantastic number of additions coming into the city, we’re also sad to see the loss of some, as we say a sad farewell to Point One Coffee, amongst others. The coffee scene is still growing and each year we are finding more and

more impressive shops and roasteries basing themselves in Brighton. We’re also excited with news of the first ever Brighton Coffee Festival in 2019, and we couldn’t be more pleased to be the official media partners for the event. While we wait to see what developments arise in the trends, technology and quality to come in speciality coffee in 2019. We take a look at the future of water filtration in the home as well as storing coffee and the pourover vs batch brew debate. Whether you’re a Brighton-based coffee fanatic or a tourist visiting for the day, we hope this extensive guide into the very best artisan coffee in Brighton can help, inform and, of course, guide you in your pursuit.

More and more coffee shops appear to be opening across Brighton & Hove every day, but Redroaster were one of the first, all the way back in 2000. Situated at the bottom of St James’s Street, Redroaster is Brighton’s original artisan coffee shop. The only organic roasters in the south have been roasting single origin speciality coffee in the city since they began. The location is visually stunning, the high ceilings and marble topped counters combining with the vibrant green foliage to create an incredibly tranquil space. An intelligent design, and a

helping hand by World Interiors Designer of the Year Hana Hakim, allows this famous café to transform into the modern botanical restaurant Pike & Pine, with food prepared by Michelin Star chef Matt Gillan and his team. The cafe showcases their Sanctuary blend, which is the roastery’s most popular blend, and always feature a second seasonal espresso picked by head roaster Rob Ross. With an open plan layout inside, sun-facing seating outdoors and organic coffee on offer, Redroaster is certainly a Brighton institution.

While they may have one of the most impressive-looking espresso machines in the city, it is in the filter arena that the team really come into their element. With a selection of filter options, Twin Pines create one of the best pourovers in Brighton, hands down, so add it to your list and make a trip to Kemptown. Just don’t leave without checking out the stunningly swanky toilets.

Refurbishing an establishment can be a risk, but Ground Coffee House in Kemptown have pulled one off with aplomb. It’s managed to retain a minimalist feel whilst becoming more open and inviting. Ground has a balance in all they seem to do, from their design to their coffee. When you see somewhere offering coffee by the excellent Pharmacie Coffee Roasters you are usually in for a treat. We’re pleased to say that Ground can get the best out of the beans. The long black we tried had bright and fresh citrus notes before slowly giving

Up in Kemptown sits Portland, a charming little coffee shop that can be easy to miss. We spoke to the owner, Philip, who said it had been recently refurbished and that he had a vision for it to be an informal space for people to meet, work, and relax in. It’s safe to say that he has achieved this, with the walls adorned by works from local artists and craftspeople for sale, and regular art classes taking place in the space.

Upon entering The Longhouse Cafe you are instantly met by a clean, open layout decked with ceiling-hanging plants, lively artwork on the walls, wooden chairs and tables, and welcoming baristas. Although the owners have changed since the last edition, we’re happy to say that The Longhouse is still very much worth visiting. Serving single origin espresso from Horsham Coffee Roaster, this fresh-feeling coffee shop is well-known for its sweet coffee with chocolate and nut flavours, and a toffee mouth feel.

The café’s slogan is ‘Born in Brighton. Created by the community. Powered by plants’. With a menu serving 100% vegan food, hanging plants from local specialists Spiderplant, as well as occasional “pop up’s” featuring other local food and drink, this community powered coffee shop is one that shouldn’t be taken for granted. It’s best to keep an eye on social media if you want to keep up to date with all of The Longhouse Cafe’s offerings, with plenty of evening events including their Longhouse Lates as well as pop-ups from the likes of Plant Fetish and more.

Newly opened in the London Road area is a celebration of all things African, the beautiful Africa House. The interior is bright and airy, with plenty of space to work, sit at the window watching the world go by, or read one of the many wonderful books on display. Visitors are encouraged to make use of the space how they wish, emphasised by the adage above the door which reads: “Connect. Conserve. Explore.” We tried a Huge Mt washed Rwandan as an espresso, roasted by the excellent Pharmacie Coffee Roasters,

and were even offered two separate recipes. The rich, punchy flavour made way for a fuller bodied feel as it cooled, but still retained a slight delicious tang. As well as learning that many of the staff went through the Pro Barista Course offered at One Church Brighton, we later found out that the coffee is a charitable collaboration between Pharmacie, Falcon Specialty, and Africa House. From the flavour, to their ethics, and approach to staffing, Africa House are doing coffee the right way, in every way.

