Because there are no precise proportions to this tantalising Cuban creation, you can assemble it to suit your taste buds. However, a good starting point is two-thirds white rum, one-third real lime juice and a dash of sugar syrup. Then just shake it up. That’s all there is to this wonderful cocktail displaying an elegant simplicity and profound sensory impact on a par with that other classic, the martini.
THE ORIGINAL
LI ME DAI QU IR I Apart from its white rum base, Ernest Hemingway’s favourite drink has very little in common with the now far more popular strawberry and banana drinks associated with the name daiquiri. But the real thing remains one of the great cocktails, and while a daiquiri is perhaps more of a summer than a winter drink, this merely provides the uninitiated with some additional time, over the bleaker months, to perfect their preferred balance between the components.
But have everything chilled – the rum and the lime juice – and for maximum effect, put the cocktail glasses in the freezer to mist up when the drink is served. Prior to that, wet the rim of the glass and dip it in caster sugar. This is vital, as it imparts a sweet twist to the sour tartness of the drink. These two sensations hitting the palate are what gives a daiquiri its quintessential ‘charge’ and tension in the mouth. It’s important to use the best possible ingredients, to prepare them carefully and not to drink and drive!
