CELEBRATING THE 100th ISSUE

Wow what a great 100 issue's it has been! Thanks for sticking with us and letting us infiltrate your inbox with the wine going-on's in the world and at Glengarry. The Sunday Sediment started when we decided we wanted to send out something to people in which they could leisurely read while having breakfast in bed on a Sunday or cozy up in the afternoon for a bit of light reading on the wonderful world of wine. So sit back, relax and enjoy this extra special edition of some of our favourite articles throughout the past 100 issues.

EMILIANA - ENTHUSIASTICALLY ETHICAL ISSUE 65

Founded by Chile’s Guilisasti family, the inspirational Emiliana Organic Vineyards are located in Chile’s Casablanca Valley, and own vineyards in some of Chile’s best winemaking areas. Their organic and biodynamic way of winemaking started out as a trial. When they saw the resulting difference in their wines, not to mention in their people, they started moving more and more vineyards over. For the team at Emiliana, this is a comprehensive, interlocking system that involves the creation of balanced vineyard ecosystems within which a host of animals, birds, insects and plants play a part in the maintenance of vineyard balance, acting as natural pesticides, weed killers and compost producers. Emiliana staff are guaranteed a fair wage, the workers offered technical scholarships and provided with land to grow their own organically cultivated fruit and vegetables. THE ROLLS ROYCE OF CHAMPAGNE PRODUCERS - KRUG ISSUE 54

THE NEW TRADITIONAL ISSUE 36

VEGAN-FRIENDLY WINES The reason not all wines are vegan- or vegetarian-friendly is down to the way a wine is clarified (i.e. made clear and bright) via a process called ‘fining’. Young wines naturally contain proteins, tartrates, tannins and phenolics. These are in no way harmful, and most wines will eventually self-clarify. However, to hasten the process, many winemakers use fining agents. The most commonly used are casein (milk protein), albumen (egg white), gelatin (animal protein) and isinglass (fish bladder protein). ORGANIC WINES Organic grape cultivation eschews the use of synthetic fungicides, herbicides, fertilizers and other artificial processes. The wines themselves are regulated through legislation that can vary from country to country. One of these certification challenges is derived from the USA, where wine and food are conflated under organic regulations. There, in order to protect various food products, the term 'organic wine' can't be applied because of the sulphur present, resulting in the designation 'made from organic grapes'. SAKE - BREWING RICE INTO WINE ISSUE 21

Sake has played a significant role in Japanese culture for centuries. A favourite of the Warrior Class, Samurai would symbolically partake of sake before battle and, if things went their way, would drink it afterwards to celebrate. Like rice, sake became a form of currency. Often referred to as rice wine, sake production involves a brewing process more akin to beer (although not quite), and it is pretty much consumed as if it were a spirit. Sake travels its