Just like its sister shop The Marwood Coffee House, Presuming Ed boasts a distinct style in a wonderful location. It is also a fully licensed bar and venue with a number of drinks on offer, including cans of craft beer. The coffee is silky smooth and works perfectly when paired with a generous portion of carrot cake or a salted caramel brownie. It is clear that a lot of effort goes into milk preparation, with their lattes boasting a velvety texture at the right temperature to drink instantly. London Road has had a bit of a revival over the last year or so, with many quality coffee houses opening within the last 12 months. One of the hidden gems of the area is Phoenix Coffee House, serving locally roasted beans from Lazy Dog Coffee Roasters. We tried their Mellow Lazy Dog Blend, containing a mix of Mexican Finca La Laja and a Peruvian SHG, which was initially chocolatey making way for a nutty aftertaste, with a smooth, balanced mouthfeel. Phoenix Coffee House has a rustic,

retro feel, with old video game consoles sitting atop vintage wooden furniture. As we entered there was a couple playing Tony Hawk’s on the PS2 and the owner Martin was busy making homemade sausage rolls behind the counter. As well as the homemade cakes and snacks, freshly made sandwiches, wraps, and baguettes are also available. If you have a love for coffee, homemade food, and great games, Phoenix Coffee House is a must visit.

The Plant Room Deli is one of London Road’s many new coffee houses and, of all the new additions, the food on offer is some of the best in town. The entire menu is either vegetarian or vegan friendly, and everything is freshly prepared on site. Their vegan brownies pair nicely with the smooth, chocolatey, flavours of their Allpress Espresso beans. If you’re feeling particularly healthy, you can opt for a mixed salad and delicious strawberry and apple tea.

Situated about halfway up Elm Grove is a cosy little retreat bearing The Flour Pot name. As you enter, the usual treats are on display: the shelves of bread in the window, the range of cakes on the counter, the food, the black and white flooring, and the little plants on the tables are all Flour Pot trademarks. The design is a winner as it seems to work in both the larger, more minimalist locations, like The Flour Pot Kitchen, as well as the more cosy, community cafes such as this one. The Flour Pot are relative newcomers to the roasting scene, but we’re pleased to say that they’ve

hit the ground running. There was a nice tartness to the long black we tried, rather than being overpowering, it was subtle, bringing a plum jam, or a black forest gateau to mind. If they grow into their roasting the same way they did their baking, Brighton may have another big hitter in the roasting scene. We’ve mentioned many times that more and more cafes are opening across Brighton and it’s encouraging that there are still many places that are focussing on local communities. It is unlikely that many day trippers will wander up Elm Grove, but to the local residents, somewhere like The Flour Pot is indispensable.

Home to one of the best bakeries in Brighton, The Flour Pot are always looking to improve their artisanal offering, including their coffee selection. This culminated early on in 2018 when the bakery began roasting their own coffee at Small Batch’s Wellington House. Moving on from their previous coffee supplier, Caravan Roastery, The Flour Pot’s house blend now offers a sweet aroma with cherry flavours and a silky mouthfeel. Once cooled it comes to life, creating notes of nuts and especially caramel.

Pelicano’s attention to detail is incredible. The logo that slowly reveals itself in the cup as you drink, the beautifully displayed food, and the wooden boards drinks are served on. It all adds up to a wonderful experience. From the decor to the drinks, there is clearly a philosophy behind everything they do. The coffee is the real star, though, roasted in the basement during the early hours of the morning, it doesn’t get much more local than that. Anyone who’s walked down the busy Kensington Gardens street in the North Laine will know that sometimes you just need a small respite from the crowds. Luckily, Jolliffes offers this. If you decide to duck inside, you’ll be greeted by a surprisingly spacious location. Set out over two floors, Jolliffes brings Scandinavian sensibilities to mind but not the sleek functionality of modern IKEA furniture, but a warmer feeling. Classic wooden furniture and boarding, chalet styled, with woollen decorations. The walls are also adorned with art for sale. It reminds

