Ivano-Frankivsk operating in the format of a public restaurant, which directs 80 % of its net profit to support public projects in the city. This establishment is more than just a restaurant. Here, one can enjoy a delicious meal, as well as pitch their presentations, discuss ideas, find like-minded people and support for their project. Also, read a book or buy something in the store.

The restaurant is a place to meet different people, but there is one thing bringing them together – a proactive approach to life. Urban Space 100 is a meeting place for passionaries – those who would like to see their city comfortable, modern, in line with the interests of the community and the principles of sustainable development.

From ide ide From The idea of Urban Space 100 belongs to the

Teple Misto platform, which promotes the development of Ivano-Frankivsk city initiatives and synergies between them. The concept of the public restaurant provided that it would be an establishment for visitors to come for inspiration, communication, search for like-minded people, and to promote the development of the city by providing support to active residents and initiatives.

Yurii Fyliuk, founder and head of the Teple Misto platform: Once, I went to a coffee shop with a couple of my friends and partners – someone came up with the idea of a public restaurant – with several founders, which would generate income for the development of the city. Since we already had the experience of running a restaurant, we developed a model and realized that the project could be effective. The idea originated very organically: my colleagues and I travel a lot and are inspired by foreign experience. To some extent, an urban restaurant in Bratislava was one of the prototypes for Urban Space 100.

The team of the Teple Misto platform took up the idea and managed to gather people and businesses ready to join the creation of a public restaurant. They found the premises, renovated them – and on 27 December 2014 Urban Space 100 opened its doors welcoming the first clients. 5

urban environments, an example of coalescence of citizens around a single idea – the development of the city. The public, social value of the restaurant is manifested in several aspects and is related to the goals of the establishment: creation of a transparent trust fund designed to finance social projects and startups aimed at city development creation of a physical platform for activation of the proactive cluster of the city, which gives impetus to initiatives and preserves the dynamics of their development bringing together 100 socially active people willing to invest in the project and allocate funds to sponsor other initiatives It took six months from the presentation of the idea to the opening of the establishment, namely: the search for the founders campaign took 85 days the search for the premises – 3 months the renovation of the premises – 2 months 7 days 6

The arrival of Urban Space 100 is the result of combining the efforts and resources of a number of people and teams:

100 patrons-founding members irrevocably invested their own funds in the creation of the establishment â€“ US $1,000 each. They have the right to choose public projects to be financed as part of the restaurant`s grant program Teple Misto platform launched the project, conducted a promotional campaign to find founding members for the establishment, organized its opening, and now provides management of the grant program 23 Restaurants company, which manages the establishment, provided the technological component, concept development, recruitment, menu development, launch of the restaurant at the initial stages of the project a number of Ivano-Frankivsk businesses entities supported the project at the start, providing the necessary services or materials free of charge or at cost price. Those were Knaipa PRO, Webmil, Soboleva_Storozhuk Interior Design, Kleydesign, Bukvica, Maliarnyi Dim, LEV, Kerambud, LEX Consulting, NetGroup, MJoy Multimedia, Tavita-Uspikh, Chysto IF, KICKIT Art Studio, etc.

The idea of a public restaurant was covered on the Urban Space 100`s page on Facebook. The project refused to use commercial advertising. Yet, it was actively covered in the media.

