No fining, no filtering, this is one for the cellar, a superbly aromatic surge of black cherries and violets, earthiness and understatement. Sensual, supple, savoury.

For all their modest beginnings as a three-hectare hobby vineyard, these guys have managed over time to establish a highly credible rep, and really, there’s been no looking back from that first gold medal for their first-ever Pinot Noir.

Resident genius in the winemaking department is the ultra-talented Malcolm Rees-Francis, a gent who looks as if he’s not long out of uni but who has in fact been at the helm now since 2006; so a while in the saddle.

He is a big fan of letting the fruit and its terroir do the talking, and by the look of the awards cabinet, he’s got the mix about right.

And it’s not just the Pinot that’s kicking it, their Stolen Kiss rosé, for instance, is incredibly popular and sells out in a minute, leaving in its wake each year a bevy of frustrated punters (clue: it’s instore and online right now, so be in while you can). The brilliant Jean-François Bordet is the 13th generation of a family that have been producing wine in the commune of Maligny since the 18th century, with records showing their roots in Chablis stretching back as far as 1590.

Bordet has introduced his own touches to the family recipe, installing up-to-date tech and strict viticultural regimes to accompany the timetested traditions.