of Tove Jansson’s Moomins, or Bergen in Norway if you’re lucky enough to have been. Fortunately, Scandinavia and coffee go hand in hand. On their espresso machine Jolliffes serve coffee from local roasters Redroaster, which creates a smooth offering that works well as a black coffee. The cakes available are what will catch the eye, with a number of fantastic options on offer. A coffee and a cake from Jolliffes is the perfect cure when those weekend crowds prove too much.

On Jubilee Street, located on the ground floor of MyHotel, is Small Batch’s flagship store. With a fully glass front, it is bright and busy with an obvious buzz within. Looking in, the four-seater brew bar is what is most eye catching, with four Hario syphon filters often bubbling away. V60 pourovers are also available, offering single origin coffee, and the baristas will do their very best to answer any questions you may have about the current bean or brewing method.

As with all the Small Batch stores, on their espresso machine they offer their house blend, the Goldstone Espresso which, like the single origins on offer, changes with the seasons. On their batch brew is the Blue Note filter blend, a great option to take-away as there’s no waiting around for it, just pay, fill up, and go. Cool in summer and warm in winter, with wide-stretching windows covering the entire front of the café, it is the perfect spot to sit down and watch the world go by.

It’s always intriguing when a new coffee shop opens up out of the blue. Some are great additions to the scene, others not so much. Luckily, Blackbird isn’t just a great addition to the scene but one of the best in all of Brighton. Located in the South Lanes, directly opposite a Costa, the small shop makes a large statement. As we entered, we were greeted by the friendly Zeynep, who was happy to talk about all things coffee related. On recommendation, we tried a Honduran Geisha on Aeropress and an espresso. The Geisha was smooth and delicious,

The introduction and expansion of The Plant Room across Brighton (and Portslade) over the last couple of years has been a welcome one. As new locations pop up, it is important to recognise the Brighton Square location as the starting point, and the transformation it has taken. A breathtaking location and great coffee has always been a winning combination, and The Plant Room at Brighton Square has both. Within, the shop is adorned with plants, pots, and pictures. There are stools, plug sockets, and free Wi-Fi for those who wish to work, and

sofas for those that don’t. Outside, the extensive seating stretches over Brighton Square and is the perfect place to spend a sunny afternoon. In terms of coffee, The Plant Room serves Allpress on both espresso and filter. We’d recommend asking what is on the batch brew, as there’s usually something interesting and surprising. The food offering is stunning, with almost everything on offer vegan, and the wide range of teas also worth trying. In short, The Plant Room seem to be doing everything the right way, and Brighton Square is where it all began.

The Flour Pot Kitchen is a slightly different take on a traditional Flour Pot; as well as the usual breads, pastries, and cakes is a full menu offering artisanal pizza and seasonal dishes.

Since launching Ground Coffee House in 2009, the Kemptown coffee shop has become a community staple, serving high-quality coffee to locals ever since. Situated on the Brighton & Hove border, as you enter the Seven Dials Flour Pot you’re greeted with a bright and clean layout, with a wall of pastries and bread on one wall, and seating spreading across the shop-front windows on the other. Their espresso is made with The Flour Pot-roasted beans, which creates notes of nuts and plums, and with outside seating, warm blankets and great coffee, this is a great spot to watch the buzz of businesses and the local schools go by.

The upscale aesthetic of the interior is striking as soon as you enter; exposed brick walls, vintage wooden counters, chic lighting hanging from the ceiling, and quirky ornaments, that include a

table-top telescope, all combine elegantly to create a luxurious shop layout. This, however, doesn’t take away from the coffee at all. Serving Square Mile’s Red Brick blend on their Sanremo espresso machine, the coffee offered a creamy mouthfeel with rich, fudge-like notes before giving way to flavours of orange and brown sugar as it cooled. With an eye for detail and a focus on quality, Okka is a worth a trip outside of the city’s centre. Just make sure you know where you’re going.

