POMMERY To the east of Epernay in Bouzy, Paul Bara have been producing superb grapes off the same 11 hectares for seven generations, the strength of their wines riding on the purity of that A-lister, grand cru-rated fruit and its deep chalky soils. The company falls under the category of grower champagnes, the fascinating set of producers who sit outside the big-name brands but often equal, sometimes even surpass, the flair and the quality equated with those brands. These producers do the whole thing from go to whoa, growing their own grapes, vinifying the champagne themselves and marketing the finished product under their own labels.

Only the first pressing is used, the wines aged for at least four years in the 9m-deep chalk cellars and the vine yield maintained at very low levels. The vine mix is 9.5 hectares Pinot Noir and 1.5 hectares Chardonnay, the vine age between 35 and 40 years. There is no oak here, just stainless steel and enamel tanks. In a region where the majority of producers put their wines through a malolactic fermentation, Paul Bara do not. Preserving acidity in a region that is cool and on the brink of being unable to ripen the grapes is not the norm, however, it’s working well for the Baras; their wines are rich and complex, not at all aggressive or unapproachable.

Jules Taylor is one of Marlborough’s premier winemakers. She was born, serendipitously, in the same year that the first vines were planted there, and has witnessed, first-hand, the transformation that the wine industry has brought to the region. Although she calls Marlborough home, Jules spent much time wandering the world’s other wine producing areas, working several vintages in Italy along the way. On returning home, she undertook winemaking duties alongside Kim Crawford, Simon Waghorn and Matt Thompson. They encouraged her to create her own label, and in 2001, Jules and husband George Elworthy launched the first small batch of Jules Taylor wines. The road ever since has travelled an upward trajectory. Jules has an intimate understanding of Marlborough’s soil diversity and microclimates, and how the unique conditions influence each variety. Lillet is a French apéritif developed in 1872 by brothers Paul and Raymond Lillet, distillers in Podensac, in the Graves region of Bordeaux. 19th-century Bordeaux was the most important port city in France, with fruits and spices coming in from all over the world, providing the brothers with access to a wide range of exotic ingredients for their distilling endeavours. Lillet apéritifs are blended from Bordeaux wines, along with subtle infusions of macerated fruit liqueurs and spices, the combined ingredients aged in large oak vats. These are quintessential French apéritifs, distinctive and elegant, produced from secret recipes that have been passed down through generations. They can be imbibed on their own, or used in the creation of cocktails. By the early 20th century, Lillet was famous in France, served at special occasions and official receptions. It also became popular with high society New York bartenders as an ingredient for their cocktails. Lillet was immortalised in Ian Fleming’s 1953 novel Casino Royale when James Bond ordered ‘A dry martini in a deep champagne goblet. Three measures of gin, one of vodka, half a measure of Kina Lillet. Shake it very well until it’s ice-cold, then add a large thin slice of lemon peel. Got it?’ Got it.

Indulging in drinking copious amounts of beer during the Kiwi OE rite of passage seldom leads to an exciting career. In the case of Jarred Maclachlan and Paul Brown it did; although as dedicated home brewers, they would rightly argue that their imbibing was nothing more than a bit of bona fide research.
