Sustaining life on a habitable planet isn’t only about solar panels and wind turbines, in his view, but about whether humanity can become better and wiser in time to avoid a climate catastrophe. How To Win Our journey into veganism began a couple years ago when our daughter had us watch a Netflix film “Cowspiracy”. The movie exposed us to the cruelty and horror of animal farming and the dairy industries. So we began the vegan journey and now are more focused on whole food plant based eating. So, without a crystal ball, now is better. Vegan alternative to mac & cheese:
Butternut Squash Macaroni “Cheeze” Ingredients: 2 cups peeled and diced butternut squash 1/4 cup soy milk or any unsweetened plant milk 2 tbsp extra virgin olive oil or water 4 tbsp nutritional yeast 1 tsp onion powder 1 tbsp lemon juice 1/2 tsp garlic powder 7 oz pasta of your choice 1 or 1 1/2 tsp sea salt Fresh parsley for garnish (optional) Instructions: Steam the butternut squash for about 10 minutes or until it’s soft. We place a steamer basket in a pot, add some water and when it’s boiling we add the squash and cook it over medium-high heat. You can also boil or roast it. Place the steamed squash in a blender with the rest of the ingredients (except the pasta) and blend until smooth. Cook the pasta according to package directions. We don’t add any salt, but it’s up to you! Cook the pasta while you’re steaming the squash, that way you’ll save some time. Mix the pasta and the sauce in the pot. We love to add some fresh parsley on top, even bread crumbs, but it’s optional. I have put kale into pasta pot during last minute of cooking. Store it in a sealed container in the fridge for up to 4 days or even freeze it. You can reheat this amazing dish, but add some milk because the sauce probably will be so thick. This has become one of our family favorites!

Environmentalists say that one of the best things you can do for the planet is to stop consuming animal products. That means no dairy either. Ideally, you would not buy leather goods either. Practically speaking, it is enough to go meatless much of the time, at least several meals a week. Try soy-based and almond-based alternatives to milk. Whatever food you buy, try to buy local and organic food. While the health and environmental benefits of buying organic are somewhat in dispute, the value of buying locally or regionally is not. Last year we planted our first backyard garden and discovered it takes more than seeds and dirt and water! We also learned critters are not into sharing ... a lot to learn. If anyone has thoughts or ideas we would love to learn and share. Maybe there are community gardens in the area people can be a part of or even start a community garden. How we eat and what we eat is our 2020 sustainability resolution; what is yours?