Offering a lemon zest aroma from the off with a silky mouthfeel, it produced a sweetly tart flavour initially before really coming to life as it cooled, with notes of pear and orange leaping on to the palette, reminiscent of a fruit tea.

Anyone who’s seen the 1980s sitcom Cheers will be instantly familiar with the Small Batch at Norfolk Square’s layout. The ‘bar’ sits in the centre of the room, with seating dotted around the surrounding area. The former bank is bright and airy, with a high ceiling, and good outside space. During our visit we tried an espresso from Strangers Coffee using their Fine City blend, which produced a super sweet aroma before creating notes of pear and citrus, cooling down to reveal berry flavours and a creamy mouthfeel that coasts the mouth to reveal a very balanced coffee. With picturesque views, great coffee and a relaxed atmosphere, this is just what the area needed. Pay a visit and find out for yourself.

Of all the Small Batch locations, their Wilbury Road shop is easily the cosiest. Just off from Church Road, it’s like a home away from home. The first thing you’re greeted with is the beautiful outside decking which is a perfect sun-trap in the summer. When the weather is a little less agreeable, the comfy indoor seating makes the Wilbury Road Small Batch the ideal spot to catch up over coffee or get all the caffeine you need whilst working.

In the last 12 months we’ve seen an explosion of artisan coffee shops opening in Hove. This has only improved the quality on offer in this area, and one such new addition in 2018 was Hixon Green Coffee & Wine Bar. As you approach you’re struck by the vivid charcoal blue of the building’s exterior, with bold white lettering standing out from this facade. Outside, wooden slats line the benches, tables, walls and ceilings, while tiles line the floor. Coffee and cycling. Two pursuits that define the typical Brightonian. However, in Brighton and Hove we’ve lacked a shop which is dedicated to both speciality coffee and the maintenance and upgrading of bicycles to a high level. Well, that is, until we made our way to Cafe Porteur in West Hove. Upon entering Porteur, you can’t help but enjoy the aesthetically-pleasing layout: wooden slats line the counter, rustic scaffold board dining tables extend out from the walls, which themselves are bedecked with cycling hats, water bottles and cycling-centric posters. On the coffee front, Porteur serve Pharmacie beans on their machine, which offers a smooth and fruity espresso and upholds the high standards set by Pharmacie at their own shop. There’s a selection of home-made food on offer too and, with seating inside and out and all the coffee and live cycling you could want, this is perfect for fans of great coffee, cycling, or both.

espresso, and Treacle & Ginger prove their attention to detail is top notch with their service. This homely shop is a relaxing place to spend some time while looking out at the busy Church Road, and the contrast between the hustle and bustle of the outside and the peaceful nature of the cafe is pleasant to experience. If you find yourself wandering into Hove, or live nearby, do yourself a favour and take some time out of a day to experience it for yourself.

Offering notes of cranberries and raisins initially, this coffee then cools to produce flavours of pear, cocoa and butterscotch with a silky mouthfeel. Although not large in size, 44 Poets never feels cramped and, with expansive windows stretching across the front of the shop, this is a great place to enjoy fine coffee and watch the world. Although a number of coffee houses have opened up, Small Batch is the only roaster in the area, and we wouldn’t be surprised to see others follow suit. To say that Wellington House is spacious is a bit of an understatement, there is a full sized shipping container

in the middle of the warehouse. Most of the real estate is taken up by equipment, but there is ample seating. The first thing you’ll notice is the smell of coffee roasting, which is obviously a bonus to any coffee lover, and watching the roasting operation in action while enjoying the same beans is something worth savouring. On a sunny day, the outside seating is lovely, with a nice view of the river Adur. The smell of the coffee roasting mixing with the fresh air is a treat to all the locals and visitors alike.

Pelicano has been a mainstay of Sydney Street for a number of years now, but have only recently moved their roasting operation to the site. We spoke to the owner, Zephir, about how he and his wife, Sol, ended up back in Brighton and why they decided to open a coffee house and roastery.

One of the reasons The Independent Brighton & Hove Coffee Guide exists is that we believe in the values of the Brighton coffee community, those values of local businesses supporting each other, creating an inclusive and friendly atmosphere for staff and customer alike. We were lucky enough to spend some time being shown around Pelicanoâ&#x20AC;&#x2122;s operation by manager Sam, and we can safely say that these values hold true.

