Tea variety

Varieties of tea vary according to their origins and the way leaves are processed. Leaves teas have a limited production, apart from Darjeeling, particularly smooth and aromatic. The whole leaf teas are among the most well-regarded ones, not only because its process reduces its quantity, but also because of the gentle taste of the final beverage.

Nowadays, broken leaves teas make up the biggest share of tea production. Such kinds tend to be strong, with a striking flavour and a tanned colour.

Fannigs and Dusts are usually utilised for teabags; they are at the last leaves selection level. Their structure gives to the beverage an intense colour and a strong flavour in a short time.

In a vast country like China, different qualities and varieties of teas exist, classified with specific denominations. Chinese tea categories are six: Black Tea (fermented), Green Tea (non fermented), Oolong Tea (half fermented), White Tea, Pressed Tea and Flavoured Tea. Black Tea, with an intense and full bodied fragrance and with a red colour, could be divided in two groups: Congou (dark Chinese Tea) and Broken Graded Tea. Every variety presents its own characteristics influenced by plantations origin, climate, land and breeding. Keemun Tea is renowned especially for its particular orchid fragrance.

Green Tea comes from the same plant but it doesn’t undergo any fermentation process. That’s why it has no nervines and tastes bitter than the Black Tea. Best green teas come from mountains leaves: one of the most popular is Gunpowder tea, that grows on the hills around Shanghai region.

Green Tea is healthy: Japanese research have proved its capacity to strengthen the immune system, to encourage blood pressure lowering, to have a positive effect on cholesterol.

In order to get the best from Green tea benefits, it’s necessary to pay attention to because a bad infusion could “burn” the leaves and disperse all its features.

So it’s recommended to infuse the leaves when water reaches a temperature of 70°C and not warmer, and to leave the leaves max. 2 minutes.

Oolong tea is commonly considered a natural medicine among the Chinese families. It’s perfect to support digestion, it regulates the intestinal activities and if it’s constantly drunk, it helps to slim. Its leaves colour is tanned and the infusion is dark. Its flavour is strong and full bodied.

White tea is probably considered the most precious variety. Only the final gems of the tea plant form this quality. The harvesting and the processing are accurately followed to offer a first class infusion.

Pressed tea is obtained from green or black tea powder. These tea leaves grow in the Yunnan province, on south western China. The most popular pressed tea is Tuo Cha: it has a nest shape and its flavour reminds musk. The necessary quantity for the infusion is removed from the nest-shaped b with a spoon and the remaining part has to be conserved in a dry place without odours.

Flavoured tea is obtained blending green or black teas with essential oils, flowers or fruits. The most famous flavoured teas are Earl grey tea, with a sour bergamot taste; Jasmine tea, where jasmine flowers gives to the tea a delicate fragrance and perfume; and Rose tea in which rose petals soften the strong tea leaves taste. Flavoured teas are very well-regarded, even if their attractive fragrances hide the characteristic tea flavour.

Black and green tea 2202 ASSAM Black Indian tea that grows in the Dibrugarh district, situated on the north side of Brahmaputra. Its leaves are perfumed and distinguished by many golden tips and they offer a dark infusion that smells of fresh white bread.

The taste is lightly spiced and malted.

The plantations called Chaicha grow in the Fujian province where are known as “white peonies”. After the harvest the leaves are dried under the sun or in closed rooms without other technical supports. Flavoured Fruits Tea Blends

Around the half of the last century, in central Europe and mainly in Germany some laboratories decided to study the possibility to create new drinks good to be drunk hot and without stimulating effects. The conclusion was that through the fruit infusion was possible to reach this target. So they were discovered the fruit infusions.

At the beginning the base ingredients were apple pieces, hibiscus and rosehip, but during the years original and sometimes also extravagant mixes of fruits and herbs have been created.

Today it’s possible to find thousands of combinations, cause quite unlimited is the fruit offer. Fruit infusions can be drunk by everyone and sometimes they are preferred to the fruit blended teas because in them the taste is higher and then they are completely caffeine free.

Ceramics Ceramic is an ancient traditional material composed by materials inorganic, non-metallic, molded at room temperature and consolidated hot. It is composed by clay, feldspar, sand, iron oxide and aluminum. This composition ensures that the ceramic is constituted by fine crystals and flattened; the shape of the crystals, besides, gives to the clay used for the manufacture of ceramics a certain plasticity, which is reflected in the ease machining. The ceramics are divided into: CERAMICS COMPACT who have very low porosity and good qualities of gas and liquid impermeability and they don’t leave scratch from a steel tip. Stoneware and porcelain belong in this group. POROUS CERAMICS are made of a soft paste and absorbent, which is left by a scratch steel tip.

Earthenware, majolica and pottery belong to this group .

The first ceramic artifacts are dated to the Neolithic period, when the first clay objects (bowls, vases, etc.). were cooked directly over the fire. The oldest artifacts were discovered in Japan on the island of Kyushu and date back to the eleventh millennium B.C. In late medieval pottery began to be produced ​​with the lathe, baked and sealed with a glaze.

After the thirteenth century the use of other colors and decorations made the processing more complete.

Porcelain, who is the most valuable, was called “white gold”, and differs from other materials because it is a very hard ceramic, translucent, compact, waterproof, and resistant to impact and heat. These properties are due to the composition of the mixture consisting in kaolin, quartz and feldspar.

Porcelain was invented in China around the ‘VIII century A.D. and is characterized by a technique of processing and cooking very advanced. Chinese blue and white porcelain was made ​​in the fourteenth century under the dynasty Ming, manufactured in very wide quantity to meet the growing Western demand.

The porcelain bones, also known as English Bone China, is named for the bone ash or phosphates introduced in major proportion in the mass, which comprises kaolin and pegmatite (mineral formed from quartz and fedspato).

The pegmatite (cornish stone) is extracted in England Cornwall. In this porcelain the percentage of kaolin is considerably less than that used for hard porcelain, and also the cooking temperature is significantly lower, as a property for the tender porcelain. The Bone China is shining already after the first firing (1240/1280 ° C) and has a degree of transparency higher than that of porcelain. Glazing with a window-based Lead is carried out at a temperature from 1000 ° to 1125 ° C. The productions based Bone China began to invade

the British markets in the mid-1800s, in full Victorian age.

From the beginning, the subtle and almost transparent porcelain were appreciated by the rich and middle class, who decided to replace traditional porcelain dinnerware with new processes in Bone China. Even today this material occupies a position of connection in the market, especially for what concerning services and tea accessories.

SOME SPOTS Porcelain and ceramics must always be washed separately, never together with aluminum products are used to wash the sand base.

For a normal wash it’s recommended to use a soft sponge and hot water (about 60° C) with a small addition of a good detergent. It is better to avoid putting porcelain or ceramic objects directly on the fire.

High temperatures aren’t harmful, if they comes slowly in the oven, but then it is necessary that the cooling takes place in a gradual manner too.

Be careful to submit ceramic and porcelain into significant and rapid temperature changes. Breakage may occur if you pour too much cold water in a too hot container, or vice versa.