One of the first steps was to develop a promotional website – with 100 vacant spots for co-founders. When the idea was presented at the press conference, the owners had 7 spots – those were the friends of the project initiators, who immediately decided to support the idea. 93 spots remained vacant. When new people wished to join the project, their motivated profiles were put to a closed vote among the already gathered founding members. In less than 3 months, the necessary hundred was formed. All founding members are members of the Urban Space 100 NGO. Every quarter at the General Meeting in the restaurant, they hear the financial report of the restaurant company, the report on the implemented projects supported under the grant program, and vote for new public projects. The founding members make no decisions on the operational activities of the establishment (this is the area of responsibility of the management, i.e. restaurant company), but have the right to change the restaurant company in case of non-profitability of the establishment. Andrii Chernikov, co-founder of Urban Space 100: 2014 was quite dramatic and uncertain (in 2013–2014, the Revolution of Dignity took place, then was the annexation of Crimea, outbreak of the war in Eastern Ukraine), but at the same time it was a period of change, a window of opportunity. As well as many other people I felt the need to unite. The Urban Space 100 initiative attracted me with its ambition. At the time, a thousand US dollars was a pretty sum for me, we launched a big project. Urban Space 100 is already associated with many memories for me. We felt the first advantage as soon as we decided to open at six in the morning. At first it was totally unprofitable: no one had any idea that the restaurant could be open so early in the morning. But I made it a habit to wake up early and visit the establishment – I was coming every weekday for three months. The second advantage: the restaurant is a point of accidental, or rather casual encounters. One comes in and will always notice someone with whom it would be possible to start a conversation, share thoughts and impressions. At one point, Urban Space 100 became the default meeting place. The third advantage: it is a highlight of the city, a discovery for visitors. Ivano-Frankivsk is known for Urban Space 100, which is very pleasing. 10


Business

As a social enterprise, Urban Space 100 combines commercial and social components. This determines the business and legal structure of the project.

Parties and their roles: Urban Space 100 NGO unites all founding members of

the restaurant, who distribute 80 % of the establishment`s net profit to Ivano-Frankivsk development projects. In their activities, the members of the NGO are guided by the Charter of the organization, and all the decisions are made at the quarterly General Meeting. 23 Restaurants company provides the operational management of the restaurant. For performing the managerial function, it receives 20 % of the net profit of the establishment. 23 Restaurants is a restaurant chain in Ivano-Frankivsk established in 2009: it includes such institutions as Manufactura, Hovoryt Ivano-Frankivsk, Delikacia, Fabbrica, PromBar, PromFood, etc. The idea belongs to the Teple Misto platform, it owns the Urban Space trademark The platform provides project management and works on the development of the Urban Space franchise. Teple Misto has been operational since 2014 and is an innovative platform for creation of opportunities and social transformations, primarily in Ivano-Frankivsk, but also outside the city.

Space

Urban Space 100 is a modern space with various components, such

as an open kitchen, an event venue, a shop. The Urban Space Radio studio – an independent media working with urban culture, urban processes, contemporary art, creative business, progressive education, offering an original program product and alternative Ukrainian music – is the special feature integrated in the restaurant space due to its glass walls. Urban Space 100 also has a functional summer deck, with barrier-free entrance, decorated with natural materials and landscaping elements in the warm seasons. There is a bicycle parking nearby. The establishment has the area of 180 m 2 , it seats up to 120 guests. The design project of the restaurant was developed by Yova Yager (Kleydesign studio), Kateryna Storozhuk and Olha Shyrina (Soboleva_Storozhuk_interior design studio), who were joined by the 23 Restaurants COO Oleksandr Tokmylenko. Natural materials were used as much as possible in the design, namely: wood, metal, ceramics, glass. The establishment has an aesthetically pleasing sign designed in accordance with the architectural and artistic concept of the appearance of the nearby streets by the Teple Misto platform. Among the customers one can see small children and elderly people, and especially many young people, both residents and guests of Ivano-Frankivsk. The restaurant space is inclusive – adapted for people with disabilities, parents with young children, and pet-friendly. Urban Space 100 opens for customers at 6.00 a.m., which attracts tourists arriving in the city by the first morning train. The establishment is located near the railway station, at the same time in the centre of the city, next to the building of Ivano-Frankivsk City and Regional Councils – so many roads lead here.

The commercial component of Urban Space 100 is implemented due to the restaurant – the kitchen itself, as well as the gift shop.