Founded in 2014, by husband and wife Zephir and Sol, Pelicano is a modern family-run business. Zephir runs the day to day operations, and Sol is in charge of all the art and design for the business. Zephir is a “Brighton boy through and through” in his own words, and returned to the town to open up Pelicano after meeting Sol. “I met my wife Sol (from S. Korea) on a pear farm a couple of hours from Melbourne, we both had a pretty rough time on the farms, we learnt two things we hated working for big companies and we both missed working with coffee. We always wanted to build a culture around Peli where we actually enjoy coming to work day in day out. “I see so many people working in hospitality and not having a good time that’s just not what it’s about! Our staff

really are our family. At our wedding there was more Peli fam than blood family!” Everything at Pelicano is done on site. In early 2018, they moved their roasting operation into the basement of their cafe, upgrading the roaster in the process. They roast their house Smokey Bird Blend, as well as a number of directly sourced single origins, in the early hours of the morning on Monday. Each bag is individually hand stamped with one of Sol’s unique designs, then either sent upstairs for retail within the cafe, or hand delivered by head roaster Adnan the very next day. Pelicano use a refurbished Royal Mail post bike to deliver all their coffee to various establishments around Brighton, continuing that personal, hand crafted touch from the beginning of the roast, to holding fresh coffee in your hand the

next day. Pelicano supplies many local businesses and, as well as the coffee, each place they supply gets their own hand crafted, and hand stamped, design on the bag. Most of the coffee roasted on site, though, is used on site, and you don’t get much more local that your own basement. Pelicano has evolved from serving various guest roasts, to their own roast from a small site in Southover, to the cafe location itself. This ensures that the coffee is at an optimal freshness when served. In our review, we wrote that Pelicano’s attention to detail was incredible, it was interesting to find out the origin of the decor, “In many ways it was planned to a T and in other ways it was organised chaos,” explains Zephir. “When we got the keys to the shop we told ourselves six weeks and we’d be open. It took six

months! Without a large budget we did all the hard graft ourselves - from stripping walls of 22-year-old grease for 20 hours straight to laying floor boards found off a skip till 4am, it was crazy but with help from a lot of friends we finally opened!” With a new roaster in operation, it’ll be interesting to see what the future holds for Pelicano, but we can safely say that with a community focus, they’re doing things the right way. THE FILTER DEBATE What makes the perfect filter cofffee? The taste? The ceremony? The speed? The smell? Or does it simply come down to your trust in a machine or a barista? We put the argument to two of Brighton’s best baristas to see what they had to say on the matter...

THE POUROVER

Steve Hutton, Owner, 44 Poets Pourover coffee is about the art, and skill, of hand brewing coffee without machinery. Hand brewing is ritualistic and soothing, yet precise and simple - and this is reflected in the taste of the final cup. Hand brewed coffee gives the barista total control over grind coarseness, water temperature, pour rate and nothing can beat the human eye and experience for precision. Let’s compare hand brewed coffee to a skilled chef working with only the freshest seasonal ingredients and a gas stove - no trickery or gadgets here! The visual bravado of pourover coffee also im-

presses and inspires customers to learn more about the coffee they are drinking, engage with the barista, and sneak tips for home brewing. Hand brewed coffee changes people’s perceptions on coffee and this is something at the core of speciality coffee - great hospitality and a personal touch, and nothing is more relevant to this in coffee than a conversation between a barista and customer during the brew. We have to hold onto traditional brewing methods that differentiate independent coffee shops or we let the automated systems and equipment take over the fine art of brewing someone the perfect cup of coffee. It’s a slow process, but the result justifies the means, and like all good things in life, sometimes you just have to wait a little longer.

THE BATCH BREW

Jacob Rubio, Assistant Manager, Bond St. Coffee Batch brew is becoming increasingly popular in cafes, and with the increase in popularity comes a great step up in the quality of coffee. No longer is batch brew an afterthought; brewed and left in the pot for hours on end, getting old and losing flavour. It is now an exciting and delicious way of enjoying coffee, an alternative to a quick flat white, or a long black. Baristas can find superior consistency in their brewing, thanks to programmable machines that can store numerous profiles for different coffees. This means they can serve stunning filter coffee day to day, week to week. You no longer need to wait for ten minutes for an average, disappointing pourover (weâ&#x20AC;&#x2122;ve all had them). Batch brew is now at the flip of a tap, ready to be enjoyed right away. Many shops operate a high turn around routine for filter so there is always fresh coffee available. Cafes are incredibly busy environments, and baristas constantly have 1,000 things to do. Having someone stop everything to make me a pourover amidst the madness feels like a recipe for disappointment before they have even begun. Next time you are at a cafe that is in the middle of a rush, order yourself a batch brew and watch it arrive to your table in moments. Relax and enjoy a beautifully extracted coffee that is just as tasty, if not better than a pourover.

WATER FILTRATION Words By Lawrence Goozee

In my mind, the most neglected aspect regarding the taste of coffee is water. It is, behind the origin, the most significant influencer on taste, rivalled only by the roast. When home brewing, this explains why all too often your home filter may taste flat and dull, compared to when it was vibrant, acidic and exciting at your favourite coffee shop.

THE PROBLEM In short, the two main components of water which influence how your coffee extracts, and therefore tastes, are calcium and magnesium. Generally speaking, â&#x20AC;&#x153;hard waterâ&#x20AC;? is predominantly composed of these two elements. The more calcium and magnesium in the water, the harder it is. This is the total hardness. Hardness for coffee extraction is good, as these minerals extract flavour from the coffee. However, this is true only up to a point. Too much hardness extracts too much

from the coffee, resulting in that dreaded flat, dry cup. At this point, you may be inclined to use home filtration systems, such as the jug styled filters offered. Though, the bottom line is that they treat all water the same, failing to take into account how hard your water is. In short, hard water needs more treatment than soft water. Secondly, they also tend to drop the PH of the water. For the Brighton and Hove coffee drinker, this is not good news.

THE SOLUTION All is not lost. There are solutions!

Use bottled waters which have a total hardness and are optimised for brewing. Whilst I generally discourage buying bottled water, the convenience of using them is appealing. Of the major brands, our favourites are Waitrose Essentials, followed by Tesco Ashbeck.

Speak to your favourite roastery. Whether they realise it or not, the process of roasting is really one of making coffee taste good with a given water. It is very likely that this will differ from yours. Ask them about their water, or, better still, bottle some of their water and take it home with you! In my experience, they are always happy to help you get the most from your coffee.

Make your own water - bare with me! The process is really simple and cost effective. You can buy distilled water and add the components yourself. These recipes can then be tailored to fit guidelines such as those proposed by the SCA (Specialty Coffee Association), or by Water for Coffee (Colonna-Dashwood, Hendon). Support Peak Water; a kickstarter from Maxwell Colonna-Dashwood. These are home style filtration jugs with the sensibilities of far more expensive filtration systems, like that of the reverse osmosis system. This will, by far, be the most cost efficient and most practical way of achieving optimal parameters for brewing. As co-author of Water for Coffee; he really is the leading voice on the matter.

From the food to the design, The Plant Room is a celebration of all things plant based. We wanted to find out the inspiration behind this, so talked to the owners, managers, and chefs across the many stores in order to delve a little deeper into The Plant Roomâ&#x20AC;&#x2122;s philosophy 92

The link between a cafe and its food is clear, with the menu on offer often reflecting the tastes of the surrounding area. With Brighton being home to a much higher number of vegetarians and vegans than the national average, many establishments offer meat and dairy free alternatives. The Plant Room, though, is head and shoulders above the competition with its plant-based offerings. Nearly every single item on the menu is vegan, with the few that aren’t being vegetarian. The relationship between the name, the food they serve, and the plants adorning the walls is an obvious one, but it shows a clear philosophy behind the decision making process. The design of the stores is both cooly minimalist and inviting. As owner Alexx explains. “Design has always been key to what we do at TPR, and when approaching the decor we were keen to avoid the ‘indus-

trial, shabby chic’ stereotype of so many speciality shops. I’m strongly influenced by the clean yet organic forms found in Danish design.” Established in 2016, The Plant Room now has multiple stores across Brighton and Hove, with a new focus on food coinciding with the opening of The Plant Room Deli on London Road. The food has gone from strength to strength over the last year, and has really become the star of the show. From the new additions of a warming homemade soup of the day and deliciously comforting celeriac mac and cheese, to the range of cakes and brownies, everything tastes great. The food isn’t just great for vegan food, it’s just great food. “The Plant Room opened as a vegetarian coffee shop which is something we’ve always stuck to...but if we can make something vegan without affecting the taste we will do.”