Restaurant Only organic, mostly locally produced foods and ingredients are used

for the dishes at Urban Space 100. The emphasis is made on seasonal dishes. 6.00 a.m. to 12.00 a.m. – breakfast menu, at later hours, the place serves a full menu with salads, main dishes and burgers. In addition to the classic burger, the restaurant offers an alternative – a burger with cabbage pancakes, as well as many items for vegans and vegetarians.

The bar menu has a large selection of craft beer from breweries from all over Ukraine. Among popular non-alcoholic drinks, there are Homemade Fanta, house special lemonade and natural teas with seasonal berries. Lavender Cappuccino, made of house-made lavender milk, is quite popular with many customers.

Shop Customers can buy accessories and clothes by local brands, as well as topical business literature in the shop. The Urban Space 100 store aims to support local craftsmen and domestic manufacturers: Shuflia, Bukvica, Orner, Tsukor, Lis-lis, Tabletochki Charity Foundation. The store offers a variety of notebooks, bags, wallets, mugs, postcards, original T-shirts with elements of the Ivano-Frankivsk visual style, etc. The emphasis is put on the business books from Ukrainian publishers, such as Nash Format, Osnovy, Vydavnytstvo Staroho Leva, etc. The store provides up to 20Â % of the total income of the restaurant.

The event and communication venue, as well as the Urban Space 100 grant program are the directions helping the restaurant implement its social mission.

For the events, the restaurant has a small stage with multimedia equipment, which makes it possible to hold various events in parallel with other restaurant functions. The first events took place at the opening of the restaurant â€“ those were Ways to Develop Public Spaces public discussion and a concert by Zapaska indie-pop duo from Kamianets-Podilskyi. Urban Space 100 has hosted more than 1,000 events in more than five years of its operation! Some 25–30 events are held on a free basis at the establishment every month. Therefore, active and caring citizens have the opportunity to express themselves, to present their idea or project to all interested parties.

Event Event venue venue There are no restrictions on the events format:

people are welcome to hold a public discussion, a film screening, a press conference, a concert or even a dance battle, but all the events organized at Urban Space 100 have to be in line with the restaurant`s philosophy and promote the development of a proactive city cluster. Events should also be apolitical and non-religious, open to all and non-discriminatory, without commercial advertising and any commercial component (admission is always free). 22

Grant Grant progra progra The fund of the Urban Space 100 grant program is made of 80 % of

the establishment`s net profit, so each guest of the restaurant, drinking coffee or having lunch, contributes to the future development of Ivano-Frankivsk. The Urban Space 100 grant program has 4 seasons. Projects getting financial support within the framework of the program are chosen quarterly at the General Meeting of founding members. The program does not provide any thematic priorities. Both «hard» (infrastructure) and «soft» (conferences, festivals, educational events, etc.) projects may submit their requests. It is critical that the idea was implemented in Ivano-Frankivsk and aimed to improve life in the city, open new topics and opportunities for the community. Among the projects supported in different years are the following: Ivano-Frankivsk Street Music Day and Music Trolleybus, dance festival by Apache Crew and projects by Urban Space Radio (Urban Xmas Radio – Christmas radio, Nuyaktobiskazaty marathon), creation of murals and restoration of old doors, Cinema Behind the Scenes conference and the forum dedicated to cultural processes in the regions. Also, wheelchair repair projects in the city`s medical facilities and bocce competitions for people with disabilities were implemented, as well as

organization of student spaces and children`s activities (such as a family picnic or nativity school), the Food Sharing project and the Rope Park for children with severe speech disorders and autism. Special attention of the public and the media was attracted by the restaurantsupported research and restoration of old signs in the centre of Ivano-Frankivsk, and the Eco City air quality monitoring project. Thanks to Urban Space 100 grant support, high-quality theme events become available to the city`s residents. For example, this was the case of open events as part of the Design Village conference, the City Scanning Session festival, etc. You can find out more about all supported projects on the website Urban Space 100.