The original store, at Brighton Square, has undergone radical transformations since its initial opening in 2016. “The first Plant Room grew out of, and eventually took over from, our homeware shop. After becoming the star of the show at Brighton Square we decided to pivot further into the coffee world and within a year we’d grown popular enough to open a second location on Boundary Road, with the Deli following soon after that.” The most recent change is the introduction of a fully working kitchen to coincide with a fresh new seasonal menu. Their Head Chef said, “We like to move with the seasons and whatever veg is in the limelight at that time. I GOT TO BAG IT UP If you work in coffee, some of the of the most common questions you’ll be asked are about how to store coffee. How long does it last? Should I put it in the fridge? Can I freeze it? How should I store it? As with most subjects related to coffee, there are many different schools of thought around the issue, so we thought we’d try and explain what affects coffee when it’s stored, and hopefully answer any questions in the process.

“IF YOUR GROUND COFFEE IS IN A COMPLETELY AIRTIGHT CONTAINER, THERE IS NO REASON WHY YOU CAN’T STORE YOUR COFFEE IN THE FRIDGE OR FREEZER” How long will my coffee last? This is probably the most common question and the answer has many variables. The most obvious one being if the coffee has been ground or not. There is no convenient “best before” date on a bag of coffee, and it doesn’t really go off like other perishables. It is much preferable to keep your coffee as beans, ideally in an airtight container in a cool dark cupboard, and then grind enough for a single cup when you need it. As beans, the optimal time to be drinking is about 4-7 days after the roast date, then after about two weeks the taste will flatten a little, but will by no means be bad or go off. We’ve drunk coffee that has tasted fine over a month after roasting. If the coffee has been ground, that is a different question altogether, and leads nicely on to the next question. Should I put my coffee in the fridge? Can I freeze it? You’ll have probably been told to never put your ground coffee in the fridge, and that is correct to a certain extent. The reason you shouldn’t keep your coffee in the fridge is because ground coffee is hygroscopic, which is just a fancy way to say that coffee absorbs moisture from the air. It’s what means coffee can dissolve into water and become a drink, and also means that almost as soon as you grind your coffee it begins to lose its flavour. If left out in the open, ground coffee will oxidise and go stale. If you put it in the fridge, the coffee will absorb all the moisture it can and start to go bad. Hygroscopic substances absorb odors and, when it comes to coffee, that affects the taste. If you have a bag of coffee in

your fridge as well as an onion, for example, your coffee would taste more and more like onion the longer it is in there. On the other hand, if your fridge smells bad, you can put some coffee in there to neutralise the odor! If your ground coffee is in a completely airtight container, there is no reason why you can’t store your coffee in the fridge or freezer. If you choose to do this, I’d recommend splitting up the coffee into smaller portions, as each time you take it out and open it up, you’ll expose the coffee to a large amount of moisture. How should I store it? So we’ve mentioned two of the things that majorly affect coffee - moisture and oxygen. There are two more factors that are equally important - sunlight and heat. Heat is an obvious one, if you leave food or drink out at room temperature, it goes off quicker that if it’s cold. Molecules move faster the hotter they are, therefore deteriorate quicker. Sunlight, or light in general, causes something called photodegradation. It is the same process that causes the colour of something to fade when left in sunlight. In coffee, the light causes compounds within the coffee to degrade, which affects the taste. Put simply, it makes the coffee go stale. Science aside, how should I store my coffee? Store your coffee as whole beans if you can, in an airtight, opaque container, and put it in a cool dark place. If it’s ground, you can follow the same rules. Freezing it will keep it fresher for longer, but portion it into small amounts to avoid contamination.