For each of the three main goals, which from the beginning formed

the basis of the institution, the following results were achieved:

creation of a civil society support fund through grants: in 5 years, more than US $100,000 was directed to support public projects for the development of Ivano-Frankivsk, the restaurant continues to operate and generate profit. creating a platform for events and interaction: in 5 years of operation, the restaurant had more than half a million customers and guests â€“ this is twice as much as the number of residents of Ivano-Frankivsk! More than a thousand events were held. Urban Space 100 became a gathering point and a space for meeting people and the development of new projects. bringing citizens together: all parties involved remain in the project. Urban Space 100 should not be seen as a classic business model: it is financially successful, and, just as important, creates new meanings, proving that it is possible to implement joint projects based on trust in Ukraine. This is a prerequisite for further social development. Other social and economic effects associated with the emergence and operation of Urban Space 100 are equally important. These include creation of jobs (currently 28 employees) and support for Ukrainian brands through the store. The restaurant is also focused on purchasing products from local entrepreneurs. And most importantly: Urban Space 100 demonstrates how to work together to create a project that can provide lasting support to the community by fostering new initiatives and improving the quality of life in the

which directs profits to the development of the city, has become attractive outside Ivano-Frankivsk. In a few years, the Teple Misto platform, which owns the idea of the Urban Space 100 public restaurant, has received more than 250 requests for replication of the Urban Space project from various cities in Ukraine and abroad. Among them were Poltava, Chernivtsi, Zaporizhzhia, Berezhany, Kramatorsk, Kharkiv, Berlin, Almaty, Sofia, San Francisco.

Opening Opening U U Space Space in in YY Social franchise and distribution of roles: The Urban Space project envisages cooperation between a public

organization (CO, CF – non-profit sector) and a restaurant company (commercial sector). The Urban Space franchise is a «social franchise» transferred by the Teple Misto Charitable Organization to another nonprofit organization working for the development of its city and having applied a request for the project replication.

Social component management A non-profit organization (NGO, CF, etc.) provides quality manage-

ment of the social component of the future project, including the search for founding members of the restaurant, organization and moderation of the General Meeting of founding members, support of external and internal communication in the project, communication with the franchisor, launch of grant competition after the restaurant opening. Basic requirements for a non-profit organization: at least 2 years of business activity, examples of successful city development projects, stable financial standing. At the start, the non-profit organization submits a request for a franchise and launches a project (search for a restaurant company, premises where it would be possible to arrange event venue, shop, radio studio, provide access to the restaurant for people with disabilities, etc., agreement with the franchisor, promotional campaign, paperwork, the process of attracting founding members).

Urban Urban Your Your city city Restaurant Management The management company is responsible for the launch of the restaurant, its success, profitability, positive dynamics of financial indicators, ensures continuous operation of the establishment. For the managerial function, it receives 20 % of the net profit of the establishment. The company is responsible for the profitability of the restaurant. The decision to change the model in case of unsatisfactory operation may be taken at the General Meeting of founding members of the restaurant. Basic requirements for the management (restaurant) company are: experience in creating, setting up and organizing the operation of successful conceptual catering establishments, sharing values with partners and understanding of the features of the social component of the future restaurant. All public statements about the possibility of opening of an Urban Space restaurant in a particular city are possible only after signing of a memorandum of cooperation between Teple Misto and a non-profit organization that intends to open an Urban Space restaurant in their city. It is important for the project to adhere to such principles as publicity, equality, individual participation, indifference to politics, defined representation, team action, decency, responsibility. Fast facts

The restaurant is open to customers at 6.00 a.m. This is especially convenient for guests arriving in Frankivsk by morning train from Kyiv. And it closes at 11.00 p.m.

The most expensive project supported by Urban Space 100 (as of spring 2019) was Rope Park for Children with Severe Speech Disorders and Autism with the grant amount of 72 000 UAH.

The experience of Urban Space 100 became a subject for a

case study at the courses at Lviv Business School of the UCU (LvBS).

The restaurant is an example of an inclusive space.
